Abstract

Fish has a significant contribution in fulfilling the protein source of Indonesian people. The target in 2019 reached 54.49% in efforts to increase food consumption in all layers by providing high quality Indonesian marine products. There are high-economic fish species, namely tuna, skipjack, mackerel, bloating, flying were the raw material in the processing of boiled fish. Pemindangan was a processing technique and preservation, the purpose of this study is to find out the quality of the steam oven produced by distinguishing the cooking time, by knowing the final product sensory test and proximate test, the final product sensory test shows no difference in each cooking whereas the odor, taste, texture parameters are Significant differences in cooking and proximate testing of the three cooking there is no significant difference (p>0.05) to the quality produced, but the product preferred by consumers was a product with 3 hours of cooking, so the cooking recommended on the use of an oven this steam was 3 hours cooking.

Abstract

Mudskipper or glodok fish is a unique fish that can crawl and climb mangrove roots with their fins. In Indonesia, this fish is exported to abroad as a source of food. The by-product of this fish is rarely used, which one is their mucus. Protein is a composition of fish mucus which consists of  amino acids. The mucus of fish has the potential as a source of medicine because it’s proven to have antibacterial, antiviral, and antifungal activities. This study aims to determine the protein and amino acid content of fresh meat and mucus extract of mudskipper. Protein content testing was carried out using the titrimetric method, while amino acid content using the UPLC method. In this study, mucus extract has protein content at 1.79%. It’s small than the protein content of fresh meat at 17.7%. The highest essential amino acid in fresh meat and mucus extract of mudskipper was leucine (15% and 0.91%). The highest nonessential amino acid in fresh meat and mucus extract of mudskipper were glutamic acid (26.4% and 1.6%). The limiting amino acid in fresh meat is leucine as 226.9% and lysine as 12.27% in the mucus extract of mudskipper.

Abstract

This study aimed to determine the quality of differences in catfish fillets made in the pre rigor, rigor mortis, and post rigorstage. This research is divided into 2 stages, the preliminary research stage and further research. Data processing is carried out quantitatively by analyzing parametric statistical data with Anova and non parametric tests with the Kruskal Wallis test. The parameters of this study include stiffness index, pH value, TVB and organoleptic test. Preliminary research results on catfish at the meeting room temperature pre rigor, rigor mortis, and post rigor are interrelated at 0, 1.5, 9 hours with rigor index values of 0%, 27%, 5% and time of pre rigor and rigor mortis at cold temperatures at 0 and 6 hours with rigor index values of 0% and 70%.. In the main study it was shown that all TVB comparisons are significantly different and at pH values all are significantly different except for cold temperature pre rigor and post rigor comparisons. The results of organoleptic fillets showed significantly different results in the comparison of rigor mortis and post rigor phases in the part of testing the appearance of meat integrity and color appearance of filllet meat at cold temperatures.

Abstract

Gulamah fish is a bycatch that is commonly found in the waters of the City of Tarakan. Gulamah fish in Tarakan City is processed into salted fish which produces offal waste and swimming bubbles. Swimming bubbles are known to have high collagen content. The purpose of this study was to obtain information about the length relationship between fish weight and swim bladder as well as the collagen characteristics of the gulamah swim bladder. The research was conducted in 2 stages, namely the length-weight analysis stage with swimming bubbles, and the second stage, namely the extraction and characterization of collagen from the swimming bladder of gulamah fish. The relationship between fish length and weight is a positive allometric, while the relationship between fish length and fish weight and swimming bladder of fish is a negative allometry. The physical chemical parameters of collagen obtained water content values of 29.28% - 29.30%, protein 2.86% - 2.88%, fat 9.53% - 9.55% and viscosity 11.5 ?sp.Gulamah fish is a bycatch that is commonly found in the waters of the City of Tarakan. Abstract

Tujuan dari penelitian ini adalah mengetahui pengaruh konsentrasi jamur tiram putih dan konsentrasi mocaf terhadap sifat fisik, kimia dan sensoris kerupuk udang microwaveable. Penelitian ini menggunakan Rancangan Acak Lengkap Faktorial  (RALF) dengan dua faktor perlakuan dan dilakukan pengulangan sebanyak tiga kali. Faktor pertama yaitu konsentrasi mocaf (15% dan 25%) dan faktor kedua adalah  konsentrasi jamur tiram putih (25%, 50%, dan 75%). Parameter yang diamati meliputi sifat fisik (kekerasan, warna dan derajat pengembangan), sifat kimia (kadar air, kadar abu dan kadar protein), dan sifat sensoris menggunakan uji hedonik (kerenyahan, rasa, warna dan aroma). Hasil penelitian menunjukkan bahwa konsentrasi mocaf berpengaruh nyata terhadap kekerasan, kadar air, dan lightness, sedangkan konsentrasi jamur tiram putih berpengaruh nyata terhadap kekerasan, lightness, redness, yellowness, kadar air, abu, dan protein. Interaksi kedua faktor perlakuan berpengaruh nyata terhadap kadar air dan karakteristik sensoris (rasa dan warna). Hasil uji hedonik menunjukkan bahwa kerupuk udang yang disukai panelis adalah perlakuan A1B2 (15% mocaf dan 50% jamur tiram putih) dengan rerata nilai kekerasan 213,47 gf dan kadar air 3,35%. Kadar protein dalam kerupuk udang microwaveable memenuhi standar (SNI 2714.1:2009) yang termasuk dalam kategori kerupuk udang mutu 1.

Abstract

Penelitian ini bertujuan untuk mengetahui pengaruh penambahan asap cair terhadap sifat fisik, kimia dan sensori kemplang panggang udang putih (Litopenaeus vannamei). Metode penelitian ini menggunakan rancangan acak kelompok (RAK) dengan satu faktor perlakuan dan dilakukan dengan 3 kali ulangan. Perlakuan yang digunakan yaitu perbedaan konsentrasi asap cair (0%, 2,5%, 5% dan 7,5%). Berdasarkan hasil uji sensori penelitian tahap pertama didapatkan formulasi A3 sebagai formulasi terbaik dengan proporsi udang:tepung:air dengan nilai 1:2:1/2. Formulasi terbaik digunakan untuk tahapan pembuatan kemplang panggang udang putih. Hasil uji mutu hedonik menunjukkan bahwa tingkat mutu hedonik panelis mencapai 8, dengan tingkat kesukaan tertinggi yaitu di perlakuan A4 untuk parameter kenampakan, aroma, tekstur, sedangkan untuk rasa, nilai tertinggi di perlakuan A2. Perlakuan terbaik dari penelitian ini yaitu pada perlakuan A4 dengan konsentrasi asap cair 7,5%.

Abstract

Burgo merupakan salah satu menu makanan dengan bahanbdasar tepungktapioka danktepung beras kemudian dibentuk dengan cara digulung. Penelitian ini bertujuan untuk menentukan perlakuan suhu dan waktu pengovenan terbaik pada pembuatan bumbu kaldu burgo instan. Penelitian ini menggunakan analisis Rancangan Acak Kelompok dengan 2 faktor. Faktor I suhu pengeringan terdiri dari 3 level (60?, 80?, dan 100?) dan faktor II lama pengeringan terdiri dari 3 level (6 jam, 9 jam, 12 jam). Parameter  pengamatan meliputi warna, total padatan terlarut dan organoleptik. Hasil penelitian dengan perlakuan waktu dan suhu menunjukkan perbedaan signifikan terhadap nilai total padatan terlarut. Total padatan terlarut yang diperoleh  mengalami peningkatan, sejalan dengan bertambahnya waktu dan suhu pengovenan dan berpengaruh nyata terhadap waktu dan suhu pengovenan. Berdasarkan tabel hasil pengamatan jumlah tanggapan yang benar untuk warna, rasa, aroma, dan kenampakkan adalah 18, 18, 18, dan 19. Sedangkan berdasarkan tabel binomial diperoleh minimum tanggapan yang benar pada taraf 5% adalah 18, sehingga sampel yang tidak berbeda nyata pada warna (suhu 80? selama 12 jam), rasa (suhu 80? selama 9 jam), aroma, dan kenampakan (suhu 100? selama 6 jam). Hasil penelitian terbaik terdapat pada perlakuan yang menggunakan suhu 80? selama 12 jam dengan rerata total padatan terlarut 42,35 mg/L, dan hasil organoleptik mendekati sampel burgo pasaran pada warna (kekuningan) dan aroma

Abstract

Catfish was a suitable alternative for the main raw material for making surimi, because it has a high protein content, easy to found and than has good prospective to be made surimi product. The aimed of this study to analyze effect of defatting, washing cycle, and frozen storage was add cryoprotectant. This research was conducted three step that is deffating, washing, and made surimi. The concentration of the selected for defatting processed was NaH2PO4 2% during 10 minutes and the result fat content was 0.15%. The best washing was one time of made kamaboko and has gel strength (510.35 g.cm), and the best quality (PLG : 0%; pH : 6.53; water content : 76.6%; folding test : 3.22; bite test : 3,77) when compared with washing cycle two times and three times. The best cryoprotectant addition was 4% trehalose and result of gel strength was 354.15 g.cm for three weeks of frozen storage.

Abstract

The development of science and technology has resulted in many mononatrium glutamate (MSG) flavorings which can have side effects for human health. The development of natural flavors needs to be done to reduce side effects for human health. Betell plant sap can be used as a source of protease enzymes that have the potential as active agents in flavor production. Flavors can be obtained from animal protein such as flying fish. The purpose of this study was to determine the best treatment of the enzyme biduri in producing flavored flying fish. This study uses a factorial completely randomized design (RALF) method with concentrations of 1.5%, 2.0%, and 2.5% slurry proteases with a hydrolysis duration of 30, 60, and 90 minutes. The results obtained indicate that the best water content at a concentration of 1.5% hydrolysis time is 90 minutes (47,84%), dissolved protein in concentration 2.5% hydrolysis time 60 minutes (86,83%), total amino acids in concentration 1.5% hydrolysis time 90 minutes (3,11%), and organoleptic value in concentration 1.5%.

Abstract

Nugget ikan adalah salah satu produk diversifikasi hasil perikanan. Daging ikan giling  ditambah dengan bahan pengikat dan bumbu-bumbu yang selanjutnya dikukus dan dicetak. Tujuan penelitian ini adalah untuk melihat pengaruh variasi konsentrasi daging ikan cucut kacangan dan perbandingan bahan pengikat (tepung terigu dan maizena) terhadap mutu nugget yang dihasilkan. Parameter yang  diamati yaitu analisis kadar air, kadar protein, kadar lemak, dan kadar abu. Hasil penelitian menunjukkan bahwa konsentrasi daging ikan cucut kacang berpengaruh sangat nyata (P?0,01) terhadap kadar air, kadar protein, kadar lemak, dan kadar abu. Perbandingan bahan pengikat (tepung terigu dan maizena) berpengaruh sangat nyata  (P?0,01) terhadap kadar protein, kadar lemak, kadar abu dan berpengaruh tidak nyata (P>0,05) terhadap kadar air. Interaksi antara konsentrasi daging ikan cucut kacangan dan perbandingan bahan pengisi (tepung terigu dan maizena) berpengaruh tidak nyata (P>0,05) terhadap kadar air, kadar protein, kadar lemak, dan kadar abu nugget ikan cucut kacang yang dihasilkan. Nugget ikan ikan cucuk kacangan dengan kualitas terbaik diperoleh dari perlakuan konsentrasi daging ikan cucut kacang 30% dan perbadingan bahan pengikat (tepung terigu:maizena) 3:1.
