Abstract

People’s low participation level in Posyandu activities still becomes one of the problems at Puskesmas in Banjarbaru. It can be observed from the D/S achievements that were still lower than the target set by the Puskesmas. D/S achievement at the Puskesmas Landasan Ulin (58.4%) in 2021 was still far from the target (90%). This study aimed to analyze the relation of mothers’ participation level in Posyandu activities to mothers’ nutritional knowledge and nutritional status of children under five. This observational study used a cross-sectional design involving 95 pairs of children under five and their mothers selected by the purposive sampling technique. This study was conducted from November to December 2022. The mothers’ participation level in Posyandu activities was assessed using questionnaires and the nutritional status of under-fives was determined using anthropometric measurements. The data were analyzed using the Spearman Rank test. The results showed that mothers’ participation level in Posyandu activities was associated with mothers’ nutritional knowledge (p=0.022; r=-0.234) but not associated to the nutritional status of children under five based on the WAZ index (p=0.888).   ABSTRAK Tingkat partisipasi masyarakat dalam kegiatan Posyandu yang rendah masih menjadi salah satu masalah gizi di Puskesmas-Puskesmas Kota Banjarbaru. Hal ini dapat dilihat dari capaian D/S yang masih kurang dari target yang ditentukan oleh Puskesmas. Capaian D/S di Puskesmas Landasan Ulin (58,4%) pada tahun 2021 masih jauh dari target yang ditetapkan oleh Puskesmas tersebut (90%). Penelitian ini bertujuan untuk menganalisis hubungan antara tingkat partisipasi ibu dalam kegiatan Posyandu dengan pengetahuan gizi ibu dan status gizi balita. Penelitian observasional ini menggunakan desain cross-sectional yang melibatkan 95 pasang balita dengan ibunya yang diambil dengan teknik purposive sampling. Penelitian ini dilakukan dari bulan Oktober hingga Desember 2022. Tingkat partipasi ibu dalam kegiatan Posyandu diperoleh menggunakan kuesioner dan status gizi balita ditentukan melalui pengukuran antropometri. Data dianalisis menggunakan uji Spearman Rank. Tingkat partisipasi ibu dalam kegiatan Posyandu berhubungan signifikan (p=0,022; r=-0,234) dengan pengetahuan gizi ibu tetapi tidak berhubungan dengan status gizi balita berdasarkan indeks BB/U (p=0,888).

Abstract

Obesity occurs due to complex abnormalities in the regulation of diet and energy metabolism controlled by several factors that cause obesity, namely genetics, diet, physical activity, nutritional knowledge, and lifestyle. The level of nutritional knowledge is an indirect factor affecting obesity. Lack of physical activity is a major risk factor for overweight and obesity. The diet that is the trigger of obesity and obesity is the consumption of large portions of food (more than needed), eating high energy, high fat, high in simple carbohydrates and low in fiber. This study aims to determine the relationship between the level of knowledge of balanced nutrition, diet and physical activity with the incidence of obesity in employees of RSUD H. Badaruddin Kasim Tanjung. This research is an analytical descriptive research with a cross-setional approach. The subjects of the study amounted to 50 respondents obtained by total sampling technique. The results of this study showed that the majority of the level of knowledge of balanced nutrition was lacking (55.5%), moderate physical activity (61.1%), and more diet (80.5%). The results of the study using the Spearman Rank statistical test showed that the level of knowledge of balanced nutrition (p=0.018), physical activity (p=0.028), and diet (p=0.025) had a relationship with the incidence of obesity in employees of RSUD H. Badaruddin Kasim Tanjung. Nutrition officers, health workers, and hospital management are advised to educate all employees about balanced nutrition knowledge, and facilitate physical activity with regular exercise at work, and maintain a balanced nutritional diet so that obesity can be overcome.   ABSTRAK Obesitas terjadi karena adanya kelainan kompleks pengaturan pola makan dan metabolisme energi yang dikendalikan oleh beberapa faktor penyebab terjadinya obesitas yaitu genetik, pola makan, aktivitas fisik, pengetahuan gizi, dan gaya hidup. Tingkat pengetahuan gizi merupakan faktor tidak langsung yang memengaruhi obesitas. Aktivitas fisik yang kurang menjadi faktor risiko utama terjadinya kelebihan berat badan dan obesitas. Pola makan yang merupakan pencetus terjadinya kegemukan dan obesitas adalah konsumsi makan porsi besar (lebih dari kebutuhan), makan tinggi energi, tinggi lemak, tinggi karbohidrat sederhana dan rendah serat. Penelitian ini bertujuan untuk mengetahui hubungan tingkat pengetahuan gizi seimbang, pola makan dan aktivitas fisik dengan kejadian obesitas pada karyawan RSUD H. Badaruddin Kasim Tanjung. Penelitian ini adalah penelitian deskriptif analitik dengan pendekatan cross-setional. Subjek penelitian berjumlah 50 responden yang diperoleh dengan Teknik total sampling. Hasil penelitian ini menunjukkan mayoritas tingkat pengetahuan gizi seimbang kurang (55,5%), aktivitas fisik sedang (61,1%), dan pola makan lebih (80,5%). Hasil penelitian menggunakan uji statistik Rank Spearman menunjukkan tingkat pengetahuan gizi seimbang (p=0,018), aktivitas fisik (p=0,028), dan pola makan (p=0,025) memiliki hubungan dengan kejadian obesitas pada karyawan RSUD H. Badaruddin Kasim Tanjung. Petugas gizi, pihak promosi kesehatan, dan manajemen rumah sakit disarankan dapat memberikan edukasi kepada semua karyawan tentang pengetahuan gizi seimbang, dan memfasilitasi aktivitas fisik dengan olahraga teratur di tempat kerja, dan menjaga pola makan gizi seimbang agar obesitas dapat diatasi.

Abstract

Stunting is a condition in which a toddler has a height or length that is below the average for their age. Stunting is a nutritional health problem that indicates chronic malnutrition in toddlers. Stunting has long-term implications, such as reduced cognitive and physical development, lower performance in tests, and lower per capita household expenditures. This study aims to analyze the relationship between dietary diversity, environmental sanitation, and the occurrence of stunting in children. Data from a sample size of 58 toddlers were collected in the working area of the Pasar Panas Health Center, Benua Lima District, Barito Timur Regency. The study was conducted from December 2022 to March 2023. The analysis was performed using the Spearman Rank Correlation method. The results of the analysis showed that there was no significant relationship between dietary diversity and the occurrence of stunting (p=0.317, correlation coefficient = 0.134). However, there was a significant relationship between family environmental sanitation, availability of clean water (p=0.013, correlation coefficient=0.326), waste disposal (p=0.000, correlation coefficient=0.478), and household environmental conditions with the occurrence of stunting in children (p=0.003, correlation coefficient=0.387). Poor environmental sanitation increases the risk of infections and can hinder the growth and development of children. Therefore, access to adequate clean water, proper waste management, and good household environmental conditions are important in preventing the occurrence of stunting in children.

Abstract

Nutritional problems in school-age children can lead to physical impairment, reduced concentration while learning, and decreased intelligence which has an impact on children's school performance. Nutritional knowledge is an indirect factor in triggering under- and over-nutrition in primary school children. A child's poor diet will hamper growth and development. Low physical activity and consuming excess snacks will lead to overweight status. This study aims to determine the relationship between nutritional knowledge, diet, physical activity and snacks consumption habits with nutritional status in elementary school children at SDIT Babul Jannah. This study used quantitative methods. This type of research is observational with a cross sectional approach. Sample selection was carried out by random sampling method, the sample totaled 55 respondents. The results of the study using the Rank Spearman statistical test showed nutritional knowledge (p = 0.716), physical activity (p = 0.558) was not associated with nutritional status, while diet (p = 0.001), snacks consumption habits (p = 0.001) associated with nutritional status. It is hoped that students can increase knowledge related to nutrition, diet, physical activity and consumption habits of snacks so that in everyday life they are more selective in choosing the food consumed and do good physical activity and not excessive.

Abstract

Diabetes Mellitus (DM) is a metabolic disorder caused by insufficient effective insulin in the body, often accompanied by disruptions in fat and protein metabolism, which can lead to complications such as diabetic ulcers. Albumin intake is essential as it plays a key role in maintaining the oncotic pressure of blood plasma. Snakehead fish (Channa striata) is a freshwater species known for its high albumin content, approximately 62.24 g/kg (6.22%). This study aimed to test the albumin levels in roasted snakehead fish dumpling chips with varying formulations (P0 = 0%, P1 = 15%, P2 = 25%, and P3 = 35%) using the Biuret-spectrophotometer method. Additionally, a consumer acceptance test was conducted to evaluate preferences based on color, texture, aroma, and taste through a sensory preference assessment. The results showed that roasted snakehead fish dumpling chips with the P1 formulation were most preferred for color (score: 3.1), while aroma was favored in P0 and P3 (score: 3.0). Taste received similar preference scores across P1, P2, and P3 (score: 3.0), and texture was most preferred in P1 (score: 3.4). The average albumin content in the roasted dumpling chips was as follows: P0 (0.681 g), P1 (0.684 g), P2 (0.729 g), and P3 (0.736 g). Statistical analysis revealed significant differences in consumer acceptance for aroma (p = 0.006) and texture (p = 0.000). Moreover, the addition of snakehead fish significantly increased albumin levels in the chips (p = 0.015). Based on the De Garmo test, the best treatment was identified in P3, with a score of 0.25.

Abstract

Penelitian ini bertujuan untuk mengetahui hasil implementasi alat peraga IPA materi tekanan hidrostatis dengan model pembelajaran Project Based Learning (PJBL) siswa SMPIT Ar Raihan kelas VII sebanyak 25 siswa pada tahun ajaran 2017/2018. Metode penelitian yang digunakan adalah penelitian deskriptif kualitatif. Teknik pengumpulan data menggunakan teknik tes yaitu soal posttest. Hasil penelitian diperoleh (1) Hasil validasi oleh guru IPA mendapatkan skor 91,69hal tersebut menunjukkan bahwa kepraktisan alat peraga kategori sangat praktis (A), hasil implemantasi pada siswa dengan nilai rata-rata 8,25 dengan kriteria ketuntasan minimum yaitu 7,50.

Abstract

Keragaman pangan adalah kuantitas pangan yang dikonsumsi oleh seorang individu. Remaja membutuhkan makanan yang baik dari segi kualitas maupun kuantitas. Semakin beragam makanan yang dikonsumsi oleh individu, maka semakin terpenuhi pula kecukupan zat gizi yang selanjutnya akan sangat berdampak pada status gizi remaja tersebut. Tujuan dari penelitian ini adalah diketahui hubungan antara keragaman pangan dengan status gizi (IMT/U) remaja usia 16-18 tahun di SMA IT Ar-Rahman Banjarbaru. Penelitian ini adalah penelitian observasional dengan desain cross sectional. Sampel sebanyak 30 remaja di SMA IT Ar-Rahman Banjarbaru diambil secara simple random sampling. Instrumen penelitian ini adalah kuesioner tentang keragaman pangan (FFQ) dan pengukuran antropometri. Uji statistik yang digunakan adalah chi square dengan tingkat signifikansi α = 0,05. Hasil penelitian menunjukkan bahwa sebagian besar responden memiliki keragaman pangan yang baik dan berstatus gizi normal dengan nilai p value 0,006 yang artinya ada hubungan antara keragaman pangan dengan status gizi (IMT/U) remaja usia 16-18 tahun di SMA IT Ar-Rahman Banjarbaru. Pada penelitian ini disarankan kepada sekolah untuk memberikan edukasi secara berkala kepada siswa mengenai keragaman pangan yang berdampak pada status gizi.

Abstract

Penyakit tidak menular (PTM) di provinsi Kalimantan Selatan menunjukkan prevalensi asma sebesar 1,7%, kanker 0,8%, diabetes melitus 1,4%, penyakit jantung 0,66%, hipertensi 34,1%, stroke 9,5%, dan penyakit ginjal kronis 0,10%. Berdasarkan data tersebut, semakin meningkatnya usia semakin besar prevalensi PTM. Penyakit tidak menular dapat disebabkan oleh faktor genetik, fisiologis, lingkungan, dan perilaku (pola makan tidak sehat, kurang aktivitas fisik, obesitas, merokok, dan konsumsi alkohol). Gizi Seimbang merupakan kombinasi menu makanan yang dikonsumsi sehari-hari yang mengandung seluruh zat gizi yang dibutuhkan tubuh. Pada dasarnya, tidak ada bahan makanan yang mengandung seluruh zat gizi, sehingga harus mengonsumsi aneka ragam makanan untuk memenuhi kebutuhan gizi mikro dan gizi makro. Meningkatkan konsumsi pangan lokal sekaligus dapat menerapkan prinsip gizi seimbang yaitu mengonsumsi makanan beragam.. Pengabdian kepada Masyarakat ini bertujuan untuk memberikan edukasi terkait gizi seimbang dan pangan lokal upaya pencegahan penyakit tidak menular pada ibu rumah tangga di Kelurahan Alalak Utara RT 45. Metode pada kegiatan ini yaitu ceramah dan penyebaran leaflet edukasi pada 32 peserta Ibu Rumah Tangga. Hasil kegiatan menunjukkan adanya peningkatan pengetahuan setelah diberikan edukasi sebesar 33,7%. Setelah diberikan edukasi, diharapkan masyarakat dapat menerapkan gizi seimbang dan pangan lokal sebagai pencegahan PTM.

Abstract

Kalakai flour can be used as a substitution in steamed sponge cake as an alternative snack for teenage girls which is high in iron. This study aims to determine the effect of substitution of kalakai flour on acceptability (color, aroma, taste, and texture), swellability, and iron content of steamed sponge cake as a snack to prevent anemia in adolescent girls. This type of research is experimental with the research design used being a completely randomized design (CRD). There are 4 types of proportions, namely P0 (100% wheat flour, 0% kalakai flour), P1 (90% wheat flour, 10% kalakai), P2 (80% wheat flour, 20% kalakai flour), P3 (70% wheat flour), 30% kalakai flour) with 3 repetitions. The method used to test for iron is spectrometry.The research panelists consisted of 25 moderately trained panelists. The results of the acceptability test showed that the most preferred treatment by the panelists was P0 (color, aroma, taste, and texture). The results of the swellability test showed that the most swelling treatment was P1 which expanded 65% compared to P3 which only expanded 2%. The highest iron content per 100 g of steamed sponge cake is P3 which is 3.17 mg/g compared to P1 which is 1.79 mg/g. The best treatment judge from the best composition, acceptability test, swellability and iron content was P1. Kalakai steamed sponge can meet the iron needs of teenagers from snacks 10-15% when consuming as much as 87.5 grams, namely 2.5 pieces of sponge in treatment one (P1).

Abstract

Obesity are characterized by a situation in which an individual's caloric intake exceeds caloric expenditure. It is widely recognized that factors contributing to obesity include diet and socio-economic status. Study aims investigate rapport between dietary patterns and socio-economic status with the incidence of obesity in toddler ages 24-59 months in the working area of The Landasan Ulin Health Center. This research employs an observational case-control design. A total sampling method with a 1:1 ratio was used, resulting in a sample size of 58 respondents each across case and control groups. Data on height were collected using microtoise, while dietary information and socio-economic status were gathered employ interviews and surveys. The chi-square test applied for analysis data. The results of this study show that the majority of respondents have a sufficient diet category, namely 70 people (60.3%) and the majority of respondents have a high economic status category, namely 72 people (62.1%). It can be concluded that dietary patterns (p=0.001) and socioeconomic status (p=0.002) are related to the incidence of obesity in toddlers aged 24-59 months in the Landasan Ulin Community Health Center Work Area. Recommended the parents allocate greater observance appropriate dietary patterns and physical activity that align with their child's needs.
