Abstract

Background: Insufficiency of nutrients intake such as protein and calcium may lead to the incidence of stunting in children under five years. In fact, Indonesia has many local foods like freshwater fish and local fruits which had abundant nutrients. Seluang is a typical Kalimantan freshwater fish contains high protein and calcium. The utilization of seluang fish flour and kepok banana flour as substitution in making cookies will increase the nutritional value of protein and calcium and may reduce the use of wheat flour. Objective: This study aims to analyse the effect of selpis (seluang and banana) flour substitution on protein, calcium, acceptability and organoleptic quality of cookies.Method: Experimental method with a completely randomized design (CRD) with five flour substitution treatments: 0%, 5%, 10%, 15%, 20% was used in this study. The protein content was tested by Kjeldahl method while the calcium content was tested by the AAS method. Results: Most of panelists preferred the original cookies (P1), characterized by yellowish in colour, fresh-baked aroma, slightly tough in texture and sweet-taste. The highest levels of protein and calcium were at P5 (20%) of 12.25% and 5.88 mg / 100 g.Conclusion: The substitution of seluang and kepok banana flours affect protein levels, calcium levels, acceptability (taste, color and aroma) of cookies but does not affect the texture of cookies.

Abstract

Background: The beginning of 2020 is the beginning of the outbreak of the Covid-19 virus in Indonesia specifically. COVID-19 is a new type of disease caused by coronavirus virus infection. Doing 3M (wearing a mask, washing hands and keeping your distance), doing physical activity and consuming balanced nutrition to improve the body's immune system by consuming nutritious foods including vitamin A and vitamin E is one way to prevent contracting coronavirus.Purpose: This study aims to find out the relationship of Covid-19 knowledge to clean and healthy living behavior (PHBS), intake of vitamin A and vitamin E.Method: This study uses cross sectional research design. The sample used by 30 respondents using simple random sampling technique. Statistical analysis used in hypothesis testing is to use chi-square test to determine whether or not covid-19 knowledge relationship to PHBS and intake of vitamin A and vitamin E.Result: The results of statistical analysis obtained a value of p0.05 which means there is no relationship between knowledge of covid-19 to PHBS and intake of vitamin A and Vitamin E.Conclusion: there is no relationship between the level of knowledge of covid 19 to clean and healthy living behaviors, as well as the intake of vitamin A and vitamin E in Tegalreja Village, Banjarharjo District, Brebes Regency

Abstract

Background: the incidence of tuberculosis is very closely related to the nutritional status of sufferers. Previous research stated that 56.8% of TB patients had a body mass index (BMI) of less than normal (18.5 kg / m2). Poor nutritional status in TB patients can be caused by factors such as inadequate energy intake and infection conditions. In addition, adherence to taking medication is also an important factor for improving the nutritional status of tuberculosis patients. Objective: to analyze the relationship of energy intake, adherence to taking medication with the nutritional status of pulmonary tuberculosis patients in the working area of the Genuk City Health Center Semarang. Methods: this study is a descriptive analytic study with a Cross Sectional approach. The research subjects were 13 adult tuberculosis patients who were still undergoing treatment in the working area of the Genuk City Health Center in Semarang. Data collected included energy intake data, medication adherence and nutritional status. Statistical analysis using Pearson product moment correlation and Fisher Exac. Results: there is no correlation between energy intake, adherence to taking medication and nutritional status of pulmonary tuberculosis patients in the working area of the Genuk City Health Center Semarang
