Abstract

A search new antibacterial compounds should continue to be done as a raw material of antibiotics. The purpose of this study, which is to get kind of marine fungi antibacterial activity and get the value of MIC and MBC. The study was conducted from the sampling sponge, marine fungi isolation, extraction, preparation of test bacteria, antibacterial activity testing and analysis of MIC and MBC. Data was analyzed by measuring the diameter of inhibition zone are formed. The results obtained, that debris ethanol fraction from marine fungi J3 can inhibit the growth of E. coli and S. aureus at a concentration of 100 mg/L to 100.000 mg/L. At the debris ethyl acetate fraction able to inhibit concentration of 1.000 mg/L to 100.000 mg/L. At the filtrate ethyl acetate fraction was able to inhibit 10.000 mg/L to 100.000 mg/L. For both types of test bacteria, MIC and MBC values are indicated by the highest debris ethanol fraction and lowest by the fraction of ethyl acetate filtrate.

Abstract

This research was conducted with the aim of knowing the density of Ascidiacea D. molle located in Tasik Ria, Manado Bay, North Sulawesi. Collecting data and samples using diving equipment (SCUBA) with quadrant and transect method, placed in the 50 meters parallel to the shoreline. The first transect placed at a depth of 5 meters and second transect at a depth of 3 meters. In calculating the density of D. molle using a quadrant with a size of 50 x 50 cm placed on a transect at ten points. Average density D. molle at a depth of 5 meters higher than at a depth of 3 meters and vary in each month. This trend is strongly influenced by various environmental factors are not yet known, so it takes a period of time longer observation with an emphasis on the relationship between environmental factors and the frequency of  attendance D. molle.

Abstract

Marine organisms are a source of natural products and produce compounds with a molecular structure that is unique and useful. Thousands of new compounds have biological activitity for anticancer, antiviral, and antimicrobial. This compounds isolated from various marine organism, including from marine-derived fungi. Investigation of chemical compounds from marine-derived fungi isolated from sponge has increased steadily, indicating the important role of marine-derived fungi in the discovery of drug compounds. The sponge has produced various kinds of fungi, which have reported to provide a variety of pharmacologically active metabolites and structurally diverse. Study literature showed that many fungal genera isolated from the marine sponge dominated the genus Acremonium, Aspergillus, Penicillium, Phoma, and Fusarium. The high proportion of genera and new compounds showed that the fungi isolated from the sponge could develop.

Abstract

This study aimed to evaluate the potential antibacterial and antioxidant activities of Sinulariasp. and Sarcophyton sp. from the Palu Bay, Central Sulawesi, Indonesia. Soft corals were identified as Sinulariasp. (SC1), Sinularia sp. (SC2), andSarcophytonsp. (SC3). Antibacterial activity was examined using agar diffusion well method. Antioxidant activity was measured by the DPPH radical scavenging method. The samples were macerated in MeOH: DCM. The crude extracts were partitioned with DCM, EtOAc, and BuOH. The crude extract of Sinulariasp. (SC2) showed a very strong antibacterial activity as it was able to inhibit the growth of Staphylococcus aureusand Escherichia coliup to 10 mg/mL. Sinularia sp. (SC1) crude extract showed strong activity againstS. aureus, whereas it showed moderate against E. coli.Sarcophyton sp. (SC3) crude extract showed moderate activity against S. aureus, whereas it showed weak against E. coli. The partition fractions of the three soft coral extracts had the potential to be a potent antioxidant agent.

Abstract

Layang fish (Decapterus sp), which contains high nutritional value, is very good for preventing stunting. Fish sticks are a snack that many people like. Testing for metal and biological contamination is very important to ensure the safety and quality of sticks. Food contaminated with heavy metals or bacteria can cause poisoning and disease. The aim of this research is to determine heavy metal contamination (Cd, Pb, Hg, Sn) and bacteria (Mould, Salmonella, Staphylococcus aureus, and Escherichia coli) in Layang fish sticks. The ingredients used are Layang fish meat, tapioca flour, wheat flour, eggs, garlic and salt. Testing for metal contamination of Layang fish sticks using the ICP-MS method. Making sticks with the addition of fish is a food processing innovation with the aim of increasing nutritional value. The formulation used in this research was flying fish meat at 0% (D1), 10% (D2), 20% (D3), 30% (D4), and 40% (D5) of the amount of tapioca flour used three times. test. The research results showed that the heavy metals mercury, tin and cadmium were not found, but the heavy metal lead was found with values ​​of 0.09 to 0.14. This value does not exceed the threshold of SNI 0.2 - 2 mg/kg and BPOM 2022, namely 0.3 mg/kg. Likewise, in microbiological tests, Layang fish sticks are safe from mold, Salmonella bacteria, Staphylococcus aureus and Escherichia coli. Kata kunci:    heavy metal, bacteria, laying fish, fish stick   Ikan layang (Decapterus sp) yang mengandung nilai gizi tinggi, sangat baik untuk mencegah stunting. Stik ikan merupakan cemilan yang banyak disukai. Pengujian cemaran logam dan biologi sangat penting untuk menjamin keamanan dan mutu stik. Makanan yang tercemar logam berat atau bakteri dapat menyebabkan keracunan dan penyakit. Tujuan penelitian ini, untuk mengetahui cemaran logam berat (Cd, Pb, Hg, Sn) dan bakteri (Kapang, Salmonella,Staphylococcus aureus, dan  Escherichia coli) pada stik ikan layang. Bahan yang digunakan adalah daging ikan layang, tepung tapioka, tepung terigu, telur, bawang putih, dan garam. Pengujian cemaran logam stik ikan layang menggunakan metode ICP-MS. Pembuatan stik dengan penambahan ikan merupakan inovasi pengolahan pangan dengan tujuan meningkatkan nilai gizi. Formulasi yang digunakan dalam penelitian ini yaitu daging ikan layang sebesar 0% (D1), 10% (D2), 20% (D3), 30% (D4), dan 40% (D5) dari jumlah tepung tapioka yang digunakan dengan tiga kali ulangan. Hasil penelitian menunjukkan bahwa tidak ditemukan logam berat merkuri, timah, dan kadmium, namun ditemukan logam berat timbal dengan nilai 0.09 sampai 0.14. Nilai ini tidak melebihi ambang batas dari SNI 0.2 - 2 mg/kg dan BPOM tahun 2022 yaitu 0,3 mg/kg. Demikian pula dalam uji mikrobiologi, stik ikan layang aman dari Kapang, bakteri Salmonella, Staphylococcus aureus, dan  Escherichia coli. Kata kunci:    logam berat, bakteri, ikan laying, stik ikan

Abstract

ABSTRAK Potensi perikanan Teluk Tomini sangat besar, ikan Cakalang (Katsuwonus pelamis) yang sangat berlimpah di PPI Paranggi. Ketersediaan ikan Cakalang yang cukup banyak diperlukan suatu diversifikasi olahan hasil perikanan yang berbahan baku ikan Cakalang. Beberapa olahan hasil perikanan yang cukup terkenal di kalangan masyarakat adalah Dimsum dan sate lilit. Metode pelaksanaan kegiatan ini berdasarkan pada metode persuasif-edukatif-komunikatif-partisipatif. Metode pengabdian ini dengan prinsip andragogy (pendidikan orang dewasa) dijadikan sebagai pedoman. Berdasarkan pengabdian yang telah dilaksanakan menunjukkan bahwa peserta kegiatan yang berasal dari wanita nelayan desa Paranggi yang berjumlah 10 orang memberikan respon positif, hal ini terlihat dari peserta telah mampu mempraktikan pembuatan olahan Dimsum dan Sate lilit serta peserta menunjukkan minat untuk membuat olahan tersebut  di rumah. ABSTRACTTomini Bay has very large fishery potential, skipjack tuna (Katsuwonus pelamis) is very abundant in PPI Paranggi. Availability of skipjack tuna which irequires a diversification of processed fishery products made from skipjack tuna. Some processed fishery products that are quite well known among the public are dim sum and satay (sate lilit). The method of implementing this activity is based on the persuasive-educative-communicative-participatory method. This research method with the principle of andragogy (education for adult) used as a guide. Based on the public service that has been carried out, it shown that the activity participants who came from women fishermen from Paranggi village, totaling 10 people, gave a positive response, this can be seen from the participants have been able to practice to make a processed dim sum and satay (sate lilit), while participants also showed an interest in making these preparations at home.

Abstract

ABSTRAKPenelitian ini bertujuan untuk mengevaluasi mutu kimia dan kandungan senyawa bioaktif pada amplang ikan tongkol (Euthynnus affinis) yang difortifikasi dengan tepung rumput laut Eucheuma cottonii pada berbagai level penambahan (0 g, 5 g, 10 g, dan 15 g). Penelitian dilakukan di Laboratorium Teknologi Hasil Perikanan STPL Palu dan Laboratorium FMIPA Universitas Tadulako. Analisis mutu kimia meliputi uji kadar air, abu, protein, lemak karbohidrat dan serat yang mengacu pada metode AOAC, 2005. Uji fitokimia untuk menentukan komponen bioaktif yang terkandung dalam suatu bahan yang meliputi pemeriksaan senyawa flavonoid, saponin, tanin, fenolik, triterpenoid, dan steroid. Hasil analisis menunjukkan bahwa penambahan tepung rumput laut meningkatkan kadar air (2,00–6,00%), abu (2,67–5,33%), protein (22,13–29,14%), karbohidrat (19,14–22,54%), dan serat kasar (0,96–3,90%). Sebaliknya, kadar lemak menurun seiring meningkatnya penambahan tepung rumput laut, dari 19,89% menjadi 17,49%. Uji fitokimia menunjukkan keberadaan senyawa bioaktif seperti flavonoid, saponin, polifenol, tanin, dan alkaloid pada perlakuan dengan penambahan tepung rumput laut, sedangkan steroid tidak terdeteksi. Senyawa-senyawa tersebut diketahui memiliki aktivitas antioksidan serta manfaat farmakologis penting, sehingga memperkuat potensi amplang ikan tongkol sebagai pangan fungsional. Hasil penelitian ini menegaskan bahwa fortifikasi tepung rumput laut E. cottonii dapat meningkatkan nilai gizi, memperkaya serat, serta menambah kandungan senyawa bioaktif pada produk amplang ikan tongkol. Dengan demikian, inovasi ini berpotensi mendukung diversifikasi pangan berbasis sumber daya kelautan dan meningkatkan nilai tambah produk olahan ikan.Kata Kunci : Mutu Kimia, Amplang, Ikan Tongkol, Fortifikasi, Rumput LautABSTRACTThis study aimed to evaluate the chemical quality and bioactive compounds of amplang made from skipjack tuna (Euthynnus affinis) fortified with Eucheuma cottonii seaweed flour at various levels of addition (0 g, 5 g, 10 g, and 15 g). The research was conducted at the Laboratory of Fisheries Product Technology, STPL Palu, and the Laboratory of FMIPA, Tadulako University. Chemical quality analyses included moisture, ash, protein, lipid, carbohydrate, and crude fiber content based on AOAC (2005) methods. Phytochemical tests were carried out to identify the presence of bioactive components, including flavonoids, saponins, tannins, phenolics, triterpenoids, and steroids. The results showed that the addition of seaweed flour increased the levels of moisture (2.00–6.00%), ash (2.67–5.33%), protein (22.13–29.14%), carbohydrates (19.14–22.54%), and crude fiber (0.96–3.90%). Conversely, lipid content decreased with the increasing addition of seaweed flour, from 19.89% to 17.49%. All chemical quality parameters were still in accordance with the quality standards of SNI 7762-2013. Phytochemical analysis confirmed the presence of bioactive compounds such as flavonoids, saponins, polyphenols, tannins, and alkaloids in the fortified samples, while steroids were not detected. These compounds are known to possess antioxidant activity and important pharmacological benefits, thereby reinforcing the potential of frigate tuna amplang as a functional food. The findings highlight that fortification with E. cottonii seaweed flour can enhance nutritional value, enrich fiber content, and increase the bioactive compounds of frigate tuna amplang. Therefore, this innovation has the potential to support food diversification based on marine resources and increase the added value of fishery products.Keywords: Chemical Quality, Amplang, Skipjack Tuna, Fortification, Seaweed
