Abstract

A research about the production of Mozzarella cheese with lime juice has been done to study the protein profile of this cheese. The method used in this research was experimental and designed by completely randomized design. The treatments were variation of lime juice concentration, namely: K1 = 1.9 %, K2 = 2.1 %, K3 = 2.3 %, K4 = 2.5 %, K5 = 2.7 %, and K6 = 2.9 % (v/v). The protein profile of this cheese acidified by using the concentration of 1.9 – 2.9 % lime juice gived differences profile. The best treatment was 1.9 % concentration of lime juice, its gave the highest value.   Keywords: protein profile, Mozzarella cheese, acidification, lime juice

Abstract

The purposes of this research was to determine the effect of Curcuma zedoaria concentrated addition on quality antioxidant activity, total phenols, protein content and salt content of salted egg. The materials were duck’s egg, water, salt, and essence of white turmeric. The method was experiment using Complete Randomized Design (CRD) with five treatments and three for replications. The Curcuma zedoaria juice research were divided into P0 (0%), P1 (10%), P2 (20%), P3 (30%) and P4 (40%). Data was analyzed using Analysis of Variance (ANOVA) and then continued by Duncan’s Multiple Range Test (DMRT), if it was found significant effect among treatmeants. The result showed that the addition of Curcuma zedoaria juice indicated highly significant different effect (P<0.01) on antioxidant activity, protein content and salt content, but significantly effect (P<0.05) on total phenol. The best treatment was the addition of Curcuma zedoaria juice 40% were indicated of antioxidant activity, total phenol, protein content and the salt content was 99.80 mg/g, 0.16%, 9.96%, 2.43% respectively.

Abstract

An experiment was carried out at Kediri, Tabanan Regency and Animal Nutrition Laboratory to study the effect of the supplementation VCO in the ration to increase carcass weight and decrease duck meat cholesterol. The experiment used a completely randomized design (CRD) with five treatments and four replicates. Each of the replicate used five male Balinese ducks with the same weight. The five treatments were diets without VCO as a control (A), ration with 1% VCO (B), ration with 2% VCO (C), ration with 3% VCO (D) and ration with 4% VCO (E) respectively. Ration and water offered ad libitum. The variables measured were carcass weight, physical carcass composition and meat cholesterol. The result of this experiment showed that the carcass weight, the carcass percentage, the percentage of carcass meat in the B, C, D and E treatments were not significantly (P>0.05) higher than the control, so the percentage of fat carcass subcutan (including skin) and carcass bone percentage were not significantly (P>0.05) lower than the control. Triglyceride in treatment 3% VCO in diets (D) was significantly (P<0.05) higher than treatments B, C and E, but the HDL content in B, C, D and E the treatments were not significantly (P>0.05) higher than the control. The total cholesterol content and LDL in those four treatments were not significantly (P>0.05) lower than the control. From the result of this experiment can be concluded that the supplementation of 1-4% VCO in the ration has not increased to the carcass weight and decreased the duck meat cholesterol.   Keywords : VCO, duck, carcass weight, and  meat cholesterol

Abstract

The purpose of this study was to find out the effect of ducks yolk and formic acid in fat liquoring process of the tanned skin.  The materials used in this study were 30 pieces of 7 weeks of broiler chicken shank. The study was carried out using completely randomized design. The variables measured were softness, tensile strength and stretch of the tanned skin. Data were analyzed by analysis of variance and followed by Duncan’s Multiple Range Test. The research results showed that the addition of ducks yolk and formic acid didn’t gave significantly affect on the softness (p>0.05), while gave highly significant affect on tensile strength and stretch (p<0.01). Interaction between two treatment didn’t gave significantly affect (p>0.05) on the softness and stretch, and have significantly (p<0.05) on the tensile strength of leather. The conclusion of this research the addition of 11% duck yolk and 1% formic acid in fat liquoring is the best treatment for broiler chicken shank chrome tanning on the skin softness (2,667), tensile strength (135,707 kg/cm2), and stretch (37,34%), respectively.

Abstract

This objective of this research was compare the different technique of fur picking (liming and boiling) in the organoleptic quality rambak cracker from rabbit skin on crispiness and taste. The benefit of this study is becoming useful information in the quality of rambak cracker from rabbit skin and another animal skin on the organoleptic quality (crispiness and taste). Material of this research were 20 drying rabbit skin 5 – 6 months old. This research applied the experiment research with t test analize to compare the different technique of fur picking. The independent variables of this research are crispiness and taste on rambak cracker from rabbit skin. The research result showed that the different technique of fur picking had highly significant effect (P<0,01) on crispiness. The best result was liming technique of fur picking. They were characterised by sensory evaluation (crispiness) was 4 score, showed that the panelist prefered rambak cracker with liming for fur picking. Therefore, the taste in the sensory evaluation was non significant which in liming and boiling technique. In conclusion, we must use liming (4%) to produce high quality of rambak cracker from rabbit skin or another animal skin (cow, buffalo, chicken or fish).   Keywords : rambak cracker, rabbit skin,organoleptic quality

Abstract

The aim of this study was to determine the quality of thermoduric bacteria and chemical quality of pasteurized milk stored with different time periods. The material was milk from the farmers that was pasteurized at 950C for 21 seconds. The research Method used completely randomized design. The variables observed were TPC, Koliform, Kapang, E. coli bacteria, fat content, protein content, lactose content, total solid, and solid non fat (SNF). The results of the study showed that E. coli and Koliform were not found in pasteurized milk, but a number of thermoduric microbes were  found. Pasteurized milk has a shelf life of 30 days under 40C ± 10C conditions and has no significant changes in fat content, lactose levels, non-fat dry matter content and protein content.

Abstract

The aim of this study was determinated of lactoferrin profile in goat milk and kefir. The samples were collected from whey raw milk, pasteurized and kefir. Lactoferrin profile in this study consisted of concentration and molecule weight of lactoferrin. Goat lactoferrin was isolated from whey by fractionation on sephadex     G-100 column, it was eluted at 0.1 M phosphate buffer pH 6.8. Characterization of goat lactoferrin by electrophoretic SDS-PAGE techniques detected molecule weight of goat lactoferrin that the isolate of the fractions from fractionation on sephadex G-100 column. Result of the research  showed that pasteurization during storage after fermentation process were influenced by concentration of lactoferrin significant (P<0.05). The molecule weights of lactoferrin in goat milk and kefir were estimated at 84 kDa and 80 kDa. The average concentration of goat lactoferrin at 1.915 mg/ml (without pasteurized), 1.579 mg/ml (pasteurized at 65oC), 0.954 mg/ml (pasteurized at 73oC) and 0.322 mg/ml (pasteurized at 83oC). The average concentration of goat lactoferrin in kefir during storage at 0.663 mg/ml (0 day), 0.448 mg/ml (3  day), 0.249 mg/ml (6 day), 0.142 mg/ml (9 day) dan 0.048 mg/ml (12 day).  Pasteurization at temperature 65oC 30’’ can defend concentration of lactoferrin higher than temperature 73oC 15’’  and temperature 83oC 2’’. Concentration of lactoferrin in kefir were defended until 12 day storage.   Keywords : Lactoferrin, goat milks, kefir

Abstract

The experiment was design using a completely randomized block design (CRBD) with four treatments. Treatment were diets without Zingiber officinale rosc (A), diets contain 2,91% Zingiber officinale Rosc  (B), diets contain 5,66%. Zingiber officinale Rosc (C), and diets contain 8,26% Zingiber officinale Rosc (D). Each treatment with five replicates, and each replicate consist four culled layer ducks. Variable observed were feed conversation ratio, carcass physical composition, and meat quality. Abstract

ABSTRACT This research was conducted from January to February 2017 at Microbiology Laboratory, Faculty Science and Technology, Islamic Maulana Maliki Ibrahim University, Malang and at Microbiology Laboratory, Faculty of Science, Muhammadiyah University, Malang. The purpose of this research was to determine the effectiveness of Piper betle L. leave extract on antibacterial activity the growth of Streptococcus agalactiae. The method used was Complete Randomized Design (CRD) with 8 treatments and 6 replications. Piper betle L. leaves extract was used 20% for P0 (0-day), P1 (first day), P2 (second day), P3 (third day), P4 (fourth day), P5 (fiveth day), P6 (sixth days) and P7 (seventh day). The results showed that Piper betle L. leaves extract had a highly significant effect (P<0.01) on inhibiting the growth of the bacteria so the results were continued with LSD test analysys because there were differences among variables. The results showed that P0 was the highest (3.93±0.50); then followed by P1 (3.83±0.69); P2 (3.47±0.21); P3 (3.13±0.22); P4 (3.12±0.58); P5 (3.04±0.24); P6 (3.00±0.44) include at medium categories, and P7 (2.97±0.19) include at low category, where inhibition zone which formed on each treatment have non significant decreased. In conclusion, the storage of Piper betle L. extract have effect on antibacterial activities (Streptococcus agalactiae), which the highest at day-0.

Abstract

The objectives of this research were to increase viability and activity of L. acidophilus encapsulated with alginate and whey protein hydrolyzed for cell release and microencapsulated Lactobacillus acidophilus viability in probiotic ice cream. The methods used were factorial experiment using Completely Randomized Design. Data was analysed with Variance Analysis. The results showed that the interaction between alginate and whey protein hydrolyzed supplemented could be increased the function of CaCl2 and also encapsulated L. acidophilus viability. The used alginate of 1% and whey protein hydrolyzed supplemented of 0,5% produced encapsulated L. acidophilus viability higher than before, but however, the utilization of alginate of 1% and whey protein hydrolyzed supplemented of 0% could release a few cell. Therefore, the utilization of alginate 1% and whey protein hydrolyzed supplemented 0,5% in ice cream produced L. acidophilus highest than other.   Keywords :   Lactobacillus acidophilus, microencapsulation, alginate, whey protein hydrolyzed, cell release, ice cream
