Abstract

An increase in blood lipid profi le escalates risk of coronary heart disease (CHD). CHD is the leading cause of death in the world. This study was intended to analyze the relationship between fat intake, fi ber intake, smoking habits, Body Mass Index (BMI) and central obesity and lipid profi le among patients in cardiology clinic. This study used cross sectional design with 60 subjects aged >29 years who were outpatients in the Cardiaology Polyclinic at Gatot Soebroto Hospital. Central obesity was measured using metline by measurung waist circumference; BMI was converted from measurements of body weight and height; characteristics and smoking habits were taken using a questionnaire; and food intake was measured using Semi Quantitative FFQ. Lipid profi le data was collected through secondary data. Bivariate data analysis on categorical data used chi-square, Fisher-exact test or spearman ordinal correlation and stratifi cation analysis using ANOVA or kruskall-wallis. There were 78.3% subjects who had abnormal LDL, 76.7% had abnormal HDL, 80% had abnormal triglycerides and 78.3% had abnormal cholesterol. There were signifi ant relationship between fat intake, smoking habits, BMI and central obesity to the lipid profi le (LDL, HDL, triglycerides and cholesterol) (p <0.05). Fiber intake was not signifi cantly related to lipid profi le. However, based on stratifi cation analysis, the more fi ber intake the lower levels of LDL profi les, triglycerides and cholesterol, and the higher levels of HDL.

Abstract

Vegan are group of people who have high risk of megaloblastic anaemia because of vitamin B12 and folic acid defi ciency. Purple sweet potato (Ipomoea Batatas L.) and nutritional yeast are rich vitamin B12 and folic acid, therefore can be formulated into healthy food, such as snack bar for vegan. The purpose of this study is to determine the eff ect of purple sweet potato substitution and nutritional yeast addition on acceptability and availability of vitamin B12 and folic acid of snack bar. The type of research of formulation was true experimental design (Complete Randomize Design) with 1 formula control and 2 modifi ed formula. This research was carried out for 3 months (December 2018-March 2019) in Nutrition Laboratory Universitas Airlangga. The panelists are 38 people who affi liated with vegan community Yayasan Buddha Maitreya Surabaya. Statistical analysis used Kruskall Wallis test and Mann Whitney test with 5% signifi cance level. The results of organoleptic test showed that the most preferred formula by panelists was F2 with an average value of 3,6. There are diff erences in terms of smell characteristic (p=0.017) and taste characterictic (p=0.021). F2 have the highest content of vitamin B12 and folic acid, which are 1.58 mcg and 1,62 mcg, respectively, for 50 gram snack bar. The study showed that the best optimization (acceptability and nutrient content) in formula is F2 (substitution of 20% of purple sweet potato and addition 9 g of nutritional yeast). Therefore, snack bar with purple sweet potato substitution and nutritional yeast enrichment is feasible as an alternative healthy snack for vegan.

Abstract

The prevalence of chronic energy defi ciency in pregnant women was in poor conditions since 2016 to 2018. One of the solution to overcome chronic energy defi ciency in pregnant women is by providing supplementary food as snack, such as snack bar. Snack bar was made from sorghum and beans (red bean and black soybean) which are local food source of energy and protein. The objective of this study was to develop and analyze sorghum and beans-based snack bar with addition of red palm oil (RPO) as supplementary food for pregnant women with chronic energy defi ciency. This study used complete randomized design with the ratio of sorghum fl akes and beans chunks with the addition of RPO as treatment in three replications. Determination of selected formula were based on sensory analysis and protein content of product. The selected formula was F4 (ratio of sorghum fl akes:beans = 2:1, 2% RPO) which contained 8.59% moisture, 2.38% ash, 15.26% protein, 21.38% fat, 3.67% crude fi ber, 52.05% carbohydrates, 447 kcal energy, 10.98% dietary fi ber, 27,35 mg/kg β-carotene, 23.00 mg/kg iron, 13.21 mg/kg zink, 304.40 mg/kg calcium, 48.69% the limiting amino acid score, and 75.84% protein digestibility. F4 could be accepted by pregnant women with overall acceptability of 97%. F4 potentially be used as one of the alternative supplementary food for pregnant women with chronic energy defi ciency because of its acceptability, enable to fulfi ll supplementary food standard, and had higher protein and fi ber content than existing supplementary food for pregnant women with chronic energy defi ciency

Abstract

Diets are often associated with nutritional status of a person. Good nutritional status always accompany a good diet, if the intake of food is good, then it will give a good nutritional status as well. If energy intake exceeds output energy along with low physical activity, so it can lead to a build up of fat and increase the risk of overweight and obesity. The purpose of this research was to analyze the relationship between macronutrient intake with visceral fat on foreign students Universitas Airlangga in Surabaya. This study is observational, cross-sectional research design. The research sample was 65 students, where subjects was determined by purposive with inclusion criteria that had stayed at least 6 months in Indonesia, healthy, and not on a diet. The independent variable is the level of macro nutrient adequacy. The dependent variable is the visceral fat. Data were analyzed using chi-square test with a signifi cance level of <0.05 and linear regression. Results showed that there was a signifi cant relationship between energy suffi ciency level (p = 0.000) and fat (p = 0.018) with percentage of visceral fat. Every 1% increase in level of energy suffi ciency, respondent’s percentage of visceral fat will increase by 3.589. Every additional 1% of level of fat suffi ciency, percentage of visceral fat will increase by 1.712. The higher the intake of energy and fat, there will be an increase in visceral fat. The conclusion of this study is energy and fat intake can increase visceral fat. Increasing energy suffi ciency and fat will increase visceral fat as well.

Abstract

Intravenous lipid emulsions (IVLE) is one of the compositions of the parenteral nutrition (PN) that recommended in children who cannot meet their caloric requirements especially after small intestinal surgery and diff erentiated by their infl ammatory eff ects. The fi rst generation IVLE is proinfl ammatory, the second and the third are infl ammatory neutral, while the fourth (fi sh-oil-enriched) is anti-infl ammatory. The objective of this study is to investigate the eff ect of fi shoil enriched IVLE on systemic infl ammatory response syndrome (SIRS) in children after small intestinal surgery. A retrospective study using medical record was undertaken in children after small intestinal surgery admitted Dr. Soetomo Hospital, Surabaya in 2016-2017. Children with duodenal and jejunoileal atresia who had PN for at least three days were included. The types of IVLE used are FOLE and non-FOLE. Defi nition of SIRS was based on International Pediatric Sepsis Consensus Conference in 2005. A total of 25 children were included in this study. There were 44% children received FOLE and 48% received non-FOLE while 8% children received no IVLE. Median duration and dose of IVLE was 8 (5-15,5) days and 1,8 (1,25-2) g/kg/day. SIRS was signifi cantly more common in girls (OR 9 95%CI 1,3-63,0; p=0,036) and in the non-FOLE children (OR 8,0 95% CI 1,24 – 51,50; p=0,022).

Abstract

Anemia is a condition with abnormalities in the red blood cells where lack of iron intake was postulated to be the main factor causing anemia. Research on iron intake, therefore, in adolescent girls is essential, specifi cally in high anemia prevalence area. This study aimed to examine the eff ect of family socio-economic factors, anemia comprehension, and ten-highest iron foods consumed on iron intake. Observational study with cross sectional design was performed, applying iron consumption as dependent variable and parents’ education, employment, income and expenditure, along with ten-highest high-iron foods consumed and knowledge about anemia as independent variables. Iron intake was collected using 3 x 24-hours food recall, and ten-highest iron-rich foods consumed was obtained with 2 x food frequency questionnaire. Family socio-economic factors (education, employment, income and expenditure) and knowledge on anemia were assessed using standard questionnaire with closed-ended interview question. The study highlighted that the average iron intake was 8.11 ± 2.94 mg/day (ranging from 3.01 to 20.43 mg/day). Obtained data showed that the occupation of father played a role in the iron intake diff erence (6.20 ± 1.72 vs 8.40 ± 2.99 mg/day for formal and informal, p <0.05). However, no diff erences were found between iron intake and education of fathers and mothers, maternal occupation, income, and expenses. Ten-highest iron-rich foods consumed did not signifi cantly correlate to the amount of iron consumption (p > 0.05). Moreover, this study in adolescent girls found that there was a negative correlation between knowledge about anemia and iron intake (r= -0.259, p <0.05). In conclusion, respondents consumed around 8 mg of iron, in average, lower than Recommended Dietary Allowance. Less amount of iron intake might be caused by scarce of high-iron sources consumption

Abstract

The prevalence of obesity has increased signifi cantly and it has become a public health problem globally. Many strategies were done to overcome obesity. One of them is dietary approach. The popular and widely used weight loss diet is the ketogenic diet. This literature review aimed to discuss the mechanism of ketogenic diet in weight lost as well as its long and short term eff ects on health. Ketogenic diet is a very low-carbohydrate and high-fat diet. This diet restricts the carbohydrate intake up to 50 gram per day. The diet eff ective for losing weight in short term (<6 months), after 6 months there was no signifi cant diff erences compared to other wight-loss diet. Study shows ketogenic diet gives both benefi cial and harmful eff ects in short and long term for ketogenic dieters. This diet is not applicable for anyone, thus people with chronic diseases should receive guidance from dietitian or clinician in implementing this diet. Ketogenic dieters are suggested to replace their carbohydrate intake with complex carbohydrate (whole food-not refi ned), reduce animal-based protein, increasing plant-based protein and polyunsaturated fat, water, fermented foods and beverages.

Abstract

Futsal is one of the sport that begin to be popular in Indonesia. Physical condition in futsal is an important aspect because it directly aff ects athlete performance especially for speed and cardiorespiratory. One of the factor that aff ect physical condition is percentage of body fat. The purpose of this study is to analyze the correlation between percent body fat with physical condition of futsal athletes in Surabaya. This study was an observational analytic study with cross sectional design. The population were sixty-eight peoples from members of Buana Mas FC, Garuda Emas FC, Nisrina FC and Surabaya Porprov team 2019. Fifty-four peoples were selected as subject of this study by proportional random sampling method. Data collection included questionnaires for respondent characteristics namely age, occupation, education, smoking history and sports activity, and then, measurement of subcutaneous fat thickness using skinfold calliper, and measuring speed and cardiorespiratory endurance using sprint 20m and yoyo test. Data analyze used Spearman correlation test. The result of this study showed most of respondent have normal percentage of body fat (59.3%). Respondents speed mostly classifi ed as lacking (50.0%) and cardiorespiratory endurance respondents mostly classifi ed as suffi cient (59.3%). The results showed an positive correlation (p = 0.001; R=0.732) between percent body fat with speed, it was mean that the higher percentage of body fat, the slower sprint time. And there was negative correlation (p = 0.001; R=-0.639) between percentage of body fat and cardiorespiratory endurance, so the higher percentage of body fat, the lower cardiorespiratory endurance. This contradictory conclusion is due to increasing sprint time, the respondent speed will decrease while V02Max increase so the cardiorespiratory endurance will increase.

Abstract

Hypertension is one of non-communicable diseases which prevalence is high in Indonesia, not only among adult and elderly but also among adolescent. Hypertension can be caused by various factors including fat intake, fi ber intake and nutritional status. The purpose of this study was analyze the correlation of fat intake, fi ber intake, and obesity with hypertension among female students at Vocational high school, Bekasi, Indonesia. This was a cross sectional study among 255 female students who were selected by purposive sampling technique. Hypertension was measured using sphygmomanometer with 95 percentile cut-off based on sex, age, and body height (cut-off hypertension was > 104-115 mmHg systolic and > 62-68 mmHg diastolic blood pressure). Fat and fi ber intake were assessed using Semi Quantitative Food Frequency Questionnaire (SQ-FFQ), and obesity was measured using digital weighing scales and microtoise. Data were analyzed by chi square test. The results showed that prevalence of female students with low f fat intake was 58,8%; low fi ber intake was 82,0%; obesity was 25,1%; and hypertension was 16,5%. There was a positive correlation between fat intake (p=0,011) and obesity (p<0,01) with hypertension but no correlation was found between fi ber intake (p=0,916) and hypertension. Fat intake and obesity were related to the hypertension in adolescents. Routine blood pressure checks and restrictions on fat intake are needed to reduce the risk of hypertension in adolescents.
