Abstract

The problem experienced by the milkfish (Chanos chanos) farming community in Tamangapa Village, Pangkep Regency is the low selling price of milkfish which is cheap. This is because milkfish has so many spines that people don't like it, even though milkfish has good nutritional value, especially omega-3 unsaturated fatty acids (ω3) reaching 14.2% and protein content of 20%. This activity aims to increase the selling value of milkfish through training activities to remove milkfish spines. The method used is training and assistance in removing the thorns of milkfish, which is attended by PKK women, village office employees, and local people who have the desire to become entrepreneurs. The result is that thornless milkfish can be sold to consumers or processed into products such as nuggets, meatballs, and crispy milkfish. The conclusion is milkfish without spines has a profitable business opportunity with an increase in selling prices, so that it can increase the income of fish farmers in Tamangapa Village, Pangkep Regency.

Sex ratio, TKG, (Walpole 1993), Length of First-Time Gonads of Fish (Lm)The results showed that based on the composition of the types of fish caught, the percentage of the dominant catch was 27.41% mackerel (Rastrelliger kanagurta), 24.26% flying fish (Decapterus macrosoma), 23 anchovies (Stolephorus sp). 28%, squid (Loligo sp) by 2.24%, flying fish (Cypselurus sp) by 8.98% and tembang fish (Sardinella fimbriata) by 13%, while the type of flying fish caught was only one type, namely white-tailed flying fish. slightly yellowish (Decapterus macrosoma). Comparison of the number of male and female sex, it was found that the sex ratio of male and female Layang fish (D. macrosoma) was 52.83%: 47.17% or 1.12: 0.89, l. The size of the first maturity of male flying fish gonads in Barru waters is at the size of 15.68 cm or 156 mm and the female is at the size of 15.62 cm or 156 mm, while the male and female fish that are immature gonads are more than the fish that are mature gonads.

Abstract

The decline in quality and high post-harvest damage are caused by, among others, the way of catching, poor handling methods, the length of the supply chain, the inadequacy of handling facilities. The way fish are handled both on the ship and in the fish landing is directly related to the quality of the fish. This research was carried out for eight months, namely from April to December 2020, at the Beba Fish Landing Site (TPI) in Takalar Regency. The study aims to analyze the quality level of fish and how to handle fish caught by fishermen landed at TPI Beba Takalar. This research was conducted by survey method through direct observation of fish landed by fishermen at TPI Beba Takalar. The types of fish selected are 10 types of fish that are predominantly landed at the study site. The survey was conducted to collect data on fish quality quality by observing the pH parameters and organoleptic properties of fish including eye conditions, gills, odor, and texture. Observations were also made on how fish were handled in TPI. The data analysis carried out is the determination of pH and organoleptic properties. The results showed that the average organoleptic test results in sample fish were values of 7-8, these values showed that the quality of fish freshness was still good. Meanwhile, the results of measuring the average pH of fish 6.5 - 7.0 show that fish still have good freshness quality. The way the fish handling is carried out at the Beba Landing Site still generally uses coarse ice with improper handling methods.
