Abstract

The research aims to test and compare the chemical characteristics and total Lactic Acid Bacteria or LAB of goat milk powder kefir that was produced from cabinet drying, freeze drying and spray drying. Kefir was made from goat milk since it was found as a good digestibility, no β-lactoglobulin, and high protein. Data analysis was performed with the test analysis of variance with a significance level of 5% followed by Duncan testing if significant result was detected. Analysis of total acid was conducted using titration. Analysis of proteins was conducted using Kjeldahl method. Water content analysis was performed using oven and ash content was analyzed using furnace. Analysis of fat content was conducted using Soxhlet method. Analysis of total LAB and total yeast were done using Total Plate Count (TPC). As results, drying method significantly affected (p<0.05) water content, ash content, and total LAB but there was no significant effect (p<0.05) on the total acid, protein content, fat content, and total yeast. As conclusion, the best treatment of drying method in making goat milk kefir powder was spray drying

Abstract

The increasing popularity of cocoa-based beverage has encouraged the development of various chocolate beverage formulations. Chocolate beverage formulations with addition of garam masala were carried out to produce functional beverage products which are beneficial to consumers and the product itself. Five different concentration of garam masala (0.01%, 0.02%, 0.03%, 0.04%, and 0.05%) were added into chocolate beverage. Preference test was carried out to evaluate panelists’ preference to each formula. Sensory evaluation was performed by giving an assessment using 7-scaled Likert scale for color, aroma, taste, warm sensation (after taste), and overall product. The results showed that the concentration of garam masala addition has an effect (p≤0.10) on the attributes of aroma, warm sensation, and overall product. The most preferred chocolate beverage was with the addition of 0.03% garam masala. Higher concentration of garam masala in chocolate based beverage resulted a higher antioxidant activity as well as phenolic content, as antioxidant component.

Abstract

Homemade salted egg production leading to one of agro-industry products has been identified as profitable, yet processing technology of salting needs to be improved. The objective of the study was to analyze the length of salting application of salted eggs, marketing reach, and association between the lengths of salting application with marketing reach. Forty respondents determined by purposive random sampling was carried out on agro-industry center of salted eggs in Brebes, Central Java. The primary data (length of salting and marketing reach) were collected by interview using questionnaire and observation. The levels of NaCl of salted eggs were measured by Argentometri Mohr method. The secondary data were collected by recording relevant documents. Data of length of salting and marketing reach were analyzed descriptively. Relationship between the length of salting and the marketing reach of salted eggs were analyzed using contingency tables with the X2 test. The result showed that all respondents applied length of salting with time duration of salting varied from 12 to 30 days, during which period 52.5% respondents did the salting in >14-18 days. The salinity was still relatively higher than that of recommended by the Indonesian Industry Standard (SNI), which is 2.0%. The respondents also functioned as marketing components; such as consumers, retailers-consumers, and collectors - retailers - consumers with the percentage of 52.5, 35, and 12.5%, respectively. As conclusion, the length of salting technology application might influenced marketing reach and the length of salting technology application mostly could only reach the short marketing.

Abstract

This research aims to determine the effect of different kefir grain concentration to viscosity, total acid, protein and hedonic level of buffalo milk kefir and to determine the ideal kefir grain concentration for buffalo milk kefir. The basic ingredients used in this research were buffalo milk and kefir grain. Concentration of kefir grain at 2.5%, 5%, 7.5%, 10% (g/v) was used to measure viscosity, total acid, protein and hedonic level of buffalo milk kefir. Ostwald pipette and pycnometer were used to determine the viscosity, total acid used titration method with NaOH 0.1 N, destruction and distillation methods were used to determine the protein content and the hedonic test were done by 25 panelists. The results show that different levels of kefir grain concentration gave significant effect (p<0.05) on every parameter. Various levels of kefir grain concentration had highly significant effect (p<0.05) on kefir as a product. The conclusions from this study are the more addition of kefir grain, the more viscosity, total acid, and protein content. From the hedonic test gave specific results in sour taste, aroma, texture and overall.

Abstract

This research aims to produce black garlic using various material such as clay chamber (kendil), bamboo chamber (besek), banana leaves, and aluminium foil. Single garlic var lanang (Allium sativum Var. Solo garlic) were cleaned up, weighed, covered by banana leaves, then put in clay chamber and bamboo chamber. Garlic were covered by alluminium foil used as control. All samples were aged using rice warmer in 60-70oC for 20 days. Brix(%) was measured using hand refractometer and antioxidant activity content was analyzed using 2, 2, diphenyl-1-picrylhydrazil (DPPH) assay. Result shows significant differences (P<0.05) on brix in obtained black garlic using clay chamber, bamboo chamber, and alluminium foil resulting a value of 5.2, 6.2 and 4˚Brix, respectively. Antioxidant activity content of black garlic were 60.5±0.156, 62,52±0,226 and 52.81±0.381% for clay chamber, bamboo chamber and alluminium foil, respectively, resulting the significant differences (P<0.05) among treatments. The antioxidant activity and brix of black garlic with bamboo chamber (besek) was significantly higher (P<0.05) than others. This result may provide beneficial information to home industry that produce black garlic for herbal food.

Abstract

Standard method to determine some metal and metalloid elements using atomic absorption spectrometry (AAS) instrument has been widely applied based on the absorption of radiation by free atoms. Thus, this study applied the standard AAS method to determine calcium (Ca) levels by varying wet and dry milkfish (Chanos chanos) in order to observe high Ca content categorized for healthy food. The preparation of milkfish were done by varying the condition of wet and dry meat. Fish meat was washed, crushed, dried, and extracted then filtered to get the filtrate from milkfish. It was analyzed based on qualitative observation that the [(NH4)2CO3] and [(NH4)2C2O4] reagents have reacted with the Ca element to form precipitates as CaC2O3 and CaC2O4. Furthermore, quantitative data using the AAS instrument to observe the Ca content of wet and dry meat shows that the wet milkfish has Ca content at an average of 0.0152 mg.g-1, whereas in dry meat conditions it shows an increase in Ca level to 0.0192 mg.g-1. This work has provided an overview of dietary requirements for the determination of Ca content in milkfish under dried meat which is very suitable for developing healthy food.

Abstract

Nutmeg and elephant ginger possess high economic value, such as for the production of essential oil which is good for the body health. However, the application of both spices in Indonesian community is still limited, for instance, in the making of wedang, a traditional herbal beverage. The objective of this research was to valorize nutmeg and elephant ginger dregs (waste) from wedang production in a form of cookies which is obtained from the blend of nutmeg pulp flour and elephant ginger dregs flour. The study employed five cookies formula using RSM (Response Surface Method). Formula F1 = 100% Nutmeg Dregs Flour, F2 = 75% Nutmeg Dregs Flour + 25% Elephant Ginger Dregs Flour, F3 = 50% Nutmeg Dregs Flour + 50% Elephant Ginger Dregs Flour, F4 = 25% Nutmeg Dregs Flour + 75% Elephant Ginger Dregs Flour, F5 = 100% Elephant Ginger Dregs Flour. The optimum response to the organoleptic tests (taste, aroma, texture and color) were determined from 29 untrained panelists and 1 expert panelist. The results showed that cookies with the addition of nutmeg dregs flour and elephant ginger dregs flour (F5) were the most popular formula for the panelists. However, in terms of utilization of wedang byproducts, (F3) have the highest value.

Abstract

This research aims to determine the effect of adding pumpkin flour with different concentrations to the proximate levels and calories of white millet flakes. Complete randomized design used in this research with 4 treatments and 5 replications. This research consisted of formulations which was divided into 4 treatments in the form of adding pumpkin flour with concentrations of 0%, 10%, 20%, and 30% w/w white millet. The material used was white millet, pumpkin, sugar, salt, and water. Proximate levels were calculated using proximate analysis while calories was calculated based on the calculation of carbohydrate, protein, and fat composition of the samples produced. The results showed that the addition of pumpkin flour with different concentrations had a significant effect (p<0.05) on protein content, fat content, ash content, crude fiber content, carbohydrate content, calories, and had no effect (p>0.05) on water content. As conclusion, the addition of pumpkin flour 30% was the best treatment proved by its highest fiber content and low in calories.

Abstract

Moringa leaves (Moringa oleifera) contain high iron (Fe) but low bioavailability of Fe because it contains calcium and tannins. Vitamin C in red guava fruit (Psidium guajava) can increase Fe absorption. Sorbet made from red guava and Moringa leaves can be an alternative to overcome iron deficiency anemia in adolescent girls. This study aims to analyze the level of acceptance, levels of Fe, Ca, vitamin C, and tannins, as well as the bioavailability of Fe sorbet made from red guava and Moringa leaves. Sorbet consists of 5 formulas including, F1 (strawberry sorbet), F2 (red guava sorbet), F3 (Moringa leaf sorbet), F4 (red guava sorbet + 18% Moringa leaves), and F5 (red guava sorbet + 22% Moringa leaves). Acceptance level was tested with the hedonic method (appearance, smell, taste, and texture) and statistically analyzed using Friedman and Wilcoxon test. The Fe and Ca were analyzed using X-Ray Fluorescence (XRF) method, vitamin C and tannins were analyzed using High-Performance Liquid Chromatography (HPLC) and spectrophotometry methods. Fe bioavailability test was performed using the inverted bowel bag method. The level of preference for each attribute was significantly different (p < 0.05). The level of preference chosen was F2. The mean levels of Fe, Ca, vitamin C, and tannins in F4 were 0.95 ± 0.14, 5.91 ± 0.73, 26.29 ± 0.13, and 135.65 ± 0.91 mg/100 g. The mean levels of Fe, Ca, vitamin C, and tannins in F5 were 0.21 ± 0.29, 6.03 ± 0.67, 46.72 ± 0.69, and 87.76 ± 0.40 mg/100 g. The highest Fe bioavailability was F5 while the lowest was F3. The best formula based on the parameters of preference, Fe, Ca, vitamin C, and tannin levels, as well as Fe bioavailability, was sorbet F5.

Abstract

Mayonnaise is an oil emulsion product in water (o/w). The main component of mayonnaise is fat, or oil derived from vegetable oil. Fat or oil is very influential on the physical, chemical, and characteristics of mayonnaise because of the fatty acid content. The purpose of this study was to determine the effect of differences in the use of vegetable oil in making mayonnaise on physical, chemical, TPC, and antioxidant properties. This research was conducted experimentally, using a randomized block design consisting of 4 treatments, which were palm oil (P1), coconut oil (P2), corn oil (P3), and sunflower oil (P4) with 6 replications, while the observed variables were viscosity, water content, fat content, protein content, antioxidant content, and TPC. The results showed that various types of vegetable oil had a significant effect (p <0.05) on physical properties: viscosity: P1 571.68 cP; P2 676.17 cP; P3 486.14; P4 552.81 cP. Water content P1 16.90%; P2 16.86%, P3 2067%, P4 17.47%, P1 Fat Content 88.96%, P2 75.22%, P3 72.74%, P4 63.97%, P1 Protein Content 1.89%, P2 1.98%, P3 1.83%, P4 1.61%. Antioxidant Content: P1 35.67 ppm P2 28.00 ppm P3 25.00 ppm P4 20.33 ppm, TPC: P1 24.76 CFU/g P2 22.84 CFU/g P3 21.63 CFU/g P4 21.04 CFU/g. The conclusion of this study shows that various types of vegetables have a significant effect (p <0.05) on physical properties (viscosity), chemistry, and TPC of mayonnaise. Coconut oil / VCO (P2) produces mayonnaise with the best moisture content, viscosity, and protein content. Sunflower seed oil (P4) produces mayonnaise with the lowest fat content and TPC, while corn oil (P3) and sunflower seed oil, (P4) produce mayonnaise with almost the same TPC levels. Palm Oil (P1) Produces mayonnaise with the highest Antioxidants.
