Abstract

Nutritional problems in pregnant women can affect the mother's health, also influence fetus’s growth and development while in the womb. The role of cadres in supporting pregnant women has a big influence so it is necessary to empower cadres through education to reduce nutritional problems in pregnant women. Community service activities aim to enhance the understanding of cadres' concerning proper nutrition for pregnant women. The initial activity was carried out by assessing cadres' knowledge about balanced nutrition through pre-test before education, then providing material and after education with a post-test.  The results conducted with 32 cadres showed that the cadres' knowledge of balanced nutrition had significantly increased in the average knowledge score by 20 point  after balanced nutrition education (p<0.001). The results of  activities related to balanced nutrition for pregnant women showed a positive response from cadres and good communication was established between presenters and cadres.  The conclusion was an increase in cadres' knowledge after providing nutritional education about balanced nutrition for pregnant women. Continuous provision of balanced nutrition education by cadres can increase knowledge about nutrition among cadres and overcome nutritional problems in pregnant women.Keywords: balanced nutrition; nutrition education; pregnant women Abstrak: Masalah gizi yang dialami oleh ibu hamil dapat memengaruhi kesehatan sang ibu serta memengaruhi pertumbuhan dan perkembangan janin selama masa kehamilan. Peran kader dalam mendampingi ibu hamil memiliki pengaruh besar sehingga diperlukan pemberdayaan kader melalui penyuluhan  untuk menurunkan masalah gizi pada ibu hamil. Kegiatan pengabdian masyarakat bertujuan meningkatkan pengetahuan kader terkait gizi seimbang pada ibu hamil. Kegiatan penyuluhan melalui media ZOOM Meeting dengan metode ceramah menggunakan powerpoint dilakukan untuk menilai pengetahuan kader tentang gizi  seimbang. Soal   pre-test   diberikan sebelum   penyuluhan dan  diakhiri  dengan  post-test. Sejumlah 32 kader mengikuti pre-post test yang diberikan, dan didapatkan hasil pengetahuan mereka mengenai gizi seimbang meningkat secara signifikan, dengan rata-rata skor pengetahuan naik sebesar 20 poin sebelum dan setelah edukasi tentang gizi seimbang dilakukan (p<0,001). Kader memberikan respon yang positif pada kegiatan penyuluhan terkait gizi seimbang ibu hamil dan terjalin komunikasi yang baik antara pemateri dan kader. Kesimpulan yang dihasilkan setelah kegiatan penyuluhan tentang gizi seimbang ibu hamil dilakukan, pengetahuan kader meningkat dibandingkan sebelum penyuluhan. Pemberian  penyuluhan  gizi  seimbang  oleh  kader yang berkelanjutan dapat meningkatkan pengetahuan tentang gizi pada kader dan mengatasi permasalahan gizi ibu selama masa kehamilan.Kata kunci: gizi seimbang; penyuluhan gizi; ibu hamil

Abstract

Child stunting remains a significant public health concern, partly attributed to the suboptimal role of community health cadres and early childhood education teachers in delivering nutrition education. Inadequate training and various challenges in community engagement have limited the effectiveness of stunting prevention efforts. This outreach program aimed to improve the knowledge of posyandu (community health post) cadres and early childhood education (PAUD) teachers on stunting prevention and the importance of balanced nutrition to support child development. A total of 63 participants, including 50 posyandu cadres and 13 PAUD teachers, attended the activity, which included interactive lectures, discussions, and pre- and post-tests. The materials covered exclusive breastfeeding, balanced complementary feeding (MPASI), and regular monitoring of child growth and development. The results showed a significant increase in participants’ understanding, particularly regarding the impact of stunting and monitoring of child growth and development. Nutrition education proved effective in enhancing the capacity of cadres and teachers as strategic partners at the community level. It is recommended that regular follow-up training with practical approaches, such as menu planning and supplementary feeding management, be conducted to ensure program sustainability.Keywords: child development; community health post cadres ; early childhood teachers; nutrition education; stunting prevention Abstrak: Stunting pada anak masih menjadi masalah kesehatan masyarakat, salah satunya disebabkan oleh kurang optimalnya peran kader dan guru PAUD dalam edukasi gizi. Minimnya pelatihan serta kendala saat mendampingi masyarakat membuat upaya pencegahan stunting belum maksimal. Kegiatan penyuluhan ini bertujuan untuk meningkatkan pengetahuan kader posyandu dan guru PAUD mengenai pencegahan stunting dan pentingnya gizi seimbang untuk mendukung tumbuh kembang anak. Sebanyak 63 peserta terdiri atas 50 kader posyandu dan 13 guru PAUD mengikuti kegiatan yang dilaksanakan melalui ceramah interaktif, diskusi, serta evaluasi pre-test dan post-test. Materi meliputi ASI eksklusif, pemberian MPASI bergizi seimbang, serta pemantauan tumbuh kembang anak secara berkala. Hasil evaluasi menunjukkan peningkatan signifikan dalam pemahaman peserta, terutama terkait dampak stunting dan pemantauan tumbuh kembang anak. Edukasi gizi terbukti efektif dalam memperkuat kapasitas kader dan guru sebagai mitra strategis di tingkat komunitas. Abstract

Background: One approach to preventing stunting among toddlers is by providing complementary food (MP-ASI) made from nutrient-dense local ingredients, particulary those rich in animal-source protein. Chicken liver and anchovy power are high protein local food products that are relatively inexpensive and accessible, making them promising candidates for use as innovative ingredients or formulations in complementary feeding.Objectives: to evaluate the physical characteristic and proximate composition of a complementary food formula based on chicken liver and anchovy flour, and to assess its potential in fulfilling the nutritional needs of toddlers.Methods: An experimental design a Completely Randomized Design (CRD) with 3 replications. Proximate analysis was conducted at the Food Technology Laboratory of Politeknik Negeri Lampung, using standard methods from the Association of Official Analytical Chemists (AOAC) to determine moisture, ash, fat, protein, and carbohydrate contents of the MP-ASI formula.Results: The analysis revealed that the MP-ASI formula contained 8,26% moisture, 65,58 g/100 g protein, 12,,74 g/100 g fat, 8,26% ash, and 5,16 g/100 g carbohydrate. The nutritional composition of the formula meets the daily requirements for toddlers, providing more than 2-3 times the recommended protein intake and fulfilling 25,48% - 28,31% of the recommended fat intake. Although the carbohydrate content is less than 3%, the high ash content indicates a considerable amount of essential minerals, particularly iron and calcium.Conclusion: T Based on its nutritional composition, the formula demonstrates strong potential as a nutrient-dense MP-ASI ingredient for stunting prevention interventions. Future studies are recommended to analyze micronutrient content (iron, calcium, zinc, vitamin A, omega-3), as well as food cost and acceptability in toddlers.

Abstract

The condition of age-related loss of skeletal muscle mass, accompanied by a decrease in muscle strength and/or physical performance, is defined as sarcopenia. Handgrip strength is an indicator for detecting possible sarcopenia. Nutritional status also plays an important role in influencing handgrip strength. The purpose of this study was to analyze the determinants of sociodemographic factors, nutritional status, and smoking habits on the risk of sarcopenia using handgrip strength as an indicator. This research method uses cross-sectional data from the 2023 Indonesia Longitudinal Aging Survey (ILAS). The research subjects were elderly people aged ≥60 years living in households. Handgrip strength assessed using the 2019 AWGS criteria. The results showed that advanced age, female gender, not working, and nutritional status, are associated with low handgrip strength as an indicator of sarcopenia risk (p < 0.05), while educational level and smoking habits do not show a significant association (p > 0.05). The conclusion is that age, gender, nutritional status, and employment status are important determinants of sarcopenia risk in the elderly. Prevention efforts should focus on adequate nutritional intake and early screening of muscle strength.

Abstract

Adolescent anemia is characterized by iron deficiency associated with menstruation and unbalanced nutrient intake. Red dragon fruit and moringa leaf flour are rich in iron, flavonoids, and phenolic compounds, which possess antioxidant properties and may help prevent anemia. Both ingredients can be developed into snack products such as ice cream, which is popular among adolescents. The objective of this study was to analyze the total flavonoid and total phenolic contents in red dragon fruit ice cream with the addition of moringa leaf flour. This research employed a Completely Randomized Design (CRD) with five formulations and two replications. The ice cream was prepared at the Laboratory of Aisyah University, Pringsewu, in January 2025. Chemical analyses were performed using ultraviolet–visible spectrophotometry at the Laboratory of the State Polytechnic of Lampung. Data were analyzed using One-Way ANOVA followed by Duncan’s multiple range test. The results showed significant differences (p < 0.05) among the formulations. The highest total flavonoid content was observed in formulation F4 (10%) with 0.53 mg quercetin equivalent per gram (p = 0.001). The highest total phenolic content was found in formulation F0 (0%) with 5.48 mg gallic acid equivalent per gram (p = 0.002). In conclusion, the addition of up to 10% moringa leaf flour in red dragon fruit ice cream increased the total flavonoid content but decreased the total phenolic content. Therefore, this product has potential as a functional food rich in antioxidant compounds that may benefit adolescent girls.

Abstract

This systematic review aims to evaluate the health benefits of Purple Sweet Potato (PSP) contain anthocyanins, phenolic acids, and flavonoids in animal models, focusing on its antioxidant, anti-inflammatory, lipid peroxidation, and immunomodulatory properties. Owing to its increasing scientific significance, investigating its health effects in animal models offers important insights into its potential therapeutic applications for human health. Fourteen eligible in vivo studies were identified from 5.043 original research articles following predefined eligibility criteria based on population, intervention, comparison, outcome, and study design (PICOS). These studies employed various extracts (aqueous, ethanolic, methanolic, fermented) and animal models (Wistar rats, BALB/c mice, Kunming mice, Sprague-Dawley rats) to investigate the effects. The PSP significantly reduced oxidative stress markers such as Malondialdehyde (MDA) and enhancing endogenous antioxidant enzymes including Superoxide Dismutase (SOD), Glutathione Peroxidase (GPx), and Catalase (CAT). Anti-inflammatory effects were evident through downregulation of Tumor Necrosis Factor-Alpha (TNF-α), Interleukin-1 Beta (IL-1β), Interleukin-6 (IL-6), Nitric Oxide (NO), and Matrix Metalloproteinase-3 (MMP-3), mediated via suppression of Nuclear Factor Kappa B (NF-κB) and Mitogen-Activated Protein Kinase (MAPK). Anti-inflammatory effects were observed in high-fat diet-induced obese rats, where PSP supplementation (5% weight/weight, w/w) markedly reduced TNF-α, IL-6, Monocyte Chemoattractant Protein-1 (MCP-1), and Interleukin-1 Beta (IL-1β) in adipose tissue. Significant enhancement of endogenous antioxidants occurred in arthritic rats, with PSP extracts (300 mg/kg BW) increasing CAT, Peroxidase (POD), and SOD while lowering IL-1β, IL-6, and NO. The lipid peroxidation reduction was seen in Carbon Tetrachloride (CCl₄)-induced liver injury, where anthocyanin-rich PSP extract (400 mg/kg BW) decreased MDA, increased SOD and Glutathione (GSH). Long-term intervention and aqueous-fermented extracts are particularly promising due to their safety profiles and suitability for functional food formulations, but heterogeneity in dosages and durations limits cross-study comparability. Future research should emphasize clinical trials to establish safety, efficacy, and translational relevance in human health.
