Abstract

Background: Food has not only considerable therapeutic but also economic value. The success of food provision is related to leftover that can indicate less optimum food provision in hospitals. Leftover indicates the presence of wasted cost.Objective: To analyze leftover and cost of leftover of schizophrenic inpatients at Madani Mental Hospital Palu.Method: The study used cross sectional method. Subject of the study were schizophrenic inpatients who got ordinary food portion had been mobilized from acute to common room 2 x 24 hours, put in class 3 room, were able to eat food on their own with exclusion criteria the presence of accompanying diseases that could affect appetite and got food from outside the hospital (n = 35). Data were analyzed quantitatively using chi square to find out factors related with the presence of leftover. Data of respondent characteristics and cost of leftover were analyzed descriptively.Result: There was difference in leftover based on sex and portion in particular rice and animal side dish leftover (p <0.05) but there was no significant difference in age, type of schizophrenic disease, duration of hospitalization and previous hospitalization (p ≥ 0.05). Total cost of wasted food a day was Rp 1,529.33.Conclusion: There was difference in leftover based on sex and portion particularly rice and animal side dish leftover. Average amount of leftover varied according to eating time and types of food. Cost of wasted food varied according to types of food.

Abstract

Background: Psychological factors such as anxiety have significant contributions in determining dietary intake and nutritional status of elderly. Prevalence of malnutrition in elderly has achieved significant level.Objective: To determine the correlation between anxiety level with dietary intake and nutritional status of elderly in Yogyakarta municipality.Method: This research was observational with cross sectional design. Subjects were elderly in Yogyakarta municipality who fulfilled inclusion criteria. Research subjects consisted of 214 people. Anxiety level was measured with trait-manifest anxiety scale (T-MAS) form, dietary intake with semi-quantitative food frequency questionnaire (SQFFQ) method, and nutritional status was determined based on body mass arm span (BMA). Data were analyzed with Chi-Square test and multiple logistic regression.Results: A percentage of 26.2% subjects had moderate anxiety level. Most dominant factors that influenced anxiety level was sex (OR=3.37). Bivariate analysis showed a significant correlation between anxiety level and nutritional status (p<0.05), subjects with moderate anxiety level were more likely to have higher nutritional status (OR=3.54) and lower nutritional status (OR=2.29). Significant correlation was found between moderate anxiety level with excessive dietary intake (p<0.001; OR=6.22). Significant correlation was also found between dietary intake with nutritional status (p<0.05), subjects with excessive dietary intake were more likely to have higher nutritional status (OR=6.15).Conclusion: Significant correlation was found between anxiety level and nutritional status. Significant correlation was also found between anxiety level and dietary intake, and significant correlation was found between dietary intake and nutritional status.

Abstract

Background: The main problem facing Indonesian people today is nutrition deficiency which brings effect to low quality of human resources. Infants aging 6 – 12 months are at high risk of having growth and development disorder. Complementary breastfeeding pattern is one of factors causing gross motoric movement growth and development disorder.Objective: This study was meant to know the relationship be-tween complementary breastfeeding pattern and gross motoric movement growth and development of infants aging 6 – 12 months at Bermani Ulu Sub district, Rejang Lebong District.Method: This was observational type of research which used cohort design. The samples consisted of 87 infants of 6 – 12 months selected through simple random sampling. Complementary breastfeeding pattern data were collected using interview and food call methods, growth data using anthropometry measurement, gross motoric movement data using motoric guideline of infants aging 3 – 18 months. Analysis of data used chi-square, anova, logistic linier and logistic regression.Results: The result of the study showed there was no significant relationship (p>0.05) between complementary breastfeeding pattern and gross motoric movement growth and development. There was significant relationship (p<0.05) between energy intake and protein intake and growth, with energy intake and protein intake. There was significant relationship (p<0.05) between energy intake and protein intake and development, with energy intake and protein intake. Result of multivariate analysis showed there were 2 variables as growth predictor i.e. energy intake (B=0.096) and protein intake (B=0.351) with (24.7) R square and there were 2 variables as gross motoric movement development predictor i.e. energy intake and protein intake (p<0.05).Conclusions: 1) Complementary breastfeeding were not related to gross motoric movement growth and development, 2) energy and protein intake of complementary breastfeeding were related to gross motoric movement growth and development, 3) energy and protein intake were dominant factor which were related to gross motoric movement growth and development.

Abstract

Background:  Breakfast can meet energy requirement of school children to conduct their daily activity all day. But, in reality, there are many school children who do not behave in a healthy breakfast that can meet the needs of 30% of energy. One of reason is a lack of knowledge and practice of the mother in preparing a healthy breakfast for their children.Objective: To assess the influence of media outreach breakfast (booklets, flipchart, and short films) on the mothers' knowledge of healthy breakfast schoolchildren.Method: Design of quasi-experimental one group pre-post test used in the study towards 186 mothers from ten the selected elementary school at Depok City. Mother's knowledge was measured through a questionnaire pre-post test.Results: There was increased in knowledge of mothers at the end of the study with correct answers given by the mother on the question of the type of food that should be avoided at breakfast. Increased knowledge of the mother before and after the study was differed significantly according to age groups (p <0.05). Older age of mother has better knowledge than younger.Conclusion: Knowledge of mothers on healthy breakfast can be improved through counseling using flipcharts, booklets, and short film.

Abstract

Background: The main purpose of hospital nutrition service activity is providing qualified food to patient. So far, the efforts to improve food quality in hospital have not been done integrated. Hospital still faces basic problems such as lack of cooks in either quantity or quality. Hospital needs, professional cooks who are able to serve food correctly based on standard, and providing a culinary training for the cooks is needed to improve food quality.Objective: To find out the effect of culinary training for the cook to patient’s food quality.Method: This study was a quasi-experimental with time series design. The subject of study was 30 cooks at Dr. Wahidin Sudirohusodo Hospital Makassar. Data were collected through observation and assessment using questionnaires and check-list. T-test and anova analyses were used to analyze the data on knowledge, attitude, skill of food preparation and food quality.Result: This study showed that there were improvements on scales of knowledge 8.64±2.70 (p<0.05), attitude 20.34±6.32 (p<0.05) and skill 7.89±1.64 (p<0.05) after the training. There were also improvements on food performances (color, texture, size of portion, appearance, and serving) and taste (temperature, flavor, tenderness, maturity, odor).Conclusion: There were improvements of cook’s knowledge, attitude, skill and food quality of patient after culinary training.

Abstract

Background: The increased prevalence of obesity will bring a great impact in the health sector, due to the effect of the influence of organ in the body such as type 2 diabetes mellitus (T2DM) and cardiovascular disease (CVD). Reduced energy diet and exercise are effective for management weight loss. During the restriction diet, an obese person should increase the amount of dietary fiber up to 20−35 g/day, specifically of soluble fiber, to more effective fat loss and improve serum high-density lipoprotein (HDL) and triglyceride (TG) cholesterol concentration. Psyllium husk (PH) is a source of natural soluble fiber obtained from Plantago ovate Forssk seed.Objective: The aim of the study have investigated the change of body weight, serum HDL cholesterol, and TG concentration in obese I after supplemented PH 8.4 g/day and balanced deficit calories diet (BDCD) for 4 weeks.Method: The survey used double-blind randomized clinical trial with parallel design. Subjects were randomly divided into two groups; treatment (T) group and placebo (P) group. The T subjects received psyllium husk (PH) 8.4 g/day and BDCD 1200 kcal/day and the P subjects received placebo and BDCD 1200 kcal/day. The analyzed used independent t-test and Mann-Whitney.Results: A total 28 subjects (14 subjects in each group) had completed the intervention. There were no serious adverse effects reported during the intervention. Intake of dietary fiber in T group was 17.2 ± 2.8 g/day had significantly higher than P group 8.6 (5.2−15.2) g/day, although supplemented with PH didn’t meet the recommendation of fiber intake (20-35 g/day). Decrease of body weight was -1,8 ± 0,8 kg and triglyceride level was -1,5 (-416−77) in T group that statistically insignificant difference (p=0,39 and p=0,84) with P group -1,6 ± 0,9 kg and -10,0 ± 31,3. Soluble supplementation (P group) increased serum HDL cholesterol concentration was 0,0 ± 4,3 mg/dL that statistically insignificant difference (p=0,86) with T group -0,4 ± 5,9.Conclusion: PH supplementation 8.4 g/day and BDCD 1200 kcal/day in obese I can not reduce body weight, serum high-density lipoprotein cholesterol, and triglyceride concentration level in 4 weeks.

Abstract

Background:  Nutrition counseling is one of the nutrition services successful indicators in hospitals.  The quality of nutrition counseling will improve the effectiveness and efficiency of resources utility and furthermore, it will improve patients’ satisfaction.  The quality of nutrition counseling services effect directly on internal and external customers’ satisfaction. Evaluation about nutrition counseling services in hospital ward and its association with patients’ satisfaction was needed to determine priority aspects to be improved.Objective:  To determine factors that associate with the rate of hospitalized patients’ satisfaction towards nutrition counseling in Mataram Hospital.Method:  A total 38 hospitalized adult patients included in this observational study with cross sectional design. Proportional stratified sampling was conducted to determine subjects of study. Data collections included the description of nutrition counseling factors consisted of counselors, materials, methods, media, time, place, and visitation frequency of dietitians based on questionnaires completed directly by hospitalized adult patients. Spearman rank correlation and linear regression analysis were used to determine the association between nutrition counseling factors with the rate of hospitalized patients’ satisfaction, completely by multiple linear regressions to analyze all of nutrition counseling factors in the same time.Results: This study showed that counselors, time, place, and dietitians’ nutrition counseling visitation were the significant factors associated with the rate of hospitalized adult patients’ satisfaction (R = 0,086 p = 0,027; R = 0,099 p = 0,017; R = 0,108 p = 0,013; R = 0,166 p = 0,002, respectively).  The most dominant factors among all of associated factors were visitation frequency of dietitians (p = 0,035).Conclusion: There was a significant association between counselors, time, place, and dietitians’ nutrition counseling visitation frequency with the rate of hospitalized patients’ satisfaction.  The most dominant factors among all of associated factors were visitation frequency of dietitians.

Abstract

Background: Urine Iodine Concentration (UIC) is the indicator to assess iodine status. UIC from 24-hour urine collection appropriate to used as a direct measure of the iodine status and helps to validate the estimates intake of iodine. 24-hours urine collection is not practical in large studies and epidemiological surveys because it is quite difficult to complete and accurate collection. WHO/UNICEF/ICCIDD recommend the use of on spot urine collection.Objective: The aim of this study was to compare of 24-hour urine collection and spot urine collection for the assessment UIC in children.Method: The cross-sectional study was applied in Bogor. UIC was measured in 24-hour urine and parallel collected three spot urine namely on spot 1 collected morning, on spot 2 collected afternoon, and on spot 3 collected evening, sample urine collected from 44 healthy children age 10-13 years. UIC of 24-hour urine and one spot urine analyzed in the laboratory GAKY FK UNDIP using acid digestion method.Results: The average UIC from 24-hour urine collection was 179.77 ± 56.4 µg/l and UIC from on spot urine collection were on spot morning 145.30 ± 63.6 µg/l, on spot afternoon 159.95 ± 64.5 µg/l, and on spot evening 167.50 ± 66.1 µg/l. However, UIC correlation between UIC from on spot afternoon and UIC 24-hour (r = 0.456) with 66.67 % sensitivity and 75.61 % specificity.Conclusion: UIC urine samples from lunch to dinner more accurately reflects the UIC 24 hours to categorize the iodine status of the population. UIC from spot urine samples collected on the afternoon can be used as an alternative to evaluate the iodine status of school-age children.

Abstract

Background: The metabolic syndrome often begins with insulin resistance characterized by hyperinsulinemia and hyperglycemia. Synbiotic yoghurt tanduk banana contains probiotic and prebiotic FOS can improve insulin resistance in metabolic syndrome.Objective: To prove the effect of synbiotic yoghurt tanduk banana can reduce blood glucose levels and insulin levels in metabolic syndrome rats.Method: True-experimental study with randomized controlled group pre-post test design in male wistar rats. Eighteen samples were induced to become metabolic syndrome with high fat fructose diet for 2 weeks and they were divided into 3 groups: control (K) was given standard diet, treatment group 1 (P1), and treatment group 2 (P2) were given sinbiotic yoghurt tanduk banana dose of 0.009 ml/g body weight (BW)/day and 0.018 ml/g BW/day for 2 weeks.Results: The paired t-test showed there were differences of blood glucose levels and insulin levels before and after treatment in P2 group. The Kruskal Wallis test showed there were differences of mean blood glucose levels inter group after treatment (p<0.05). The One-way Anova test showed there were differences of mean insulin levels inter group after treatment (p<0.05). Conclusion: Synbiotic yoghurt tanduk banana can reduce blood glucose levels and insulin levels in metabolic syndrome rat with effective dose is 0.018 ml/grBW/day.

Abstract

Background: Food consumption is a major factor to fulfill the nutritional needs of a person. Food consumption is influenced by several factors, such as the level of income, food availability, public awareness toward nutrition, and socio-cultural factors. Riau Province is one of the provinces that the food consumption is still relatively low and Kampar Regency occupies a very high position in the food insecurity index and hunger vulnerability index. There is 49.21% of the population that could potentially be food shortages. This is supported by the occurrence of nutritional problems in communities associated with the availability of food, low purchasing power and the inability to gain access to nutritious food.Objective: To identify the patterns of food consumption and family food security in Kampar regency in Riau province.Method: The study was an observational research with cross sectional design. Samples are a family in Kampar regency as many as 105 families selected by using cluster sampling conducted in August-September 2015. Statistical analysis was performed by chi-square test and logistic regression.Results: The statistical analysis shows that the majority of respondents had food consumption patterns with the category of unfulfilled as 64.77% and for the category of food security as 60.96% was in the category of food insecure. The results of chi-square statistical test showed that there was a significant correlation between food consumption patterns to family food security in Kampar regency Riau Province (p0,000). The results of the bivariate analysis it is known that there was a significant correlation between the variables of the number of family member, food access, food expenses, energy consumption and protein consumption to the level of family food security in Kampar regency of Riau province indicated by a value of p <0.05.Conclusion: There is a significant correlation between the patterns of food consumption toward family food security in Kampar regency Riau province. There is a significant correlation between the external variables and family food security level in Kampar regency Riau Province.
