Abstract

Tempoyak powder is a fermented product of durian meat which is traditionally mixed with salt which is further processed through a fermentation process during storage. Maltodextrin is one of food additive, mainly used as a filler and emulsifier used in the manufacture of food powders because it has many functions in accelerating the drying process, helping in dispersing and trapping flavor of food products. This study aims to determine the best maltodextrin concentration against the physicochemical and organoleptic properties of tempoyak powder. This research was carried used a completely randomized design (CRD) with 6 treatment levels of maltodextrin concentrations which are 0, 5, 10, 15, 20 and 25% respectively, each treatment was repeated 3 times. Tempoyak powder was taken image using a scanning electron microscope (SEM) with JEOL JSM 6510 LA model. The results showed that the concentration of maltodextrin had a significant effect on yield, moisture content, color, total dissolved solids, pH, color organoleptic test, aroma and overall acceptance. The best maltodesktrin concentration in tempoyak powder is a concentration of 20% with a score of 4.16 (yellow) color, aroma 4.28 (typical tempoyak), taste 4.08 (sour) and an overall rating of 3.52 (somewhat like) which results in yield value 38.24%, moisture content 12.5781%, L value 43.61, oHue value 72.96 with a description of the color yellow red, total dissolved solids 67.67oBrix and pH 5.28.

Abstract

The aim of this research was to determine the functional properties of yellow greater yam’s starch (Dioscorea alata) and its ability to acts as thickening agent for tomato sauce. This research was carried out in 2 stages: starch extraction followed by determination of its physical and functional properties and production of tomato sauce using completely randomized design with 5 levels of starch concentration and 4 replications. The levels were 0, 1, 2, 3 and 4% which was calculated from tomato pulps. Functional properties of yellow greater yam’s starch showed the capability as thickening agent but had quite high setback value.  The result showed that the concentration of yellow greater yam’s starch significantly affect viscosity and syneresis (p <0 .01) and a* value (p < 0.05) but did not affect water content, total soluble solid, L* and b* of the tomato sauce.  Although creates an obvious color difference (ΔE>3), the concentration of 2% yellow greater yam’s starch is proposed to be used as thickening agent in tomato sauce producing tomato sauce without syneresis during a week of storage, viscosity 4.85 Poise, total soluble solid 44.8 obrix, L* 50.75, a* 50.75, b* 51.30 and overal acceptance “rather like” to “like”.

Abstract

Proses fermentasi biji kakao merupakan prasyarat untuk menghasilkan prekursor rasa  dan aroma kakao yang kuat yang dapat meningkatkan kualitas coklat yang dihasilkan. Penelitian ini bertujuan untuk mengetahui pengaruh lama fermentasi terhadap sifat fisik, kimia dan organoleptik bubuk kakao yang dihasilkan. Penelitian ini menggunakan rancangan acak lengkap (RAL) dengan lama fermentasi  biji kakao 2 hari, 4 hari, 6 hari, 8 hari dan 10 hari berturut-turut dengan 3 kali ulangan. Dari perlakuan lama fermentasi biji kakao yang dilakukan didapat hasil produk kakao terbaik dan juga memenuhi standar mutu adalah bubuk kakao dengan lama fermentasi 6 hari dengan nilai kadar air 5,7%, kadar asam 5.07, nilai aktivitas antioksidan 66.5% dan warna dark moderate orange.

Abstract

This research aimed to study the antioxidant activity of several cultivars of fresh yam tubers and its flour and to determine the effect of processing and storage on antioxidant activity of yam flour. The research used Complete Random Design (CRD). This study was conducted in three stages and repeated 3 times.  At first stage, antioxidant activities of three types of yam were investigated.  The type of yam tuber which has the highest antioxidant activity was used for second stage. At second stage, the experiment was carried out to determine the effect of processing methods on the antioxidant activity of yam flour. The treatment which produced yam flour with the highest antioxidant activity was further used in the last stage.  At last stage, the experiment was carried out to determine the effect of storage on antioxidant activity.  At this stage, 3 different storage times was used (0 weeks, 4 weeks and 8 weeks). The results showed that types of yam and processing treatment gave significant effect on antioxidant activity, IC50, L*, a* and b*, and total anthocyanin of yam tuber and flour.  However, processing method gave insignificant effect on value of L* of yam flour. Type of yam with the highest antioxidant activity was purple yam with antioxidant activity 96,35%, IC50 44,95 μg/ml, total anthocyanin content 351,82 mg/100g, L* 46, a* 54, and b* - 21. The processing method that produce flour with the highest antioxidant activity was steaming which produce yam flour with antioxidant activity of 83.59%, IC50 67.48 μg/ml, total anthocyanin content 136.94 mg/100g, L* 66, a* 26, and b* -15. There was a decrease in antioxidant activity, total anthocyanin content, L*, a* and b* of yam flour during storage of 4 and 8 weeks

Abstract

Resin jernang (Daemonorops Sp), juga dikenal sebagai Dragon'd Blood, adalah resin yang dihasilkan dari sekresi buah jernang yang menempel pada kulit buah. Mahalnya resin membuatnya tidak dapat digunakan sebagai pewarna atau pengawet.  Oleh karena itu, resin jernang dapat digali dari jenis lain, seperti jenis burung, dan dari bagian buah lain, seperti kulit dan biji dari buah jernang burung dan jernang rambai.  Untuk penelitian ini, rancangan acak kelompok (RAK) digunakan dengan dua jenis jernang: jernang jenis rambai (Daemonorops draco BL) dan jernang jenis burung (Daemonorops didymophylla Becc), yang mencakup bagian buah kulit dan biji.  Selama dua hari, sample dimaserasi dengan pelarut etanol dan hexane dengan perbandingan 1: 7; masing-masing perlakuan diulang dua kali, sehingga diperoleh 16 satuan percobaan.  Parameter yang diamati adalah rendemen, warna, aktivitas antioksidan dan antimikroba. Hasil penelitian menunjukkan bahwa nilai rendemen, deskripsi warna, dan aktivitas antioksidan benar-benar dipengaruhi oleh perlakuan sampel.  Dengan deskripsi warna merah, % inhibisi 73,11%, diameter zona hambat E. coli 10,25 mm dan S. aureus 9,5 mm, penelitian ini menunjukkan bahwa ekstrak etanol resin jernang dari kulit dan biji dapat berfungsi sebagai pewarna dan pengawet makanan. Oleh karena itu, penelitian lebih lanjut harus dilakukan tentang penggunaan ekstrak etanol resin jernang dari bagian kulit dan biji pada produk makanan.
