Abstract

Background: Gestational weight gain (GWG) is one of the predictors associated with birth outcomes. Excessive Gestational Weight Gain (EGWG) associated with post-pregnancy obesity nutritional status in the long term. GWG related by various factors, one of which is household food security status. Objectives: The study aimed to analyze the relationship between food security and GWG. Methods: This study used a case-control study design with 54 pregnant women who were divided into a case group (27 respondents with EGWG) and a control group (27 respondents with normal GWG). Pregnant women were interviewed using a general questionnaire and Food Insecurity Experience Scale (FIES) questionnaire for household food security status. The chi square and the odds ratio test were carried out to assess the relationship between the independent variables, food security and GWG Results: The results showed that one of the indicators of individual characteristics, pre-pregnancy Body Mass Index (BMI), had a relationship with GWG (p=0.029; OR = 4.038; 95% CI: 1.295-12.585). One indicator of socio-economic characteristics, employment status also had a significant relationship with GWG (p=0.029; OR = 4.156; 95% CI: 1.312-13.169). Food security status was found not to be associated with GWG (p=0.743). Conclusions: Efforts to prevent EGWG in this population can focus on early identification, pre-pregnancy BMI and other risk factors such as employment status. Another aspect studied, food security, was found to have no relationship with GWG.

Abstract

Background: Patients with type two diabetes mellitus and suspected cerebrovascular accident accompanied by hemiparesis require proper nutritional care to speed up the healing process. The nutritional care provided is a diabetes mellitus diet, low in purines and low in fat in order to keep blood glucose levels close to normal by maintaining a balanced diet and regulating food intake, as well as reducing fat levels to near normal by controlling cholesterol intake. Objectives Analyzing the Standardized Nutrition Care Process carried out on type two diabetes melitus and susp cerebrovascular accident patients hospitalized at X hospital. Methods: This clinical nutrition care rotation study used a descriptive research type with a case study design. The case study was conducted in September 2022 for inpatients at X Hospital in Surabaya. Results: Patients were given a cardiovascular diabetes mellitus diet with low purines and low fat and an energy requirement of 1755 kcal, 65.81 g of protein, 307.125 g of carbohydrates, and 29.25 g of fat. soft food form. After three days of monitoring, the results of the presentation of the portion of the meal increased in the food that had been served: the patient ate more than 75% of the food (remaining 25%). Patients do not eat food from outside the hospital. Conclusions: Some nutrients from the patient's food intake have reached 90–110% of the requirement. This is because the patient has no problems eating and, before hospital admission, already had a good appetite. The advice given is that it is better to be able to maintain restrictions on intake of sugar, salt, and fat and apply the 3J pattern, namely the right type, right amount, and right schedule. Apart from that, do light exercise to train muscles and body movements, such as stretching your hands as well as during discharge from the hospital, you can continue to change your diet according to recommendations (foods to avoid or limit) during hospitalization.

Abstract

Background: The outbreak of the Covid 19 virus worldwide has caused many victims to fall, as well as residents of the Bendul Merisi sub-district who have been hit by 928 cases. The case was recorded as the area with the highest cases in Surabaya. This bad record is due to the habits of its citizens who do not comply with the COVID-19 health protocol. Objectives: To analyze the factors from the Health Belief Model with the behavior of implementing the COVID-19 health protocol. Methods: This research has used a cross-sectional method on the population of RW 12 Kelurahan Bendul Merisi Surabaya with a population of 6,125 and the use of the Lemeshow sampling method with a 95% confidence level has resulted in a sample of 191 people using a questionnaire instrument through the Google form. Results: This research has resulted in a weak relationship between perceived vulnerability, perceived severity, perceived obstacles and perceived threats to the behavior of implementing the COVID-19 health protocol and a strong relationship between cues to take action on the behavior of implementing the COVID-19 health protocol. Conclusions: This research has concluded that there is a significant correlation between factors from the theory of the Health Belief Model on health protocols in the era of the COVID-19 pandemic in residents of RW 12 Bendul Merisi Village, Surabaya.

Abstract

Background: Bronchopneumonia is a type of pneumonia that occurs in the bronchi and alveoli. Patients with infectious diseases, such as bronchopneumonia, need special nutritional care to speed up recovery and maintain their current weight. The nutrition care process is carried out by providing a high-calorie and high-protein diet to support the fulfillment of intake according to patient needs. Objectives: To find out the implementation of the nutritional care process by administering a high-calorie and high-protein diet to bronchopneumonia patients. Methods: This study was conducted in October 2022 for patients hospitalized at RS X Sidoarjo. Data collection are carried out by observation for 3 days in the domains of food intake, physical/clinical, biochemical, and anthropometry. Results: After the nutrition intervention with the principle of a high-calorie, high-protein diet, the patient's condition began to improve, marked by increased intake from day to day, even though on the first day of intervention there was fulfillment of protein, fat, and iron, which had not been able to reach the target (<60%). The symptoms of cough and cold felt by the patient have decreased in scale, and no weight loss has occurred. However, during the intervention, laboratory tests were not repeated. Conclusions: The patient's recovery in this case was quite fast, the results of clinical physical monitoring slowly improved, no weight loss occurred, and food intake increased gradually towards the set target. Although biochemical values cannot be monitored and evaluated because there has been no re-examination, overall, the nutritional intervention provided was achieved.

Abstract

Background: Breast milk contains various nutrients needed for infants. The coverage of babies receiving exclusive breastfeeding in 2021 in Surabaya City is 72.91%. A high level of knowledge determines whether or not it is easy for mothers to understand and absorb information about exclusive breastfeeding. The higher the mother's level of knowledge, the higher the mother's ability to absorb information about exclusive breastfeeding. Objectives: Provide support and build confidence to pregnant and breastfeeding women, and increase knowledge regarding the benefits of exclusive breastfeeding for children up to 2 years of age. Methods: The implementation of this community service includes education with lecture methods using power point and leaflets media, followed by sharing/discussion, and cooking demonstrations with the menu Mustard Greens Rolls with Tofu Carrot Chicken. The success of the activity is marked by indicators of increased knowledge as measured by the results of pre and post tests. Result: Data analysis showed that the average value of knowledge before (pre test) and after (post test) was given education increased, and the p-value result was 0.000 <0.05, meaning that there was a significant difference in the level of knowledge of pregnant and breastfeeding women before and after education. Conclusions: Providing education using the lecture method using power point media about exclusive breastfeeding and stunting leaflets can effectively increase the knowledge of pregnant and breastfeeding women, so that educational activities and cooking demonstrations can be carried out continuously and routinely. It is expected that pregnant and breastfeeding women can exclusively breastfeed their children until the age of 2 years as an effort to reduce the prevalence of stunting and prevent stunting in the future.

Abstract

Background: Food is the most basic human need for survival. Food contamination can also be in the form of contamination originating from Food Additives (BTP) and the addition of hazardous substances that are misused in food. Supervision of hazardous materials abused in food. Based on the Joint Regulations of the Minister of Home Affairs of the Republic of Indonesia and the Head of BPOM RI Number 43 of 2013 and Number 2 of 2013 concerning Control of Hazardous Substances Misused in Food, one of which is carried out on types of hazardous materials with yellow methanyl dye (methanyl yellow). Objectives: The study was conducted to determine the content of methanyl yellow used in food circulating in traditional markets and supermarkets in the city of Banyuwangi by random sampling. Methods: The study was conducted using a qualitative test in which the researcher could identify the methanyl yellow dye contained in food ingredients by using a test by comparing the test color with the methanyl yellow color. Testing for food contamination was carried out in the SIKIA environmental health laboratory room, Airlangga University, Banyuwangi on Tuesday, 26 February 2019 at 11.00-14.40 with random sampling. Results : Testing for methanyl yellow content in food samples obtained results from 15 samples tested including yellow jelly at the Banyuwangi market, yellow crackers at the Blambangan market, soto seasoning at the Blambangan market, turmeric powder at the Blambangan market, yellow crackers at the Blambangan market, soto seasoning at Blambangan market, yellow noodles at Blambangan park, "Floridina” brand drink, "Marimas Jeruk brand powder”, wet yellow noodles near Blambangan park, gule seasoning near Blambangan park, instant seasoning "Fried chicken mix”, packaged jelly at the shop groceries, yellow crackers at the Cungking market, "Finto” brand powder drinks at the grocery store. Conclusions: The results of the sample testing obtained from 15 test samples explained that none of the samples experienced a change in color, or in another sense, all samples were free of methanyl yellow dye.

Abstract

Background: In Indonesia, hypertension is a very common disease. High and chronic stress levels can contribute to the risk of developing hypertension. Uncontrolled consumption patterns with excessive fat and salt content but very little fiber consumption can increase the risk of developing hypertension. Objectives: To determine the association of stress level and consumption pattern with hypertension in adult patients. Methods: This study is a quantitative research. This study used a cross-sectional design, which was conducted on 365 adult patients, the sample was taken by accidental sampling. Statistical analysis using chi-square test and correlation contingency test. This study was conducted on a population of adult patients at the Sukodono Health Center, Sukodono District, Sidoarjo Regency. The research instrument used the Semi Quantitative Food Frequency Questionnaire (SQ-FFQ) for consumption patterns and the Depression Anxiety Stress Scale (DASS-21) for stress levels. Results: The results showed that there was no significant relationship between stress level and hypertension (p=0.143; r=0.361) and there was a significant relationship between consumption pattern and hypertension. Conclusions: Stress level is not the main factor causing hypertension in patients. Consumption patterns can be one of the factors causing hypertension in patients.

Abstract

Background: Obesity occurs due to an imbalance between the amount of energy intake into the body and the energy needed by the body. Genetic factors and the amount of daily energy intake are some of the factors that cause obesity. Objectives: This study aims to determine the relationship between genetic factors and energy intake with the incidence of obesity. Methods: This research method was descriptive quantitative. The population in this study were students of SMP Negeri 24 Surabaya who had overweight and obese status. Sampling using Lemeshow formula with a sample size of 27 students. The instruments used were questionnaires and 3x 24h recall. Results: The results of the study using the Pearson test showed a relationship between genetic factors and the incidence of obesity p-value = 0.030 and a relationship between energy intake and the incidence of obesity p-value = 0.042 Conclusions: Obesity can occur due to genetic factors and excessive energy intake.

Abstract

Background: The transition from face-to-face classes to online classes is part of the education sector's strategy to comply with health protocols during the COVID-19 pandemic. However, this affects the sleep quality and stress levels in students. As many as 70% of high school students in East Java have poor sleep quality and only 30% have good sleep quality. Stress in adolescents is aggravated by limited access to tourism places, shopping centers, places of worship, sports grounds, and also meeting peers which are places to release stress. Poor sleep quality and stress levels increase the risk of eating pattern. Research data shows that during the pandemic of COVID-19, adolescents's eating patterns were disrupted, such as frequent snacking and eating high-calorie foods. A good diet during a pandemic is not only to shape nutritional status in the future but more importantly to maintain and increase body immunity to avoid transmission of the COVID-19 virus. Objective: This study aims to describe the quality of sleep, stress levels, and eating patterns of adolescents in Kota Kediri during pandemic of COVID-19 and to analyze the relationship between sleep quality and stress levels with eating patterns of adolescents in Kota Kediri during pandemic of COVID-19. Methods: This research was a cross-sectional observational study. The variables of this study were sleep quality, stress levels, and eating patterns. The instruments used were a respondent's characteristics questionnaire (gender, age, school, and address), sleep quality questionnaire, PSS-10 questionnaire to assess stress levels, and SQ-FFQ form with frequency of meals a day to assess eating patterns. The research locations were selected based on simple random sampling, that are SMAN 1, 3, and 4 Kediri City. The total sample is 101 students and divided based on proportional random sampling. Results: The results showed that 55 students (54.5%) had poor sleep quality, 46 students (45.5%) were classified having a mild level of stress, and 71 students (70.4%) had an adequate diet during pandemic of COVID-19. The results of the relationship test showed that there is a relationship between sleep quality and adequate eating patterns (p value = 0.007), and there is also a relationship between stress levels and the respondent's eating pattern (p value = 0.020). Conclusions: Poor sleep quality and mild stress levels have a relationship with adequate eating patterns in adolescents in the city of Kediri during pandemic of COVID-19.

Abstract

Background: Breadfruit production in Indonesia is very abundant, in the first quarter the production of breadfruit in Indonesia reached 33,382 tons. Breadfruit fruit can be processed into breadfruit flour to be used as material for making breadfruit flour formulation sempol (0%, 25%, 40%, 55%). In 100 grams of breadfruit flour contains high fiber as much as 3.7 grams of fiber. Fiber is able to slow down the absorption of glucose in the stomach to prevent the occurrence of diabetes mellitus. Objectives: This study aims to analyze the fiber content and organoleptic test of sempol by substitution of breadfruit flour (Artocarpus altilis). Methods: This research is a type of quantitative research with a quasi-experimental research design. The research sample consisted of 35 panelists taken by purposive sampling. Acceptance data were obtained from the organoleptic test form and analyzed using the Kruskal Walis method followed by the Man Whitney method. Fiber content data was obtained from the results of the gravimetric test laboratory and analyzed using the One Way Anova method followed by the Duncan method. Results: The results showed that the fiber content in sempol was significantly different (p=0.05). The results of the sempol organoleptic test showed significant differences in the parameters of color (p=0.000), aroma (p=0.001), and taste (p=0.008). In the organoleptic test for texture parameters there was no significant difference (p=0.149). Conclusions: In the gravimetric test the crude fiber content showed an increase in each sample treatment with the highest yield of crude fiber sample X3 of 2.14%. The results of the organoleptic test for color and aroma parameters were highest in sample X0 (control) with a score of 3.86 and 3.69 respectively, in the parameters of taste and texture the highest results were in sample X1 (substitution of breadfruit flour 25%) each score of 3.49 and 3.31.
