Abstract

Background. The high leftovers in a hospital in result due to low patient acceptability . The low patient acceptability can be attributed to several factors other conduction of external factors and internal factors . External factors consist of food appearance and internal factors consist of appetite , eating habits , boredom , and the food from the outside. Research Methods. This study design using observational research is descriptive , based on time in terms of research using crossecectional approach , the target of this study is that patients who receive regular food menu in Provisinsi Mataram General Hospital who had been hospitalized at least 2 days . Samples were obtained as many as 27 samples. Research Result. the received power of regular meals judged on appearance ( color and texture ) food menu is still in the unattractive category because of the 5 -day menu shows the average percentage of less than 60 % . : the received power of regular meals judged on taste ( flavor and aroma ) food menu is still in the category of unattractive because of menu 5 days showed an average percentage of less than 60 %. Conclusion. The receive power to the appearance and the food taste in breakfast, lunch and dinner either from the first menu to the fifth menu still in the poor category because it is still less than 60 % .

Abstract

Background. Kaders are community members who are willing, able and have time to organize volunteer Posyandu activities. The knowledge and skills of the cadres need to be improved especially on cadre tasks in posyandu activities so as to contribute well in organizing posyandu activities. The knowledge and skills of the cadres can be improved by providing cadre refreshment. Research Methods. This study was pre-experimental with one group pretest-posttest research design. The population in this study is all the cadres in Keluranah Karang Pule amounted to 44 people. Samples were taken using Simple Random Sampling technique amounted to 31 people. Data collection was conducted on 12 - 21 July 2017. Research Result. Knowledge and skills of cadres before being given refresher, 45% knowledge in sufficient category, skill use 19% dacin in the less skilled category, and skill of filling KMS 71% in skilled categories and 6% in unskilled category. Knowledge and skill after refreshing, 87% knowledge in good category, 100% dacin using skill in skilled category, and skill of KMS 81% in skilled category. Based on statistical test analysis Paired sample t-test showed that the result of paired sample t-test was obtained p <0,05. Conclusion. There is influence of cadre refresher on knowledge and skill in performing duty cadre in Work Area of Puskesmas Karang Pule.

Abstract

Background. Low Birth Weight (LBW) is an indicator of mother and children health. The LBW in Mataram City has increased from 3,11% in 2013 to 3,38% in 2014. One of the cause of LBW is pregnancy weight gain. Objective : To know the pregnancy weight gain with birth weight. Research Methods. This research used cross-sectional design. The population is mother who have done childbirth in the working area of Puskesmas in Mataram City in 2016. The research sample is 78 mother, 39 mothers at LBW and 39 mothers at Non LBW by Systematic Random Sampling techniq. The Multiple regression is the mehod to analyzed pregnancy weight gain with birth weight. Research Result. The pregnancy weight gain and the other ekstrinsik factors has an association with birth weight (p<0,05). The other ekstrinsik factor are significantly related to birth weight is ANC, the morbidities during pregnancy and Hb. Conclusion. Some consider the weight of pregnant women and other extrinsic factors (ANC visits, comorbidities, and Hb levels) to the weight of the baby born.

Abstract

Background. Hypercholesterolemia is a condition of cholesterol levels increased in the blood. Hypercholesterolemia can cause atherosclerosis. Atherosclerosis can cause various cardiovascular diseases such as coronary heart disease and stroke.Research Methods. This type of research is using quasi-experimental study with pretest and posttest with control group design. The sample was given 150 g of red dragon fruit pudding every day for 14 days. Data obtained from this study were analyzed using paired test and independent t-test.Research Result. The average total cholesterol level of control group before the research was 290.20 mg / dL while the cholesterol level of intervention group before the research was 290.30 mg / dL. The average total cholesterol level of the control group after intervention was 289.0 mg / dL while the total cholesterol level of the intervention group was 234.20 mg / dL. The reduction in the total cholesterol level of the intervention group was 56.10 mg / dL.Conclusion. Red dragon fruit pudding affects the decrease of total cholesterol levels.

Abstract

Background. Stunting is very short state of body so that the deficit exceeded -2 SD below the median length or height that became an international reference population (Gibney, Michael J, et al. 2013). Based on the results of RISKESDAS 2013 the proportion of stunting tends to be high in children 24-59 months. The results of the Nutritional Status Monitoring (PSG) West Lombok in 2013 showed Gunung Sari is the region with the highest prevalence of stunting in West Lombok is 58.78%, the prevalence increased from 2012 in the amount of 53.65%.Research Methods. This study used is descriptive observational research. Measurement of the level of consumption is done with a 24-hour recall method and compared with the needs of the sample.Research Result. Respondents in this study is 16 people. Respondents aged 20-35 years amounted to 81.25% (13 people), elementary education level of 37.50% (6 people) and SMP amounted to 37.50% (6 people). Respondents who worked 56.25% (9 people). Revenue from family toddler <UMR (62.5%). The samples in this study is 16 samples, consisting of 11 men and 5 women. The highest incidence of stunting in the age group 48-59 months amounted to 68.75% (11 people) with male gender is 68.75% (11 people). The distribution of the nutritional status based on the index TB/U are short and very short categories respectively by 50% (8 people). The incidence of infection in infants either diarrhea or fever mostly classified namely diarrhea rarely amounted to 87.5% (14 people) and a fever of 56.25% (9 people).  macro nutrients intake does not describe that the macro-nutrient intake as a risk factor stunting.Conclusion. macro nutrients intake does not describe that the macro-nutrient intake as a risk factor stunting.

Abstract

Background. Health problems in Indonesia and developing countries in general are still dominated by 4 nutritional problems, namely lack of protein energy (KEP), iron anemia problems, problems due to iodine deficiency (IDD), problems with vitamin A deficiency (KVA) and obesity problems especially in big cities. Because food intake is one of the factors that influence a child's nutritional status, it should be noted that the intake of children's needs is appropriate or not, because this is what the child needs to support optimal brain development and body growth. Among them are energy and protein intake. Based on PPG 2018 data The number of toddlers in Sisik Village is as many as 565 toddlers, taken by a sample of 54 toddlers. Of the 54 toddlers, the average level of caregiver education, that is, most of their education levels were low, as many as 40 people (74.1. While the energy intake of under-fives was as large as a severe deficit of 21 people (38.9%). of 54 toddlers in Sisik village, most of the protein intake was above adequacy, as many as 39 under-fives (72.2%). Research Methods. The research design used was descriptive observational study with a sample of 54 people. Data was collected by direct interview using a questionnaire tool. Data is processed descriptively. Research Result. Based on the results of the study it was found that the average level of caregiver education in the low category was 41 people (75.9%), the knowledge of caregivers was mostly in the good category as many as 24 people (44.4%), toddler energy intake as much as 21 people in severe deficits ( 38.9%) and protein intake of toddlers mostly above the adequacy of 39 people (72.2%). Conclusion. The conclusion of this study is that caregiver knowledge does not affect the energy and protein intake of toddlers. The good level of knowledge of caregivers does not make toddlers' energy and protein intake good.

Abstract

Background. Nutrition less in infants is a health problem around the world especially the countries develop. In Indonesia nutritional problems less in toddlers about 19.6%. Nutritional problems have little effect on the low quality of human resources, especially the impact of toddlers who are malnourished by poor brain development, unoptimal physical growth, and metabolic developments (the Kemenkes RI, 2014). The current state of nutrition especially in children is still ematitiate. Given the impact of the nutrient less widespread, it is necessary to do a handling of PMT in the form of sausages using local food that is effective in increasing the weight of children with less nutritional nutrition.Metodelogi. In this study used experimental research Desan with a complete random draft (RAL) One treatment comparison of cork fish with composite flour 75%: 25% 80%: 20% 85%: 15%. Data processing. Processing of data obtained from observations presented in the form of tables, to find out the nature of organoleptic (aroma, flavor, texture and color) in each addition of the sausage making materials processed and analyzed using a statistical analysis of One Way Anova at a trust level of 95% (A = 0.05). If there is a significant impact, the data is analyzed further using the Tukey test to see which treatment is causing the difference. Research results. The comparison of cork fish and composite flour is significant effect on the taste color of texture and aroma. The PMT of Gasuhiru sausage contains 262KKL and 16.72 gr of protein in 100gr. Gasuhiru sausage receiving 83.3% well received.Conclusion: The most liked sausage is a comparison of 85%: 15%. The administration of PMT provides a significant effect on children's weight loss and is 3 times greater than the Conntrol group.

Abstract

Background. Tempani is one of the traditional pastry products are often used in ceremonies in communities in a number of regions in Indonesia . Lentils flour is flour obtained by grinding seeds of lentils . Protein -rich flour lentils contain good nutrition . ( Rini , A.W 2008) This product contains high protein amounted to 58.4 ± 4.5 % . Flour bioavailability Rich Protein lentils will increase with the decrease of the activity of anti - tripsinnya be 20.4 150.0 ± 1.6 units / g . Amylose levels are relatively high at 30.0 ± 2.0 % and Resistant Starch content of 7.97 g / 100 g contribute to the low value of the Glycemic Index Wheat Protein Rich lentils . Based on the nutritional characteristics , Wheat Protein -rich lentils well used.Research Methods. This study used an experimental method in the laboratory of experimental design in the form of completely randomized design (CRD) of the factors is the addition of flour lentils (t) consisting of five cedar treatments, t1 (50%), t2 (60%), t3 (70%), t4 (80%) and t5 (90%) respectively replicated 3 times so obtained 15 experimental units.Research Result. All of bean flour substitution did not significantly affect the color and moisture content of tempani and significant effect on the smell, flavor and texture of tempani. Colors get scores of panelists from 3.4 to 3.68, a score value odors from 2.56 to 3.4, a score value of flavor from 3.08 to 3.52, and texture scores from 2.48 to 3.20. The water content with an average value of 4.67% - 5.67%.Conclusion. All treatments are preferred in terms of color, t1 treatment (50%) and t2 (60%) are most preferred in terms of smell and taste and t1 treatment (50%) are most preferred in terms of the texture of Tempani. The test results of water content tempani that meets ISO standards are in treatment t4 (80%), ie 4.67% (SNI maximum of 5%). T2 treatment (60%) is a product that is recommended because it has the organoleptic properties are preferred.

Abstract

Background: One of the typical signs of diabetes mellitus (DM) is hyperglycemia, which is one medical condition that consists of increasing hormone levels within normal limits. Basic Health Research Results in 2018 DM prevalence in Indonesia increased from 6.9% in 2013 to 8.5% in 2018 (Ministry of Health, 2018). One of the nutritional therapies for the management of diabetes mellitus is fiber consumption. Fruit which contains high fiber, one of which is dragon fruit. Research by Wiardani et al., (2014) provides dragon fruit juice 200 grams of blood glucose levels in DM patients with an average decrease in Prondrial 2 hours Post blood calcium level (2JPP) of 79.1 mg / dL and research by Hidayati (2017) ) by giving red dragon fruit 200 grams of reduction in fasting blood by 19.1 mg / dL.Purpose :To determine the difference in levels of red dragon fruit (hylocereus polyrhizus) against decreasing fasting blood glucose levels of type 2 diabetes patien Method: Research quasy experimental pre post test with control group. Results: The results of the statistical analysis paired with the t-test in the assessment group showed differences in the fasting blood levels of the pretest-posttest with a p value of 0.008 (p <0.05), meaning that it was consistent with contributions related to blood count before and replacement. The results of the independent t-test showed that there was no difference in the difference between fasting blood levels in the advisory group and the control group that discussed the p value of 0.070. (p> 0.05).Conclusion: There is no contribution of giving red dragon fruit milk pudding (Hylocereus polyrhizus) to the reduction of blood glucose levels of type II diabetes mellitus patients.

Abstract

Background :In Indonesia there are still many cases of Chronic Energy Deficiency caused by imbalance of nutrients, especially in energy and protein intake, so that the nutrients needed by the body are not fulfilled. Efforts that can be done to prevent chronic energy shortages in pregnant women is to provide alternative food supplements in the form of nutrient dense snacks, one of which is iwel which is added with high-protein legumes namely soybeans which are then made into soy flour. Iwel with the addition of soybean flour is expected to meet the requirements as PMT for pregnant women. Iwel is a traditional food that is popular with many people, has a soft texture like dodol and is classified as semi-wet food. This study aims to determine the organoleptic properties, nutrient content, and acceptability of Iwel Latan for pregnant women.Research Methods:The experimental research method with a completely randomized one-factor design, namely the addition of soy flour consisting of 5 treatment levels 10%, 15%, 20%, 25%, 30%.Research result:The results showed that Iwel Latan with the addition of 25% (t4) soybean flour from the weight of the entire selected ingredient to the best treatment level and the addition of soy flour significantly affected the texture of Iwel Latan (p <0.005). The content of Iwel Latan nutrients is 40.71% moisture content, 1.60% ash content, 9.39% protein, 3.89% fat, and 44.40% carbohydrate.Conclusion: The nutrient content of Iwel Latan is higher when compared to PMT biscuits which are usually given to pregnant women Chronic Energy Deficiency.The acceptance of pregnant women is 30 people, of which 25 pregnant women receive well (83%) and 5 pregnant women receive less (17%).
