Abstract

Analysis of lead (pb) in  snack  foods served using a cover and  without cover a round traffic light in the city of Medan in 2012. Snack foods such as fried bananas favored by many people. Food-borne illness cause of foods served does not eligible hygiene and food sanitation. Fried presented a round the traffic light is not served by closed container. The cover is estimated to effect pollution of lead (Pb) in the food. This study aimed to determine levels of lead (Pb) in the snack foods served using a cover and without it a round traffic light in the city of Medan in 2012. This study was descriptive research, to know the levels of lead (Pb) in the snack foods served using a cover and without it a round traffic light in the city of Medan in 2012. Results of this research showed there was all samples contained lead (Pb). Object of this research is 10 samples of fried bananas, consist of 5 samples were using a glass cover and 5 samples were without it. Highest levels of lead (Pb) is in fried foods served a round the traffic light of Pinang Baris, which is 2.89 ppm. Lowest levels of lead (Pb) is in fried foods served a round the traffic light of Komplek Tasbi, which is 2.04 ppm. Snack foods served using a cover was qualify by set under Threshold Limit Value and all levels of lead (Pb) in the fried banana without a cover a round the traffic light was unqualify by set under Regulation of BPOM RI No. 03725/B/SK/VII/89 a bout maximum limit of metal pollution in food. Contamination of lead (Pb) has occurred in snacks food served using a cover and without it a round traffic light in the city of Medan in 2012. Cover reduces the pollution of lead (Pb) in snack foods. Abstract

The waste treatment and participation of the trader in build a clean environment in basement of Pasar Petisah (market) of Medan in 2012. Market is a big source of waste as by product of buying and selling activities that produce the waste that unusable, uncomforted and disposed and did not occurred by itself. This research aims to study the waste treatment and participation of the trader in build a clean environment in basement of Pasar Petisah (market) of Medan. This  research is a descriptive survey that conducted at basement of Pasar Petisah Medan in 2012 in which the data was collected through observation and interview using questionnaire to 64 respondents. The results of research indicates that of 64 respondents, there are 33 (51.6%) who have waste container and 31 respondent (48.4%) have not waste container. The waste treatment based on storage of waste indicators is classified into did not fulfill the health requirement category, the collecting of waste in fulfill the health requirement category, while transportation and waste treatment in fulfill the health requirement category. The participation of the trader in supply the waste container is classified into medium category (51.6%), disposal of waste in medium category (56.3%), the payment of waste retribution in good category (100%) and cleaning rule is in good category (93.8%). The waste treatment at basement of pasar petisah already fulfill the health requirement and still deficient the participation from respondents did dispose the waste in the available waste container. The management of market must enforce a rule about the market cleaning to enforce the trader did not dispose the waste in the front of their kiosk and provide them with sanction if violate the rule and it must to increase the participation of the traders by provide them with guide, direction and information about sanitation and waste treatment that fulfill the health requirement. Abstract

Operation Of Hygiene Sanitation Salak Processing At PT. Agrina Parsalakan Village West Angkola Subdistrict South Tapanuli District In 2013. Efforts to control dietary factors, people, places and equipment that may or may cause illness or health problems, it is necessary hygiene sanitation in any food processing in order to avoid contamination. Salak (Salacca edulis) is a plant which its stalk close by midrib leaves, prickly on midrib and stems leaves, fleshy white fruit, blackish brown hard seeds. The manufacturing process of all kinds of processed salak using white sugar/sakarosa. Application of hygiene sanitation on food processing can make a better quality food product. The purpose of this research was to determine the implementation hygiene sanitation on salak manufacturing and analysis of artificial sweetener which are produced by PT. Agrina Parsalakan Village, West Angkola Subdistrict, South Tapanuli District in 2013. The research was descriptive survey to see the implementation of hygiene sanitation and laboratory analysis for determine the presence of artificial sweetener on salak manufacturing. The samples taken from types of processed salak which are produced by PT. Agrina Parsalakan Village, West Angkola Subdistrict, South Tapanuli District. The results showed that the principles of hygiene sanitation on salak manufacturing which qualified is the selection of raw materials, storage of raw materials, food storage and food transport. Whereas the food processing and food serving are not eligible, this refers to Kepmenkes RI No. 942/Menkes/SK/VII/2003. There are no artificial sweeteners in processed salak on six samples tested in the laboratory. Health Department need to make a comprehensive counseling and supervision by the relevant agencies (Health Department) about the importance of hygiene sanitation on snack, and development to the producer about the use of sweetener in food. Abstract

The correlation between the distance corral and the pigs waste processing and density of flies in the house with diarrhea dissease in toddlers in Sabulan Village Sitio-tio distric Samosir regency in 2013. Diarrhea disease is a major cause of high morbidity and mortality in humans, especially in young infants and toddlers. Globally, diarrhea causes 16% mortality, whereas in Indonesia, diarrhea is a major cause of death in young children, which is 25.2%. Diarrhea disease is generally influenced by the characteristics of the community and environmental health. One of the environment role in causing disease is as reservoir of agent with or without vector.This study used cross-sectional design with the sample was the entire population, which is 75 people. The inclusion criteria of the sample were those who have have toddler (1-4 years) and raise pigs. The data were analyzed using univariate analysis and Chi Square test as bivariare analysis. This study aimed to know the relationship between the distance of corral and the pigs waste treatment and the density of flies in the house with the incidence of diarrhea in toddlers. Results of research based on bivariate analysis with a rate of 95%, statistical test results obtained for corral distance  is ρ = 0179 (ρ> 0.05), the pigs waste processing  is ρ = 0.492 (ρ> 0.05) and  density flies in the house is ρ = 0.567 (ρ> 0.05).Based on research results, it was concluded that there was no correlation between the distance corral and the pigs waste processing as well as density of flies in the house with the incidence of diarrhea in toddlers. Abstract

Correlation the quality of  microbiological dug well water and management of domestic waste with the incidence of diarrhea at  family in Terjun Village District Marelan 2013. The source of clean water which is mostly used by society is dug well. Dug well is easily contaminated by bacterial from the source of pollution. It can cause the disease like diarrhea. Moreover, waste is the source of disease too and the breeding ground of vector like fly.The purpose of this research was to know correlation between the quality of microbiological water of dug well and description management of domestic waste with the incidence of diarrhea at family in Terjun Village District Marelan.This research used the cross sectional design, to know how the correlation the quality of  microbiological water of dug well with the incidence of diarrhea and description management of domestic waste. This population are family in environment 20. And do the examination of dug well  water in respondent’s house with taking sampel by purposive sampling.The Result showed that the quality of microbiological water  of  dug well are  the  Total of uneligible coliform is 73,30% of water samples  and the uneligible Escherichia coli is 90% of water samples.  All family (100%) do not seperation the waste, all family do not provide the eligible trash, method  of  waste destruction that good is 83,30% and not good  is 16,70%. Diarrhea happened in every member family is 33,30%. There is no corellation between  the quality of the microbiological water with the incidence of diarrhea (p=1,000) and (p=0,251). Puskesmas should be made the socialization to use the water  filter and the water sanitation. The society provide the eligible  trash, do separation the waste, and keep healthy behavior of  use the water. Keywords: the quality of microbiological water, management of waste, diarrhea

Abstract

Analysis of lead (Pb) on branded terasi and terasi producted at home industry were sold in some traditional markets in the Medan city in 2013. Based on composition, terasi (seasoning  food is made from fermented shrimp or fish mixed with salt),  was divided into fish terasi, shrimp terasi and paste mixture of both. From several previous studies proved that fish and shrimp including marine life which contaminated by heavy metals as a result of marine pollution. This study was descriptive research, to describe the levels of lead (Pb) in terasi, where the objects of study were composed of 10 samples of terasi consists 5 samples of branded terasi and 5 samples of unbranded terasi taken purposively as well as the accept daily intake (ADI) of the terasi. Determination of lead (Pb) using Atomic Absorption Spectrophotometry in Provincial Health Laboratory of North Sumatera.The results showed from five samples of branded terasi, there is one positive contains lead (Pb) (1.80 mg/kg) and didn’t qualify (BPOM’s maximum limit of 1.0 mg/kg), while the other four relatively safe because were under value detection tool (Pb <0.002 mg/kg). For the terasi samples that processed at home industry (unbranded), four samples contains lead (Pb), but only one that was above the maximum limit (1.88 mg/kg), and one sample under value detection tool. Recommended to the local Department of Health and the BPOM of Medan City in order to perform inspection terasi on the market mainly derived from heavy metal polluted waters of the region is quite high. Abstract

Salty mussel is not one of fast food that need further processing in order can be consumed. Salty mussel is always sold with the bright yellow and orange color in order to look fresh and interesting. But sometimes dyes used are dyes that are not safe to eat, so it so necessary to identify the type and level of dyes used whether qualified or not. This research is a descriptive research. Samples were taken in total sampling from the Central and Sukaramai market on Medan city, which amounts to 10 samples. And than, samples were examined in the Medan Health Laboratory. Examination conducted on the samples before and after washing. Dye analysis conducted by qualitative and quantitative test. The results showed that of the 10 samples were not washed, there were 9 samples that do not qualify for consumption because it contains a banned dye (Orange RN) and contain dyes that are allowed (sunset yellow and tetrazine) in the amount of 52-560 mg/kg who have exceeded the allowed limit 30 mg/kg. And the results of a study of a sample after washing showed that there is a decrease of dye concentration of 0.3 - 1.8 mg/kg. However, the results of the study remains that of the 10 samples after washing there are 9 samples that do not qualify for consumption and only 1 sample safely consumed by Permenkes RI No.722/Menkes/Per/IX/1988. Therefore, it is important to have monitoring, evaluation and counseling on the use of food additives in particular dyes that use is in accordance with the applicable regulations.

Abstract

Applying Galangal (Alpinia galanga) in Preserving The Meatballs. Meatballs are one of Indonesian favorite foods who have short preserving time. Handling these problems, the meatball producers and traders using harmful preservatives which have bad effects on people’s health who love to eat meatballs. The research’s purpose was to determine the ability of galangal (Alpinia galanga) in extending the meatballs preserving time. The research type was Quasy Experiment with a completely randomized design. Meatball samples were treated by adding galangal to its boiling process with concentration of 100 grams, 200 grams, 300 grams on each 250 grams meatball’s dough and 0 gram as a control in 3 l water. Each treatment performed 5 repetitions. The result showed an average meatballs preserving time at concentration of galangal 0 gram (control) is 19 hours 12 minutes, at concentration of 100 grams is 26 hours 24 minutes, at concentration of 200 grams is 24 hours 48 minutes, at concentration of 300 grams is 22 hours 24 minutes. Based on dependent t results showed a significant difference between treatments with range of galangal concentrations in extending the meatballs preserving time. The LSD test results showed that the concentration of galangal who can have the longest meatballs preserving time is at concentration of 100 grams galangal Thus, producers and traders can use galangal as meatballs preservative which are safe for health. Addition of ginger should be done when meatballs boiling water is not in boiling condition (± 50-60 oC) and it is suggested to use young galangal. Abstract

Batang Ayumi River is a river that flows through the Padangsidimpuan city. In Kantin Village are people living on the banks / river banks. This has the potential to affect the water quality of the river Batang Ayumi caused domestic waste (BPS, 2008). The research aims to study the behavior (knowledge, attitude, practice), the culture and the role of community leaders the Kantin village regarding respondent characteristics, Rod Ayumi river water quality before and after passing through the village canteen (BOD, COD, DO, Detergent, TSS, total Coliform and Colifecal) and relations between them. Types of analytic study with cross-sectional study design. Respondents are mothers who live right on the edge of the river Batang Ayumi numbered 64 people and the quality of the river water upstream and downstream in the Kantin Village. The results, there is a relationship between behavior, culture and assessment TOMA of water quality Batang Ayumi which chemical parameters (BOD, COD, DO, Detergents), physics parameter (TSS), microbiological parameters (total coliform and Colifecal). The behavioral significance of the parameter values ​​chemistry, physics and microbiology is p = 0.003 (P <0.05), the culture with chemistry parameter, physics parameter,  and microbiology parameter is p = 0.016 (P <0.05), with an assessment of the parameters TOMA chemistry parameter, physics parameter, and microbiology parameter is p = 0.002 (p <0.05). For government and community leaders is recommended to keep water quality of Batang Ayumi river by providing information through counseling and strict rules about building permits. For society is expected to care and comply the regulations of water-quality.
