Abstract

The purpose of this study is to analyze the biological parameters of the fish resources Seluang red tail (R. lateristriata) the fish sex ratio parameter (sex ratio) and the parameters of the population dynamics of the growth parameters of fish resources Seluang red tail (R. lateristriata) in the upstream region of the Barito River in South Kalimantan Indonesia. Methods of data collection are done by collecting samples at fish landing sites and fishing operations and held for 2 (two) months with a fixed time interval decision namely1 (one) week. The sex ratio of fish in the analysis by using chi-square analysis of the end.The growth parameters were analyzed fish-Walford Plot method, while theoretically Agefish when a width equal to 0 (t0) was performed using empirical equations Pauly (1984).The expected outcome of this research is the availability of scientific data related to thesex ratio comparison of fish and fish growth parameters Seluang red tail (R. lateristriata)in the upstream region of the Barito River in South Kalimantan. Comparison of the gender (sex ratio) Seluang fish red tail (R. lateristriata) of malesand females in the upstream region of the Barito River in South Kalimantan is 2: 1. Condition population dynamics parameters in the Barito river R. lateristriata South Kalimantan covering the theoretically maximum length parameter ( length infinity/108.15 mm, coefficient of growth (per unit time / K) of 0.350/ year, the parameters of thetheoretical age at the time of a length equal to zero (t0) of -0.14.

Abstract

Pumpkin is vegetable that rich in beta carotene as a precursor of vitamin A.Pumpkin can be processed into flour, which is then substitution on fish sausage products to improve the nutritional value. The purpose of this study was get precise percentage substitution of pumpkin flour, to know the effect of pumpkin flour substitution on the content of vitamin A and the panelist acceptance on tilapia sausage product. The firststage was manufacturing of pumpkin flour with drying using sunlight for 2-3 days, followed by the process of flouring. The next pumpkin flour in substitution on the tilapia sausage with a percentage 0%, 10%, 15% and 20% of the total fish sausage batter. This study uses a completely randomized design (CRD) with 4 treatments and 3 replications. The results showed that tilapia fish sausage with 20% substitution of pumpkin flour is thebest treatment in terms of the vitamins A content. Percentage substitution of pumpkin flour may increase vitamin A content in tilapia fish sausage. The content vitamin A tilapia fish sausage with substitution of pumpkin flour with a percentage of 0%, 10%, 15% and20% consecutively are <0.01 mg / g, 0.9825 ug / g, 1.5025 ug / g and 1.5375 ug / g. The organoleptic test results showed that panelists acceptance on tilapia fish sausage with substitution of pumpkin flour ranging between 5 (rather like) up to 6,8 (like).

Abstract

The Reproductive ability of parent fish which just finish spawming are common with stage I of gonadal maturity takes for a long time. Gonad may not mature if it is notgiven treatment. Doses of OODEV between 0,3 – 07 cc/kgs body weight give effect in inducing gonadal maturation. This Research shows that the highest fecundity was an average of 33190 eggs obtained from on Treatment C, and the largest egg diameter was an average of 0,7 mm also obtained in the treatment C. The highest HIS score was in treatment C (0,95%), while the highest IGS value obtained in treatment A (13,183%). The result of the Observations on the gonad histology climbing perch parent fish was the treatment with OODEV hormones caused the development of maturity level. Change in values and levelsof water quality were considered metting the standard for live fish climbing perch fish. The statistical test result on all the above test parameters showed that al was notsignificantly different among all treatment given; thus from the given hypothesis HO wasaccepted and H1 was rejected which means that OODEV injection dose did not significantly affect the maturation procces. The treatmen with OODEV was more than the level without the use of OODEV Hormones (Control). This is because of the role of the FSH in OODEV Hormone influenced the development of biosytesis of estradiol -17 betha and gonad.

Abstract

The study aims to determine the chemical and sensory quality of soy sauce madefrom conch paddy (Bellamyâ javanica) with the addition of a protease enzyme. The processing of soy sauce is naturally takes a long time, so as to speed up the fermentation process using protease enzymes (bromelain and papain). The design is completely randomized factorial design 3x3, 2 replications. The first factor (A) addition of theenzyme bromelain (A1 = 0.5%; A2 = 1%; and A3 = 1.5%); The second factor (B) theaddition of the enzyme papain (B1 = 0.5%; B2 = 1%; and B3 = 1.5%. The parameters observed chemical quality soy sauce snail rice fields (levels of protein, fat, water andash).Quality sensory (specification of color, aroma and viscosity). Observations were made on the fermentation (5, 7, 10, and 13 days). the results show the best rice conchsauce with the addition of the enzyme bromelain enzyme papain 1.5% and 1%, fermentedfor 7 days has the highest value of 21.71% protein content, fat 2,355%; 74.275% water;ashes 9.89%; color specifications 71.25 (almost blackish brown / dark); aroma 59.67 (aroma typical fish sauce already began to smell ); and the viscosity of 73 (almost the same viscosity as commercial fish sauce).
