Abstract

Fiber Sieving machine is a machine which used for sieving or separating coconut fiber. The machine is made of steel and driven by an electric motor. The purpose of this research was to analyze the quality of cocofiber resulted by sieve machine fiber. The process to produced cocofiber required several stages, there were decomposition, sieving, drying, and packaging. The results showed that increasing the sieve size, generated more cocofiber, less cocopeat, and faster process. Based on ANOVA there were no different between three sieving size treatments (0,4 x 0,4) cm2, (1 x 1) cm2, (2 x 2) cm2).Keywords: sieve machine fiber, efficiency, the size of the sieve

Abstract

Durian seeds contain mucus which is water-soluble polysaccharides (WSP) that is both hydrocolloids. Hydrocolloid material can improve the quality of food products in terms of viscosity, stability, texture, and appearance. Crude extract WSP contain high protein by 19,984 % db. High level protein in crude extract WSP durian seeds can produce the physico-chemical properties, especially as a thickener and stabilizer for coconut water sauce. The purpose of this research is know the influence of the addition crude extract WSP from durian seeds for physical and sensory of coconut water sauce and get better formulation which favored. This research is application of crude extract WSP for coconut water sauce production. The concentration of the addition of crude extract WSP is 0 % (T0), 0.1 % (T1), 0.2 % (T2), 0.3 % (T3), and 0,4 % (T4) for each treatment. The result of analysis indicates that the addition of crude extract WSP showing real influence on viscosity, total dissolved solids, and sensory properties. The addition of crude extract WSP showing not real influential for color intensity (chroma) and lightness. The addition of crude extract precise in manufacture of coconut water sauceis the treatment T2 based on the storage stability test for 4 weeks, with a viscosity value of 85.05 mp; 0Brix 67.67 total dissolved solids; 19.89 chroma color intensity; and lightness 41.34o. The addition ofcrude extract WSP durian seeds favored by organoleptic tests at weeks-0 is the T4 treatment with avalue of aroma, flavor, and color are respectively 3.44; 3.92; and 3.84 (hedonic scale rather like to like). Abstract

Little known about the safety of natural water on enteric mikroflora population at Mojo Village Padang Distric Lumajang Regency. We assessed the population of enteric microflora i.e Salmonella and Eschericia coli in the wellspring. We performed a randomized sampling to evaluate the population of Salmonella and Eschericia coli of three natural water resource at Mojo Village. There were Jirun, Kali Tengah and Sumber Suko water resource. Medium to colony identification were used Salmonella Chromogenic Agar (SCA) and Enteric Hektoin Agar (HEA). SCA resulted blue colony for Eschericia coli and magentha or violet colony for Salmonella. While HEA resulted orange colony for Eschericia coli and green for Salmonella. 250 mL of natural water was used to growth the enteric microflora. We observed three water resource of Mojo Village contain enteric microflora. The enteric microflora population was up to 2 log10 CFU/mL (more than 10 CFU/mL). These was a fantastic population, because enteric population must no growth on drink water. Assuming the enteric microflora come from fish faecal, because at the surrounding of water resource growth the fish. Three water resource at Mojo Village were no safety to used as drink water if without water treatment. Abstract

The use of moringa plant seeds as a natural coagulant has economic value and environmental friendly. They also can be used to purify water, so that the seeds were able to decrease the pollution concentration of mocaf wastewater. The aim of this research was to study the ability of moringa seeds, as a natural coagulant to overcome mocaf wastewater pollution. The method was used coagulation-flocculation with coagulant dosage range of 650 mg/l untill 1050 mg/l. The variables observed were turbidity, TSS, TDS and COD. The results showed that the optimum coagulant dose and the optimum pH is 850 mg/l and pH 8 with 59,79% decreased levels of turbidity, 75,46% TSS reduction rate and 32,55% COD reduction rate level. However the TDS values after treatment was greater than the TDS value before. It can be conclude that the use of Moringa seed powder was effective sufficiently as a coagulant for mocaf wastewater.Keywords: kelor seeds, liquid waste mocaf, turbidity, TSS, TDS and COD

Abstract

Rice flour contain starch more than 80% db. The digestibility of rice flour can increase by fermentation i.e fermentation of the lactic acid bacteria. The objective of this research was to characterize of the fermented rice flour using by Lactobacillus casei. The research was conducted with the fermentation of IR 64 rice variety using L. casei also by spontaneous fermentation during 24 and 48 hours. The result showed that the fermented rice flour using L. casei for 48 hours had the good characteristic were viscosity 27oC 1,38 Cp, viscosity 70oC 1,55 Cp, viscosity 90oC 5,63 Cp. The other characteristic of the best fermented flour were bacteria population 7,93 log CFU/ml, pH value 2,86, titrated lactic acid 1,20%, degree of whiteness 83,57, water content 8,69%, amylose content 27,95%db, amylopectin content 40,89%db, rate of digestable starch 37,09%db for rapid digestable starch (RDS), 24,97%db for slowly digestable starch (SDS), and 6,78% db resistant starch (RS), starch content 68,84%db, and digestibility value 90,07%db.Keywords: rice, flour, controlled and spontaneous fermentation, Lactobacillus casei

Abstract

Wheat flour is the raw material that often used by food industrial. Small and Medium Entyties has a significant contribution to Indonesian economy growth. Common problems faced by SMEs is often the price fluctuations of wheat flour and difficult to obtain wheat flour sustainability as raw material by affordable price, so it must be made supply chain management of wheat flour to handle the problems in order to increased of SMEs based wheat flour. The aim of this research is to analyze the supply chain system of wheat flour, analyze strengths and weaknesses in the supply chain, formulated supply chain strategy of wheat flour to increase the competitiveness of SMEs based wheat flour in Jember. This research was conducted in three stages, namely preliminary stage through literature, alternative determination stage using SWOT and strategy selection stage using AHP. Abstract

Banana peel has the potential to be processed into pectin and fermented feed products. This study aims to determine the financial feasibility of the agro-industry of banana peel pectin and fermented feed, and sensitivity to the increasing of the raw material prices, rising prices and declining selling prices. The study used a descriptive and analytical approach. The results showed that pectin agro-industry and fermented feed from banana peel as raw material feasible to be developed based on five criteria: Net Present Value (NPV), Gross B / C, Net B / C, Internal Rate of Return (IRR) and Payback Period (PP). Banana peel pectin agroindustry was feasible to manage based on five financial feasibility criteria, including: (1) Net Present Value (NPV) of IDR 720,114,699.00 (> 0); (2) Gross B/C of 1.06 (> 1); (3) Net B/C of 2.34 (> 1); (4) Internal Rate of Return (IRR) of 40.89% (> 13%); and (5) Payback Period (PP) of 2.9 (<10 years). Fermented animal feed agroindustry was feasible to manage based on five financial feasibility criteria, that is: (1) NPV of IDR 366,118,110.00 (> 0); (2) Gross B/C of 1.16 (> 1); (3) Net B/C of 1.93 (> 1); (4) IRR of 32.54% (> 13%); and (5) PP of 3.7 (<10 years).Keywords: financial feasibility, banana peel, pectin, fermented feed, sensitivity

Abstract

This research deals with identification of potential hydrological drought at 15 watersheds in Eastern part of East Java Province. Hydrological drought events is indicated by water deficits at the main river of the watersheds during certain period of record. Discharge data from 15 watersheds in East Java are used as main input for this analysis. TLM modul based on HydroOffice platform is used to calculate the deficit. Deficit event is counted when the discharge during more than > 7 days is below the threshold level. The threshold level is set up using percentile 90% (Q90). The value of Q90 is determined from discharge times series. Furthermore, the discharge is rangked from high to low flow. Results from TLM are then imported to EXCEL for further analysis. Furthermore, GIS software package (Quantum GIS) is used for mapping the spatial variation of discharge values (avarage, maximum, Q90), frequency and duration of deficits events. Abstract

This study was purposed to design and construct a prototype electric-powered dryer unit for drying of Rubber Smoked Sheet (RSS). The performance of designated dryer was examined in terms of drying conditioning and the quality of RSS and then compared to original curing process based on the sheet quality and pace of drying. The results showed that the dryer was capable to produce the standard quality of RSS, as indicated by the absences of bubbles, product defects and impurities. The prototype of drying unit could reduce also the weight of RSS or latex rubber in average of about 36% of the initial weight for about 48 hours at temperature range between 56 and 76°C.Keywords: drying unit, latex sheet, sheet quality

Abstract

Prol Tape is one of the local traditional food products (cake) from Jember, made from fermented cassava. Quality improvement problems were still faced by producers of prol tape. This was due to limited information of consumers’ satisfaction factors of this product. Therefore the evaluation of consumers’ respon was strongly needed to know consumers’ needs in this product. Quality Function Deployment (QFD) was used in this research to reach factors or product attributes related to consumers’ needs of prol tape product. The result of this research found that there were 4 attributes of consumers needs consisted of taste, colour, aroma and texture. There were also five technical responses from producers (production acctivities) which have close relationship to product quality. Compared to other brands, it was found that consumers prefer to select Wika than other brands (Sumber Madu, Primadona and Purnama Jati). From QFD analysis, Wika could reach the target compare to others. It means that Wika has better condition to answer consumers’ needs using tecchnical response. Some of recommended strategies are also explained briefly in this research paper.Keywords: quality, traditional product, QFD
