Journal of SAGO Gizi dan Kesehatan (Nutrition and Health) is a peer-reviewed journal of a scientific nature contained in the Polytechnic of Health Ministry of Health of Aceh, who publish high quality of nutrition and health-related individuals, populations, groups and communities who are vulnerable to malnutrition and health and risk issues. The scope of the journal study associated issues of nutrition, food technology, nutrition and maternal and child health, environmental health, hygiene and sanitation, oral health, treatment of individuals/families and communities, and safety of medical drugs. The journal also seeks to raise awareness of the interrelationship between nutrition, exercise, physical activity, and lifestyle for improving health across the lifespan and to demonstrate how healthcare outcomes and policies can be improved with the adoption of a more nutrition-oriented approach. In this way, it aspires to provide an invaluable resource to nutrition and healthcare practitioners, as well as researchers and academics of nutrition studies. SAGO Gizi dan Kesehatan (Nutrition and Health) provides an initial rapid review of all submissions to determine suitability for external peer review. Abstract

Background: The application of simulation method is one of the keys to improve students' practical skills. However, many lecturers face challenges in integrating simulation effectively, mainly due to limited facilities, lack of training, and difficulty in measuring learning impact.Objectives: This study aims to explore how lecturers' experiences in implementing simulation methods, especially related to the strengths, challenges, student responses and the role of institutions related to simulation methods.Methods: This design is a qualitative study with a descriptive phenomenological approach involving seven nursing educators with in-depth interviews at the Akademi Keperawatan Ibnu Sina Kota Sabang. Data analysis used the Miles and Huberman Model which refers to data collection, data reduction, data presentation, and drawing conclusions.Results: There are four main themes in this study, namely the strengths of the simulation method, challenges of the simulation method, student responses and the role of educational institutions.Conclusion: The simulation method makes students more interactive, makes it easier to elaborate on the topics being studied, make decisions, gain direct experience, think critically and work together in a team.

Abstract

Background: The gut microbiome, plays a crucial role in maintaining overall health. An imbalance in the microbiome (dysbiosis) can lead to various health issues, including type 2 diabetes. Prebiotics, as nutrients for gut microflora, have the potential to reduce dysbiosis and enhance gut immunity in type 2 diabetes patients. However, there is still limited research on the effects of prebiotics on gut immunity in individuals with type 2 diabetes.Objectives: To asses the effect of prebiotics on the gut immune system in patients with type 2 diabetes.Methods: A systematic literature review was conducted using the PRISMA method, including full-text RCT articles from 2014-2024. Databases searched included PubMed, Scopus, MDPI, and Elsevier.Results: Studies show prebiotics significantly influence gut microbiota composition, especially increasing Bifidobacterium in type 2 diabetes patients, though overall diversity remained unchanged due to short study durations.Conclusion: Prebiotics enhance gut microbiota, particularly Bifidobacterium, in type 2 diabetes patients. This increase, along with the production of SCFAs, plays a role in lowering gut pH, supporting the growth of beneficial bacteria, and inhibiting pathogens. These findings suggest the potential of prebiotics as part of type 2 diabetes management; however, further research is needed to confirm their clinical application. Healthcare institutions are encouraged to develop educational programs emphasizing the importance of gut microbiota and the role of prebiotics in the health of type 2 diabetes patients.

Abstract

Background: The nutritional problem of children under five is still high (Stunting) in Langsa City. The prevalence of stunting in Aceh in babies under two years old (baduta) is 37.9%, while the national prevalence is 30.8%, which means 4 out of 10 babies suffer from stunting. Stunting can be caused by various factors, including direct factors such as family and household factors, adequate additional/complementary food, breastfeeding and infections. Indirect factors such as political economy, health and health services, education, society and culture, agricultural and food systems as well as water, sanitation and the environment.Objectives: Analysis of exclusive breastfeeding, sanitation and water supply and the health service system causing stunting in Langsa City.Methods: Design quantitative, with a sequential cross-sectional design. The research was conducted in Langsa City in 2021 and samples were taken using the total sampling method of 50 respondents according to the data in the Langsa City Health Service e-PPGBM electronic application. The instrument used is a questionnaire, analysis uses the Chi – Square test.Results: Research results from 50 respondents based on stunting problem factors showed the variable exclusive breastfeeding (p= 0.015). Variables sanitation and clean water supply (p= 0.005), health service system (p= 0.006).Conclusion: From the results of the research, there is a close relationship between the direct causes and indirect causes of the occurrence of nutritional/stunting problems in the Langsa City Health Service Work Area in 2021, especially the three variables (exclusive breastfeeding, health service system, and sanitation and water supply).

Abstract

Background: Cases related to the immune system, such as infections, tend to increase because human life heavily depends on the activation and supression of immune responses to combat various pathogens and disease factors. The nutritional content of tempeh is known to have the ability to regulate the immune system, either enhacing ot inhibiting immune responses.Objectives: This study aimed to determine the impact of consuming tempeh on  immune system modulation specifically in increasing IgA, decreasing IgE and IL-6.Methods: The type of research is a narrative review that uitilzes articles from 2014 to 2024, sourced from Google Scholar, PubMed, and ScienceDirect. The reviewed articles were quasi-experimental and experimental studies on humans and animal models. Inclusion and exclusion criteria were guided by the PICOS framework. Data were processed and analyzed using the PRISMA approach to filter and identify relevant literature, followed by a narrative synthesis to interpret research findings.Results: Tempeh consumption induces an increase in IgA production, reduces IgE levels, and lowers IL-6 concentrations. IgA secretion increased from 2098 ng/mL to 2573 ng/mL in males and from 2376 ng/mL to 2421 ng/mL in females after 25 days of tempeh intake. Combining tempeh consumption with resistance training for 2 weeks also elevated sIgA concentrations from 70.123 ng/mL to 77.216 ng/mL. In rats, tempeh Rs reduced plasma IgE levels from 1.2 µg/mL to 0.8 µg/mL after 14 days and decreased skin severity scores from 2.5 to 1.5. Conclusion:  Tempeh consumption positively influences immune modulation by increasing IgA levels, reducing IgE, and lowering IL-6 concentrations.

Abstract

Background: Neurodegenerative diseases are associated with progressive memory loss and can lead to neuronal cell damage. One consequence of neuronal cell damage is the decline in short-term memory. Changes in short-term memory can be caused by increased levels of anxiety and depression in the elderly, potentially leading to dementia. The antioxidant substances in Centella asiatica and the effects of physical exercise have potential in preventing the decline in anxiety levels and short-term memory.Objectives: to determine the effects of combination of swimming HIIT and Centella asiatica oil extract on anxiety and short-term memory in adult male Wistar rats.Methods: The research method used was a pre-test post-test design with a control group on male Wistar rats. The study was conducted in the Laboratory of the Faculty of Medicine, University of Palangka Raya, from April to July 2024. The sample consisted of 24 rats divided into 4 groups: Control (K1), treatment of swimming HIIT (K2), administration of Centella asiatica Oil Extract (K2), and the combination of swimming HIIT with Centella asiatica Oil (K4). Data analysis was performed using One Way ANOVA, followed by Post Hoc Test with a 95% confidence interval.Results: There is a significant difference in anxiety levels and short-term memory between treatment groups (p= <0,001). Based on these results, the group with the best outcome is the group that received the combination treatment of swimming HIIT and Centella asiatica oil, as evidenced by a significant difference between the combination group and the other groups (p = <0,001).Conclusion: The combination treatment of swimming HIIT and Centella asiatica oil has the best potential for reducing anxiety levels and improving short-term memory in adult male Wistar rats.

Abstract

Background: Pigeon pea (Cajanus cajan) is a type of legumes that is underutilized and not widely consumed. The utilization of pigeon pea as GABA-fermented drink have not yet been conducted. The Enhancement of GABA in pigeon pea is carried out by probiotic Lactiplantibacillus plantarum Dad-13. The enhancement of GABA in fermented pigeon pea drink will improve their functional effect and economic value.Objectives:  the aim of this study was to enhanced GABA content in fermented pigeon pea drink with various concentration of monosodium glutamate (MSG) using probiotic Lactiplantibacillus plantarum Dad-13.Methods: Randomized complete design was carried out in this study using experimental analysis. GABA content was determined using UPLC, total LAB was determined using spread plate method. Titration method was performed to determine the acidity and pH meter to determine the pH. Antioxidant capacity was determined using DPPH methodResults: The study showed a significant increase in GABA production, with the highest concentration reaching 92.07 mg/L in the treatment with 0.75% MSG. Additionally, there was an increase in the total count of lactic acid bacteria, total acidity, and antioxidant capacity, indicating an improvement in the physicochemical quality of the product. Organoleptic evaluation revealed panelists' preference for products with the addition of 0.25% and 0.75% MSG for taste, and 0% for texture.Conclusion: Fermentation of pigeon pea milk with the addition of Lactiplantibacillus plantarum Dad 13 and MSG successfully increased GABA production significantly, while also improving several aspects of the physicochemical and sensory quality of the product. These findings have important implications for the development of fermented pigeon pea milk as a new functional product enriched with GABA.

Abstract

Background: The reason why someone neglects dental and oral hygiene is a lack of knowledge. Knowledge is closely related to education. Dental and oral health education is a method to motivate individuals to clean their teeth and mouth effectively.Objectives: The aim of the research was to determine differences in toothbrushing knowledge through counseling using lecture methods and cartoon videos to students in grades IV and V at SDN 04 Air Pura, Pesisir Selatan Regency.Methods: The type of research used is a quasi-experimental type with a "pretest and posttest" design. The sampling technique used was a total population of 80 people. The way to collect data is by filling out a pretest and posttest questionnaire about good and correct tooth brushing. The data analysis used is univariate and bivariate analysis.Results: The results of the research showed that knowledge before being given counseling using the lecture method with good criteria was 32.5% then increased to 62.5%, while counseling using the method of playing cartoon videos with good criteria was 12.5% then increased to 55.0% after being given counseling using the method of playing cartoon videos.Conclusion: The conclusion of this research is that the lecture method and showing cartoon videos can both increase knowledge about good and correct tooth brushing. Keywords:Brushing teeth, Lecture Method, Cartoon Video

Abstract

Background: Mangkokan leaves (Polyscias scutellaria) are a plant with a million benefits from its extraordinary flavonoid content. Flavonoids are a group of compounds that are attracting attention because of their broad potential health benefits and applications in various fields, including nutrition, pharmaceuticals, and medicine.Objectives: Determine the total flavonoid content of mangkokan leaf extract using n-Hexane, ethyl acetate, and 70% ethanol as solvents.Methods: This is an experimental laboratory study by determining the total flavonoid content of mangkokan leaf extract (Polyscias scutellaria) based on differences in solvent polarity using UV-Vis spectrophotometry and comparing its flavonoid content with the ANOVA comparison test. The research was conducted at the Biology Biostatics Laboratory of the Faculty of Mathematics and Natural Sciences, Syiah Kuala University, the Biology Laboratory of the Aceh Ministry of Health Polytechnic, the Chemistry Laboratory of the Faculty of Mathematics and Natural Sciences, Syiah Kuala University, and the Pharmacy Laboratory of the Faculty of Mathematics and Natural Sciences, Syiah Kuala University, from December 1, 2023, to March 31, 2024. A sample of 1,5 kg of mangkokan leaves was obtained from Reuloh, Darul Imarah District, Aceh Besar Regency. The analysis carried out on the sample was phytochemical analysis and flavonoid content using a UV-Vis spectrophotometer instrument. The data obtained were analyzed statistically using the one-way ANOVA method.Results: The best results for determining the total flavonoid content of mangkokan leaves were given by the ethyl acetate extract solvent, namely 25,112 mgQE/g, followed by n-Hexane extract at 22,335 mgQE/g and 70% ethanol extract at 14,285 mgQE/g. The ANOVA test results showed that differences in solvents influenced the total flavonoid content of mangkokan leaf extract with a P value =0,00.Conclusion: The total flavonoid content of mangkokan leaf extract using an ethyl acetate solvent was higher compared to ethanol and n-Hexane solvents.KeywordsMangkokan leaves (Polyscias scutellaria), flavonoids, N-Hexane, ethyl acetate, Ethanol

Abstract

Background: Currently the incidence of short toddlers or called stunting is one of the nutritional problems experienced by toddlers in the world. One of the causes of the stunting problem is the delay in Early Breastfeeding Initiation (IMD) and non-exclusive breastfeeding. The World Health Organization (WHO) recommends breastfeeding for at least 6 months. Breast milk is a nutritional intake that fits the needs that help the growth and development of children. Children who do not get enough breast milk mean they have poor nutritional intake which can cause malnutrition, one of which can cause the risk of stunting.Objectives: The study aimed to determine the relationship between the history of exclusive breastfeeding and the incidence of stunting in toddlers aged 24-60 months in the Sungai Kapih Health Center work area.Methods: The method of this study is observational analytic with a retrospective approach. The number of samples in this study was 72 toddlers. The instrument used to obtain secondary data in this study was the MCH handbook, and the instrument used to obtain primary data in this study was research observation sheets. The data were analyzed using the Fisher Exact test.Results: The results of the study showed that out of 72 toddlers, 36 toddlers experienced stunting, 37 toddlers were not given exclusive breastfeeding and 35 toddlers were given exclusive breastfeeding. Bivariate analysis showed that there was a relationship between the history of exclusive breastfeeding and the incidence of stunting.Conclusion: There is a relationship between the history of exclusive breastfeeding and the incidence of stunting in toddlers aged 24-60 months in the Sungai Kapih Health Center work area.

Abstract

Background: Beef has the highest Digestible Indispensable Amino Acid Score. However, beef is often difficult to consume because it has a tougher texture than poultry or fish. Meltique beef can be an alternative beef product that is easy to consume, but it still uses imported vegetable oil, which has an impact on the high selling price. It is necessary to innovate meltique using local vegetable oil.Objective: Analyse the effect of palm kernel oil (PKO) addition on the pH, cooking shrinkage and palatability of meltique meat.Methods: Using a Completely Randomised Design conducted at the Laboratory of the Faculty of Animal Husbandry, IPB from April to June 2024. The beef used was Brahman Cross sirloin. Two PKO formulas were injected, MP1 and MP2. There were four controls, namely MK1, MK2, WG and DR. The variables studied were pH using a pH meter, cooking loss by calculating the difference in raw-cooked weight, and the level of panellist preference using the hedonic test form. There were 25 semi-trained panelists who met the inclusion criteria to rate the level of preference for nine sensory attributes with a score range of 1 - 5. Statistical tests used ANOVA to analyse differences in pH, cooking loss, and Kruskal-Wallis test to analyse differences in level of preference.Results: There was a significant difference in the pH values of MP1 and MP2 with WG (P-value =0.000). There was no difference in cooking loss value (p-value =0.220). Hedonic test results showed that the level of preference of MP1 and MP2 was significantly different from WG (p-value <0.05).Conclusion: Meltique beef formulas have standard pH characteristics and cooking loss values similar to wagyu beef, but the preference level is still different from wagyu beef.
