Abstract

This research aims to determine the effect of adding Carboxyl Methyl Cellulose (CMC) on the chemical and organoleptic characteristics of kisar lemon syrup. The design used was a single factor Completely Randomized Design with 4 treatment levels and 3 replications. The treatment levels in this study were P1 (no CMC), P2 (CMC 0.5%), P3 (CMC 1%), P4 (CMC 1.5%). Observations were made on total acid, vitamin C, total sugar, water content and pH, while organoleptic tests were on color and level of preference. The results showed that the highest total acid and water content of kisar orange syrup was found in treatment P1 (CMC 0%) respectively 2.74%, 77.9%, while the highest Vitamin C, total sugar and pH were found in treatment P4 (CMC 1.5%) respectively 0.021%, 22.81% and 5.37.

Abstract

Lemon cina memiliki rasa yang sangat asam sehingga perlu diolah menjadi sirup sebelum dikonsumsi. Tujuan penelitian untuk menentukan perbandingan sari buah dan air yang tepat untuk menghasilkan sirup lemon cina dengan mutu terbaik. Penelitian ini menggunakan Rancangan Acak Lengkap satu faktor yang terdiri dari empat taraf perlakuan perbandingan sari buah dan air yaitu 1:1, 1:2 dan 1:3. Parameter yang diamati meliputi pH, total padatan terlarut dan vitamin C serta uji organoleptik (warna, aroma, dan rasa). Perbandingan sari buah dan air 1:1 menghasilkan sirup lemon cina terbaik dengan nilai pH 3,47, TPT 62,67 oBrix, vitamin C 0,94 mg/ 100 g, berwarna coklat (2,88), beraroma lemon cina (2,63) dan berasa manis (2,75). Sedangkan berdasarkan hedonik menunjukkan warna suka (2,75), aroma agak suka (2,25) dan rasa suka (2,63).

Abstract

Skipjack Nuggets are a seafood alternative to traditional chicken nuggets. This research aims to determine the appropriate carrot concentration to obtain the nuggets' best chemical and sensory characteristics. The research results on Skipjack Nugget treated with a carrot concentration of 100g is the right concentration to produce a nugget with good chemical characteristics. Characteristics of skipjack nuggets with a carrot concentration of 100 g have 34.32% moisture content, 40.65% fiber content, 17.47% fat content, and 13,73% protein content.

Abstract

Tongka langit banana (Musa troglodytarum L.) is a climacteric fruit and requires good post-harvest handling to reduce yield losses before consumption. Various factors can cause degradation and post-harvest losses, so applying proper post-harvest handling increases shelf life by delaying ripening, reducing respiration rates, and reducing storage losses. This study examines and analyzes the effect of vacuum packaging and storage time on changes in physiological and physical characteristics of tongka langit banana fruit during storage. This study was designed using a complete randomized design. Factorial pattern. The variables measured were sugar content, total soluble solids (TSS), texture, and weight loss. Sugar content was measured by titration, total soluble solids were measured using a refractometer, texture was measured using a universal testing machine, and weight loss was measured by the weighing method. The results of the study showed that packaging affected the chemical and physical characteristics of tongka langit bananas, including total sugar content (10.71-11.24%), TSS (12.08-26.76%Brix), weight loss (8.79-10.72%) and texture (196.80-198.40 N/cm2). Storage time affected the chemical and physical characteristics of tongka langit bananas, including total sugar content (10.72-12.58%), TSS (24.36-27.22%Brix), weight loss (9.02-11.27%), and texture (164.40-168.20 N/cm2).

Abstract

The Relationship of Human Resource Competence to Employee Performance at Pt. Perkebunan Nusantara 1 Regional 8 Awaya Plantation Units in Liang Village, Teluk Elpaputih District, Central Maluku Regency. This study aims to determine the relationship between human resource competence and employee performance of PT. Nusantara I Regional Plantation 8 Units of Awaya Plantation, Liang Village, Teluk Elpaputih District, Central Maluku Regency. The method used in this study is a random sampling technique because the population is relatively homogeneous. The results of the study show that human resource competence has a positive and significant influence on employee performance at PT Perkebunan Nusantara 1 Regional 8 Units Kebun Awaya.

Abstract

This research aims to determine the process of handling the bodies of the Nuaulu Tribe as well as the impact of the Nuaulu Tribe Traditions in Sepa Country on the environment and to find out why the bodies of the Nuaulu Tribe do not emit an odor even though they are not buried. This research uses descriptive research methods with a qualitative approach. The research instrument generally carried out by researchers is field observation. The Nuaulu Tribe community in Sepa Village was used as a sample in the research. The results show that the Traditional process of handling the bodies of the Nuaulu tribe is a traditional ritual passed down from the ancestors where the deceased person is laid to rest in the funeral home, then wrapped in a mat, taken into the traditional house where the traditional head wil pray. The body of the deceased person is not put in the grave, but only placed on a para-para bamboo (a bamboo pole like a bed). The handling place for the Nuaulu Tribe (nyonyiane) is a forest dominated by bamboo plants and is a place that the Nuaulu Tribe community can enter and that is only for certain people from that tribe. The body was placed on a para-para covered with mats and Galoba (Hornstedtia alliacea) stems without any form of preservation.

Abstract

This research aims to determine the impact of sasi on the production of coconut farmers in Negeri Tial, Salahutu District. This research uses a qualitative descriptive research method. This research was conducted in Negeri Tial, Salahatu District. The sample in this research was 20 respondents. The data collection techniques used in the research were questionnaires, observation and documentation, with data analysis used being data reduction, data presentation and drawing conclusions. The research results show that 1) The role of Tial country's traditional institutions in managing Hamlet resources is carried out using the sasi system. The sasi system that is implemented affects the quality of coconut production, especially for coconut meat which has a rougher texture, thicker, has a savory taste with the oldest level of maturity, this has an impact on increasing coconut production. 2) The impact of sasi which is carried out in Negeri Tial, Salahutu District, can increase coconut productivity, thereby increasing the income of coconut farmers and expanding coconut sales locations outside the Ambon City area.

Abstract

The nutritional health of young children often mirrors the overall nutritional condition of a community. When the body lacks sufficient nutrients, it can lead to various health issues related to nutrition. These issues are classified into two categories: malnutrition, which arises when the body does not receive enough nutrients, and severe malnutrition, which is a more critical state resulting from significant nutrient deficiencies. This research seeks to explore the factors that affect the nutritional status of young children in Waimital Village, West Seram Regency. The study specifically targets children aged 21 to 48 months, with data gathered from local health posts and households. The factors considered in this study include household characteristics such as the mother's education, family income, family size, maternal knowledge of nutrition, and parenting practices. The findings reveal that the key factors affecting the children's nutritional status in the village include the mother’s education, her understanding of nutrition, parenting approaches, and the family's income level. However, the number of family members was found to have no significant impact on the children's nutritional status in the village.

Abstract

This study aimed to determine the effect of PKH on the poverty level in Mamala Village. This research was conducted in Mamala Village, Leihitu Subdistrict, Central Maluku Regency, in February 2024. The sampling technique in this study used a simple random sampling technique, namely 60 respondents who were randomly selected, 30 PKH recipient respondents, and 30 non-PKH recipients. The data analysis method used in this research is a quantitative method using the Wilcoxon and Kruskal-Wallis. The results showed that the family hope program had an effect on improving the household income of PKH recipients.

Abstract

The merchants’ welfare can be achieved if the income that the merchants earn is large, because the higher the income is, the higher the profit that is made, so the merchants’ welfare increases day by day. This study aimed to determine the factors that affect the income of fruit and vegetable vendors in the Batumerah market in Ambon City. This study uses a descriptive quantitative method with the research location at the Batumerah Market, Ambon City. The sampling technique was based on Purposive sampling, so the respondents used were 30 fruit and vegetable traders. Data collection uses observation and interviews. Multiple linear regression analysis using SPSS 26 programme was used for data analysis. The findings of this study are: a) Capital has a negative but insignificant effect on the income of fruit and vegetable vendors in Batumerah market, Ambon City. b) The duration of the business operation has a positive but non-significant effect on the income of fruit and vegetable vendors in the Batumerah market in Ambon City, Batumerah. c) Trading time has a negative but non-significant effect on the income of fruit and vegetable vendors in Batumerah market, Ambon City. d) Trading location has a positive but insignificant effect on the income of fruit and vegetable vendors at the Batumerah market, Ambon City. e) Quantity significantly affects the income of fruit and vegetable vendors in the Batumerah market in Ambon City, Batumerah. f) Price has a positive but insignificant effect on the income of fruit and vegetable vendors in Batumerah market, Ambon City. The regression equation obtained is Y = 8.819 - 0.230X1 + 0.071X2 - 0.090X3 + 0.132X4 + 1.044X5 + 0.127X6.
