Abstract

Milk tofu is a protein product made by adding acid compounds or enzymes to milk, one of which used by adding pineapple juice. This study aim to determine the physical characteristics and total bacteria of cow milk tofu. The design used in this study was a completely randomized design (CRD) with four treatments and four replications, each replication using 1000 ml of cow milk. The four treatments were P1: adding 30 cc of young pineapple juice, P2: adding 40 cc of young pineapple juice, P3: adding 50 cc of young pineapple juice, and P4: adding 60 cc of young pineapple juice. The variables was observed in this study were yield, syneresis, water holding capacity, total acid, and total bacteria. The results showed that adding young pineapple juice had a significant effect (P<0.05) on yield, syneresis, water holding capacity, and total acid, but had no significant effect (P>0.05) on total bacteria of cow milk tofu. The highest yield and water holding capacity of milk tofu was found in P4 with values 21,75% and 73,33% respectively. The lowest syneresis, total acid and total bacteria of milk tofu were found at P4 with values 29,80%, 0,54% and 0,3x104 CFU/g respectively. The conclusion of this study was that adding young pineapple juice had a significant effect on physical characteristics, but had no significant effect on total bacteria. Concentration 60 cc of young pineapple juice produced physical characteristics of cow milk tofu: yield 21,75%, syneresis 29,80%, water holding capacity 73,33%, total acid 0,54%, and total bacteria 0,3x104 CFU/g.

Abstract

Penelitian ini bertujuan untuk mengetahui pengaruh pemberian larutan oralit pada babi selama penundaan waktu pemotongan terhadap kondisi fisiologisnya yang meliputi frekuensi nafas, suhu tubuh. Penelitian ini menggunakan rancangan acak kelompok (RAK) dengan pola faktorial 3X4 (4). Faktor pertama terdiri atas empat perlakuan, yaitu penundaan waktu pemotongan selama 1-6 jam (Lo), penundaan waktu pemotongan selama 20-24 jam (L1), penundaan waktu pemotongan selama 42-48 jam (L2), dan penundaan waktu pemotongan selama 64-72 jam (L3). Faktor kedua terdiri atas 3 (tiga) perlakuan, yaitu tanpa pemberian larutan oralit (Oo), pemberian laruran oralit (gula 150 gr + garam 15 gr) (O1), dan pemberian larutan oralit (gula 300 gr + garam 30 gr) (O2), sehingga ada 12 kombinasi perlakuan. Masing-masing perlakuan diulang sebanyak 4 kali, babi yang digunakan sebanyak 48 ekor. Hasil penelitian menunjukkan tidak terjadi interaksi antara larutan oralit yang diberikan pada setiap penundaan waktu pemotongan (P>0,05). Penundaan waktu pemotongan mempengaruhi frekuensi nafas, denyut nadi dan suhu tubuh ternak babi (P<0,05). Secara terpisah pemberian larutan oralit O1 dan O2 dengan nyata dapat memperbaiki status fisiologi babi selama penundaan waktu pemotongan. Kesimpulan dari hasil penelitian ini, penundaan pemotongan mempengaruhi status fisiologis babi, dan penundaan waktu pemotongan yang optimum adalah 1-2 hari (L1-L2), disarankan memberikan larutan oralit O1 setiap penambahan waktu pemotongan.

Abstract

This study aims to evaluate the response of the panelists to milk tofu with the use of a natural coagulation agent, namely young pineapple juice. The study was conducted using a completely randomized design (CRD) with four treatments and four replications. Each replication using 1000 ml of cow milk, the four treatments were adding 30cc of pineapple juice (P1), adding 40cc of pineapple juice (P2), adding 50cc of pineapple juice (P3), and adding 60cc of pineapple juice (P4). The observed variables were the hedonic test for the level of preference and the sensory quality test, namely color, taste, scent, elasticity and overall acceptance. The results of this study indicated that the manufacture of milk tofu using natural coagulation ingredients of young pineapple juice (Ananas comosus) from all variables (color, taste, scent, elasticity, and overall acceptance) and each treatment (P1, P2, P3, P4) showed that the results were significantly different (P<0.05). The hedonic test value (preferred level) on color, taste, scent, and overall acceptance was highest in P1 with a sequential value of 4.12; 4.16; 4.08; and 3.88, while the highest value for elasticity was found at P3. The conclusion of this study can be suggested using 30 cc of young pineapple juice as a natural coagulation material in the manufacture of milk tofu because it produces milk tofu with a milky white color, the scent of cow milk, a slightly chewy texture, and a slight milk taste.

Abstract

The research aims to obtain a dose of NPK fertilizer substituted for cow biourine that can produce the best productivity of Asystasia gangetica (L.) subsp. Micrantha, used a completely randomized design consisting of 9 tre- atments repeated 7 times, so there were 63 experimental units. Treatments consisted of D0: no fertilizer, D1: NPK 200 kg ha-1, D2: Cow biourine (CB) 5,000 l ha-1, D3: CB 7,500 l ha-1, D4: CB 10,000 l ha-1, D5: NPK 50 kgha-1 + CB 5,000 l ha-1, D6 : NPK 50 kgha-1 + CB 7,500 l ha-1, D7 : NPK 100 kgha-1 + CB 5,000 l ha-1, and D8 : NPK 100 kgha-1 + CB 7,500 l ha-1. The results showed that Asystasia gangetica that received the D5 treatment produced a higher number of leaves, leaf dry weight, stem dry weight, and total forage dry weight compared to D0 and the same as the D1 treatment. It was concluded that Asystasia gangetica (l.) subsp. Micrantha that received D5 fertilizer treatment (NPK 50 kgha-1 + cow biourine 5,000 l ha-1) showed better growth and yield compared to without fertilizer and the same as D1 treatment (NPK 200 kg ha-1).

Abstract

Penelitian ini bertujuan untuk mengetahui kualitas mikrobiologis kefir dengan waktu simpan sampai 12 haridengan bakteri asam laktat yang stabil. Penelitian ini menggunakan rancangan acak lengkap (RAL) dengan limaperlakuan dan setiap perlakuan terdiri dari empat ulangan. Kelima perlakuan itu adalah T0 (kefir dengan waktusimpan 0 hari), T3 (kefir dengan waktu simpan 3 hari), T6 (kefir dengan waktu simpan 6 hari), T9 (kefir denganwaktu simpan 9 hari), dan T12 (kefir dengan waktu simpan 12 hari). Hasil penelitian menunjukkan bahwa totalbakteri asam laktat pada kefir dengan waktu simpan 0-12 hari diperoleh 2,81.107 -9,65.107cfu/g. Kisaran nilai pHpada semua perlakuan berkisar antara 3,52-3,88, sedangkan total asam menunjukan bahwa semakin lama waktusimpan kefir semakin meningkat nilai total asamnya (1,75-5,57%) serta tidak ditemukan adanya pertumbuhanE.coli sebagai indikator bakteri sanitasi. Dari hasil penelitian dapat disimpulkan bahwa kefir dengan waktu simpansampai 12 hari pada suhu 5°C memiliki kualitas mikrobiologi yang baik dengan bakteri asam laktat berkisar antara2,81.107–5,98.107cfu/g; pH 3,52-3,88; total asam 1,75-3,45%; dan tidak ditemukan adanya pertumbuhan E. coli.

Abstract

Tujuan dari penelitian ini adalah untuk mengetahui apakah daging kambing yang di potong di RPH Tradisional di kota Denpasar layak di konsumsi di lihat dari aspek kualitas fisik daging. Data yang diperoleh di tabulasi dan dianalisis menggunakan metode diskriptif. Dari hasil penelitian ini, didapat rata-rata kualitas fisik daging kambing yang di potong di RPH tradisional di kota Denpasar adalah nilai pH 5,59, nilai warna daging adalah 5,14, nilai susut masak 39,74% dan nilai daya ikat air daging 30,90%. Berdasarkan hasil penelitian dapat disimpulkan bahwa kualitas fisik daging kambing yang dipotong di RPH tradisional di Denpasar masih dalam keadaan baik/normaldilihat dari variable pH yang ada dalam kisaran pH ultimat dan variable lain seperti warna, susut masak dan daya ikat air daging dalam angka yang normal.

Abstract

This research was conducted to determine the organoleptic quality of kefir incubated in light green coconut shells (Cocos nucifera L. var. viridis Hassk) with and without coconut meat, conducted from August to October 2020 at the Laboratory of Animal Product Technology and Microbiology, Faculty of Animal Husbandry, Udayana University. The experimental design used in this study was a completely randomized design (CRD) with three tre- atments and five replications. The three treatments were: P0 used a jar (control), P1 used light green coconut shell (Cocos nucifera L. var. viridis Hassk) without coconut meat, P2 uses light green coconut shell (Cocos nucifera L. var. viridis Hassk) with coconut meat. The variables observed: color, taste, aroma, texture and overall acceptance. The results of the organoleptic test were analyzed using the Kruskal Wallis test, if there was a significant differen- ce (P <0.05) followed by the Mann-Whitney test. The results showed that the organoleptic quality of cow’s milk kefir incubated in light green coconut shells (Cocos nucifera L. var. viridis Hassk) was not significantly different (P>0.05) in all treatments (P0, P1, P2). The conclusion from the results of this study shows that, incubated cow’s milk kefir in light green coconut shell (Cocos nucifera L. var. viridis Hassk) with and without coconut meat did not affect the organoleptic quality of kefir but panelists gave a response that led to preference.
