(pp. 110-117).  Palembang: Penerbit & Percetakan Universitas Sriwijaya (UNSRI).Microwavable fish crackers had hygroscopic properties so it needs to be packaged properly. The objective of this research was to determine the shelf life of microwavable-packaged fish crackers. The fish crackers microwave was packed with three various method which are polypropylene (PP), PP + silica gel, and nylon + vacuum. Estimation of shelf life was done by calculating the parameters of degradation of microwavable fish crackers with the reaction kinetics equation and processed using the Arrhenius equation. The quality parameter was moisture content. Quality parameters are measured every 5 days during 30 days of storage at 30oC. The results showed that the kinetics of changes in the water content of microwavable fish crackers packed in three packaging combinations following reaction order one(1) and order two(2). The shelf life of microwavable fish crackers packaged in PP was 27 days, PP+silica gel packs was 29 days, and nylon+vacuum packs was 31 days.

In: Herlinda S et al. (Eds.), Prosiding Seminar Nasional Lahan Suboptimal ke-10 Tahun 2022, Palembang 27 Oktober 2022. pp. 337-345.  Palembang: Penerbit & Percetakan Universitas Sriwijaya (UNSRI).The coconut product that has high added value as a raw material for cosmetics and medicine was Virgin Coconut Oil (VCO). The objective of this research was to determine effect of the concentration induced VCO and the speed of stirring on the VCO and protein characteristics of coconut milk cream. The experiment used a Factorial Completely Randomized Design with two factors. The first factor was VCO concentration consisting of 3 levels (5%, 7%, and 10%) and the second factor was stirring speed consisting of 3 levels (500, 700, and 900 rpm). The parameters were yield, moisture, free fatty acids, degree of clarity and peroxide number for VCO and yield, moisture, ash and protein content for protein. The results for VCO showed that the concentration of induced VCO had a significant effect on the yield, stirring speed had a significant effect on the value of free fatty acids, the interaction of the two treatment factors had a significant effect on the value of the degree of clarity. The best treatment for VCO was induced VCO concentration of 5% and stirring speed of 500 rpm. For protein: the interaction of the induced VCO and stirring speed  had significant effect on water and protein content. The best treatment for protein was obtained in the 10% induced VCO concentration and stirring speed of 900 rpm.

Abstract

Modification of Dioscorea esculenta and Colocasia esculenta starch through NaOH-Etanol was conducted to improve and expand the use of this starch in instant product, especially as binding agent of laksa instant. This study aimed to determine the effect of varying amounts of NaOH on physical characteristics of lesser yam and taro starch. The research was conducted at Agricultural Product Chemical Laboratory, Agricultural Technology Department, Faculty of Agriculture, Sriwijaya University. This study used a Split Plot Design with two treatment factors were the types of starch (lesser yam and taro) and varying amounts of NaOH 3 M (0, 3, 6, 9 g). The parameters observed included whiteness level, water solubility, water absorption index, solubility index, and swelling power. The results showed that the type of starch had significantly affected on water absorption index, water solubility, swelling power, solubility index of modified starch. The amount of NaOH had significantly affected on whiteness level, water absorption index. water solubility, swelling power, solubility inde of modified starch. Moreover, the interaction between types of starch and the amount of NaOH had significantly affected on water absorption index, solubility in water, solubility index of modified starch. The best treatment was lesser yam starch with the addition 3 g of NaOH 3M as binding agent.

Abstract

Penelitian ini bertujuan untuk mempelajari pengaruh kondisi dan lama penyimpanan air kelapa terhadap produksi nata de coco. Penelitian ini menggunakan Rancangan Acak Lengkap Faktorial (RALF) dengan dua faktor, yaitu kondisi penyimpanan (ditutup plastik dan ditutup kain) dan lama penyimpanan (0 hari, 3 hari, 6 hari, 9 hari, 12 hari, dan 15 hari). Setiap perlakuan diulang tiga kali. Hasil penelitian menunjukkan bahwa total asam dan total gula air kelapa, serta ketebalan dan rendemen nata de coco dipengaruhi oleh kondisi dan lama penyimpanan air kelapa. pH air kelapa hanya dipengaruhi oleh lama penyimpanan. Interaksi kedua faktor secara nyata memberikan pengaruh terhadap total gula air kelapa. Penyimpanan air kelapa sebagai bahan baku pembuatan nata de coco masih dapat dilakukan hingga hari ke 12.

Abstract

SMPIT Raudhatul Ulum is in Sakatiga Village, Ogan Ilir Regency, South Sumatra Province. One of the efforts to achieve the vision and mission, SMPIT Raudhatul Ulum collaborates with universities to improve and develop the quality of human resources, such as implementing community service activities related to the learning process. One of them is about the technology of making organic hard soap, which is part of chemistry learning. This community service activity aimed to provide knowledge, understanding, and training on the technology of making organic hard soap made from cucumber and coffee to teachers and students of SMPIT Raudhatul Ulum, Sakatiga Village, Ogan Ilir Regency. The method used was the lecture method, which was carried out through the delivery and explanation of material, accompanied by discussion, and the practice of making organic solid soap. The results showed that this activity could provide knowledge, understanding, and skills to the audience regarding organic hard soap made from cucumber and coffee powder, with an increase in the audience's understanding of organic hard soap of 26.02%, after the delivery of material and practice of making organic hard soap.

Abstract

Meranjat Ilir Village is located in the South Indralaya District, Ogan Ilir Regency, South Sumatra Province, with one of the leading products, kemplang. The kemplang business is the main livelihood for the community, as well as an income for craftswomen in Meranjat Ilir Village. One important factor in maintaining product quality, increasing selling value in marketing, and business sustainability is halal certification. The awareness of small and medium entrepreneurs to carry out halal certification is very low. Therefore, an activity is needed to socialize the halal certification process. This community service activity aimed to provide knowledge and understanding, as well as socialize with the community of kemplang crafters in Meranjat Ilir Village regarding the halal certification process for food products, especially kemplang products. The method used was the lecturing method which was carried out through the presentation and explanation of material accompanied by discussion and question-answer. The target audience in this activity was the community of kemplang crafters in Meranjat Ilir Village. The results showed that kemplang crafters in Meranjat Ilir Village gained knowledge and understanding of the halal certification process. There was an increase in understanding of the target audience by 28.39% after the presentation of the material.

Abstract

Prabumulih has many small and medium enterprises (SMEs) whose main product is nata de coco, but the limited availability of coconut water has encouraged the development of nata de citrullus made from watermelon rind as an alternative raw material for product diversification and waste reduction. This community service activity was carried out at KsP SME and Triliyat SME through preparatory activities, outreach, hands-on training, organoleptic testing, and evaluation. Two variants were tested: a mixed extract of albedo and rind, and an albedo-only extract. Hedonic and hedonic quality tests showed that the mixed variant was preferred, with a cloudy white color and chewy texture (color scores 1.8–1.9; texture 1.5–2.1). The average hedonic scores for color and texture were 3.2 and 2.8 for the mixed variant, and 2.5 and 2.4 for the albedo variant. Pre-test and post-test evaluations showed a 57.50% increase in participants’ understanding, indicating that the training was effective and practical in supporting nata product development in SMEs.

Abstract

Nata de coco is a fermented food product rich in cellulose produced by Acetobacter xylinum and commonly utilized as an ingredient in various beverages and desserts. Despite its popularity, the high moisture content of fresh nata de coco results in limited shelf life and challenges in storage and transportation. Drying is considered a suitable approach to improve product stability and extend its storage period. This study aimed to determine the influence of sugar concentration and drying time on the physical and chemical characteristics of dried nata de coco. The experiment was arranged using a factorial completely randomized design with two factors: sugar concentration (40%, 50%, and 60% w/v) and drying time (7, 8, and 9 hours), each treatment performed in three replications. The evaluated physical properties included texture, color parameters (L*, a*, and b*), and rehydration capacity, while chemical properties consisted of moisture content and total sugar. The results revealed that sugar concentration significantly affected lightness (L*), rehydration capacity, moisture content, and total sugar levels. Drying time significantly influenced texture, color (L* and a*), rehydration capacity, moisture content, and total sugar. No significant interaction between the two factors was observed. The best treatment was obtained at 40% sugar concentration with a drying time of 7 hours, resulting in dried nata de coco with favorable physical and chemical characteristics

Abstract

This study aimed to evaluate the effects of sugar concentration and drying time on the physical and chemical properties of nata de coco. A factorial completely randomized design with two factors sugar concentration (40%, 50%, and 60% w/v) and drying time (7, 8, and 9 hours) was used, with three replications per treatment. Physical parameters (texture, color, rehydration) and chemical parameters (moisture content, total sugar) were measured. Results showed that sugar concentration significantly affected color (L*), rehydration, moisture, and total sugar, while drying time significantly influenced texture, color (L*, a*), rehydration, moisture, and total sugar. The interaction between factors was not significant. The optimal condition was 40% sugar and 7-hour drying, producing 18.01% moisture, 64.67 °Brix total sugar, 117.0 gf texture, color values of L* = 63.0%, a* = 4.17%, b* = 10.93%, and 139.45% rehydration.
