Abstract

Indonesia is widely recognized as an agrarian country, with a significant portion of its population engaged in agricultural activities. Statistical data from 2001 indicates that approximately 45% of Indonesians were employed in the agricultural sector. Among Indonesia’s native spice commodities, nutmeg holds a prominent position and contributes meaningfully to national development. One of the key nutmeg-producing regions is the village of Seith, located in the Leihitu sub-district, Central Maluku district, Maluku province. This community practices a traditional resource management system known as sasi soa, which governs the harvesting of nutmeg. This study aims to examine the existence, function, and impact of the sasi soa system, particularly its role in the sustainable management of nutmeg resources in Seith. The findings reveal that the sasi soa system is not only effective in regulating nutmeg harvesting but also contributes positively to the conservation of natural resources and the economic well-being of the local population. Notably, farmers who adhere to the sasi soa regulations report higher income levels compared to those who do not comply with the system. These results underscore the importance of integrating traditional ecological knowledge into contemporary resource management strategies.

Abstract

The aim of this research was to determine the appropriate ratio of margarine and canarium to produce the best millet cookies based on organoleptic properties. This research used a Completely Randomized Design with five levels of substitution treatment for margarine and canarium (100%:0%, 75%:25%, 50%:50%, 25%:75%, 0%:100%). Cookies with a substitution of 0% margarine: 100% canarium were liked by the panelists in term of color, aftertaste, taste, texture and produced cookies with a light yellow color, a slight aftertaste, a slight canarium taste, a texture that did not crumble when pressed.

Abstract

This study aimed to determine the optimal concentration of cinnamon powder in nutmeg pulp tea based on its chemical composition and organoleptic properties. The experiment was conducted using a completely randomized design with five treatment ratios of cinnamon powder to nutmeg pulp powder (0%:100%, 2%:98%, 4%:96%, 6%:94%, and 8%:92%), each replicated three times. The results showed that the 4%:96% ratio produced the most favorable outcomes, with a water content of 10.61%, phenol content of 6.12 mg/g, and antioxidant activity of 74.06%. Sensory evaluation indicated that this formulation was moderately preferred in terms of taste (3.20), color (3.20), aroma (3.20), and overall acceptance (2.94). In terms of hedonic quality, the tea was characterized by a slight nutmeg taste (3.25), a brownish-yellow color (2.95), and a slight nutmeg aroma (2.95). These findings suggest that incorporating 4% cinnamon powder provides the best balance between chemical quality and consumer acceptability in nutmeg pulp tea.

Abstract

Peanuts are a legume with high protein content and an important strategic commodity. Exploration and evaluation of local germplasm to enrich genetic diversity still needs to be carried out for further use in plant breeding programs. One of them is local germplasm in Southwest Maluku Regency (MBD). This research aims to describe the appearance and diversity of agronomic traits of several local peanut accessions from Southwest Maluku. The research will take place from November 2022 to February 2023 at the Moa Nursery UPTD, MBD Regency. The design used was a completely randomized block design with a Variety factor consisting of 5 levels, and each level was repeated three times. The variety factor consists of four local accessions and one national superior variety, namely Tasia 2. The analysis used is analysis of variance between accessions and within accessions. If there is an influence of accessions, the analysis is continued with the Duncan Multiple Distance Test (UJBD), and evaluation of diversity in accessions uses descriptive analysis with boxplot graphs. UJBD shows that the growth of local accessions is relatively the same as the superior variety Tasia 2, and the production of the Putih Leti and Putih Kisar accessions is higher than Tasia 2. Boxplot analysis shows that the accessions Putih Kisar, Merah Leti, Putih Leti and Merah Kisar show diversity in plant height and number of productive branches.

Abstract

This study investigated the effect of glycerol concentration on the physicochemical properties of tapioca starch modified through heat–moisture treatment (HMT) using microwave heating. Glycerol was incorporated at concentrations of 5% (HMTg5), 10% (HMTg10), and 15% (HMTg15) based on the dry weight of tapioca starch, with conventional HMT-modified starch serving as the control. The experiment was conducted using a completely randomized design with a non-factorial structure. The analyzed physicochemical parameters included ash content, water absorption capacity, oil absorption capacity, swelling power, solubility, bulk density, and whiteness index. The results revealed that the water and oil absorption capacities of HMTg starches were significantly higher than those of the control HMT starch. In contrast, ash content, swelling power, solubility, bulk density, and whiteness index decreased with increasing glycerol concentration. These findings suggest that incorporating glycerol during HMT modification alters the starch granule structure and intermolecular interactions, resulting in improved water and oil affinity while reducing swelling and solubility. The modified starches produced in this study demonstrate promising potential for food processing applications and as functional ingredients in biodegradable polymer formulations.

Abstract

This study aims to identify the types of available agricultural waste, evaluate its use as feed for buffalo livestock, and assess the level of knowledge among farmers regarding the processing techniques of such waste. The approach used in this research is a combined research method with direct field observations. Sampling was conducted through purposive sampling, selecting three villages with the highest population of farmer-breeders: Werwaru Village, Klis Village, and Tounwawan Village. A total of 30 breeders were made respondents in this study. The results showed that most breeders (80%) raised buffalo as a form of savings, while the remaining (20%) viewed it as a side business. The composition of the forage feed used consists of 80% grass and 20% agricultural waste. The utilization rate of agricultural waste from food crops as feed for ruminant livestock is still relatively low, at 23.33%. Farmers who utilize agricultural waste, particularly corn stover in the form of hay (dried straw), only use it as additional feed. All respondents (100%) lack knowledge and skills in the application of waste-based feed processing technology. In general, the low use of agricultural waste as feed for buffaloes in Moa Island, Southwest Maluku Regency, is due to a lack of understanding and minimal application of feed processing technology by farmers and breeders in the region.

Abstract

This study aims to examine the influence of price and product quality on vegetable purchase intention in modern markets in Ambon City, specifically at the DP Modern Market and the FM Modern Market. The research employed a quantitative approach using a survey of 100 respondents and multiple linear regression analysis. The results indicate that in the DP Modern Market, price has a positive effect on purchase intention, whereas product quality has a negative effect. In contrast, in the FM Modern Market, both price and product quality negatively affect purchase intention. Both variables significantly influence purchase intention simultaneously in both markets. Differences in consumer characteristics shape the patterns of influence. DP consumers perceive premium prices as a symbol of exclusivity, while FM consumers are more price-sensitive and prioritize immediate benefits. These findings highlight the importance of tailoring marketing strategies to specific market segments.

Abstract

This study aimed to explore the potential of Moringa oleifera leaf extract on the organoleptic characteristics of functional ice cream. Moringa leaves are rich in bioactive compounds, vitamins, minerals, proteins, and antioxidants that provide health benefits; however, their distinctive green color, strong aroma, and slightly bitter taste may affect consumer acceptance. The research was conducted using a Completely Randomized Design with one factor, namely the concentration of moringa leaf extract (50 g, 100 g, 150 g, and 200 g), each with three replications. The observed variables included color, taste, texture, and overall acceptance, assessed through a hedonic test. Data were analyzed using ANOVA and further tested with the Honest Significant Difference test when significant differences were observed. The results showed that the addition of moringa leaf extract significantly influenced the sensory attributes of ice cream. Treatment A2 (100 g moringa leaf extract) received the highest acceptance level, characterized by a bright green color, balanced flavor without dominant bitterness, smooth texture, and the highest overall score compared to other treatments. Therefore, the A2 formulation can be recommended as the optimal composition for producing functional ice cream with moringa leaf extract that is well accepted by consumers.

Abstract

This research aims to analyze the income of mobile vegetable vendors and stationary vegetable vendors at the Batu Merah Traditional Market.The sample was taken using simple random sampling and purposive sampling, with 13 mobile traders and 17 stationary traders being selected. Using the quantitative analysis method. The research results show that the mobile vegetable vendors earn an income of Rp. 14,720,187 per month, while the stationary vegetable vendors at the Batu Merah Traditional Market earn an income of Rp. 18,768,921 per month.

Abstract

This type of research is carried out using a qualitative approach. The location of this research is in Kahena Hamlet, RT. 007/RW. 017, one of the hamlets in Batu Merah Village, Sirimau District, Ambon City. The livelihood strategy is an activity undertaken by farmers to meet their basic living needs and enhance the quality of their lives. The choice of livelihood pattern is determined by the availability of resources and the ability to access various sources of income. The three sources of livelihood are: on-farm (income from one’s own land), off-farm (income from work outside one’s own land), and non-farm (income from private businesses). Farmer household expenses are the total money that farmer households spend to meet their living needs. The cost in this study is divided into two, namely routine costs and non-routine costs.
