Abstract

South Nias District which natural disaster in the year 2005 ago in the form of earthquake at 8.6 Richter scale still including district with severe nutritional status children including baby which still was high. In the year 2005, there was about 11.72% suffer malnutrition baby and even in the year 2007 counted 32% baby of including malnutrition category. This study in May until October 2008, analyzed descriptively with design study was cross sectional. The chosen study location was services-region of the Primary Health Centre (PHC) of Lolomatua, PHC of Amandraya and PHC of Teluk Dalam. Population study was entire family owning baby with amount of sample entirely counted 364 babies. The study instruments (equipments) were using question worksheet, Weight-Baby Instrument, Long-Grader Instrument. Data was processing through editing process, coding, and tabulating. Data analysis done seen number from each every result-studied, was later then was description.The result showed that only 11.5% baby given by colostrums. The nutritional status pursuant to Weight/Age showed that 52.5% including in mild category, 36.5% in normal status, and 6.3% in severe status.

Abstract

Tujuan penelitian ini adalah untuk mengkaji tingkat kecukupan energi, protein dan zat besi serta status anemia pada remaja putri di Kelurahan Kabola Kabupaten Alor. Jenis penelitian ini adalah penelitian deskriptif dengan rancangan cross sectional study. Cara penentuan sampel dilaksanakan secara simple random sampling di mana semua individu dalam populasi mempunyai kesempatan yang sama untuk diseleksi sebagai sampel. Total sampel adalah 91 orang. Variabel yang diteliti adalah karakteristik keluarga (Tingkat Pendidikan, Pekerjaan, Pendapatan), pengetahuan, tingkat kecukupan gizi (Energi, Protein dan Fe) dan status anemia. Hasil penelitian menunjukan bahwa sebagian besar responden berumur 18 tahun (27,47%) dengan tingkat pendidikan orang tua sebagian besar berpendidikan SMP (39,56%), dan bekerja sebagai nelayan (58,24%) serta berpendapatan yang termasuk dalam kategori kurang (73,62%). Tingkat pengetahuan gizi remaja putri sebagian besar termasuk dalam kategori cukup (49,45%). Tingkat kecukupan energi, protein dan zat besi remaja putri masih banyak yang berada pada kategori kurang dari normal atau defisit di mana tingkat kecukupan energi mencapai 39,6%, kecukupan protein mencapai 38,5% dan kecukupan zat besi mencapai 36,14%. Status anemia remaja putri menunjukan bahwa 64,83% mengalami anemia yang terdiri dari anemia ringan 38,46%, anemia sedang 17,58% dan anemia berat 8,79%.

Abstract

Scavengers are group of informal sector workers which require an optimal capacity of physics in completing their activities. Nutrient is one of the most important factors that influence physical capacity in daily activities. The nutrient is needed in maintaining the growth and development of the body and also provide sufficient energy in doing daily activities in order to increase work productivity. The aim of the research is to identify intake and the nutrient status of scavengers at the Alak landfill of Kupang city. The type of the research is a descriptive with the design of cross sectional study. The amount of sample is 37 people taken by means of total sampling method. The result of the research shows that (1) energy and protein intakes have discovered : the frequency of food distribution of most scavengers (56.76%) are in low category and 43.24% are in good category. The type of food consumed by all scavengers (100%) are in less category. The average intake of energy and protein of scavengers are 1656.95 kcal and 24.04 g. (2) Based on Body Mass Index (BMI), most (56.76%) scavengers are in the underweight category and 43.24% are in the normal category.

Abstract

Iodine is a type of mineral element of the second micro after iron substance which very important to human body. Iodine can be obtained by consuming daily food containing vegetables and meat essences. The research is aimed to discover the the influence of food processing manner towards the contents of iodine in food consumed by babies in the endemic area of gaki in the sub-district of miomaffo barat of ttu regency. A type of descriptive research is used with the method of cross sectional study. The amount of sample is 34 people gathered by means of purposive sampling method. The result of the research shows that (1); Food consumption pattern pervades the type, amount and food distribution frequency of baby which is in good category whereas, 61,76% of respondents possess a variety of sufficient food, the amount of food distributed is in the rate of 0,73-280,58 gr/capita/day and the common frequency of food is 3 times/day (100%), (2); Methods of food processing are; poaching and sauteing 31,83%, frying 26,32%, and dining a dish of raw vegetables and spicy sauce 10,52%, (3).

Abstract

Meat as a food is a good source of nutrition and prospective. However the meat is very easily damaged if contaminated microbe and will cause poisoning (foodborne diseases) if contaminated pathogen such as Salmonella sp. and Escherichia coli. This research was aimed to analyze the quantity of microbe contamination and identify of Salmonella sp. and Escherichia coli in chicken meat in several marketing areas of Kupang city. While the particular aim is to (1) analyze the quantity of microbe contamination in chicken meat was sold in several marketing areas of Kupang city, (2) identifying the bacteria Salmonella sp. in chicken meat sold in market of Kupang city, (3) identifying bacteria Escherichia coli in chicken meat was sold in market of Kupang city, and (4) to find out the quantity of microbe contamination in chicken meat was sold in three marketing areas. The research design is cross-sectional study using average test to know the differences in the samples, where samples were taken from 3 places of chicken meat market such as Oeba Market, Oebobo Market and Naikoten Market. The data analyse are using a colony counter, anova and the identification.

Abstract

The anemia of iron nutrient is one of the nutrient problems occured in Indonesia and one of main causes of death. The pregnancy have become a vulnerabel group toward iron nutrient anemia as the result of the increase of nutrient needs for mother and fetus. During pregnancy the availabel of iron substance is not comparable with the excalation of blood volume. Manuaba (2007) stated that anemia during pregnancy is strictly dangerous especially when pregnant, giving birth and parturition. The aim of the research is to identify the determinant factors of the incident of iron nutrient anemia toward the pregnancy of Noelbaki in the year of 2010. Variables of the research are iron nutrient anemia, age, age of the pregnancy, the spacing of pregnancy, parity, iron sufficient level of iron substance, prohibited food, and income. Respondents in the research are all pregnancy of Noelbaki that are attempting and following all courses at the local clinic of Noelbaki. The research is analytic research with the design of cross-sectional study. The result of the research base don the multiple logistic regression tests shows that the determinant factor of the incident of iron nutrient anemia of pregnancy in Noelbaki

Abstract

The research was knowing nutrient content and organoleptic characteristic of biscuit based on composite fluor of putak and Dolichos bean (Lablab purpureus). Completely Randomized Design of 6 treatments and 2 replications was applied. The treatments used were (A) 100% putak, (B) 70% putak + 30% dolichos bean, (C) 60% putak + 40% dolichos bean, (D) 50% putak + 50% dolichos bean, (E) 40% putak + 60% dolichos bean, and (F) 30% putak + 70% dolichos bean. Variable measured were energy, carbohydrate, protein, fats, moisture and ash contents and organoleptic characteristic were odor, colour, taste and texture. Data obtained were analyzed using ANOVA and Least Significant Difference (BNT) 5%. The result show that the treatments were significantly (P<0,05) effected on the energy, carbohydrate, protein, moisture and ash contents but not significantly (P>0,05) on the fats contents. The organoleptic test showed that treatment (D) 50% putak + 50% dolichos bean was the best treatment. In conclusion, added Dolichos bean flour on the putak increasing the biscuit energy, carbohydrate, protein, moisture and ash contents significantly (P<0,05) but not increasing and not significantly (P>0,05) the fats contents.

Abstract

Are Ndota and Pare Laka red rice are good source of food antioxidant. The processing including acid or base treatment can influence the compounds and the ability of red rice antioxidant. This study aims to determine the effect of pH on antioxidant compounds and antioxidant capacity of Ende red rice varieties Are Ndota and Pare Laka. This research using completely randomized design with eleven treatments and two replication. Anthocyanin content was tested by using spectrophotometric method, the phenol content was tested by using Folin-Ciocalteu method, the ability to capture the free radicals was tested by using the Kim method and the protective power by using Thiocyanate method. The statistical result tests on the anthocyanin content of both types of red rice showed no significant different (P≥ 0.05) among the eleven treatment, but the phenol content of red rice Pare Laka was significant different (P≥ 0.05) among the eleven treatments. The ability of free radicals from both types of red rice showed no significant (P≤0.05) among the eleven treatments, ability protective power for five days from Are Ndota rice, showed no significant difference (P≥0.05).

Abstract

Fish as a food substance is a valuable and prospective source of nutrition. Thus, fish can easily spoil if contaminated by microbe and may cause food borne diseases if contaminated by pathogen such as Salmonella sp and Vibrio cholera. This research generally aims to analyze the number of soiled microbe in several marketing places in Kupang city. Meanwhile, the specific aims are to (1) analyze the number of soiled microbe in several marketing places in Kupang city, (2) find out the correlation between marketing places and number of soiled microbe, (3) identify Salmonella sp bacteria in Tongkol fish sale in several marketing places in Kupang city, and (4) identify Vibrio cholera bacteria in Tongkol fish sale in several marketing places in Kupang city. Method used in this research is Laboratory Experiment using complete damp design with 3 treatment (Tongkol fish from Oeba market, Pasir Panjang market and fish peddle) and 2 retests.
