Abstract

Tuna (Thunnus sp.) is a rich source of animal protein, containing high levels of protein and omega-3 fatty acids, particularly EPA and DHA, and has fine meat fiber. Therefore, tuna fish is an excellent source of animal protein for producing complementary foods to meet the protein needs of breastfed infants and children under five. This study aims to assess the differences in average height and weight of children according to age before and after receiving fish-based and processed complementary foods. The research involved 25 stunted children aged 6-36 months, who were given. Fish-based complementary food and processed fish complementary food (meatballs and nuggets) twice a day for 36 days. Data on children's height and weight were collected before and after the intervention. A paired t-test with a significance level of 95% (alpha 0.05) was used to analyze the data. The results showed a significant difference in children's average height and weight before and after the intervention of fish-based and processed complementary foods. On average, the children's height increased by 3.22 cm, and their weight increased by 1.12 kg after receiving the fish-based complementary foods.

Abstract

Nuruwe Village is one of the centers for producing seaweed in the Western Part of Seram Regency, but it is still limited in products diversifying based on seaweed. This activity aims to provide an understanding and increase the knowledge of the processors in the village of Nuruwe about various types of processed products derived from seaweed. The method of implementing community service activities is counseling and training. Submission of material on the benefits of seaweed and its extraction results as well as applications in the manufacture of food and non-food products. The result of the activity is that the processors are very enthusiastic about the extension activities and the products because they can be directly used and easy to produced

Abstract

Waai Vilage is one of the of fresh fish producers located in Salahutu District, Maluku Tengah Regency. The availability of fresh fish for community needs is an important factor that must be fulfill by fishermen and seller so that an understanding of handling fish is very importance when it’s caught to the hands of consumers remains at a good and prime level of freshness. The importance of post-capture handling fish will have a positive impact on fishermen, seller and consumers because it will provide value added to the fish, the selling value will be higher, the nutrition of the fish caught will also be maintained so that it will affect further processed products.

Abstract

The use of carbon monoxide gas in handling export-quality tuna loins gas has been prohibited by the FDA due to its residual effects. As an alternative, filtered smoke derived from the combustion of hardwood has been proposed. However, this gas is expensive and primarily produced in Hawaii. During the production of liquid smoke, a non-condensable gas is generated that contains carbon monoxide and may serve to preserve quality, including color and myoglobin content. The aim of this research was to identify the components of non-condensable gas and evaluate its application on tuna loins. A descriptive method was employed, and the data were presented in images and tables. The materials used included sago waste (waa sagu) and tuna loins (Thunnus albacares). Observations involved analyzing the composition of the non-condensable gas from sago waste, as well as changes in color and myoglobin content of tuna loins treated with the gas. The analysis identified 12 components in the non-condensable gas, including nitrogen and carbon monoxide. Tuna loins treated with this gas maintained a red color and a myoglobin content of 49.31±0.70 mg %.
