Abstract

Food handlers are people who work directly or come into contact with food, from selecting ingredients to serving food. Direct contact with food can be a source of contamination if hygiene and sanitation rules are not followed. Street vendors in Banta-bantaeng Village operate in a high-traffic area with limited facilities. An initial survey showed that many food handlers did not properly apply food hygiene and sanitation, such as not washing hands, not using personal protective equipment (masks, gloves, head coverings), and washing utensils using water that was used repeatedly. This poses a high risk of food contamination and outbreaks of food poisoning. This study aimed to determine the relationship between food handler behavior (knowledge, attitude, practice) and food hygiene sanitation among street vendors in Banta-bantaeng Village, Rappocini District, Makassar City. The type of research was an analytical observational study with a cross-sectional approach. Samples were taken using simple random sampling, consisting of 72 respondents from a population of 88 food handlers who used carts. Data were collected through questionnaires and direct observation. Data analysis used the Chi-Square test with SPSS. The results showed a significant relationship between food hygiene sanitation and knowledge (p=0.003), attitude (p=0.007), and practice (p=0.000). A total of 37 respondents (51.4%) met the requirements for food hygiene sanitation, while 35 respondents (48.6%) did not meet the requirements. The conclusion of this study is that knowledge, attitude, and practice of food handlers are significantly related to food hygiene sanitation. It is recommended that vendors pay more attention to personal hygiene and use PPE when processing food. Future researchers are advised to conduct Total Plate Count (TPC) examinations on the eating utensils used by street vendors

Abstract

Kebab is one of the traditional dishes from the Middle East, particularly Turkey, which is also popular in Indonesia with the addition of raw vegetables such as lettuce, cucumber, and tomato. The consumption of lettuce in its raw state has the potential to increase the risk of contamination by Ascaris lumbricoides eggs. This study aims to identify the factors associated with the presence of Ascaris lumbricoides eggs on lettuce used by kebab vendors in Makassar City. The research employed an analytical observational method with a cross-sectional approach and laboratory examined parasitic eggs of Ascaris lumbricoides using the flotation method. Samples were collected from kebab vendors in Makassar who met the inclusion criteria. The results showed a significant relationship between the presence of Ascaris lumbricoides eggs and the processes of washing (p = 0.028; p < 0.05), storage (p = 0.038; p < 0.05), handling (p = 0.011; p < 0.05), and serving (p = 0.006; p < 0.05). The study concludes that these four factors—washing, storage, handling, and serving—are significantly associated with the presence of Ascaris lumbricoides eggs on lettuce. Therefore, it is recommended that kebab vendors carry out a washing protocol with an effective disinfectant, namely 0.5-1 ppm chlorine, at least 1 liter per kg of lettuce in clean water, then soak in 15% vinegar for 10 minutes, rub the lettuce leaves with clean hands for 1 minute, then rinse three times with running water, finally dry with a clean cloth and when serving use clean gloves.

Abstract

The traditional Pinisi shipbuilding in Bulukumba Regency is known as a valuable maritime cultural heritage, but faces major challenges in terms of occupational safety. This study aims to determine the factors related to the occurrence of work accidents in shipbuilding workers. This study used a quantitative approach with a cross-sectional design, involving 109 respondents selected using the Slovin formula. Data were collected through questionnaires and direct measurements using a Sound Level Meter and Hygrometer.The results showed that 56 respondents (51.4%) had experienced work accidents. The results of the Chi-Square test showed that the variables of age (p = 0.000), education level (p = 0.001), length of service (p = 0.029), length of service (p = 0.302), use of PPE (P = 0.004), noise (p = 0.624), and air temperature in the work area that had been measured from six points had an average temperature of 31.33ºC. Based on the results of the study, it can be concluded that there is a relationship between age, length of service, education level, use of PPE, and air temperature with the occurrence of work accidents, while there is no relationship between length of service, and noise with the occurrence of work accidents. Efforts are needed to increase awareness and implementation of K3 and the provision of adequate PPE to reduce the number of work accidents.

Abstract

Sick Building Syndrome (SBS) is a group of health complaints caused by poor indoor air quality and commonly affects office workers. This study aimed to analyze the effect of humidity, lighting intensity, PM₁₀ concentration, and smoking behavior on SBS symptoms among employees of the East Kalimantan Provincial Health Office. This research was conducted in 2025 using an analytic observational design with a cross-sectional approach. The population consisted of 128 employees selected using total sampling. Data were collected through direct measurement using hygrometer, lux meter, and particulate matter monitor, along with structured questionnaires for SBS symptoms and smoking behavior. The questionnaire was adapted from the US EPA BASE Study instrument (US EPA, 1998) with adequate validity and reliability (Cronbach's alpha >0.7). Data were analyzed using univariate, chi-square test, and binary logistic regression. The results showed that 52.3% of respondents experienced SBS symptoms. PM₁₀ concentration significantly affected SBS occurrence (p = 0.029; OR = 3.263; 95% CI = 1.131–9.418), while humidity, lighting intensity, and smoking behavior were not significant. PM₁₀ was identified as the dominant factor influencing SBS. Priority interventions including HEPA filter installation, 5R K3 program, and intensive cleaning are recommended to reduce PM₁₀ concentration and lower the risk of SBS in office environments.

Abstract

The cracker manufacturing industry poses safety and health hazards to its workers. One of the most hazardous areas in a cracker factory is the frying area. Based on a survey, the ambient temperature in the frying area was recorded at 31°C, while the oil temperature during frying reached 170°C. Approximately 80% of workers had experienced work-related accidents, primarily burns from hot oil splashes resulting in hand blisters. This situation is exacerbated by the fact that 100% of workers did not use gloves. The use of gloves is essential to protect workers, provided they are comfortable and do not introduce new hazards. The concept of comfort in using personal protective equipment (PPE) is defined as the worker feeling at ease and undisturbed while wearing PPE during work activities. Objective: To determine the effect of using various types of heat-resistant gloves on the comfort of cracker frying workers in cracker factories located in Kapanewon Banguntapan. Method: This study employed a quasi-experimental design using a post-test only group design, conducted in July 2024. By using a post-test design, the researcher aimed to measure the treatment effects without the influence of a pre-test. The study population comprised all cracker frying workers from three cracker factories in Kapanewon Banguntapan, totaling 30 individuals. Sampling was conducted using total sampling, meaning the entire population was included as the study sample. Data were analyzed using the Kruskal-Wallis statistical test. Results: The results showed that 13.5% of respondents reported comfort when using heat-resistant gloves made of fabric, 100% of respondents reported discomfort when using gloves made of fabric with corn husk lining, and 73% of respondents reported comfort when using gloves made of fabric with glasswool  lining. The Kruskal-Wallis test revealed a significant difference in comfort levels among the three types of heat-resistant gloves used (p-value = 0.000). Conclusion: Heat-resistant gloves made of fabric with a glasswool  lining were found to be the most comfortable for cracker frying workers in the Kapanewon Banguntapan area. Methodological Limitations:This study had several methodological limitations, including: (1) The experiment was conducted at different locations and times, preventing simultaneous treatment and potentially affecting the consistency of implementation; (2) Glove thickness varied across groups, which may have influenced comfort perception; (3) The use of different glove colors may have introduced visual bias; (4) The corn husk-lined gloves had a stiff texture due to the absence of a softening extraction process, thus not reflecting the material’s optimal potential; (5) Temperature measurements were conducted in only one experimental setting, failing to capture the full environmental variation; and (6) No follow-up observation was conducted on workers’ hand conditions post-use, thereby limiting the ability to assess long-term effects

Abstract

Drinking Water Depots (DAMs) are widely used by the community in Simbang District, Maros Regency, as an alternative source of daily drinking water; therefore, sanitation hygiene and bacteriological quality are important aspects of public health protection. This study aimed to analyze the relationship between depot sanitation hygiene and the bacteriological quality of produced drinking water. This research used an observational analytic design with a cross-sectional approach. The sample consisted of all 10 DAMs in Simbang District selected using total sampling. Primary data were collected through interviews, sanitation inspection observations, and laboratory examination of Total Coliform and Escherichia coli parameters. The results showed that 7 DAMs (70%) did not meet sanitation hygiene requirements, while 3 DAMs (30%) met the requirements. Bacteriological examination showed that 3 DAMs (30%) did not meet drinking water quality standards due to Total Coliform contamination ranging from 15–27 CFU/100 ml, while all samples were negative for E. coli. These findings indicate that poor sanitation hygiene conditions tend to be associated with bacteriological contamination in drinking water produced by DAMs. Improving sanitation practices, equipment maintenance, and operator hygiene is necessary to reduce the risk of microbiological contamination in refill drinking water.

Abstract

Waste can attract fruit flies (Drosophila melanogaster), which have the potential to carry pathogenic microorganisms that may cause infections in humans. One preventive approach against infection is the utilization of Ajwa date (Phoenix dactylifera) extract, which contains flavonoids and antioxidants with natural antibacterial properties. This study aimed to analyse the potential of Ajwa date extract as an antimicrobial agent in reducing the number of microorganisms carried on the legs of fruit flies (Drosophila melanogaster) as a biological model. This study employed a simple experimental design using a posttest-only control group design, consisting of one control group and four treatment groups treated with Ajwa date extract concentrations of 40%, 50%, 60%, and 70% at exposure intervals of 1, 6, 12, 18, and 24 hours. The total microbial count was measured using the Pour Plate method on Plate Count Agar (PCA) medium. Data were analyzed using two-way ANOVA with interaction and probit analysis to determine the LC₅₀ and LT₅₀ value. The results showed significant differences in the mean total microbial count among extract concentrations (F = 160.120; p < 0.001) and exposure intervals (F = 25.049; p < 0.001). In addition, the interaction between extract concentration and exposure interval was also statistically significant (F = 4.231; p = 0.001). The LC₅₀ value of Ajwa date extract was 51.648%, while the LT₅₀ value was 14.308 minutes. The findings indicate that Ajwa date (*Phoenix dactylifera*) extract has potential as a natural antimicrobial agent in reducing microorganisms carried on the legs of fruit flies (*Drosophila melanogaster*). Therefore, it may be further developed as an environmentally friendly disinfectant for microbial contamination control.

Abstract

The 2019 Global Youth Tobacco Survey (GYTS) data shows an increasing trend in smoking prevalence among adolescents aged 13–15 years, from 18.3% in 2016 to 19.2% in 2019. This phenomenon is confirmed by the results of the 2023 Indonesian Health Survey (SKI) which places the 15–19 age group as the largest proportion of smokers with a percentage reaching 56.5%, followed by the 10–14 age group at 18.4%. Smoking has become a necessity that is difficult to avoid for some people due to the addictive effects it causes. Although this habit is considered to provide recreational or enjoyable effects for the perpetrator, smoking activity in reality has a negative impact, both on the health of active smokers and passive smokers around them. The purpose of this study is to determine the relationship between peer factors, cigarette advertising, family environment, and stress with smoking habits of high school students in Pangkep Regency. This study is an observational analytical study with a cross-sectional study approach. The main population of this study was 64 male students at SMA Muhalmadiyah Pangkep and 179 female students at SMA Negeri 20 Pangkep. The sample size was 184 out of 243 students. The sampling technique used purposive sampling, which included male students in grades 10 to 12, students who smoked and non-smoked, and students who were ready to be respondents/interviewed. The instrument used for data collection was a questionnaire that had been validated by other researchers. The results showed that the cigarette advertisement factor (p-value  = 0.811 > 0.05) was not significantly related, while the peer factor (p-value  = 0.013 < 0.05), the family environment factor (p-value  = 0.025 < 0.05), and the internal stress factor (p-value  0.010 < 0.05) were related to the smoking habit of students at SMA Kabupaten Pangkep. The conclusion of this study was that there was no correlation between cigarette advertisements and smoking habit, but the peer factor, family environment, and stress were related to smoking habit.

Abstract

The implementation of Hazard Analysis Critical Control Point (HACCP) is a systematic approach to ensuring food safety in food service industries. The high risk of food contamination throughout food handling processes requires effective control at every stage of food management. This study aimed to evaluate the implementation of HACCP in controlling Critical Control Points (CCPs) during food production at PT. Pangansari Utama. A descriptive observational design was employed in 2025 at PT. Pangansari Utama. Observation units consisted of 66 indicators covering food selection, food storage, food processing, cooked food storage, food transportation, food serving, sanitation of ingredients and utensils, and cooking temperature-time control. Data were collected using an observation checklist developed based on HACCP principles, the Indonesian Ministry of Health Regulation No. 2 of 2023, and food service sanitation guidelines. Data were analyzed using univariate frequency distribution. The results showed that all indicators for food selection (100%), food processing (100%), cooked food storage (100%), food serving (100%), and cooking temperature-time control (100%) met the required standards. Food storage achieved 92.3% compliance, while sanitation of ingredients and utensils reached 93.3% compliance. Several non-conformities were identified in food transportation activities. Overall, HACCP implementation at PT. Pangansari Utama complied with food safety principles; however, improvements in storage systems, sanitation practices, and food transportation controls are required to strengthen risk prevention measures.

Abstract

The presence of rats in residential areas is an environmental health problem because it has the potential to transmit various diseases. Poor household hygiene and household behavior that does not support environmental hygiene can increase the risk of rat presence. This risk is even greater in flood-prone settlements because flooding can disrupt rat habitats and encourage them to migrate to residential areas in search of safer places. This study aims to analyze the relationship between hygiene vulnerabilities and household behavior with rat density in flood-prone settlements in Sidomulyo Village, Deket District, Lamongan Regency. This study used a quantitative analysis method with a cross-sectional design. A sample of 40 houses was selected using a purposive sampling technique, with 160 sticky traps installed for 2 nights inside and outside the houses. Data were collected through observation and questionnaires, then analyzed using the chi-square test and logistic regression. The results showed a trap success rate of 61.25%, indicating a high rat density. The most influential household hygiene and behavior variables included the habit of cleaning wastewater treatment plants (p=0.018; OR=0.053), the habit of hoarding items (p=0.030; OR=0.066), and holes/gaps in the house (p=0.011; OR=0.173). These results indicate that the rat density in Sidomulyo Village is relatively high and is influenced by hygiene and household behavior factors. Therefore, improving environmental sanitation and implementing clean living behaviors are needed to reduce the presence of rats in residential areas
