Abstract

Introduction: Wheat flour is made from wheat which is a sub-tropical plant that can be grown easily in tropical environment like Indonesia. In response to this, efforts need to be made to find substitutes for wheat flour through increasing local food acceptability to reduce import dependence of wheat. This study aimed to analyze and determine the organoleptic differences of biscuits made from yellow pumpkin flour. Methods: This type of research is experimental with a completely random design consisting of 6 treatments, namely P1 (0% yellow pumpkin flour : 100% wheat flour), P2 (10% yellow pumpkin flour : 90% wheat flour), P3 (20% yellow pumpkin flour : 80% wheat flour), P4 (30% yellow pumpkin flour : 70% wheat flour), P5 (40% yellow pumpkin flour : 60% wheat flour) and P6 (50% yellow pumpkin flour : 50% wheat flour). Data were analyzed using the Kruskal Wallis test with a significance level of 1% and Mann Whitney test. Results: The results showed that the organoleptic value of biscuits with the highest acceptability from the color aspect was at P2 (3,72), aromatic smell at P2 (3,68), taste at P1 (3,76), and texture at P1 (3,52). Conclusion: This study may conclude the potential use of yellow pumpkin flour mixture when preparing wheat-base biscuits. Therefore, import dependency of wheat can be reduced.

Abstract

The level of health in a nation can be determined by the infant and child mortality rate because can describes how big the health problem it is. High infant and child mortality rate is also due to the high incidence of low birth weight. Babies with low birth weight have always been a global health problem, 20 million babies per year 96.5% are born with low weight. This study aims to analyze the determinants of the incidence of low birth weight at the Oesapa Health Center in 2020. Type of this research is a quantitative study with a case control study approach. The study was conducted in the working area of the Oesapa Public Health Center with a sample of 116 mothers, of which 58 mothers with LBW cases and 58 mothers with normal birth weight. The data analysis used was univariabele, bivariabele, and multivariabele analysis with chi square statistical test and multiple logistic regression. The results showed that the factors that influenced the incidence of LBW were age at birth, education level, birth spacing, utilization of ANC examination, consumption pattern with (p= 0.000) and income level (p=0.002) while the factor that had no effect was parity (p= 0.060). Consumption pattern factors (ρ= 0.000), ANC utilization (ρ= 0.001) and education level (p=0.002) were determinant factors for the incidence of LBW. Health centers are expected to be able to utilize various health promotion media in order to increase mother's knowledge of the importance of good consumption patterns and the importance of prenatal care during pregnancy.

Abstract

The success of the development is influenced by several aspects, one of them is food security. Food security can be a reflection of the quality of a nation. A nation with low food security can influence its physical and human development. GFSI states that Indonesia occupies 69 positions in World Food security. Food security can not only be seen in terms of global area but also in terms of households. Greengrocer is the person who works in the informal sector and generally has low income. This research aims to see the relationship between income, family largeness, education, and nutritional knowledge of mothers toward greengrocers’ household food security in Oeba Market. This research is a qualitative research type that uses the cross-sectional approach. The research was conducted in Oeba Marketon 74 greengrocers as the sample. The data were analyzed using univariate and bivariate analysis with chi-square statistical tests. The results showed that the income variable (p=0.016) was the variable that affected food security, while the variable that had no effect was family size (p=0.964), education (p=0.552), and nutritional knowledge (p=0.749). Household income is a source of meeting food and non-food needs. Household income is also able to influence the quality and quantity of food purchased. To achieve household food security, family empowerment needs to be given special attention because food shortages both in quantity and quality can inhibit the fulfillment of family nutrition which will result in poor nutritional status in family members.

Abstract

According to data from the Tarus Health Center in 2021, 47 toddlers under five are malnourished, 170 toddlers are malnourished, 57 toddlers are at risk of overnutrition, 20 toddlers are malnourished, and four are obese. This study aims to determine the relationship between food consumption patterns and the nutritional status of children aged 3-5 years at the Tarus Public Health Center, Kupang Regency. An across-sectional research design was used in the form of an analytic observational study. The population in this study were all children aged 3-5 years who were in the Work Area of the Tarus Health Center as many as 419 toddlers. The research sample amounted to 100 people. The sampling technique in this study using the proportional stratification random sampling technique is a sampling process by dividing the population into strata, selecting random samples from each stratum, and combining them to estimate population parameters. A Chi-Square test was performed to analyze the data. The findings showed that the type of food (p = 0.000), energy adequacy (p = 0.034), and protein adequacy (p = 0.011) were all related to the nutritional status of children under five. While the frequency of unhealthy eating is not related to nutritional status (p = 0.090), it is recommended that health workers carry out more nutrition-aware family counseling, especially to parents whose toddlers have low, less, or more nutritional status, so that nutritional status can be managed effectively

Abstract

Infectious disease is a disease caused by pathogenic microorganisms such as bacteria, viruses, fungi. The disease can be passed from person to person, through contact with contaminated surfaces or objects. One simple effort that can be done to help prevent infectious diseases caused by bacteria and parasites is to teach children about the importance of a clean and healthy lifestyle. Furthermore, to ensure that children want to change habits in a healthy direction, effort is needed, one of which is through education. Health education plays an important role in promoting the well-being and development of children in primary schools. The results of community service activities show an increase in students' knowledge after counseling is carried out.
