Abstract

ABSTRACT The purpose of this study was to determine the physical quality of beef sold by traders fresh beef, namely moisture content, pH, water holding capacity (WHC), cooking loss or shrinkage cooking and texture or tenderness compared with the literature on the quality of fresh beef eligible . The results showed that the physical quality of fresh beef sold in the traditional market traders Poncokusumo District of Malang Regency still eligible or safety standards for the fresh cow consumption. The beef has moisture content of 76.53 %, pH of 5.62, cooking loss or shrinkage of 24.60 % ripe, WHC (water holding capacity) 37.10 % and 23.84 N texture or tenderness. Abstract

This research was conducted about Mozzarella cheese manufacturing using lime juice as acidifier. The objectives of current research were to know the potency of lime juice as acidifier to make Mozarella cheese and its chemical quality. The method used in this research was 4x4 factorial design consisted of two factors. The first factor was coagulation temperature (G) namely : G1=30 oC, G2=35 oC, G3=40 oC, and G4=45 oC, and the second factor was stretchable temperature (M) namely: M1=70 oC, M2=75 oC, M3=80 oc, and M4=85 oC. Variables measured were whey protein level, whey dry matter, moisture stretchable protein and moisture stretchable dry matter. Variation analysis showed that the interaction between coagulation temperature and strechable temperature gave no significant difference (P<0.05). The best combination treatment was coagulatiom  temperature 30 oC with stretchable temperature 75 oC. Keywords: coagulation, stretchability, chemical quality, mozarella cheese, lime juice

Abstract

Gelatin adalah suatu protein yang didapatkan dari hasil hidrolisis kolagen pada tulang dan kulit hewan. Ceker itik mengandung kolagen, jumlahnya banyak dan belum dimafaatkan dengan baik sehingga dapat dijadikan sebagai alternatif bahan baku gelatin. Gelatin dikelompokan menjadi gelatin tipe A dan B. NaOH dapat digunakan pada proses demineralisasi pembuatan gelatin tipe B. Penelitian ini bertujuan untuk mengetahui pengaruh konsentrasi dan pola hubungan NaOH terhadap rendemen, kadar air dan kadar abu gelatin ceker itik. Penelitian dilakukan secara eksperimen menggunakan Rancangan Acak Lengkap (RAL), dengan 3 perlakuan konsentrasi NaOH (P1 = 3%; P2 = 5% dan P3 = 7%). Hasil penelitian diuji menggunakan analisis ragam, dilanjutkan dengan uji jarak berganda Duncan dan uji polinomial orthogonal. Hasil penelitian menunjukkan bahwa konsentrasi NaOH berpengaruh nyata terhadap rendemen, kadar air dan kadar abu gelatin ceker itik. Konsentrasi NaOH terbaik pada kosentrasi 3% dengan nilai rendemen 4,77%, kadar air 7,20% dan kadar abu 3,48%.

Abstract

The purpose of this research was to determine the best combination of carrot juice (CJ) and hunkwee flour (HF) on manufacturing of kefir ice cream. The method of this research was experiment with Completely Randomized Design, 4 treatments and 4 replication, the treatments were without carrot juice + HF 5% (P0), CJ 1.5% + HF 3.5% (P1), CJ 3% + HF 2% (P2), CJ 4.5% + HF 0.5% (P3), the presentage based on Ice Cream Mix (ICM). The variables measured were antioxidant activity, viscosity, total solid and organoleptic (textur, taste and aroma). The data was analized by using Analysis Of Variance (ANOVA) continued by Honestly Significance Difference (HSD) test. The result of this research showed that the combination of carrot juice and hunkwee flour gave highly significant difference effect (P<0.01) on antioxidant activity, viscosity, total solid, texture and taste of kefir ice cream and did not give significantly difference effect (P>0.05) on aroma. Conclusion: the combination of carrot juice 1.5% + hunkwee flour 3.5% (P1) in kefir ice cream gave the best result.

Abstract

The purpose of this research was to find out physical properties of yogurt during storage at 4ºC. Yoghurt starters were using Lactobacillus bulgaricus FNCC 0041 and Streptococcus thermophilus FNCC 0040 (1:1). Yoghurt starter was inoculated on 10% (w/v) of skim milk and 10% (w/v) of skim milk which contained 5% (w/v) of sucrose, incubated at 42ºC for 6 hours then storage at 4ºC for 30 days. The result showed that posacidification until 6 days storage, pH tend constant between 6 days and 30 days. Until 9 days texture tend constant, but after 9 days storage texture tend decreasing. Storage yogurt at 10˚C for 12 hours before 4˚C gave higher viscosity, viscosity tend constant until 30 days storage. Water Holding Capacity increasing until 6 days storage, after 6 days tend constant. Sineresis increasing until 6 days storage, after 6 days tend constant. It concluded that physical properties of yogurt gave a little changes on first week storage, after that tend constant until 30 days storage.   Keywords: yogurt, pH, Texture, Viscosity, Water Holding Capacity, Sineresis

Abstract

Penelitian ini dilakukan untuk menentukan interaksi terbaik kompleks inulin dengan fraksi kasein yaitu kasein-α, kasein-β dan kasein-kappa sebagai dasar pengembangan  prebiotic fermented milk. Materi penelitian berupa sampel data struktur protein yaitu fraksi kasein dimodelkan menggunakan webservice I-TASSER dan sampel data struktur Inulin diambil dari PUBCHEM database dengan ID:CID 24763. Molecular Docking dilakukan dengan PatchDock algorithm dan pengamatan Molecular Visualization dilakukan dengan PyMol 1.3(Educational version). Hasil pengamatan menunjukkan bahwa Binding Energy yang diperlukan untuk memetabolisme sebuah sistem terikat menjadi bagian yang terpisah mempunyai energi potensial yang lebih rendah daripada bagian penyusunnya.  Interaksi kompleks Inulin dengan kasein-kappa menghasilkan binding energy terendah yaitu sebesar -36,81 Kcal/mol dibandingkan dengan interaksi kompleks Inulin dengan kasein-α binding energynya sebesar -29,55 Kcal/mol dan interaksi kompleks Inulin dengan kasein-β binding energynya sebesar -29,88 Kcal/mol. Kompleks ikatan molekul Inulin dengan kasein-kappa berada dipermukaan kasein-kappa, distabilkan oleh ikatan hidrogen dan interaksi hidrophobik seperti GLN-75, ALA-92, ASN-74, ASN-73, ILE-72, PHE-38, ARG-37, LYS-34,ASP-35 dan GLU-36. Kesimpulan penelitian adalah molecular docking dapat dibuktikan bahwa interaksi terbaik yaitu Inulin membentuk kompleks dengan fraksi kasein-kappa untuk pengembangan prebiotic fermented milk.

Abstract

The purposes of this research were to investigate the difference of harvesting time on honey production, viscosity, moisture and sugar content, as well as identifying the best harvesting time.The material used in this research was honey from Calliandra plantation. The method used was experimental design using Completely Randomized Design (CRD) with 3 treatments and 5 replications. The treatment consisted of harvesting time on day 11 P1on day 14 P2, and on day 17 P3. Data obtained were analyzed by ANOVA and continued by LSD test. The results showed that the treatments had significantly effect (P<0.01) on honey production, viscosity, water and sugar content. On P1, production obtained was 1.59 L/colony/harvest, while 0.72 and 0,26 from P2 and P3, respectively. Moisture of P1, P2, P3 respectively were 22.02, 21.00, 19.48 %, respectively. Viscosity obtained was 11.43, 18.56, and 33.67 P. Sugar content were 69.46%, 70.59%, and 71.67%, respectively. In conclusion, viscosity and sugar content of honey will increase when it is harvested on day 17, but decrease when it is harvested on day 11. However, harvesting time on day 11 is the best choice for farmer due to highest production obtained, but inadequate of standard of water content, viscosity, and sugar content.

Abstract

The purpose of this research were to find out effect of using citric acid and lactic acid combination in liquid and encapsulated forms on broiler carcass percentage and internal organ weights (liver, pancreas, lymph, bile). The material used for this research was 108 Cobb broiler chicks with average initial body weight of 44,00 ± 3,37 g. The method used in this field experiment was Completly Randomized Design with 2 factors and 4 levels, and if there were significant influence it would be tested with Duncan’s Multiple Range Test. The result showed that citric acid and lactic acid combination in either liquid or encapsulated form showed no significant effect (P>0,05) on carcass percentage and liver, pancreas and lymph weights of broiler but it significantly affect (P<0,01) bile weight. The addition of 0.4 % citric acid and lactic acid combination in either liquid or encapsulated form gave the best result on percentage carcass. The conclusion that the additions of different level of citric acid and lactic acid combination in encapsulated form on broiler feed only gave significant effect on lymph weight.   Keywords: citric acid and lactic acid combination, liquid, encapsulated, carcass percentage, internal organ

Abstract

This study was conducted to evaluate the external physical quality and sensory quality of eggs fed diets added with purslane meal (Portulaca oleraceae) as a source of alpha-linolenic acids. The materials used were Hy-Line Brown laying hen (n= 150 hens, 54 weeks old). The design of the study was a one way classification with five experimental diets. Each diet was replicated five times with five hens for each replication. The diets were formulated by supplementing purslane meal to a basal diet. The levels of purslane meal were 0% (T0), 2% (T1), 4% (T2), 6% (T3), 8% (T4). The diets were given to the hens for 35 days with 7 days of adaptation period. To analyse the external quality of the eggs, a total of 30 eggs (n=6 per dietary treatment) collected at day 33, 34, and 35 were used. The sensory analysis used eggs from day 32. The results of the external quality of eggs showed that the addition of purslane meal (Portulaca oleracea) into the diets of laying hens reaching a level of 8% tended to increase egg weight and did not decrease shell thickness, shell weight, the shape index, and specific gravity (P>0.05). Dietary inclusion of purslane meal up to a level of 8% significantly increased (P<0.01) the preference of egg yolk color while texture, taste, flavor, and overall acceptance were not affected. The conclusion is that purslane meal can be included in the laying hen diets up to a level of 8% without decreasing the external physical quality and the sensory quality of boiled eggs. Diets containing purslane meal increase the preference of egg yolk color due to the increase in yolk color intensity.

Abstract

The purpose of this research was to evaluate the effect of addition of boiled of bay leaf liquid on the salty egg. Variables were egg yolk protein, phenol total and flavonoids, and to find out the best treatment of addition of boiled of bay leaf liquid on the salty egg. The method used an experiment with a complete randomized design, 5 treatments and 4 replication. The treatment were P0 (control), P1 (5% addition of boiled of bay leaf liquid), P2 (10% addition of boiled of bay leaf liquid), P3 (15% addition of boiled of bay leaf liquid), P4 (20% addition of boiled of bay leaf liquid). The research results showed that boiled of bay leaf liquid gave a significant different result in increasing the content of total phenols and flavonoid as for the egg yolk protein give effect not different real. 20% addition of boiled of bay leaf liquid was the best treatment reviewed from egg yolk protein 17.88±1.70 phenol total 0.064±0.003 and flavonoids 92.62±1.92 suggestion from this research was salted egg added boiled of bay leaf liquid with higher concentration to know the physical quality of salted eggs.
