Abstract

AbstractIssues examined in this study resulted from the initial observation showed that the implementation of canteen sanitation hygiene at Esa Unggul University has not fulfilled the requirements contained in the Minister of Health of the Republic of Indonesia No. 1096 / Menkes / PER / VI / 2011 on Foodservices Sanitation Hygiene Requirements . The purpose of this study to determine the factors that affect the application of hygiene and sanitation in the cafeteria Esa Unggul University in 2016. This study was descriptive analytic cross-sectional approach. Samples are cafeteria at Esa Unggul University totaling 15 cafeteria. The instruments used were questionnaires, data analysis univariate, bivariate, and multivariate analyzes. The results of this research that there is a relationship between the education of food handlers (p = 0.000), environment (p = 0.001), and knowledge of food handlers (p = 0.012) with the implementation of hygiene and sanitation in the cafeteria Esa Unggul University. Logistic regression analysis showed that the results that each cafeteria food handlers who have completed high school education will have a propensity score hygiene sanitation applied 2,269 times greater than the uneducated food handlers graduated from high school (95% CI = 1.496 to 62.473; OR = 2.269).Keywords: Hygiene, sanitation, food handlers AbstrakPermasalahan yang dikaji dalam penelitian ini berasal dari hasil observasi awal yang menunjukan bahwa penerapan higiene sanitasi kantin di Universitas Esa Unggul belum memenuhi persyaratan yang tercantum dalam Peraturan Menteri Kesehatan Republik Indonesia Nomor 1096/ MENKES/PER/VI/2011 tentang Persyaratan Higiene Sanitasi Jasaboga. Tujuan penelitian ini untuk mengetahui faktor-faktor yang mempengaruhi penerapan higiene sanitasi di kantin Universitas Esa Unggul tahun 2016.Jenis penelitian ini deskriptif analitikdengan pendekatan cross-sectional. Sampel dalam penelitian adalah kantin di Universitas Esa Unggul yang berjumlah 15 kantin. Instrumen yang digunakan yaitu kuesioner, analisis data dilakukan secara univariat, bivariat, dan multivariat. Hasil penelitian ini yaituterdapat hubungan antara pendidikan penjamah makanan (p=0,000), lingkungan (p=0,001), dan pengetahuan penjamah makanan (p=0,012) dengan penerapan higiene sanitasi di kantin Universitas Esa Unggul. Analisis regresi logistik menunjukan hasil bahwa bahwa setiap kantin yang memiliki penjamah makanan yang berpendidikan tamat SMA akan memiliki kecenderungan nilai penerapan higiene sanitasi lebih besar 2,269 kali dari penjamah makanan yang tidak berpendidikan tamat SMA (95% CI= 1,496-62,473; OR= 2,269).Kata kunci: Higiene, sanitasi, penjamah makanan

Abstract

The purpose of the study is to explore the relationship between nutrient intakes, physical activity and percentage of body fat in a group of adolescents. This cross-sectional study was carried out with 62 adolescents aged 13 to 14 years old; 34 girls (54,8%) and 28 boys (45,2%). Energy, macronutrients and vitamin D intake were assessed by two non-consecutive-24 hour food recalls. Calcium intake was assessed by a semi-quantitative food frequency questionnaire (SQ-FFQ), physical activity was assessed by Physical Activity Level (PAL) 2 x 24 hours and percentage of body fat was measured by bioelectrical impedance analysis (BIA). BIA measurements were taken at least 2 hours after meals. The mean age was 13,2 ± 0,4 years. Mean percentage body fat was 22,2 + 5,9 %. In bivariate analysis, negative correlations were found between calcium intake (p= 0,002), fiber intake (p=0,009), physical activity (p= 0,016) and body fat. In multivariate analysis, fiber intake showed a negative correlation (β = -8,397, p = 0,001) and carbohydrate intake (β = 13,053, p = 0,003) showed a positive correlation with body fat, adjusted by age and sex. In conclusion, carbohydrate intake has a positive relationship with body fat and fiber intake has a negative relationship with body fat in adolescents.Keywords : body fat, adolescents, carbohydrate intake

Abstract

The data shows that the finding of malnutrition case happened at Posyandu Melati of South Bamboo City Public Health Center, this also always increase, it can be seen from number of cases in April that is 8 children with malnutrition status and 2 children with malnutrition status. While in May there was an increase in the case of malnutrition to 9 children, the incidence of malnutrition incidence is zero case. The purpose of this study was to analyze the factors - factors associated with the occurrence of nutritional status is less in children under five. This type of quantitative research uses case control design. This research was conducted on June 26, 2018. The research sample used a ratio of 1: 3, with a sample case of 11 people and a control sample of 33 people. Data collection using questionnaires. The statistical test used Chi-Square test. Based on the result of Chi-Square test showed that the exclusive breastfeeding was related to the lack of nutritional status (p = 0,002), the number of family member was not related to the malnutrition (p = 0,486), the family income was not related to the malnutrition status (p = 0,014), education level is related to nutrient status less (p = 0,004), compliance of weighing is related to nutritional status (p = 0,002), suggestion that can be done is the addition of activity that can motivate mother in exclusive breastfeeding, and increasing frequency of posyandu implementation. Abstract

AbstractRISKESDAS 2007 shows that the prevalence of stunting in 17 provinces, Indonesia for children under five year above the national prevalence. The aim of this study was to find out the relationship status of region, age, sex, residence, education of patriarch and household expenditure per capita per month in boys and girls aged 0-59 months in Indonesia, with stunting. We used secondary data from RISKESDAS 2007. The data includes are; 1)Independent Variables such as region, gender, age, residence, education of patriarch, and household expenditure per capita per month; 2)Dependent Variable is nutritional status (TB/U). The results shows that most of respondens are men 51.3% and female 48.7%. Sumatera Island and East Region in Indonesia more likely suffered stunting than Jawa-Bali Island (OR=1.117; OR=1.085; p<0,05), the man more likely suffered stunting than woman (OR=1.061; p<0,05), the group age> 5m (24-35)m high risk suffered stunting than the group age≤ 5m (OR=1.716; p<0.05), the rural area more likely suffered stunting than urban area (OR=1.323; p<0,05), people who has education < SLTP more likely suffered stunting than ≥ SLTP (OR=1.308; p<0,05), people who has in the middle low income (<5 quintile) more likely sufferd stunting than middle up income (≥5 quintile) (OR=1.512; p<0,05). The government should give more attention and supplementary feeding (PMT) for the group in age ≥5m.Keywords: stunting,under five year, age 0-59m

Abstract

AbstractIn NTB province have 12.4% and 11% of elementary school children experience with poor nutrition and malnutrition, as well as in NTT approximately 5.3% and 6%. The problems of education in the region of NTB and NTT are still high enough that illiterate, about 419 991 inhabitants and 370 710 people. The objective of this study was to compare macro nutrient intake by level of parent’s education in the province of NTB and NTT. We used secondary data RISKESDAS 2010 with total sample in NTB and NTT are 886 respondents and 1064 respondents, respectively. The method used cross-sectional design, analytical survey. The statistical analyzing used independent t-test. Most of the parents' education level of respondents in NTB and NTT are drop out in Elementary School or never attended school. The average age of respondents in NTB province is 8.9 years (±1.985) and NTT is 8.8 years (±1.931). The average energy intake of the respondents in NTB 1031.21Kal (±396.42) and NTT 871.13Kal (±412.96). The average protein intake of the respondents in NTB 31.54g (±18.22) and NTT 24.02g (±19.60). The average intake of carbohydrates respondents in NTB 128.84g (±53.44) and in NTT 141.02g (±74.61). There were no significant differences energy intake and macro-nutrients in elementary school age children based on education level of parents in NTB and NTT (p≥0.05). We should do intensive counseling and programmed of nutriton balanced diet and the importance things is breakfast for school children. Keywords: Energy Intake, Macronutrients, Level of Education AbstrakDi provinsi NTB terdapat 12.4% dan 11% anak sekolah dasar mengalami gizi kurang dan gizi buruk, serta di NTT sekitar 5.3% dan 6%. Metode yang digunakan cross sectional, survey analitik. Pengujian statistik menggunakan t-test independent. Sebagian besar tingkat pendidikan orang tua responden di provinsi NTB maupun NTT adalah Tidak Sekolah atau Tidak Tamat SD. Rata – rata usia responden di provinsi NTB adalah 8.9 tahun (±1.985), sedangkan provinsi NTT adalah 8.8 tahun (±1.931). Rata – rata asupan energi responden di NTB 1031.21Kal (±396.42) dan di NTT 871.13Kal (±412.96). Rata – rata asupan protein responden di NTB 31.54g (±18.22) dan di NTT 24.02g (±19.60). Rata – rata asupan karbohidrat responden di NTB 128.84g (±53.44) dan di NTT 141.02g (±74.61). Tidak terdapat perbedaan bermakna asupan energi dan zat gizi makro anak usia SD berdasarkan tingkat pendidikan orang tua di provinsi NTB dan NTT (p³0.05). Abstract

AbstractThere are many and lack of public awareness about breakfast and the number of adolescents who are enrgy and protein consumption under %RDA. Purpose of this study analyze the relationship breakfast, adequacy of energy and protein on the nutritional status of adolescents aged 16-18 years old in the Province of Lampung. This study used secondary data of Riskesdas 2010 with a cross sectional survey design and analytic. Sampel obtained 387 people. Statistical testing using independent t-test and chi-square test. The statistical tests showed no significant association bertween breakfast energy intake (p≥0.05), protein intake (p≥0.05, and no significant relationship between breakfast, sufficient energy (p≥0.05), protein (p≥0.05) on the status adolescent nutrition. There needs to be outreach to teens about the importance of breakfast and its benefits for the body, as well as education about balanced nutrition. Tujuan penelitian ini Menganalisa hubungan sarapan, kecukupan energi dan protein terhadap status gizi remaja usia 16-18 tahun di Provinsi Lampung. Penelitian ini menggunakan data sekunder Riskesdas 2010 dengan pendekatan cross-sectional dan design survey analitik. Sampel yang didapat 387 orang. Pengujian statistik menggunakan uji t-test independen dan uji chi-square. Dari hasil uji statistik menunjukkan tidak ada hubungan yang signifikan antara sarapan asupan energi (p≥0.05), asupan protein (p≥0.05) dan tidak ada hubungan yang signifikan antara sarapan, kecukupan energi (p≥0.05), protein (p≥0.05) terhadap status gizi remaja. Perlu adanya penyuluhan kepada remaja mengenai pentingnya sarapan dan manfaatnya bagi tubuh, serta penyuluhan mengenai gizi seimbang.Kata kunci: sarapan, energi, protein, remaja

Abstract

AbstractBackground: RISKESDAS 2007 showed the prevalence of Hypertension is 29,8%. Women suffered from Hypertension more than men. Dietary intake of fat (MUFA) and an adequate calcium are known to prevent Hypertension. Objective: To identify the differences in dietary intake of fat (MUFA), calcium, body mass index, and Hypertension in postmenopausal women in Sumatera. Methods: Data used RISKESDAS 2007, with cross-sectional study and analytical survey design. Total number of samples of postmenopausal women (aged 50-54 years) were studied (n=2107). Statistical analysis used independent sample t-Test. Results: The average age of postmenopausal women in Sumatera is 51 years and 2 months, most of them live in rural areas (59,0%) and urban (41,0%). The average dietary intake of fat (MUFA) is 7,99 g (± 5.738 g), amount to 217.51 mg calcium (± 164.356 mg). The average body mass index of postmenopausal women who studied are 24.12 kg/m2 (± 2.5 kg/m2). 46.4% (n=980) postmenopausal women suffering from Hypertension in Sumatra. Based on the results of statistical tests, there are differences in body mass index based on the incidence of Hypertension (p <0.05). There were no differences on dietary intake of fat (MUFA) and calcium based on the incidence of Hypertension (p≥0,05). Conclusion: Modification of a healthier lifestyle is needed by taking into an adequate intake of calcium, vitamin D and do more physical activity in order to prevent an increase in blood pressure which is faster in postmenopausal women whether they live in urban and rural areas because of reduced estrogen hormone. Keywords: MUFA, calcim, BMIAbstrakLatar Belakang: Hasil Riskesdas 2007 menunjukkan prevalensi kejadian Hipertensi sebesar 29,8%. Metode Penelitian: Data yang digunakan merupakan data sekunder RISKESDAS 2007, dengan pendekatan cross sectional. Jumlah seluruh sampel wanita postmenopause (usia 50-54 tahun) yang diteliti (n=2107). Pengujian statistik menggunakan uji t-test Independent. Hasil: Rata-rata usia wanita postmenopause di Pulau Sumatera adalah 51 tahun 2 bulan, sebagian besar tinggal di wilayah perdesaan (59,0%) dan perkotaan (41,0%). Rata-rata asupan lemak (MUFA) sebesar 7,99 g (±5,738 g), kalsium sebesar 217,51 mg (±164,356 mg). Rata-rata indeks massa tubuh wanita postmenopause yang diteliti sebesar 24,12 Kg/m2 (±2,5 Kg/m2). Sebanyak 46,4% (n=980) wanita postmenopause di Pulau Sumatera menderita Hipertensi. Berdasarkan hasil uji statistik, terdapat perbedaan indeks massa tubuh berdasarkan kejadian Hipertensi (p<0,05). Tidak terdapat perbedaan asupan lemak (MUFA) dan kalsium berdasarkan kejadian Hipertensi (p≥0,05). Kesimpulan: Modifikasi gaya hidup lebih sehat dengan memperhatikan asupan kalsium, vitamin D dan meningkatkan aktifitas fisik guna mencegah peningkatan tekanan darah yang berlangsung lebih cepat pada wanita postmenopause baik yang tinggal di daerah perkotaan dan perdesaan karena berkurangnya hormon esterogen. Kata kunci: MUFA, kalsium, IMT

Abstract

Achievements of Indonesian athlete are likely to experience ups and downs even lately tend to decline in the international championship such as SEA Games and ASIAN Games. The achievements of athletes are influenced by several factors one of those is related to nutrition namely water. Inadequate fluid consumption may affect fatigue, hydration status, and performance of athletes. The objective of this study is to analyze different between drinking habits, consumption of fluids, physical activity and level of hydration in athletes of softball in KONI Banten 2016. The study uses a quantitative research design with cross sectional study design. The population in this study were all athletes softball in KONI Banten. Analysis of the data in this study using Chi Square and One Way Anova. This technique is used to measure the drinking habits, consumption of fluids, and level of hydration athletes of softball in KONI Banten 2016. The results of statistical analysis Chi Square test between drinking habits and hydration significant, One Way Anova test between fluid consumptions and hydration significant. The statistical result showed a drinking habits, the consumption of fluids, and the allowance affect level of hydration. Abstract

AbstrakLatar Belakang: Citra tubuh adalah prsepsi seseorang terhadap tubuhnya, yang berasal dari pikiran dan perasaan orang tersebut. Persepsi ini dapat berupa positif atau negatif yang akan mempengaruhi status gizinya. Citra tubuh yang negatif dapat menyebabkan status gizi yang tidak normal. Tujuan: Mengetahui hubungan citra tubuh dengan status gizi remaja akhir di STIKes Mitra Keluarga Bekasi. Metode: Penelitian ini merupakan penelitian observasional dengan rancangan cross-sectional. Sampel berjumlah 195. Pengumpulan data menggunakan Body Shape Questionnaire (BSQ). Status Gizi ditentukan dengan IMT menurut umur. Data dianalisis menggunakan uji chi-square. Hasil: Persentase status gizi kurus dan gemuk adalah 14,4% dan 11,3%. Terdapat 46.2% remaja dengan citra tubuh negatif. Hasil uji bivariat didapati nilai p=0,000 (<0,05) hal ini menunjukan adanya hubungan antara citra tubuh dengan status gizi pada remaja akhir di STIKes Mitra Keluarga Bekasi. Remaja akhir yang memiliki citra tubuh negatif, sebanyak 74,5% memiliki status gizi normal, 23,3% gemuk dan 2,2% kurus. Kesimpulan: Citra tubuh memiliki hubungan dengan status gizi remaja di STIKes Mitra Keluarga Kata kunci: remaja, citra tubuh, status gizi.

Abstract

Latar Belakang : Kasus gizi buruk dan Kurang Energy Protein masih banyak ditemukan di masyarakat. Keadaan ini menunjukkan bahwa program pemerintah dalam menanggulangi masalah Kurang Energy Protein belum berhasil dengan optimal. Perlu upaya lain untuk memperbaiki program penanggulangan masalah tersebut. Proram berbasis pemberdayaan masyarakat merupakan alternatif yang tepat. Penelitian ini untuk menganalisis pengaruh penerapan penanggulangan masalah Kurang Energy Protein berbasis Pemberdayaan masyarakat  terhadap Partisipasi  dan Kemandirian masyarakat serta kasus Kurang Energy Protein. Metode : Jenis Penelitian ini merupakan penelitian quasi eksperimen dengan desain pre-post test with contol dengan diperkuat dengan data kualitatif. Responden penelitian ini adalah, kader posyandu, tokoh masyarakat, ibu balita dan balita di 44 posyandu di Desa Poncosari dan Trimurti Kecamatan Srandakan. Analisis data dilakukan  dengan uji statistic teknik t test sampel bebas. Hasil : Ada pengaruh implementasi pemberdayaan masyarakat dalam penanggulangan masalah Kurang Energy Protein berbasis pemberdayaan masyarakat terhadap partisipasi masyarakat dan kemandirian masyarakat (p<0,05). Masyarakat berpartisipasi datang ke posyandu dengan dorongan ingin mengetahui perkembangan berat badan anak, kesehatan anak, dan informasi  gizi dan kesehatan dari kader atau petugas puskesmas. Kesimpulan : Penanggulangan masalah Kurang Energy Protein berbasis pemberdayaan masyarakat berdampak pada peningkatan dan ksesadaran keluarga terhadap pemenuhan kebutuhan gizi, perawatan kesehatan, pola asuh anak. Implemetasi penanggulangan masalah Kurang Energy Protein  berbasis pemberdayaan masyarakat dapat meningkatkan partisipasi masyarakat dan menurunkan kasus KEP. Motivasi ibu balita dalam berpartisipasi dalam kegiatan pemberdayaan adalah ingin mengetahui perkembangan, kesehatan, dan info terkait kesehatan anak.
