Abstract

Oral cavity is a place of entry of various kinds of bacteria into the body. The main causes of dental caries are Streptococcus mutans and Staphylococcus aureus. White gathering has benefits for the body including toothache medicine, eliminating bad breath and sore throat. The purpose of this study was to determine the inhibitory effect of rhizome extract of white intersection (Curcuma zedoaria) against Streptococcus mutans and Staphylococcus aureus. The type of research used is laboratory experimental, the research sample is bacterium Streptococcus mutans and Staphylococcus aureus obtained from laboratory of Microbiology University of Indonesia. This study used concentrations of 20%, 40%, 60% and 80% as well as positive control using amoxicillin and negative control using DMSO. Data analysis using One Way Anova test. The results obtained sig value = 0.000 <0.05. From this research, it was found that white rhizome extract (Curcuma zedoaria) can inhibit the growth of Streptococcus mutans and Staphylococcus aureus bacteria in the extract concentrations of 20%, 40%, 60% and 80%. The conclusion of this research is the inhibition of white rhizome extract extract (Curcuma zedoaria) against Streptococcus mutans with 40% concentration of 16.96 mm and in Staphylococcus aureus bacteria with 80% concentration of 23.98 mm. Abstract

Pembuatan keripik wortel dilakukan dengan menggunakan teknologi vacuum frying (penggorengan hampa). Tujuan kegiatan pengabdian masyarakat ini adalah adanya pengetahuan tentang teknologi pengolahan produk keripik wortel bagi petani di Nagari Batu Palano Kec. Sungai Pua Kab. Agam. Luaran yang diharapkan petani memiliki wawasan dan skill tentang teknologi vacuum frying dan proses pembuatan keripik wortel serta mengetahui mutu produk keripik wortel yang dihasilkan serta kegiatan ini diharapkan terbentuknya kelompok usaha bersama. Kegiatan dilakukan dalam empat tahap yaitu: pengecekan mesin vacuum frying dan peralatan pendukungnya; pelatihan operasional mesin vacuum frying dan produksi keripik wortel; pelatihan produksi keripik wortel; pelatihan pengemsan dan pelabelan dan pelatihan analisis ekonomi produksinya. Keripik wortel yang dihasilkan oleh peserta pelatihan memiliki tekstur yang renyah (crispy), warna dan aroma khas wortel, produk keripik wortel dilengkapi dengan kemasan, label dan nilai gizi yaitu kadar air 18,15%, kadar abu 3,46%, kadar lemak 11,84%, kadar protein 1,89% dan kadar karbohidrat 64,66%.

Abstract

ABSTRAK: Pengabdian kepada masyarakat ini bertujuan untuk mengurangi kerugian petani dan pedagang bengkoang serta mengoptimalkan umbi bengkoang kelompok tani dengan peningkatan nilai tambah melalui produk bedak dingin. Umbi bengkoang yang tidak terjual lagi dan diangkap afkir dimana kurang layak untuk jadi produk olahan pangan dimanfaatkan untuk membuat bedak dingin. Pengabdian masyarakat ini dilakukan dengan tahapan : 1) Pembuatan dan pengujian bedak dingin bengkoang dengan menggunakan 3 (tiga) jenis ketuaan umbi bengkoang. Pengamatan yang dilakukan meliputi rendemen, derajat warna putih, pH dan uji organoleptik bedak dan uji iritasi ; dan 2) Penyuluhan dan demontrasi/pelatihan pembuatan bedak dingin pada kelompok mitra. Pada penyuluhan disampaikan: i) Potensi umbi bengkoang, ii) Faktor-foktor yang perlu diperhatikan dalam penentuan bengkoang afkir, dan iii) Faktor yang diperhatikan dalam membuat produk bermutu baik dan dapat disimpan dalam jangka waktu yang lama. Hasil dari kegiatan pengabdian ini adalah : 1) Bengkoang afkir (sisa yang tidak terjual) mempunyai potensi dan dapat serta aman untuk dijadikan bedak dingin; 2). Hasil penelitian (pengujian) bedak dingin bengkoang afkir memberikan hasil yang hampir sama dengan bedak dingin menggunakan bengkoang segar ataupun bengkoang yang panen tua (5-5.5 bulan). Pati bengkoang afkir lebih tinggi dari bengkoang segar dan kadar air yang lebih rendah; dan 3). Anggota kelompok wanita tani Berkat Yakin dapat memahami dan mampu membuat bedak dingin bengkoang afkir yang baik untuk dapat disimpan dalam waktu yang lama.Kata kunci: Bengkoang afkir, Bedak dingin, Pengabdian, Kelompok wanita tani Utilization of Reject Bengkoang (Pachyrhizus Erosus) on Cold Mask Production in Berkat Yakin Farmer Women Group at Sub District of Batang Anai District of Padang PariamanABSTRACT: The aim of the community service were to reduce losses of bengkoang farmers and traders, and also to optimize bengkoang tubers farmer groups with increased value added through cold mask products. Bengkoang tubers that not sell anymore and considered reject where less feasible to be food products used to make the cold mask. This community service was done by stages: 1) Making and testing of cold mask bengkoang by using 3 (three) maturity types of bengkoang tuber. The observations included rendement, white color, pH, organoleptic test of mask, and irritation test; and 2) Counseling and demonstration / training of making cold mask in group of partner. In the counseling delivered: i) Bengkoang tuber potency, ii) Factors to consider in determining reject bengkoang , and 3) Factors considered in making good quality products and can be stored for long periods. The results of this community service activity were: 1) Reject bengkoang (unsold remnant) has the potential and can and safe to be used as cold mask; 2). The cold mask product of reject bengkoang had same quality with cold mask using fresh bengkoang or old harvested bengkoang (5-5.5 month). Starch of reject bengkoang higher than fresh bengkoang and it’s water content is lower; and 3). Members of farmer women group Berkat Yakin can understand and able to make cold mask from reject bengkoang and good to be stored for a long time.Keywords: Reject bengkoang, Cold mask, Community service, Farmer women group

Abstract

Jagung merupakan tanaman serealea yang digunakan sebagai bahan baku industri pangan dan non-pangan. Biji jagung merupakan hasil panen tanaman jagung yang biasanya dijual dalam bentuk tongkol atau pipil. Sebagai penghasil jagung utama di Sumatera Barat, belum banyak produk olahan jagung yang ditemukan di Kabupaten Pasaman Barat. Kegiatan pemberdayaan masyarakat ini bertujuan untuk mendiseminasikan dan mendorong berbagai inovasi produk olahan makanan dari jagung pada masyarakat Nagari Giri Maju, Kabupaten Pasaman Barat melalui kegiatan Kuliah Kerja Nyata (KKN) Dikti. Metode diseminasi teknologi yang diterapkan adalah berupa demonstrasi dan pelatihan, penyuluhan dan pendampingan masyarakat. Hasil menunjukkan bahwa kegiatan yang dilakukan (1) berhasil mendiseminasikan berbagai inovasi produk makanan berbahan dasar jagung pipil dan tepung jagung, dan (2) masyarakat baru mampu berinovasi menghasilkan produk olahan jagung yang memiliki daya tahan/simpan yang rendah. Perlu dukungan pemerintah daerah dan partisipasi aktif masyarakat untuk keberlanjutan program menjadikan kabupaten Pasaman Barat tidak hanya sebagai penghasil jagung tetapi juga penghasil produk makanan olahan berbahan dasar jagung. Kata kunci: Diversifikasi, Jagung pipil, Nilai tambah, Produk olahan jagung ABSTRACT Corn is an important cereal crop used as the raw material of food and non-food industries. Grain kernel is the harvest of corn plants. As the leading producer of corn in West Sumatera, there are not many processed corn products found in West Pasaman Regency. The community empowerment aimed to disseminate and encourage various innovations processed food products from corn in the Nagari Giri Maju, West Pasaman Regency, through the activities of KKN Dikti. The method of dissemination of technology applied is a demonstration, in-house training, community learning and assistance. Results showed that activities conducted (1) successfully disseminated various innovations of food products based on corn kernel and cornflour, and (2) the community was able to produce corn-processed products that have a low durability/shelf life. To sustain the program that makes the West Pasaman regency as the producer of processed corn products need local government support and active participation of the community. Abstract

Maize is the main cash crop in intercropping system applied for replanting of palm oil which is expected to be the main source of income before palm oil crops produce. The transfer of maize cultivation technology in small holder palm oil plantation is aimed at increasing production of maize without harming the main crops and maintaining the productivity of land and the environment. Increased income can also be done through efforts to increase the added value of maize seeds into various food products. KKN-PPM activities that took place in Nagari Persiapan Girimaju, Luhak Nan Duo sub-district, West Pasaman district from June to August 2018 aimed to transfer maize production technology that is environmentally friendly and to transfer knowledge and skills in increasing the value added of maize into various food and other processed products. Results obtained from the KKN activities were (1) the community was able to apply maize production technology which was synergized with cattle farming, (2) there was an increase in the efficiency of maize production through introduction of maize sheller machine, (3) the community was able to produce a variety of maize-based food products and ( 4) the formation of new UMKMs in the location. The results of statistical analysis using a Likert scale gave an index value of 0.99 on the impact/benefits of KKN, indicating that KKN-PPM activities were categorized as very successful and benefited to the community, and gave an index value of 0.95 for the performance of KKN team, indicating that KKN-PPM team had sufficient competency and suitability knowledge with the program conducted.

Abstract

Bengkoang (Pachyrizus erosus) adalah tanaman berumbi yang banyak ditanam di Kota Padang. Umbi umumnya dikonsumsi mentah. Untuk itu diperlukan pengolahan lanjut sebagai diversifikasi produk. Penelitian mengenai karakter hasil fermentasi olahan Bengkoang (Pachyrizus erosus) menggunakan berbagai konsentrasi ragi telah dilaksanakan pada bulan Mei - Juli 2017. Penelitian tersebut bertujuan untuk mengetahui karakter fisik, kimia dan mikrobiologi hasil fermentasi Bengkoang menggunakan ragi pada berbagai konsentrasi. Hasil olahan bengkoang yang menjadi objek antara lain bubur, sari dan konsentrat. Sementara konsentrasi ragi yang digunakan adalah 1%, 2%, 3% dan 4% dari berat objek. Dari hasil penelitian diperoleh kadar air berkisar 84,66 % - 96,5 %, pH 3,8 – 4,37 , total gula 1,548% – 11,375% , gula pereduksi 0,0003% - 4,88% total bakteri asam laktat (BAL) 7,38 – 8,46 Log CFU/g dan kadar alkohol 1,06% - 3,03%. Total BAL, total gula, gula pereduksi menunjukkan potensi produk bengkoang fermentasi untuk dibuat minuman dengan manfaat probiotik. Namun demikian diperlukan penelitian lanjutan untuk mengetahui lebih lanjut mengenai hal tersebut.

Abstract

This study aims to find the optimal nanofibrillated cellulose (NFC) concentration isolated from oil palm empty fruit bunch (OPEFB) particles to form stable pickering emulsions against creaming and coalescence. The emulsification process is based on a combination of homogenizer and ultrasonication. Pickering emulsion was prepared by mixing the dispersed phase (palm oil) and the dispersing phase (NFC concentration of 0.05 - 0.7 w/v%) at the ratio of 10:90. Fresh emulsion has a milky white appearance and is homogeneous. However, some samples' creaming process occurred on the 30th day of storage. Microscopic observations show that the droplets are round with various sizes. Differences in NFC concentrations significantly affect droplet size, zeta potential, rheology, and emulsion stability. Increasing the NCF concentration resulted in smaller droplet sizes, viscosity, zeta potential, and pickering emulsion stability. The emulsion has high stability against coalescence and creaming. NFC at 0.7 w/v% generates an emulsion with the best characteristics and high stability against creaming and coalescence. OPEFB-based NFC has the potential as a pickering emulsion stabilizer particle that can be applied to the food and non-food industries.
