Abstract

Purpose: This study aimed to analyze the effect of salt concentration and fermentation time on the chemical characteristics and lactic acid bacteria of anchovy bekasam, and the sensory evaluation of anchovy bekasam as a raw material for tempura. Methodology: The tests conducted included water content (thermogravimetry), pH (pH meter), fat content (soxhlet), bacterial count (TPC), and sensory evaluation (hedonic). The study used a Randomized Complete Block Design (RCBD) with two factors: salt concentration (15% and 20%) and fermentation time (4 days and 7 days). Results: The results indicated that both salt concentration and fermentation time significantly affected the water content, pH, and total lactic acid bacteria. The fat content was not significantly affected by the two factors but showed a decrease. Findings: Variations in salt concentration and fermentation time influenced the panelists' sensory preferences for color, aroma, taste, texture, and overall acceptability. The highest overall liking score was achieved by the sample with 15% salt concentration and 7 days of fermentation (K1L2). Novelty: This research provides insight into the optimal conditions for producing anchovy bekasam with desirable chemical and sensory properties, specifically for its use as a raw material for tempura. Originality: The study highlights the impact of different salt concentrations and fermentation times on both the chemical and sensory characteristics of bekasam, offering new information on improving its production process. Conclusions: The sample with 15% salt concentration and 7 days fermentation time yielded the most favorable results in terms of both chemical characteristics and sensory evaluation. Abstract

Purpose: This study aims to (1) identify the corn marketing channels, (2) determine the corn marketing margins, and (3) evaluate the efficiency of corn marketing in Tanjung Morawa District. Methodology: A sample of 30 corn farmers from three villages with corn farming areas was selected. A quantitative descriptive analysis was used to examine marketing channel patterns and analyze marketing costs and margins. Results: The study found that Marketing Channel I is widely used by farmers, who prefer selling corn directly to collectors. The marketing efficiency values for the first (I) and second (II) marketing channels are 10% and 16.6%, respectively. Findings: Both marketing channels are efficient. This indicates that the marketing channels involved in the marketing of shelled corn in the study area do not involve lengthy marketing institutions, resulting in low marketing costs and margins, and the selling price received by the final consumer is not much higher than the price received by the farmers. Novelty: This research provides insights into the efficiency of corn marketing channels, highlighting the benefits of shorter marketing pathways. Originality: The study offers a detailed analysis of marketing channel efficiency for corn, contributing to the understanding of effective agricultural product marketing. Conclusions: The corn marketing channels in Tanjung Morawa District are efficient, benefiting both farmers and consumers. Type of Paper: Empirical Research Article

Abstract

Purpose: This research aims to obtain the characteristics of CPO extraction results using a home industry spinner machine and determine the capacity of palm fruit suitable for CPO extraction using the spinner machine. Methodology: The spinner machine tested used a speed of 1800 rpm for 15 minutes, with capacity ratios of 15, 30, and 45 kg. The spinning process produces oil that will come out through the oil drain hole. Testing these three capacities will determine which one is more capable of producing CPO oil and is safe for engine rotation. Observing the characteristics of CPO involved yield tests, free fatty acid (FFA) tests, impurity content tests, and water content tests. Results: The yield test results ranged from 19.66% to 21.6%, the FFA test results ranged from 4.096% to 5.376%, the water content test results ranged from 0.2% to 0.6%, and the dirt content test results ranged from 2% to 5%. Findings: The 30 kg capacity was the most effective and efficient for CPO extraction using the home industry spinner machine. Novelty: The use of spinner machines in the home industry for CPO extraction has not been widely studied, and this research identifies the optimal capacity and efficiency of the spinner machine. Originality: This study provides new insights into the application of spinner machines for CPO extraction, highlighting their potential use in the home industry. Conclusions: The 30 kg capacity was the most effective and efficient for CPO extraction using the home industry spinner machine.
