Abstract

Background: Instant pumpkin cream soup enriched with tempeh had fulfilled 10% Recommended Dietary Allowances (RDA) for elderly so that it can be used as an easy-to-serve snack, but decreasing quality of instant cream soup will be happened if the instant cream soup was stored for a long time. Objectives: This study aimed to analyze quality of water content, water activity and lipid oxidation in instant pumpkin cream soup during storage and estimated the shelf life of pumpkin cream soup enriched with tempeh.Method:  Quality storage was analyzed using of water content, water activity (aw) and lipid oxidation. Estimation of shelf life was analyzed using Arrhenius Accelerated Shelf Life Testing (ASLT) model.Results: The results showed that the water content, aw levels and lipid oxidation of instant pumpkin cream soup increased during the storage period. The critical parameter used in this study was lipid oxidation. Instant cream soup without the addition of tempeh can last 447 days  while the cream soup with the addition of tempeh has a shelf life of 433 days.Conclusion: Quality of instant pumpkin cream soup decreased during the storage period and it would be expired over a year.

Abstract

The aims of the study were to analyze iron content, beta carotene content and organoleptic test of orange fleshed sweet potato cookies which had been fortified with NaFeEDTA. This reaserch used experimental method with one factor completely randomized design of iron with 100 ppm, 150 ppm and 200 ppm of NaFeEDTA. Analysis of iron content was conducted using Atomic Absorption Spectrophotometry and analysis of beta carotene was conducted by using spectrophotometry. Then, organoleptic test was conducted using hedonic test. The result of iron content in cookies is 27.97 ppm-53.42 ppm while beta caroten is 83.40 ppm-129.72 ppm. Organoleptic test results in terms of color, aroma, and texture, the fortified cookies were as well-liked as the control ones; taste, however, the panel found the fortified cookies more preferable. The highest level of iron content, beta carotene content and organoleptic test were orange fleshed sweet potato cookies fortified with 200 ppm NaFeEDTA.

Abstract

Child stunting remains a significant public health concern, partly attributed to the suboptimal role of community health cadres and early childhood education teachers in delivering nutrition education. Inadequate training and various challenges in community engagement have limited the effectiveness of stunting prevention efforts. This outreach program aimed to improve the knowledge of posyandu (community health post) cadres and early childhood education (PAUD) teachers on stunting prevention and the importance of balanced nutrition to support child development. A total of 63 participants, including 50 posyandu cadres and 13 PAUD teachers, attended the activity, which included interactive lectures, discussions, and pre- and post-tests. The materials covered exclusive breastfeeding, balanced complementary feeding (MPASI), and regular monitoring of child growth and development. The results showed a significant increase in participants’ understanding, particularly regarding the impact of stunting and monitoring of child growth and development. Nutrition education proved effective in enhancing the capacity of cadres and teachers as strategic partners at the community level. It is recommended that regular follow-up training with practical approaches, such as menu planning and supplementary feeding management, be conducted to ensure program sustainability.Keywords: child development; community health post cadres ; early childhood teachers; nutrition education; stunting prevention Abstrak: Stunting pada anak masih menjadi masalah kesehatan masyarakat, salah satunya disebabkan oleh kurang optimalnya peran kader dan guru PAUD dalam edukasi gizi. Minimnya pelatihan serta kendala saat mendampingi masyarakat membuat upaya pencegahan stunting belum maksimal. Kegiatan penyuluhan ini bertujuan untuk meningkatkan pengetahuan kader posyandu dan guru PAUD mengenai pencegahan stunting dan pentingnya gizi seimbang untuk mendukung tumbuh kembang anak. Sebanyak 63 peserta terdiri atas 50 kader posyandu dan 13 guru PAUD mengikuti kegiatan yang dilaksanakan melalui ceramah interaktif, diskusi, serta evaluasi pre-test dan post-test. Materi meliputi ASI eksklusif, pemberian MPASI bergizi seimbang, serta pemantauan tumbuh kembang anak secara berkala. Hasil evaluasi menunjukkan peningkatan signifikan dalam pemahaman peserta, terutama terkait dampak stunting dan pemantauan tumbuh kembang anak. Edukasi gizi terbukti efektif dalam memperkuat kapasitas kader dan guru sebagai mitra strategis di tingkat komunitas. Disarankan agar pelatihan lanjutan dengan pendekatan aplikatif seperti penyusunan menu dan pengelolaan PMT dilakukan secara berkala untuk mendukung keberlanjutan program.Kata kunci: tumbuh kembang anak; posyandu; guru PAUD; edukasi gizi; kader posyandu; pencegahan stunting

Abstract

Indonesia has many unexplored sources of bioactive peptides in fermented food. Indonesian high-protein fermented foods have high bioactivity potential. Research is needed on the bioactivity of Indonesian bioactive peptides sources for broader health implications.     Abstract Bioactive peptides (BPs) are short protein fragments with significant physiological functions, including antioxidant, antihypertensive, antimicrobial, and antidiabetic activities. These compounds are commonly released during fermentation, making high-protein fermented foods (HPFF) a promising source of natural health-promoting agents. Indonesia, with its rich biodiversity and long-standing tradition of fermentation, offers a unique variety of traditional HPFF. However, the potential of these indigenous products as BP sources remains underexplored and poorly represented in the global literature. This review aims to examine Indonesian traditional HPFF as a source of BPs, categorize them based on raw material, and highlight their functional and health-related properties. A literature review was conducted using publications from Scopus, PubMed, ProQuest, Google Scholar, and SINTA (2000–2023). The search applied Boolean strategies and the PEO (Population, Exposure, Outcome) framework to identify relevant studies on fermented foods, bioactive peptides, and their biological activities. Indonesian HPFF including tempeh, rusip, dangke, pekasam, and cangkuk contain BPs with diverse bioactivities. Tempeh shows antidiabetic and antihypertensive potential; rusip exhibits antioxidant and cholesterol-lowering effects; dangke and cangkuk demonstrate antimicrobial and ACE-inhibitory activities. These functional properties are influenced by substrate type (e.g., legumes, fish, milk), microbial composition (lactic acid bacteria, Bacillus spp., yeasts), and fermentation conditions. Notably, certain Indonesian HPFF exhibit multi-functional peptides with synergistic health effects, suggesting significant therapeutic promise. This review bridges a critical knowledge gap by consolidating evidence on BPs from Indonesian HPFF. It provides a foundation for future investigations into peptide bioactivity, supports functional food innovation, and highlights the global relevance of Indonesia’s fermentation heritage in health science and sustainable nutrition.

Abstract

Demensia menyerang sekitar 50 juta orang di seluruh dunia, yang mencakup sekitar 5% dari populasi lansia global. Diperkirakan jumlah individu yang mengalami demensia akan mengalami peningkatan signifikan mencapai sekitar 82 juta pada tahun 2030. Angka ini diproyeksikan akan terus meningkat hingga mencapai 152 juta pada tahun 2050. Masa pra lansia merupakan masa krusial untuk dilakukan intervensi yang dapat menurunkan risiko demensia di usia lanjut. Tujuan dari kajian ini adalah untuk mengeksplorasi dan menganalisis hubungan asupan vitamin B6, asam folat, dan vitamin B12 dengan demensia pada individu pra lansia di Posbindu Kecamatan Driyorejo, Gresik. Adapun penelitian ini menggunakan pendekatan kuantitatif, dengan desain penelitian cross-sectional yang melibatkan 88 individu pra lansia di Posbindu Kecamatan Driyorejo, Gresik. Pengumpulan data tentang asupan zat gizi vitamin B6, asam folat, dan vitamin B12 dilakukan dengan menggunakan kuesioner SQ-FFQ (Semi Quantitative Food Frequency Questionnaire). Sementara itu, penilaian terhadap demensia dilaksanakan dengan menggunakan instrumen MMSE (Mini Mental State Examination). Temuan dari penelitian ini mengindikasikan asupan vitamin B6 cukup pada 61,4% responden, sedangkan 38,6% mengalami defisiensi. Asupan asam folat cukup pada 6,8% responden, sedangkan 93,2% mengalami defisiensi. Asupan vitamin B12 cukup pada 15,9% responden, dan 84,1% mengalami defisiensi. Hasil dari uji chi-square menunjukkan adanya hubungan yang signifikan antara asupan vitamin B12 (p = 0,034) dengan demensia, sementara tidak ada hubungan yang signifikan yang ditemukan antara asupan vitamin B6 (p = 0,762) dan asam folat (p = 0,333) dengan demensia.
