Abstract

Conventional fruit processing for food and beverage production often ignores the potential benefits of fruit peels, resulting in the presence of useless waste. Pineapple peel (Ananas comosus L. Merr) is one of the most underutilized by-products, even though it contains valuable compounds such as bromelain, flavonoids, tannins, oxalates, and phytates that have antibacterial and probiotic properties. The purpose of this community service is to provide education to increase the knowledge of the Kualu Nenas Village community about the utilization of pineapple peel waste as a prebiotic drink. The method used is counseling with colored brochure media and a demonstration of making probiotic drinks. The results obtained from 50 respondents were 48 (96%) respondents with low knowledge level, 1 (2%) respondent with sufficient knowledge level, and 1 (2%) respondent with high knowledge level. The bivariate test was carried out using the Wilcoxon method, where the test obtained the results of the p value = 0.000, which can be concluded that there is a difference or there is an effect of giving brochures on public knowledge because the p value <0.005.

Abstract

Green glutinous rice tape is a fermented food made from glutinous rice, katuk leaves (Sauropus androgynus), and yeast, originating from Tembilahan, Riau Province. This product can serve as a source of lactic acid bacteria (LAB) capable of producing antimicrobial compounds to inhibit pathogenic microorganisms, including Aspergillus flavus, a well-known spoilage fungus in food products. However, to date, no reports have explored the ability of LAB from green glutinous rice tape to inhibit the growth of Aspergillus flavus. This study aimed to isolate LAB from green glutinous rice tape, conduct macroscopic, microscopic, and biochemical characterizations, and evaluate the antifungal activity of the LAB isolates against Aspergillus flavus using the good diffusion method. The isolation process yielded four LAB isolates from Tembilahan green tape (TKHT-2, TKHT-3, TKHT-5, and TKHT-7), which were identified as members of the genus Lactobacillus sp., with antifungal activities of 25.50 ± 5.78 mm, 24.33 ± 0.62 mm, 22.16 ± 6.56 mm, and 18.66 ± 4.28 mm, respectively. The corresponding cell-free supernatants (CFS) from these isolates (TKHT-S2, TKHT-S3, TKHT-S5, and TKHT-S7) also demonstrated antifungal activity with inhibition zones of 19.83 ± 3.47 mm, 19.83 ± 4.24 mm, and 14.50 ± 3.26 mm, respectively. LAB cells and their cell-free supernatants partially inhibited Aspergillus flavus, indicating a fungistatic effect. These findings suggest the potential application of LAB from green glutinous rice tape as a natural preservative or antifungal agent in food products.

Abstract

Abstract: Infections caused by pathogenic bacteria remain a significant global health issue, particularly with the growing incidence of antimicrobial resistance. Therefore, the search for new antibacterial sources from medicinal plants has become a promising alternative. Garcinia microcarpa, a species belonging to the Garcinia genus, is known that Garcinia contains bioactive compounds such as xanthones, flavonoids, and tannins, which have potential antibacterial properties. This study aimed to evaluate the antibacterial activity of Garcinia microcarpa leaf extract against 11 human pathogenic bacteria, namely Staphylococcus aureus, Streptococcus mutans, Staphylococcus epidermidis, Enterococcus faecalis, Micrococcus luteus, Bacillus subtilis, Pseudomonas aeruginosa, Vibrio cholerae, Escherichia coli, Salmonella typhii, and Salmonella typhosa. Leaf extraction was performed using the maceration method with methanol as the solvent. Antibacterial activity was assessed using the disk diffusion method. The results showed that Garcinia microcarpa leaf extract exhibited antibacterial activity with varying inhibition zones against the tested bacteria. The highest activity was observed against E. coli and S. epidermidis, with inhibition zone diameters of 13.8 ± 1 mm and 13.0 ± 0.3 mm, respectively, at a concentration of 1 mg/disk. These findings suggest that Garcinia microcarpa has potential as a natural source of antibacterial compounds. Further studies are needed for fractionation, isolation of active compounds, and bioactivity testing. Keywords: Garcinia microcarpa, extract, antibacterial activity.

Abstract

Abstract

Hypertension is a significant global concern associated with severe cardiovascular ailments, including stroke, myocardial infarction, cardiac insufficiency, and renal dysfunction. Traditional medicines (TM) represent a potential alternative treatment modality for the management of hypertension. Hence, this study aims to establish the relationship between individuals' knowledge and attitudes about using TM among hypertension patients. This observational research utilizes a descriptive-analytic approach with a cross-sectional design. Validated questionnaires were used to collect the knowledge and attitudes data of respondents. The correlation between knowledge and attitudes was analyzed with the Spearman test using SPSS version 24. A total of 102 respondents were successfully acquired using purposive non-probability sampling. The results of this study indicate a significant statistical relationship between the knowledge and attitudes of hypertensive patients regarding the utilization of TM (p-value 0.000). Furthermore, a moderate positive correlation (rs 0.493) was observed, suggesting that an improvement in knowledge is associated with a corresponding enhancement in the attitude of hypertensive patients towards TM.
