Abstract

Background: Fast food comes to a meal that is prepared fast and identically high in energy and fat contents since fast food is prepared using oil and fats. Excessive eating of fast food which is Indonesian typical fast foods and international fast foods will deliver obesity risk. Satiety and hunger are known as the two main keys to obesity prevention. Furthermore, Cholecystokinin (CCK) hormone is the one of bio-indicator that can indicate both satiety and hunger. Objective: The aim of this study is to determine the difference between CCK plasma level of Indonesian and international fast food.Method: A post-test only group design was done at 16 male adult subjects. This research measured CCK plasma of adult subjects with normal nutritional status whether consumed Indonesian typical fast foods and international fast foods. CCK plasma was measured by Enzyme-linked Immunosorbent Assay (ELISA) between 0-120 minutes. Results: Subjects who consumed Indonesian typical fast foods had significantly lower CCK plasma at 30,60 and 120 minutes measurement than that counterpart (p = 0.000).Conclusion: There is a different level of CCK after consuming Indonesian typical fast food and International fast food.

Abstract

Background: Urine Iodine Concentration (UIC) is the indicator to assess iodine status. UIC from 24-hour urine collection appropriate to used as a direct measure of the iodine status and helps to validate the estimates intake of iodine. 24-hours urine collection is not practical in large studies and epidemiological surveys because it is quite difficult to complete and accurate collection. WHO/UNICEF/ICCIDD recommend the use of on spot urine collection. Objective: The aim of this study was to compare of 24-hour urine collection and spot urine collection for the assessment UIC in children.Method: The cross-sectional study was applied in Bogor. UIC was measured in 24-hour urine and parallel collected three spot urine namely on spot 1 collected morning, on spot 2 collected afternoon, and on spot 3 collected evening, sample urine collected from 44 healthy children age 10-13 years. UIC of 24-hour urine and one spot urine analyzed in the laboratory GAKY FK UNDIP using acid digestion method. Results: The average UIC from 24-hour urine collection was 179.77 ± 56.4 µg/l and UIC from on spot urine collection were on spot morning 145.30 ± 63.6 µg/l, on spot afternoon 159.95 ± 64.5 µg/l, and on spot evening 167.50 ± 66.1 µg/l. However, UIC correlation between UIC from on spot afternoon and UIC 24-hour (r = 0.456) with 66.67 % sensitivity and 75.61 % specificity. Conclusion: UIC urine samples from lunch to dinner more accurately reflects the UIC 24 hours to categorize the iodine status of the population. UIC from spot urine samples collected on the afternoon can be used as an alternative to evaluate the iodine status of school-age children.

Abstract

Background: Malnutrition and immunology change in stroke would affect the outcome of the stroke patient. The supplement of the extract of snakehead fish as an alternative is expected could reduce the effect pasca stroke. Objective: This study aims to assess the effect of snakehead fish supplementation on nutritional status, levels of albumin, TLC and TNF-α in stroke patients.Method: This type of study is a quasi-experimental, pre-test post-test group design, by providing treatment to the subject of research and treatment effects were measured and analyzed. Subjects were divided into two groups; a first group which receives 3 x 2 capsule of snakehead fish supplementation as well as diet and nutrition education (intervention group) and the second group that received only diet and education (control group). Results: From the results, it was found that nutritional status, which was obtained by measuring UAC in cases and controls are good (SG ≥ 85%) but no significant differences between them (p=0.914). There are significant differences between albumin levels before and after intervention (p=0.023) with an average increase of 0.2 g/dl, but not in the control group (p=0.931). For TLC values increased in the intervention group (990,5 sel/mm3) and a decrease in the control group (645,03 sel/mm3) with a significant difference in both groups (p=0.034). There was a decrease of TNFα in both group; for cases (mean=-2.91) and controls (mean=-2.58) with significant differences between the two groups (p=0.001).Conclusion: The supplementation of an extract of snakehead fish could increase the albumin and TLC level and decrease the TNFα in stroke patients.

Abstract

Background: Confectionary products meet the important consumers’ need states of fun and enjoyment, especially among children. Synthetic colourant had been applied as a colouring agent in confectionery products for decades, however various adverse health effects have been reported after consumption. Hence, usage of natural colourant has increased enormously as it confers functional and nutraceutical benefits. Red pitaya, a common and popular fruit cultivated in South-east Asian countries. It is rich betacyanin content that gives the fruit a red-violet colour. Hence, red pitaya is a potential source of natural colorant as an alternative to the synthetic colorant. Objective: This research was aimed to produce fruit pastille with red pitaya powder applied as a natural colourant.Method: Production of red pitaya powder was achieved through spray drying process. Fruit pastille was prepared and subjected to antioxidant, stability and sensory analysis. Results: The Physicochemical study showed that pastille incorporated with red pitaya powder exhibited significantly (p<0.05) higher antioxidant properties than the blank pastille (control). An eight weeks storage stability study revealed that betacyanin content of pastille incorporated with pitaya powder remained stable for the first four weeks of storage. Besides, no significant change was observed in redness (a*) of pastille throughout the storage study. Sensory study was carried out to assess the consumer preference on pastille incorporated with pitaya powder and synthetic colourant. Colour attribute of pastille incorporated with red pitaya powder has gained significantly (p<0.05) higher liking that the one added with synthetic colour. Conclusion: Red pitaya powder could be a potential natural colourant for gummy confectionery.
