Abstract

Introduction: Adolescents need higher nutrition because of significant physical growth and body development, so adolescents need adequate food not only in terms of quantity but also in terms of quality. Adolescents tend to do the wrong eating behavior, that is the nutrients consumed do not suit their needs. Purpose: This study aims to determine the level of consumption and nutritional status of boarding school students at SMAN 5 Gowa. Material and Method: This type of research is observational with a descriptive research design. The sample of this study were 139 people using the Proportionate Stratified Random Sampling technique. Retrieval of consumption level data using 24-hour recall method. The determination of nutritional status is obtained from BMI / U parameters. Data processing and analysis in this research is univariate. Results: The results of the analysis revealed that the level of consumption for the respondents' macronutrient intake was still lacking namely less energy intake of 90.6%, less carbohydrates by 93.5%, less fat by 88.5% and less protein by 73.4%. The micronutrient intake of respondents was also lacking, namely vitamin A intake by 66.2%, vitamin B1 lacking by 94.2%, vitamin B12 by 88.5%, folate less by 99.3%, calcium less by 97.8%, iron less by 92.8% and zinc less by 92.8%. Whereas the nutritional status of respondents was classified as normal at 64.7%, very thin at 2.2% and obesity at 4.3%. Conclusion: The level of consumption of respondents for macro and micronutrient intake is still less than the recommended RDA needs and the respondent's nutritional status is normal.

Abstract

Praktik pemberian makanan yang tidak tepat dapat mengakibatkan malnutrisi. Jenis Malnutrisi pada balita di Indonesia adalah perawakan pendek (stunted) dan sangat pendek (severely stunted). Dusun 5 Kambuno Desa Lempe Kabupaten Toli-Toli merupakan salah satu wilayah yang belum terbebas dari permasalahan balita stunting. Dari hasil observasi didapatkan beberapa pemicu terjadinya stunting ialah kurangnya pengetahuan ibu terkait pentingnya pola makan gizi seimbang serta jarangnya ibu membawa balitanya ke posyandu untuk memeriksakan kesehatan. Oleh karena itu, untuk mengatasi permasalahan tersebut tim pengabdian mengusulkan alternatif melalui kegiatan dengan topik edukasi pola makan gizi seimbang dan pemberian PMT. Tujuan pengabdian yaitu memberikan pengetahuan kepada ibu balita terkait pola makan gizi seimbang dan pentingnya pemberian PMT untuk pencegahan stunting. Metode pengabdian yaitu melalukan pretest, edukasi media leaflet, pos-test, dan pemberian PMT. Sasaran pengabdian adalah ibu yang memiliki balita. Dari hasil evaluasi didapatkan  didapatkan 9 ibu balita menjawab post-test dengan benar semua (100%).

Abstract

Data on nutritional problems that are a factor in developmental delays at the Healthy Child Posyandu in Koto Mesjid Village include 0.024% malnutrition, 0.032% undernutrition, 0.080% overnutrition, 0% very short nutrition and 0% short nutrition, 0% very thin nutrition and 0% thin nutrition and 0.016% fat nutrition. The purpose of the study was to determine the correlation of nutritional status with the development of toddlers in healthy children's posyandu in Koto Mesjid Village. This study is an observational analytic quantitative study with a cross sectional design. The research location was in Koto Mesjid Village in 2023. The sample in this study amounted to 95 people. The sample is mothers who have toddlers in the village of Koto Mesjid. The sampling technique was purposive sampling. Data collection techniques using a research questionnaire. Data analysis was performed univariate and bivariate using the SPSS program. The results showed there was a relationship between nutritional status and the development of toddlers with a p value of 0.039. It is recommended that families should pay more attention to nutritional intake, so that children can grow and develop well in health.Keywords: Toddlers, Malnutrition, Nutritional Status.

Abstract

AbstrakStunting adalah masalah gizi kronis yang terjadi pada anak-anak akibat kekurangan gizi terutama pada 1000 Hari Pertama Kehidupan (HPK). Di Kabupaten Sigi prevalensi angka stunting sebesar 26,4%, dengan Desa Tinggede sebagai salah satu desa dengan stunting tertinggi. Kegiatan ini bertujuan untuk mencegah stunting melalui edukasi gizi dan diversifikasi pangan lokal di Desa Tinggede. Kegiatan dilakukan dengan memberikan penyuluhan tentang stunting dan pelatihan diversifikasi pangan lokal pada kader, dengan fokus pada pengolahan daun kelor menjadi 10 menu jenis makanan bergizi. Hasil menunjukkan bahwa adanya peningkatan pengetahuan dan keterampilan peserta tentang pentingnya gizi dan cara mengolah daun kelor menjadi berbagai makanan yang bergizi. Meskipun hasil pre-test dan post-test menunjukkan peningkatan yang minimal, antusiasme peserta menunjukkan kesadaran akan pentingnya diversifikasi pangan lokal. Dalam jangka panjang, diharapkan kegiatan ini dapat menurunkan angka stunting di Desa Tinggede dengan memperbaiki pola makan dan meningkatkan konsumsi makanan bergizi. Kata kunci: daun kelor; diversifikasi pangan; stunting. AbstractStunting is a chronic nutritional problem that occurs in children as a result of malnutrition especially in the First 1000 Days of Life (HPK). In Sigi Regency, the prevalence of stunting is 26.4%, with Tinggede Village as one of the villages with the highest stunting. This activity aims to prevent stunting through nutrition education and diversification of local food in Tinggede Village. Activities are carried out by providing mentoring on stunting and local food diversification training, focusing on the processing of moringa leaves into 10 nutritious food types menus. Results showed that there was an increase in participants' knowledge and skills about the importance of nutrition and how to process moringa leaves into a variety of nutritious foods. Although pre-test and post-test results showed minimal improvement, participants' enthusiasm indicated an awareness of the importance of diversifying local food. In the long term, it is hoped that this activity can reduce stunting rates in Tinggede Village by improving diet and increasing consumption of nutritious food. Keywords: moringa leaves; food diversification; stunting.

Abstract

Iron anemia is the biggest macro nutritional problem in Indonesia, which occurs in toddlers, pregnant women and adolescent girls. Adolescent girls with anemia are at risk of giving birth to LBW babies (<2500 grams), giving birth to premature babies, neonatal infections and death in the baby's mother during delivery. The aim of this study was to analyze the relationship between screen time and sleep quality with hemoglobin levels in adolescent girls.  This research method uses quantitative observational research with a cross-sectional design and a sample size of 76 respondents using a purposive sampling technique. The results of this study show that 55 respondents (72.4%) had normal hemoglobin levels and 21 respondents (27.6%) had poor hemoglobin levels. The bad screen time category was 40 respondents (52.6%) and the good one was 36 respondents (47.4%). And the category of poor sleep quality was 57 respondents (75.0%) and good sleep quality was 19 respondents (25%). The results of this study showed that there was no relationship between screen time and sleep quality and hemoglobin levels in young women at SMA Karya Bakti and SMKN 6 Palu.

Abstract

SDGs Desa menjadi acuan utama pembangunan jangka menengah desa seluruh Indonesia. Dalam pencapaiannya perlu memerhatikan banyak aspek seperti kesehatan dan sanitasi masyarakat. Tujuan Penelitian ini masyarakat bisa mengalami perubahan positif yang berkelanjutan dan memberikan manfaat yang nyata bagi kesejahteraan masyarakatnya terutama dalam aspek kesehatan. Metode Penelitian yang digunakan yaitu pendidikan kesehatan masyarakat. Hasil Penelitian didapatkan bahwa sebelum dilakukan edukasi didapatkan pre-test ada 17 warga yang pengetahuan baik (81%), ada 3 warga yang pengetahuan cukup (14%), dan ada 1 warga yang pengetahuan kurang (5%). Tingkat pengetahuan masyarakat dari post-test setelah di berikan penyuluhan terkait masalah diperoleh hasil dari 21 warga terdapat 19 warga yang tingkat pengetahuan baik yaitu 90%, dan 2 warga yang tingkat pengetahuannya cukup yaitu 10%. Kesimpulan Penelitian berdasarkan hasil program kerja yang dilaksanakan memiliki keberhasilan dalam meningkatkan pengetahuan masyarakat dalam bentuk penyuluhan atau edukasi kesehatan tentang penyakit hipertensi dan pengolahan sampah.

Abstract

Tujuan penelitian ini untuk mengetahui penambahan tepung bekatul dan daun krokot erhadap penilaian organoleptik hedonic, dan penilaian proksimat (kadar air, kadar abu, kadar karbohidrat, kadar protein, kadar lemak, vitamin c). Metode penelitian  ini menggunakan rancangan acak lengkap (RAL) yang terdiri dari 3 jenis perlakuan dan 2 kali ulangan yaitu F1 (80% : 20%) F2 (70% : 30%); F3 (60% : 40%); Sehingga menghasilkan 6 unit perlakuan. Data di analisis menggunakan Analisys Of  Varian (ANOVA) dan uji lanjut Duncan Multiple Range Test (DMRT) pada taraf kepercayaan 95%. Penambahan tepung bekatul dan daun krokot menunjukan perbedaan yang signifikan pada analisis kadar air, kadar abu, kadar lemak, kadar karbohidrat, dan kadar vitamin C. Adapun formula yang terpilih pada penilitian ini adalah F1 yang  paling dapat diterima dan disukai panelis dalam penilaian organoleptik hedonic. Pada penelitian lanjutan produk ini perlu peningkatan protein dan pengurangan konsentrasi tepung yang lebih rendah, agar dapat mencapai SNI produk Nuget.

Abstract

Tujuan penelitian ini untuk mengetahui formulasi terbaik dari stik keju dangke kelor terhadap uji organoleptik hedonik (warna, aroma, rasa, dan tekstur) dan uji proksimat (kadar air, kadar abu, kadar lemak, kadar protein, kadar karbohidrat). Metode penelitian  dengan menggunakan rancangan acak lengkap (RAL) yang terdiri dari 3 jenis perlakuan F1 (60%:40%), F2 (50%:50%), F3 (40%:60%) dan 2 kali ulangan sehingga menghasilkan 6 unit perlakuan. Data di analisis menggunakan uji Man-Whitney, uji Kruskal-Wallis, Analisys Of Varian (ANOVA) dan uji lanjut Duncan Multiple Range Test (DMRT) pada taraf kepercayaan 95%. Hasil analisis uji organoleptik didapatkan terdapat pengaruh yang signifikan antara warna dan aroma pada setiap perlakuan (p<0,05). Perlakuan F1 merupakan perlakuan yang paling banyak dipilih oleh panelis dengan kategori suka.  Hasil analisis proksimat pada perlakuan terpilih didapatkan kadar air sebesar 1,98%, kadar abu sebesar 1.07%, kadar lemak sebesar 42,93%, kadar protein sebesar 6,21%, kadar karbohidrat sebesar 53,60%. Perlu diperhatikan cara pengolahan dan bahan baku yang dapat menurunkan kadar lemak dari produk.

Abstract

Adolescence is an important phase characterized by physical and behavioral changes, including diet and sleep, which can affect nutritional status. Frequency of fast food consumption and sleep duration are two factors that are thought to contribute to the imbalance of adolescent nutritional status. The purpose of this study was to analyze the relationship between the frequency of fast food consumption and sleep duration with nutritional status in students of SMA Negeri 6 Palu City. This study uses a quantitative approach with cross-sectional design. The population in this study active students in SMA Negeri 6 Palu city from Grade 10 to Grade 12 amounted to 841 students, with a Simple Random Sampling technique, : the results showed that most respondents were female (64.8%), age 16 years (51.7%), as many as (47.2%) students included in the category always consume fast food and (46.1%) have more sleep duration. Most nutritional Status is in the category of over nutrition (39.3%). There was a relationship between fast food consumption and nutritional status (p = 0.010) and there was no relationship between sleep duration and nutritional status (p = 0.813).
