Abstract

Silamak Pangek Pisang is, made of banana fruit, one of the Nagari Kinari Traditional Foods that has the potential to be developed and introduced to the commercial world. The development of Silamak Pangek Pisang as traditional food is expected to be able to be an effort to increase family income. Therefore, it is necessary to transfer a technology and product development, so that these traditional food products and traditional foods can be accepted by many walks of life outside Nagari Kinari. Efforts can be made in developing traditional food products are modification of forms and processes. Form engineering is done by making Silamak Pangek Pisang that easier to consume with better appearance. While the process modification is done to make the Silamak Pangek Pisang less susceptible to damaged. The results show, a transfer of technology occurred where development of traditional food products create a more attractive appearance, and simpler to pack, consumed, with prolonged shelf life.

Abstract

Pengelolaan sumberdaya air untuk masa yang akan datang sangat berkaitan dengan ketersediaan data. Terdapat beberapa model hidrologi yang telah dikembangkan untuk kegiatan pengelolaan DAS, salah satu model yang bisa digunakan adalah model GR2M. Penelitian ini bertujuan untuk melihat sensitivitas DAS Air Dingin terhadap perubahan curah hujan yang terjadi menggunakan model GR2M. Variabel utama yang dibutuhkan pada model ini adalah data curah hujan dan data evapotranspirasi. Penelitian ini dilaksanakan pada DAS Air Dingin dengan outlet debit yang tersedia pada DAS Air Dingin. Tahapan awal dalam pelaksanaan penelitian ini yakninya pengolahan data curah hujan,, evapotranspirasi bulanan, lalu penentuan parameter X1 (kapasitas simpanan kelembaban tanah) dan X2 (koefisien penyerapan air tanah), dilanjutkan tahapan kalibrasi serta validasi model. Hasil penelitian menunjukan pada tahapan kalibrasi diperoleh hasil koefisien deterministik (R2) sebesar 0,7 dan koefisien efisiensi model Nash (Q) sebesar 0,71 sehingga model GR2M mampu mempresentasikan DAS Air Dingin dengan kriteria memuaskan.

Abstract

Perubahan penggunaan lahan dari lahan bervegetasi ke non vegetasi mengakibatkan besarnya limpasan (run off) sehingga debit menjadi meningkat terutama pada musim hujan. Penelitian ini dilakukan untuk menganalisis debit pada DAS Air Dingin menggunakan model SWAT dan apakah model SWAT dapat diterapkan dalam mempresentasikan debit pada DAS Air Dingin. Model SWAT memerlukan data iklim, peta dan data tanah, curah hujan, kelerengan dan peta penggunaan lahan. Adapun tahapan yang dilakukan yaitu penyiapan data dan peta, deliniasi DAS, pembentukan HRU, simulasi visualisasi, kalibrasi, dan simulasi dengan model SWAT terkalibrasi. Debit DAS Air Dingin berkisar antara 3 – 30 m3/s. Setelah dilakukan kalibrasi model SWAT dapat mempresentasikan keadaan hidrologi DAS Air Dingin dengan R2 0,76 dan NS 0,64 sehingga model SWAT yang dijalankan dapat dikategorikan memuaskan.

Abstract

Recent studies on agricultural waste as a potential precursor of biochar for heavy metals removal from aqueous solution had not considered exhausted coffee husk (ECH) as the potential one. It is well-known that the carbonization process influences the removal performance of biochar, particularly removal efficiency (RE). However, previous studies rarely considered the energy consumption during the carbonization process. The major objective of this study is to investigate the optimum carbonization parameter on ECH biochar for removal of ion Pb and Cu from economic stand point. The ECH biochar was produced at the different heating temperature (300 – 600°C) and heating time (30 – 120 minutes). In regard to specific cost of bio-sorption, the results showed that 500°C was the optimum heating temperature of ECH biochar for the Pb removal, while 600°C was the optimum one for the Cu removal. Furthermore, the heating time experimental outcomes suggested that the optimum heating time were 30 minutes for Pb removal and 120 minutes done Cu removal.  Key words: Biochar, carbonization temperature, carbonization time, exhausted coffee husk, specific energy cost

Abstract

The ideal entrepreneur figure requires human qualities that can be competitive. Upgrading humans into functional beings is insufficient to provide intelligence, skills or technical expertise. The primary priority needed is to build a good mental attitude. The training activity for making tomato jam is an opportunity for the orphanage children to increase their knowledge with the hope that their abilities and knowledge will develop and be applied in their lives. The motivation given to the training activities made the children feel that being a child in an orphanage was not an obstacle to continuing to develop. This service activity aims to educate orphanage children with training in making tomato jam as a provision for entrepreneurship. This community service activity was carried out in two stages, including lectures for delivering material and demonstrations of making tomato jam by the service team for orphanage children. The participants of this activity were 25 girls from the Al Ihsan Orphanage in Padang, West Sumatra. Based on the results of the questionnaire that the training participants filled out after the activity, showed that the orphanage children understood every process and practice in making tomato jam well.

Abstract

Margarin ialah produk pangan berupa lemak semi padat yang merupakan emulsi dengan tipe water in oil (w/o), dengan syarat mengandung lebih dari 80 % lemak. Lemak yang sering digunakan dalam pembuatan margarin adalah lemak kakao. Kelebihan penggunaan lemak kakao dalam pembuatan margarin selain mempunyai titik leleh yang tinggi, lemak kakao juga mengandung antioksidan yang tinggi. Namun, lemak kakao memiliki kelemahan pada harganya mahal sehingga perlu dicari alternatif minyak lain yang dapat digunakan sebagai campuran dalam pembuatan proses margarin. Salah satu minyak yang dapat dimanfaatkan sebagai campuran dalam pembuatan margarin adalah Virgin Coconut Oil (VCO). Penelitian ini memanfaatkan lemak kakao dan VCO sebagai bahan baku margarin. Tujuan penelitian ini adalah menganalisis nilai total fenol, antioksidan, lovastatin, angka lempeng total dan organoleptik margarin yang ditambahkan bubuk angkak sebagai pewarna alami. Rancangan Acak Lengkap (RAL) dengan perlakuan 5 taraf dan 3 kali ulangan digunakan sebagai rancangan penelitian.  Hasil penelitian menunjukkan penambahan bubuk angkak memberikan pengaruh terhadap nilai aktivitas antioksidan, total fenol, nilai angka lempeng total dan organoleptik. Penambahan bubuk angkak 4 % merupakan perlakuan yang terbaik dan paling disukai oleh panelis berdasarkan penilaian organoleptik dengan nilai aktivitas antioksidan 52,48 %, nilai total fenol sebesar 3,20 %; angka lempeng total 7,8 x 102 dan nilai lovastatin sebesar 1,68 ppm.

Abstract

Indonesia is recently facing the fertilizer issue as the shortage supply of subsidized fertilizers is aligned with the increasing price of non-subsidized ones. So, it eventually resulted in the unstable price of agricultural commodities. The issue has been becoming an obstacle for farmers practising agricultural cultivation, particularly those in Batang Tajongkek Village, Pariaman, West Sumatra Province. It needs to develop its potential for natural resources to make organic fertilizer from cow manure. Furthermore, the solution supports the government program on establishing integrated agriculture. Two activities were conducted to empower the area's potentials, which were counselling and composting demos, respectively. The aim was to ensure knowledge transfer to the farmers regarding the technology and critical method of cow manure composting. During the counselling, the farmers were facilitated to discuss the related issue of sustainable integrated agriculture, organic farming, and the making process of compost. Meanwhile, the process of composting from cow manure was also shown during the demo. Furthermore, the farmer was facilitated to analyze the content of produced compost, which was mainly focused on the content of nitrogen (N), phosphorous (P), and potassium (K). The activities have empowered the people in the area to self-produce cow manure compost as an organic fertilizer. The analysis of the produced compost showed that the compost has yet to fulfil the national standard of solid fertilizer (SNI 7763:2018) regarding the content of macronutrients (N + P2O5 + K2O). However, the pH of produced compost has met the national standard. The pH was 7.27, which ranges from 4-9. For the compost to be utilized by the community, it is necessary to mix other materials in its manufacture so that the resulting compost complies with SNI.

Abstract

The Aur Serumpun farmer group is one of the growing farmer groups with their corn farming business. This farmer group is in Simpang Alahan Mati District, Kab. Pasaman, West Sumatra Province. So far, farmers only sell corn that has been dried directly. The processing of corn is a basic need for members of farmer groups in order to have product diversification which can ultimately increase the economy of these farmers. In the community service activities that were carried out previously (in 2019), processed products from corn were introduced, namely tortilla chips. In the 2020-2022 activities, business development will be carried out from Aur Serumpun farmer groups in accordance with the policy directions set by the members of the farmer groups themselves. Therefore, a discussion group forum was held and the signing of a cooperation agreement regarding the study of the prospects for producing tortilla chips which would be carried out by the aur allied farmer groups. The development of food product production of trotilla chips is an independent initiative from farmer groups that can collaborate with academics in the Department of Agricultural Product Technology, Andalas University. It was agreed from the discussion group forum that the head of the farmer group would conduct a study and socialize to other members of the farmer group regarding alternative product diversification of the commonly produced corn commodity. Further evaluation of the prospects for the implementation of the tortilla chips production process will be carried out next year.

Abstract

In determining the utilization of the area, many government regulations have been made from the Central, Provincial, and Regional levels using a production data approach. However, it is getting different results with the same slice. The purpose of the study is to identify areas and determine priority agricultural commodities for food crops, horticulture, and plantation groups in Pasaman Regency. Analytical techniques used in Pasaman Regency are LQ analysis, shift share (SS) analysis, and field observation with a stakeholder approach. Based on the research, it is found that LQ and SS were able to determine the leading commodities of food crops, horticulture, and plantations in Pasaman Regency. The main food crop is corn, with the central development area in Tigo Nagari District. The superior horticultural crops and their development areas are chilies in Panti District and mangoes in Mapat Tunggul. Abstract

Alpukat merupakan salah satu buah yang memiliki umur simpan yang singkat, sehingga buah ini akan cepat rusak jika tidak diberikan perlakuan pascapanen seperti layu, terkelupas, lecet hingga busuk. Pemberian lilin carnauba merupakan salah satu usaha untuk mempertahankan mutu buah alpukat. Tujuan penelitian ini untuk menganalisis dan menentukan konsentrasi terbaik dari pelapisan dengan lilin carnauba terhadap mutu buah alpukat varietas Mega Paninggahan. Penelitian ini menggunakan metode eksperimen dengan menggunakan RAL (Rancangan Acak Lengkap) dengan beberapa konsentrasi pelapisan lilin yaitu 0%, 3%, 6%, dan 9% yang disimpan pada suhu ruang. Berdasarkan hasil penelitian dapat disimpulkan bahwa pelapisan lilin dengan konsentrasi 6% dengan umur simpan 11 hari adalah perlakuan konsentrasi terbaik dengan nilai kadar air sebesar 80,161%; susut bobot sebesar 4,406%; kekerasan sebesar 76,1 N/cm2; dan TPT sebesar 9,10 Brix; Ph 6,8; dan Vitamin C 38,3.
