Abstract

Abstract

ABSTRACTMung beans and kidney beans are some food ingredients that have the potential for high iron (Fe) content. The potential of these nutrients can be utilized as substitutable flour in making cubit cakes as an alternative healthy food to overcome the problem of iron (Fe) anemia in adolescents. This study aimed to analyze the effect of substituting mung bean and kidney bean flours on the nutritional content of the cubit cake. This was an experimental study using a completely randomized design method (CRD) with four treatments and three replications. The research results were processed using analysis of variance (ANOVA) techniques followed by Duncan's advanced test. The results show that there was no significant difference or significant effect on the nutritional content (carbohydrate, protein, fat, moisture, ash, iron, calories) of the cubit cakes that had been substituted but there was a significant effect on the fat content. The cubit cake K1 formulation (50% Wheat flour, 35% mung bean flour, 15% kidney bean flour) was the best formulation of the cubit cake because it met the nutritional requirement (RDA). K1 cubit cake formulation in 100 g serving (3 cubit cakes) contains 126.892 kcal calories, 42.1 g carbohydrates, 7.23 g protein, 13.32 g fat, and 0.001 mg/100 g iron. The substitution of mung bean and kidney bean flours tended to increase the nutrient content of the cubit cake but it was not statistically significant except for the fat content. The use of mung beans and kidney beans as alternative basic ingredients for healthy snacks should be applied to other local snacks. Keywords: Mung Beans, Kidney Beans, Cubit Cakes, Substitution, FormulationABSTRAKKacang hijau dan kacang merah merupakan beberapa bahan makanan yang memiliki potensi kandungan zat besi (Fe) yang cukup tinggi.

Abstract

Nutrition education is essential for improving global health and achieving sustainability goals. According to the WHO 2023 report, 38% of adults worldwide are overweight, and 22% of children under five are stunted. The 2030 Sustainable Development Goals (SDGs), particularly SDG 2, emphasize the importance of nutrition education in promoting health and sustainable well-being. This study aims to explore the diet of the Prophet and its alignment with contemporary nutrition education principles to address current health challenges like obesity and malnutrition. A narrative review was conducted, analyzing 926 articles, 16 of which met the inclusion criteria. The articles, primarily published between 2016 and 2022, were sourced from databases such as Google Scholar, Scopus, and PubMed. The review focused on the principles of the Prophet’s diet and their relevance to modern nutrition education. The analysis revealed that the Prophet’s simple and balanced diet, including the principles of halal food, aligns with contemporary nutrition principles advocating natural and balanced eating. The findings highlight the growing interest in integrating Islamic dietary practices into nutrition education to promote sustainable health. This study suggests that incorporating the Prophet’s dietary principles into nutrition education can provide a sustainable, evidence-based approach to addressing modern health issues. The findings can inform the development of curricula and digital platforms. Future research should focus on empirical studies to assess the impact of these diets and create educational programs that integrate Islamic values.

Abstract

Recently, there has been an increase in obesity cases among adolescents in Indonesia with a prevalence rate of 19%, which exceeds the national prevalence of 16%. This was caused by the decrease in physical activities and consumption of fruit and vegetables by 95% of the population during the COVID-19 pandemic. This study aimed to foster the development of a Nutrition Education Center (Nutrecent) as a distance learning to promote the consumption of plant-based foods containing polyphenols such as vegetables and fruits. This was a quasi-experiment with three Nutrecent (Nutrition Education Centre) Webinar series and an international webinar. Participants were high school and college students, health workers, and the general public. A total of 654 participants were included in the analysis. The statistical results showed no significant improvement in knowledge due to the Nutrecent webinar series activities, but there was a significant improvement due to the international webinar (p-value 0.001). Online learning is only effective for students and adults with previous knowledge of the webinar topic. Consequently, there is a need to include the importance of consuming plant-based foods in the school curriculum.

Abstract

Introduction: Adolescent health will impact future well-being. The COVID-19 pandemic has prompted governmental imposition of restrictions on social activities. Hence, understanding the lifestyle factors, such as sedentary activities and fruit and vegetable consumption, affecting adolescents' nutritional status during the pandemic is crucial. In Samarinda, more than 18% of adolescents have inadequate nutritional status. Aims: to explore the relationship between sedentary activities, fruit and vegetable consumption, and the nutritional status of adolescents. Method: Using an online questionnaire, a cross-sectional study was conducted on 300 high school students during the COVID-19 pandemic, between October and December 2021. Sedentary activity levels were assessed using the Adolescent Sedentary Activity Questionnaire (ASAQ), while fruit and vegetable consumption was evaluated through the FFQ-SQ (Food Frequency Questionnaire-Semi Quantitative). Nutritional status was determined using z score of body mass index (BMI) for age. Data analysis employed the Chi-square test and Fisher exact test. Results: Gender, maternal occupation, and average monthly parental income were found to be associated with nutritional status (p=0.020; p=0.038; p=0.045). However, no significant association was observed between fruit and vegetable consumption and nutritional status (p=0.102; p=0.121). Certain sedentary activities, such as doing assignments without using a laptop/computer (p=0.029) and reading for pleasure (p=0.038), were linked to nutritional status. Fruit and vegetable consumption showed no association with the nutritional status of adolescents. Conclusion: Conversely, certain sedentary activities were found to be associated with nutritional status. Educating adolescents within families and schools regarding the significance of physical activity and balanced nutrition is imperative.

Abstract

Background The COVID-19 pandemic is causing stress in all aspects of life, including nursing mothers. This situation may affect exclusive breastfeeding coverage, which was only 66% in 2020. Factors contributing to low breastfeeding rates include maternal stress and social support. The aim of this study was to determine the association between maternal stress levels and social support for exclusive breastfeeding during the COVID-19 pandemic in Wonorejo Health Center, East Kalimantan. Methods The study design was cross-sectional with a sample of 165 mothers with children aged 6-24 months. Data collection was conducted online via a questionnaire on a Google Form link provided to subjects through their WhatsApp contacts. Data were analyzed using the chi-square test and the Kolmogorov-Smirnov test. Results 55.8% of mothers had high levels of social support supporting exclusive breastfeeding, and 81.2% of mothers experienced moderate stress. Data analysis using the chi-square test and Kolmogorov-Smirnov test showed no relationship between social support (p=0.056) and stress level (p=0.969) during exclusive breastfeeding. Conclusions There was no significant association between stress levels and social support among mothers of exclusively breastfed children aged 6 to 24 months during the COVID-19 pandemic at the Wonorejo Health Center in Samarinda, East Kalimantan. Wonorejo Health Center is encouraged to continuously improve its breastfeeding promotion programs for mothers and families.
