Abstract

An investigation about Mercury metal content in marine sediment around Poboya stream has been done. The sediment samples were collected at 5 points of Poboya stream with 0; 15 and 30 days of time variations. The physical conditions of the water was analyzed i.e pH, temperature and salinity. The result showed that the lowest and the highest Mercury metal content (0,0103 and 0,185 mg/Kg) were found at point E and C respectively. It was found at the second and the first sampling accordingly. There was no significant increase of Mercury accumulation by time. In general, the Mercury metal content in the sediment around Poboya stream was still under government rule.

Abstract

The physicochemical propertis of forest honey (Apis dorsata) become one of the supporting qualities of honey. Good honey can be viewed from the quality of honey which refers to the Indonesian National Standard (SNI). Therefore, this research aims to determine the physicochemical properties of forest honey from the village of Bonto Manurung, Maros district, Tompobulu village, Pangkep district and Paranglompoa village, Gowa district in accordance with the SNI. The results showed that the best physicochemical properties of honey were from the village of Bonto Manurung, Gowa district which had a moisture content of 19.19 %b/b, ash content of 0.045 %b/b, viscosity of 14.82 poise , acidity is 42.43 mL N NaOH/kg, reducing sugar is 69 %b/b and HMF levels are 2.99 mg/kg. As for the analysis of metallic impurities, all samples examined forest honey is not contaminated by metals arsenic (As), cadmium (Cd) and lead (Pb).

Abstract

The investigation about of carboxymethyl cellulose (CMC) of Durian peel  (Durio zibethinus) cellulose has been done. The research aim is to determine the best ratio of sodium mono-chloroacetate toward cellulose and is to determine the reaction time in the synthesis of carboxymethyl cellulose of durian peel in order to obtain the highest substitution degree. The applied of ratio variations and reaction time were 5:5, 6:5, 7:5, 8:5, 9:5 grams and 1, 2, 3, 4, 5, respectively. The result showed that the best ratio of sodium mono-chloroacetate toward cellulose was 7:5 gram with yields and the substitution degree of 39.39% and 1.17, respectively. The best time reaction was found at 4 hours with yields and the substitution degree of 39.77 % and 1.2, respectively. Keywords: Durian peel, carboxymethyl cellulose, substitution degree.

Abstract

Telah dilakukan penelitian tentang pengaruh lama pengomposan terhadap tubuh buah dan kandungan gizi pada jamur tiram putih (Pleurotus ostreatus). Penelitian ini bertujuan untuk mengetahui waktu terbaik untuk pengomposan media tanam terhadap produksi tubuh buah jamur tiram putih dan untuk mengetahui kandungan gizi produk tubuh buah jamur tiram putih. Penelitian didesain menggunakan Rancangan Acak Lengkap (RAL) yang terdiri dari lima perlakuan dan tiga kali pengulangan pada taraf kepercayaan 95 %. Penelitian dilakukan dengan lama pengomposan 1, 3, 5, 7 dan 9 hari. Hasil penelitian menunjukkan bahwa waktu terbaik untuk pengomposan media tanam ialah lama pengomposan 5 hari dengan berat tubuh buah total sebesar 84,050 g untuk 3 kali panen selama 45 hari. Kandungan gizi tubuh buah jamur (terhadap berat kering) yang dihasilkan adalah protein 38,57%, karbohidrat 47,92%, lemak 4,34% dan abu 9,16%.Kata kunci: Lama pengomposan, kandungan gizi, jamur tiram putih (Pleurotus ostreatus)

Abstract

Miana (Coleus scutellarioides (L) Benth.) leaves contain anthocyanin compounds that can be used to detect formalin in food, including wet noodles. The purpose of this study was to determine the highest levels of anthocyanin extract of miana leaves produced using the ultrasonic assisted extraction (UAE) method with variations in extration time and to determine the potential of miana leaf anthocyanin compounds in detecting formaldehyde content in wet noodles. The extraction method used is UAE with 5 variations of extraction time. Anthocyanin levels were measured using a UV-VIS Spectrophotometer at wavelengths of 510 and 700 nm using differential pH, namely pH 1 and pH 4.5. Formalin identification was carried out on wet noodles with the concentration of 0.25; 0.5; 1; and 2 ppm. The results obtained the highest level of anthocyanin in miana leaves, namely 196,66 mg/L wich was extracted for 10 minutes wich could be used for identification of formalin in wet noodles. Abstract

Various bioactivities on natural compounds, the antioxidant potency can provide a broad spectrum in their utilization and development into medicinal raw material. One of the plants that have potency for antioxidant activity is the Kemerakan sapenit (Bauhinia latisilqua) plant. The study aimed to isolate, characterize, and determine the antioxidant activity of a compound isolated in the ethyl acetate extract of the stem bark of B. latisilqua. This research includes extraction, fractionation, purification, and elucidation of secondary metabolite structure as well as testing its antioxidant activity. Extraction was carried out by maceration technique, fractionation, and purification using liquid vacuum chromatography and gravitation column chromatography. The elucidation of the structural compound was determined by analysis of the UV, IR, and NMR spectra. The antioxidant test was performed using the DPPH method. Based on the analysis of the spectral data, the isolated compound was catechin, a derivative of flavan-3-ol. Antioxidant test on catechin compound showed a strong antioxidant with an IC50 value of 35.01 µg /mL (IC50 for positive control, ascorbic acid, of 42.94 µg /mL).

Abstract

Berdasarkan survei, pengetahuan masyarakat tentang bahaya formalin dan cara mendeteksinya masih terbatas karena pengujian formalin biasanya memerlukan laboratorium. Untuk itu, pelatihan diberikan dengan memanfaatkan kulit buah naga sebagai bahan alami yang sederhana dan mudah diakses. Program pengabdian masyarakat ini bertujuan meningkatkan kemampuan ibu-ibu di Majelis Taklim Permata Babul Maghfirah, Majene, dalam mendeteksi kandungan formalin pada bahan pangan secara mandiri. Kegiatan ini meliputi beberapa tahapan: persiapan melalui komunikasi dengan mitra, pelaksanaan berupa penjelasan teknik deteksi formalin dan eksperimen langsung, serta monitoring dan evaluasi untuk mengukur keberhasilan pelatihan. Hasilnya menunjukkan peningkatan pemahaman dan keterampilan peserta hingga 80%. Peserta mampu melakukan metode deteksi sederhana secara mandiri dan mengidentifikasi bahan pangan yang dicurigai mengandung formalin. Kesimpulannya, pelatihan ini berhasil meningkatkan pengetahuan dan keterampilan praktis peserta dalam mendeteksi formalin menggunakan bahan alami. Metode sederhana ini terbukti efektif dan mudah diterapkan dalam kehidupan sehari-hari. Disarankan agar program serupa diperluas dengan memanfaatkan bahan alami lain untuk mendeteksi zat berbahaya serta melibatkan peserta yang lebih beragam, termasuk laki-laki dan generasi muda, guna meningkatkan kesadaran dan keterampilan masyarakat secara luas.

Abstract

Gelatin is a type of protein resulting from the partial hydrolysis of collagen found in animals' skin, bones, and connective tissue. Gelatin is widely used in the food and pharmaceutical industries. Using Tongkol fish bones as a source of gelatin is a safe alternative for the human body and halal for consumption. Characteristics of gelatin from the bone waste of Tongkol fish extracted with starfruit acid are important to know, therefore it can be used as a substitute for cow and pork skin. The purpose of this study was to determine the characteristics of Tongkol fish bone gelatin extracted with tamarind starfruit. The extraction method was used in this research using 5 levels of starfruit acid concentration (10%, 20%, 30%, 40%, 50%) with the ratio of solvent and fish bones 1: 4 (w/v). The use of starfruit acid with a concentration of 40% produced the highest yield with the characteristics of the resulting gelatin having a brownish yellow color, yield of 1.43%, water content of 17%, ash content of 15%, degree of acidity (pH) of 6.5 and protein content of 47.98%.
