Abstract

Overcoming dependence on wheat flour as raw material, researchers want to develop a wet noodle product by using mocaf flour to substitute wheat flour and adding pumpkin flour to increase the nutritional value of wet noodles, namely potassium minerals as an alternative main food that can help lower blood pressure in hypertension sufferers.To determine the effect of the proportion of mocaf flour and pumpkin flour on the physicochemical quality of wet noodles. This type of research uses an experimental study design with a Completely Randomized Design (CRD). The comparison of the proportions of mocaf flour and pumpkin flour is P0 (100g : 0g), P1 (95g : 5g), P2 (90g :10g), P3 (85 g :15g), P4 (80g :20g). Physical quality and chemical quality test data were analyzed using the Independent T-test. The research results show that the percent water absorption capacity; percent elongation; potassium levels; and sodium levels, namely P0 (58.5% ; 19.8% ; 16.5mg/100 g; 5.64 mg/100g), P2 (70.3% ; 8.8% ; 55.95 mg/100g ; 5.55 mg/100g). The best treatment P2 does not meet the adult RDA percentage and cannot be classified as high in potassium. Wet noodle products cannot yet be used as an alternative to foods high in potassium for preventing hypertension.

Abstract

Berat badan kurang (Underweight) merupakan permasalahan gizi yang diidentifikasi dengan menggunakan indikator berat badan menurut umur (BB/U). Tercatat angka kasus underweight  di wilayah kerja Puskesmas Cempaka sebanyak 22,73 %. Tujuan penelitian yaitu untuk mengetahui hubungan pengetahuan ibu, tingkat pendapatan, pola asuh makan, dan ketersediaan pangan dengan kejadian balita underweight umur 24-59 bulan di wilayah kerja Puskesmas Cempaka Kota Banjarbaru. Jenis penelitian ini adalah observasional analitik dengan rancangan cross sectional. Populasi penelitian ini adalah seluruh balita umur 24-59 bulan yang ada di wilayah kerja Puskesmas Cempaka yaitu 953 balita dan sampel 91 balita yang diambil menggunkan teknik systematic random sampling. Variabel dalam penelitian ini adalah kejadian underweight, pengetahuan gizi ibu, tingkat pendapatan keluarga, pola asuh makan, dan ketersediaan pangan keluarga. Dengan cara penimbangan berat badan secara langsung menggunakan alat ukur timbangan digital, wawancara dan pencatatan menggunakan kuesioner. Analisis data menggunakan analisis univariat dan analisis bivariat menggunakan uji korelasi Rank Spearman dengan tingkat kepercayaan 95% (α = 0,05). Hasil penelitian menunjukkan bahwa 23,1% balita underweight, 57,1% pengetahuan gizi ibu sedang, 86,8% tingkat pendapatan rendah, 54,9 % pola asuh makan cukup, 70,3% ketersediaan pangan sumber energi kurang, dan 65,9% ketersediaan pangan sumber protein kurang. Berdasarkan hasil penelitoan ditemukan bahwa ada hubungan antara pengetahuan gizi ibu (ρ = 0,028) dan pola asuh makan balita (ρ = 0,003) dengan kejadian balita underweight umur 24-59 bulan.

Abstract

Permasalahan status gizi pada remaja di SMA Negeri 1 Kandangan sebesar 41,3% kurus dan gemuk sebesar 12,3%. Beberapa faktor seperti perilaku emotional eating, restraint eating, dan tingkat stres dapat memengaruhi status gizi. Tujuan penelitian ini adalah mengetahui hubungan perilaku emotional eating, restraint eating, dan tingkat stres dengan status gizi remaja di SMA Negeri 1 Kandangan. Jenis penelitian adalah observasional analitik dengan rancangan bangun cross sectional. Penelitian ini dilakukan pada bulan Januari 2024 dengan populasi seluruh siswa dan siswi kelas X dan XI di SMA Negeri 1 Kandangan dengan jumlah sampel 85 siswa. Data emotional eating dan restraint eating didapat dari pengisian Dutch Eating Behaviour Questionaire (DBEQ), tingkat stres diperoleh dari pengisian kuesioner Perceived Stress Scale (PSS)-10, status gizi diperoleh dari pengukuran antropometri. Variabel yang diteliti dianalisis menggunakan uji korelasi rank Spearman pada tingkat kepercayaan 95%. Hasil penelitian menunjukkan remaja memiliki status gizi baik (61,2%), tingkat emotional eating ringan (44,7%), tingkat restraint eating ringan (54,1%) dan tingkat stres sedang (74,1%). Terdapat hubungan signifikan antara emotional eating (ρ=0,039) dan restraint eating (ρ=0,002) dengan status gizi. Tidak tedapat hubungan signifikan antara tingkat stres dengan status gizi (ρ=0,850). Diharapkan remaja dapat menerapkan perilaku makan sehat, mengontrol berat badan dan tinggi badan, serta dapat terbuka tentang masalah yang dihadapi. Sekolah diharapkan dapat mengadakan konseling, promo kesehatan, dan cek kesehatan secara rutin. Untuk peneliti selanjutnya diharapkan dapat melakukan penelitian lebih lanjut mengenai faktor-faktor yang memengaruhi status gizi.

Abstract

ICUs treat critically ill patients at high risk of hydration and electrolyte disturbances, which can prolong the length of stay and increase mortality. Data from Dr. H. Soemarno Sosroatmodjo Kuala Kapuas Hospital shows a prevalence of electrolyte disturbances of 43.6%, hydration disturbances of 26.9%, and an ICU mortality rate of 30%. Suboptimal hydration monitoring often causes imbalances to go undetected. This study aims to examine the relationship between hydration and electrolyte status and length of stay in ICU patients to improve the quality of care and patient outcomes. This study used an observational analytical design with a prospective and cross-sectional approach. The population consisted of all ICU patients at Dr. H. Soemarno Sosroatmodjo Kuala Kapuas Hospital, with 19 samples taken by total sampling. Data were obtained from medical records and analyzed using the Pearson Rank correlation test. The results of the analysis showed no significant relationship between hydration status and sodium levels (r = -0.012; p = 0.961) and potassium, with an average sodium level of 140.421 and potassium 3.694 within the normal range. The study concluded that changes in hydration status did not significantly affect sodium and potassium levels in ICU patients. Suggestions for further research are for primary data for calculating input and output fluids.

Abstract

Primary school children in Indonesia face nutritional problems that impact their growth. The results of the study at SDN Sungai Kuini 1 showed that the level of knowledge of fish consumption was mostly sufficient (37.5%), and less (62.5%). attitudes towards fish consumption showed a positive attitude (50%), moderately positive attitude and less each (25%). The purpose of this study was to determine the effect of educational game methods with snakes and ladders media on knowledge and attitudes towards fish consumption in elementary school students. This study used a quasi experiment method with a two group pretest posttest design with control group. The population consisted of 91 students, with a sample of 32 students taken using the Stratified Random Sampling method. The sample was divided into intervention group (three-dimensional snakes and ladders game) and control group (two-dimensional snakes and ladders game). Knowledge and attitude data were collected through interviews using questionnaires, and data analysis using the Paired Samples T Test and Independent Samples T Test. Statistical test results showed a difference in knowledge and attitude scores before and after treatment in each group (p < 0.05). The analysis also found significant differences in knowledge and attitude scores after treatment in each group (p < 0.05). However, based on the mean difference, the intervention group showed a more significant improvement in knowledge and attitude. The three-dimensional snakes and ladders game has been proven to have an effect in improving knowledge and attitudes. For future research, it is suggested that researchers can develop or use other educational media in the form of games to achieve more varied and in-depth results

Abstract

Balita adalah orang yang rentan terkena masalah gizi salah satunya adalah wasting karena pada usia tersebut mereka sudah mulai mengenal dan mengikuti pola makan orang dewasa. Wasting merupakan masalah gizi yang terjadi pada balita di usia 0-59 bulan. Balita yang mengalami ini umumnya memiliki berat badan yang tidak sesuai dengan tinggi badannya. Wasting juga di sebabkan oleh beberapa faktor yang sangat komplek mulai dari rumah tangga, lingkungan, pengaruh masyarakat, sosial ekonomi budaya, bahkan praktik pemberian makan anak serta adanya penyakit infeksi. Penelitian ini bertujuan untuk mengetahui hubungan antara pengetahuan, pola asuh ibu dan sanitasi lingkungan dengan kejadian wasting pada balita di Wilayah Kerja Puskemas Martapura Barat Kabupaten Banjar. Metode penelitian ini menggunakan observasional analitik dengan rancangan cross sectional. Populasi adalah balita usia 0-59 bulan dengan sampel penelitian 101 orang yang diambil menggunakan teknik purposive sampling. Variabel penelitian ini yaitu pengetahuan ibu, pola asuh, sanitasi lingkungan dan kejadian wasting. Pengambilan data dengan cara kuesioner dan wawancara serta analisis data menggunakan uji Chi-Square. Hasil penelitian ini menunjukkan 43,6% balita mengalami wasting, 58,4% pengetahuan ibu kurang, 60,4% pola asuh cukup dan 50,5% sanitasi lingkungan kurang baik. Penelitian menunjukkan ada hubungan pengetahuan ibu (r<0,000), pola asuh (r<0,008), dan sanitasi lingkungan (r<0,000) dengan kejadian wasting. Bagi ibu atau orang tua harus memperhatikan pemenuhan gizi balita, memanfaatkan pengetahuan yang ada untuk dapat mengolah dan memilih makanan yang bergizi dan berkualitas baik serta menentukan jenis makanan dan jumlah makanan dan jadwal makan sesuai dengan kebutuhan anak seusianya, yang terpenting pemenuhan nutrisi dengan prinsip gizi seimbang dan beragam.
