Abstract

Cultivating vegetables using the hydroponic method is essential in developing Indonesia's agricultural sector. Vegetables are a type of food that is consumed at any time, so there is always a stable demand all the time. The ever-increasing demand and awareness of the importance of nutritious food make hydroponics an attractive option. The potential for high demand for vegetables opens up many business opportunities to meet people's needs, including cultivating hydroponic vegetables. This research aims to analyze the actual profits of hydroponic businesses and the maximum profits they can generate. The research location is in Deedad Hidroponik, Tamalate District, Makassar City, from July to October 2023. Primary data was collected through interviews and direct observation of owners and employees, and secondary data was obtained from previous studies related to this research. Linear programming analysis via the Simplex Method is used to analyze Deedad Hidroponik's profit maximization. Profit analysis involves production costs, inputs, production results, and business revenues. The research results show that Deedad Hidroponikis can generate profits of IDR 6,980,492 from various types of vegetables. Deedad Hidroponik's source of profit comes from the production of 4 kinds of vegetables: lettuce, bok choy, kale, and spinach. Through a linear programming approach, Deedad Hidroponikwill achieve maximum profits if they plant vegetables with a combination of 625 planting holes for lettuce, 302 planting holes for bok choy, 257 planting holes for kale, and 260 planting holes for spinach; therefore, they could increase profits to IDR 7,496,783 with the potential increase of 7.38%. This shows that selecting vegetable types and resource allocation can be optimized to achieve maximum profits.

Abstract

Modified-cassava flour (mocaf) merupakan produk tepung dari singkong termodifikasi melalui proses fermentasi yang melibatkan bakteri asam laktat. Mocaf merupakan produk olahan singkong yang bebas protein gluten sehingga aman dikonsumsi oleh kalangan masyarakat yang intoleran dengan jenis protein ini. Hasil panen singkong yang sangat melimpah di Desa Pucak setiap tahunnya yang mencapai 68 ton per tahun tentunya dapat menjadi salah satu peluang bisnis yang tentunya bisa menaikkan nilai ekonomi komoditi unggul tersebut melalui produksi mocaf dan pengolahannya menjadi produk bernilai ekonomi lain seperti kue kering dan brownies. Kegiatan pengabdian kami ini bertujuan untuk meningkatkan pengetahuan, sikap, dan keterampilan kader putri karang taruna Bukit Kemuning, Desa Pucak, Maros dalam membuat produk pangan sehat, dalam hal ini kue kering dan brownies berbahan mocaf. Dalam mencapai tujuan ini, digunakan metode penyuluhan, diskusi interaktif, serta pelatihan untuk meningkatkan pengetahuan kelompok mitra dalam membuat cookies dan brownies berbahan dasar mocaf. Untuk mengamati dan mengevaluasi perubahan pengetahuan, sikap, dan keterampilan kader putri karang taruna sebagai mitra, kami menggunakan kuesioner pre-post tes baik sebelum dan sesudah kegiatan. Hasil kegiatan menunjukkan bahwa telah terjadi peningkatan pengetahuan, sikap, dan keterampilan mitra dalam membuat cookies dan brownies berbahan dasar mocaf. Selanjutnya, kami berharap kader putri karang taruna Bukit Kemuning, Desa Pucak, Maros dapat menerapkan dan menyebarluaskan pengetahuan dan keterampilan mereka dalam membuat cookies dan brownies berbahan dasar mocaf sehingga dapat membantu meningkatkan diversifikasi produk olahan singkong desa mereka dan menjadikannya peluang usaha yang dapat meningkatkan taraf ekonomi mereka.

Abstract

Stunting merupakan masalah prioritas kesehatan global yang utama saat ini, yang dapat berdampak jangka panjang tidak hanya pada kesehatan anak, namun juga pada pertumbuhan ekonomi bangsa dan kesejahteraan masyarakat di Indonesia, apabila diabaikan akan menjadi ancaman serius bagi masyarakat maupun pemerintah. Maka dari itu, hal ini membutuhkan intervensi multisektor. Kegiatan ini bertujuan untuk mengenalkan kepada masyarakat mengenai pemanfaatan pangan lokal yaitu jamur tiram yang dapat membantu dalam pencegahan stunting, selain itu juga dapat meningkatkan perekonomian masyarakat yang ada di Dusun Palakka. Pelaksanaan kegiatan ini diikuti oleh kelompok Anak Kaki Gunung (AKG) yang dilaksanakan di bulan Agustus 2024, kolaborasi UMI dan STIE Tri Dharma Nusantara Makassar dan didukung oleh DRTPM Kemendikbud. Kegiatan ini meliputi transfer pengetahuan kepada mitra mengenai manfaat jamur tiram untuk pencegahan stunting dan demontrasi pengolahan makanan berbahan dasar jamur tiram. Metode yang digunakan untuk mengukur keberhasilan kegiatan yang telah dilaksanakan yaitu dengan melakukan pre dan post test untuk mengukur tingkat pemahaman masyarakat. Hasil dari kegiatan ini menunjukkan bahwa peserta terlihat antusias dengan adanya kegiatan ini karena mendapatkan wawasan baru mengenai pemanfaatan dan pengolahan jamur tiram. Harapannya kegiatan ini dapat berkelanjutan tidak hanya khususnya di Dusun Palakka, namun juga di di dusun-dusun lainnya di seluruh Desa Palakka.

Abstract

The extreme climate change on the earth's surface in recent years is a serious issue. Agricultural sector has been affected by climate change because it causes crop failure and decreases crop productivity, especially food crops, namely corn. The climatic conditions of the Takalar Regency are generally characterized by high rainfall and drought, particularly at dry times. The purpose of this study is to: (1) Analyze the opinions of corn farmers; (2) Analyze the adaptation pattern of corn farmers; (3) Analyze the factors that influence the adaptation pattern of corn farmers. The first and second objectives were analyzed descriptive quantitatively, and the third objective was analyzed using ordinal logistic regression. The results on 39 farmers being interviewed showed that (1) Corn farmers' opinions regarding changes in temperature, rain intensity, drought have increased in recent years; (2) Adaptation patterns carried out by corn farmers in facing climate change are improving water management, soil management technology, integrated pest control, changing cropping patterns, and adjusting planting time; (3) Factors that affect the pattern of adaptation of corn farmers to climate change are land area, number of dependents of the household head, income, and access to information on climate change.

Abstract

Kedelai memiliki banyak kegunaan, terutama sebagai bahan utama dalam industri makanan yang kaya akan protein nabati salah satunya diolah menjadi tempe. Penelitian ini bertujuan (1) Mendeskripsikan proses pengolahan kedelai menjadi tempe. (2) Mengidentifikasi jumlah produksi tempe. (3) Menganalisis rendemen produksi tempe. (4) Menganalisis pendapatan pada Home Industri Tempe Prima. (5) Menganalisis besar nilai tambah pengolahan kedelai menjadi tempe pada Home Industri Tempe Prima. Informan dalam penelitian ini adalah pemilik dan seluruh karyawan Home Industri Tempe Prima. Penelitian dilakukan pada Bulan Mei-Juli 2024. Metode analisis data yaitu analisis deskriptif, analisis pendapatan dan analisis nilai tambah metode hayami. Hasil penelitian yakni, 1). Proses pengolahan kedelai menjadi tempe menggunakan cara tradisional dengan meliputi proses pencucian, perebusan, perendaman, penggilingan, penirisan dan pendinginan, pengemasan dan fermentasi. 2). Jumlah produksi tempe setiap bulan sebesar 1.050 kg. 3) Rendemen kedelai menjadi tempe pada Home Industri Tempe Prima sebesar 150%. 4). Pendapatan Home Industri Tempe Prima dalam memproduksi tempe selama satu bulan produksi sebesar Rp. 12.176.000. 5). Besarnya nilai tambah produksi tempe pada home indutsri tempe prima sebesar Rp. 22.830/bulan produksi dengan rasio nilai tambah 65,88%.

Abstract

The objectives of this study are: 1) Identifying consumer characteristics who purchase rice in Makassar City. 2) Determine the rice quality preferred by consumers. 3) Analyzing the rice attributes that consumers prefer. 4) Assess which attributes are prioritized during rice purchasing decisions. This research was conducted in Makassar City at three different traditional markets: Daya Traditional Market, Terong Traditional Market, and Pabaeng-baeng Traditional Market, with a total of 100 respondents. The data analysis method used is descriptive analysis and conjoint analysis. The results of the study are: 1) The characteristics of respondents are dominated by female respondents with the average age of 42 years, entrepreneur, high school education level, average income of IDR 4,407,470/month, number of family members of 3 people, purchase frequency of 2 times per month, and rice consumption of 16 kg per month. 2) The types of rice quality chosen by respondents are physical characteristics such as size, grain shape, color, and aroma. 3) The rice attributes that consumers prefer are premium rice quality, soft rice, clean, medium shape, pandan-scented rice, shelf life <1 month, price between IDR 12,000–13,000 per kg and rice with a degree of milky whiteness. 4) The rice attribute that consumers consider most in purchasing rice is the quality, with a test value of 22.161. These findings have implications for producers and marketers to enhance the sensory and functional quality of rice, aligning it with consumer expectations. Future research should investigate consumer behavior over time and across different market segments.

Abstract

Toraja’s culture is distinct and captivating, with unique traditions passed down through generations. Among them, the tradition of serving and consuming tuak (a traditional alcoholic beverage) stands out, particularly in ceremonies like Rambu Tuka' (thanksgiving) and Rambu Solo' (funeral). Although many view tuak as a drink that can intoxicate and lead to health issues, it also holds potential as a profitable business if seen from a different perspective. This research investigates the business opportunities of Toraja tuak by examining social, economic, and cultural factors to understand how the economic conditions of tuak producers might be improved and gain broader acceptance. The study aims to analyze the viability of tuak as a business, factoring in social, economic, and cultural dimensions. The research is conducted in three stages: first, identifying issues through interviews and FGDs; second, conducting an in-depth literature review and gathering primary data on tuak business opportunities; and third, collecting secondary data, processing and analyzing it, and drawing conclusions. Results indicate that the tuak business holds significant promise when viewed through these comprehensive lenses, offering valuable social, economic, and cultural benefits.
