Abstract

Abstract

Abstract

Food safety is a crucial aspect that must be considered in the production of processed foods to ensure the quality and health of products consumed by the public. East Lombok Regency has several Fish Processing and Marketing Groups (Poklahsar) that require capacity building through food safety training. This activity aims to provide understanding and skills to Poklahsar in three coastal villages, namely Sugian Village, Labuhan Haji Village, and Tanjung Luar Village, regarding good food safety practices. Through pre-test stages, material delivery, and post-test, this training is expected to enhance participants' knowledge of food safety and assist them in obtaining the necessary certification for product legality. The results of the activity showed an increase in participants' understanding of food safety, which is an essential prerequisite for obtaining a Home Industry Food Production (PIRT) permit. This legality will support the broader market reach of Poklahsar products, both locally and nationally.

Abstract

The Alas Strait is a marine area with abundant potential of octopus (Octopus cyanea), serving as a primary livelihood source for coastal communities in Seruni Mumbul and Seriwe Villages, East Lombok Regency. However, the lack of catch landing data has become a major challenge in achieving sustainable fisheries management. This activity aimed to enhance community capacity and participation in recording octopus landing data through a participatory approach. The method consisted of two main stages: socialization and technical training. The results showed an improvement in community understanding of the importance of fisheries data, as well as their ability to routinely record catch information, including the number, size, location, and time of landings. In addition, local collectors were involved as they have direct access to fishers’ catches. The data collected are valuable as a basis for management policies, such as the establishment of conservation zones and seasonal closures. This activity strengthened the role of the community as an essential part of the fisheries resource management system. The findings suggest that community involvement in octopus landing data collection directly supports the development of a participatory, adaptive, and sustainable management system.

Abstract

Jerowaru Village is the largest center for rebon shrimp paste production in East Lombok. The traditional sun-drying process, which depends on weather conditions, often hinders production and reduces product quality. In addition, the group’s business management lacks the ability to determine accurate production costs. These issues lead to low efficiency and profitability, thus requiring technological innovation and improved business management capacity. This program aims to improve production effectiveness and business management of the Askia Duta Group through the implementation of the HygieDry Rectangular system, CPPOB training, and Excel-based cost calculation. The methods included program socialization, CPPOB training, cost of goods sold (COGS) training, implementation of the HygieDry Rectangular system, mentoring, and evaluation. Evaluation was carried out using pre- and post-tests and field observations to assess knowledge improvement and production capacity changes. The CPPOB training increased participants’ knowledge scores to 80–100%, while the COGS training achieved similar improvements. The implementation of the HygieDry Rectangular system increased production capacity from 25 kg to 100 kg per batch, accelerated drying by 30%, and produced more hygienic products. The group’s ability to calculate costs and determine selling prices also improved significantly. The program enhanced product quality, reduced production time, and is projected to increase revenue by 20–30% within six months. The program successfully improved production capacity, product quality, and business management skills, strengthening the competitiveness and sustainability of coastal MSMEs.

Abstract

This community service activity was conducted to enhance the capacity of the Fish Processing and Marketing Group (Poklahsar) Amertha Bahari in Padak Guar Village, Sambelia District, East Lombok Regency. Coastal communities often face challenges in optimizing the economic value of fishery resources due to limited processing skills, insufficient understanding of food safety standards, and weak capacity in basic business management. These conditions result in low value-added fishery products and limited income opportunities. Therefore, this program aimed to improve participants’ knowledge and skills in fishery product processing, food safety practices, product diversification, and cost of production calculation. The activity was implemented using a participatory training approach that combined theoretical explanations and practical sessions. The program was carried out in one day and included stages of preparation, material delivery, hands-on practice, and evaluation. Training materials covered food safety standards, hygienic handling of fishery products, processing techniques for fish-based products such as fish crackers and fish balls, and calculation of cost of production (HPP) as a basis for determining appropriate selling prices. Evaluation was conducted through observation of participant engagement, assessment of skill mastery during practical sessions, and interactive discussions. The results showed an improvement in participants’ understanding of food safety principles, processing procedures, and basic cost calculations. Participants were able to independently practice the production of fish crackers and fish balls and demonstrated readiness to diversify products into other fish-based processed foods. Overall, this activity contributed positively to strengthening community capacity, increasing the value addition of fishery products, and supporting sustainable livelihoods. Continued mentoring and institutional support are recommended to ensure the long-term sustainability of similar community service programs.
