Abstract

This research aims to explore and determine the relationship between goods and services expenditures, capital expenditures,and equity funds. It also determines both simultaneous and partial impacts of goods and services, and capital expenditures on equity funds. Sample in this research consists of 33 governmental institutions in palu city, which is selected through purposive sampling technique, or selection based on ‘jugment’. The data analyzed quantitatively with multiple linear regressions analysis. The result indicates that equity funds decreased due to spending on good and service and capital during one accounting period. Simultaneous test shows that good and service, and capital expenditure have significant  impact on equity funds in 33 govermental institutions. While partial test  evidences that espenditures partially have significant impact on equity  funds in 33 govermental institutions in palu. Coefficient determinant shows adjusted R-Square value of 0,782 that indicates that 78,20% of equity funds impacted by spending on goods and service, capital,  while the remining of 21,80% is impacted by other variables that are not studied.

Abstract

Telah dilakukan penelitian mengenai ?Retensi Karoten Dalam Berbagai Produk Olahan Labu Kuning (Cucurbita moschata Durch)?.Penelitian ini bertujuan untuk mengetahui retensi karoten labu kuning yang diolah menjadi kerupuk, mie dan biskuit fungsional. Pencapaian tujuan dilakukan melalui tiga cara pengolahan dari setiap produk olahan labu kuning. Hasil penelitian menunjukkan retensi karoten dari masing-masing produk olahan yaitu kerupuk 79,44%, biskuit 71,27% dan mie 64,46%. Faktor pengolahan seperti suhu dan waktu mempengaruhi retensi karoten produk olahan labu kuning

Abstract

Penelitian ?Kandungan Kalsium (Ca) dan Protein Pada Sari Jagung Manis (Zea mays saccharata) dari Berbagai Penambahan Kulit Pisang (Musa acuminata balbisiana Colla)? bertujuan untuk mengetahui rasio jagung manis dengan kulit pisang sehingga menghasilkan formulasi sari jagung manis terbaik, dan tingkat kesukaan masyarakat terhadap sari jagung manis yang terbaik. Rancangan penelitian yang diterapkan terhadap kandungan kalsium dan protein menggunakan rancangan acak lengkap (RAL) dengan tiga taraf perlakuan rasio jagung manis dan kulit pisang. Terdapat dua kali pengulangan untuk masing-masing taraf sehingga didapatkan 6 unit percobaan. Hasil yang diperoleh kandungan kalsium tertinggi 45,440 mg pada rasio 3:1. Pada kandungan protein terbaik diperoleh 1,23% pada rasio 3:1. Hasil uji organoleptik pada parameter rasa, warna yang agak disukai yaitu pada rasio 3:1, dan pada aroma yang agak tidak disukai yaitu pada rasio 3:1.

Abstract

Telah dilakukan penelitian aktivitas ekstrak enzim amilase kecambah biji jagung ketan pada berbagai konsentrasi enzim dan waktu reaksi dengan menggunakan pati ubi kayu. Penelitian ini dilakukan sebanyak dua kali ulangan dengan menggunakan rancangan acak lengkap (RAL) dengan 6 variasi konsentrasi enzim (0,25%, 0,50%, 0,75%, 1,00%, 1,25%, 1,50%) dan waktu hidrolisis (0,5; 1; 1,5; 2; 2,5; 3 jam). Kadar glukosa yang dihasilkan dianalisis menggunakan metode DNS (Dinitrosalisilat). Hasil penelitian menunjukkan bahwa konsentrasi enzim tertinggi diperoleh pada konsentrasi enzim 1,25% dengan kadar glukosa yang dihasilkan sebesar 2.350 ppm dan waktu hidrolisis terbaik diperoleh pada waktu 3 jam dengan kadar glukosa yang dihasilkan sebesar 3.112,5 ppm

Abstract

This research aim to determine rate of total phenolic and activity of antioxidant of ellipse and circular watermelon peel juice. Method which used in examination of rate total phenolic that is method of Folin_Ciocalteu and activity of antioxidant use method of DPPH. Result of which is obtained from examination rate of phenolic circularwatermelon peel heavily 1,4 kg is 18,702% and ellipse watermelon peel heavily is 1,9 kg is 19,168%. Activity of antioxidant with value of IC50 of circular watermelon 214,369 ppm and ellipse watermelon 376,266 ppm. Base on value of IC50, both of sample that mentioned appertained weak antioxidant.

Abstract

This research was about the useofactive charcoal of the banana peel (Musa normalis) as adsorbent to degrade peroxide and free faty acid of the used cooking oil. The aims of thisresearch was to determine the best rasio of active charcoal of the banana peel as adsorbent, and the best concentration of NaOH as activator to reduceperoxideand free faty acid of the used cooking oil. This research used 5 level oftreatmentswhich based on CRD, the ratio variation were 2.5, 5.0, 7.5, 10.0 and 12.5 % and the concentrations of NaOH variation were 0.125, 0.25, 0.5, 1 and 2 N. The result showed that the best ratio was occurred in the 10.0 % and the concentration of 1 N NaOH. This value indicated that the banana peel was an adsorben, which can be used inincrease quality of the used cooking oil.

Abstract

Telah dilakukan penelitian tentang analisis retensi antosianin dalam proses pembuatan dan penyimpanan bubur instan dari ubi jalar ungu (Ipomoea batatas). Penelitian ini bertujuan untuk mengetahui retensi antosianin dalam bubur instan ubi jalar ungu selama proses pembuatan dan penyimpanan serta untuk mengetahui umur simpan bubur instan pada suhu ruang. Umur simpan ditentukan menggunakan model kinetika reaksi. Analisis tingkat kerusakan antosianin pada bubur instan dilakukan setiap 7 hari selama 70 hari yang diterapkan pada pH yang berbeda yaitu pH 1,0 dan pH 4,5. Panjang gelombang yang digunakan untuk mengukur serapan yaitu 510 nm dan 700 nm. Hasil yang diperoleh menunjukkan tingkat kerusakan antosianin selama pembuatan bubur instan adalah 13,14%, retensi antosianin tanpa penyimpanan adalah 86,86% dan pada hari ke-70 adalah 29,47% serta umur simpan bubur instan ubi jalar ungu adalah 78,20 hari

Abstract

Biosurfaktan palmitin etanolamida diperoleh dari reaksi antara asam palmitat dan etanolamina dengan menggunakan katalis enzim lipase imobil getah pepaya dan pelarut organik n-heksan. Pengaruh enzim lipase dapat dianalisa dengan menggunakan katalis enzim lipase ekstrak getah pepaya yang telah diimobilisasi dan reaksi tanpa katalis sebagai pembanding. Telah dilakukan tiga variasi untuk mendapatkan kondisi optimum reaksi masing-masing adalah variasi waktu, konsentrasi enzim imobil dan rasio asam palmitat terhadap etanol amida. Dari ketiga variasi tersebut maka waktu 72 jam, 12,5% enzim imobil dan rasio 1 : 7 memberikan hasil yang optimal dan hasil dilihat dari besarnya bilangan ester yang diperoleh

Abstract

Study about the Utilization of corn cob waste (Zea mays) for Bioethanol production using immobilized yeast cells repeated used has been done. The aim of this research was to find both the ratio of sulfuric acid to corn cob wheat and the hydrolysis time in order to get the high sugars content, and to know the activity of the immobilized yeast cell for alkohol content during repeated use. It was done by apply  5 levels of surfuric acid (50%) ratio to corn cob wheat and 5 levels of hydrolysis. It was 1 : 1 (A), 2 : 1 (B), 3 : 1 (C), 4 : 1 (D), and 5 : 1 (E) based on v/b and 0,5; 1;  1,5;  2; and 2,5 hours respectively. The result showed that the best ratio of sulfuric acid to corn cob wheat was 5 : 1 (v/b), it produced the sugars content for about 41,63%. While the best hydrolysis time was 1,5 hours and it gaved 43,75% of sugars content. The sugar Fermentation was done in 48 hours. The activity of immobilized yeast cell using sulfuric acid hydrolysis product getting decreased in repeated used, and there was no alcohol producted at the fourth time of immobilized yeast cell used.
