Abstract

The percentage of children under five in RW 2 with the characteristics of chronic nutritional status is 8 people or 73%. Chronic indicators describe the nutritional problems of children under five in the long term, due to low BW/U index, short BW/U, normal BW/TB. The purpose of this study was to determine the nutritional quality, protein quality of the formula. knowing the best treatment, organoleptic quality of the formula for the use of local food ingredients: potato (Solanum tuberosum L), catfish (Clarias Sp), and broccoli (Brassica oleracea L). This type of research is experimental with a completely randomized design (CRD). The level of treatment was the ratio of potato: catfish: broccoli, namely P1 (40:30:30), and P2 (30:45:25). The croquette snack formula at treatment levels 1 and 2 had nutritional values, namely energy of 156 Kcal and 125 Kcal. The value of P1 protein is 7.6 grams, P2 is 8.85 grams, P1 fat is 6.36 grams and P2 is 2.76 grams. Nutritional content in P1 is better than P2 seen from the calculation of nutritional value and protein quality. The digestibility quality of P1 was higher at 94.4. The level of treatment P1 (40:30:30) was the best treatment level in terms of the number of Nh, which was 0.53. Organoleptic quality at P1 was preferred by panelists for the attributes of color, taste, texture, and aroma of potato croquettes, which obtained an average value on a scale of 3. This study concluded that the addition of catfish increased the protein and phosphorus content in the croquette formula. The addition of broccoli increases the content of vitamin C and phosphorus. P1 nutritional quality (energy, protein, fat, carbohydrates). The best treatment is treatment 1 with a higher value than treatment 2 and the organoleptic quality of the P1 formula is preferred by the panelists than P2.

be implemented by all policymakers. One of the strategic issues in accelerating stunting reduction in Indonesia is strengthening and increasing institutional capacity in reducing stunting. It is necessary to maintain regulations to ensure the implementation of stunting prevention and control efforts in the regions, and increase knowledge, and community participation. Objective: This study aims to determine the readiness to implement an integrated stunting reduction intervention through the DESA EMAS program at the stunting locus in Klojen District. Research method: This study uses a descriptive study method which was carried out in September – October 2022. The target of the study is regional apparatus organizations at the sub-district level at three stunting in Klojen District. Data collecting in the form of interviews with guided questions related to commitment, supporting factors, inhibiting factors, and sub-district programs. Data analysis was done descriptively in the form of textual. Results: The readiness to implement an integrated stunting reduction intervention through Desa Emas Program can be seen from the commitment of the three loci to stunting handling, cross-sectoral collaboration, and the availability of human resources capable of making three program (DASHAT, Budikdamber and urban farming). Commitment to human resources through the involvement of sub-district officials, sub-district health workers, assistant staff for stunting activities, health development cadres, POSYANDU cadres, and PAUD teachers. Conclusion: The three sub-districts in Klojen District have made efforts to implement stunting management commitments through available resources and limited funding. Abstract

Background: The role of early childhood education teachers (PAUD) is getting bigger in areas related to child nutrition and become potential contributors in improving and reducing stunting cases in children under five. The purpose of this study is how to promote health through the right food for PAUD-aged children. The role of PAUD teachers as well as health cadres is to become best practice in efforts to reduce stunting in the Malang City, Indonesia. Methods: This research is an analytic observational cross sectional design, using 150 PAUD teachers as well as health cadres who carry out best practice efforts to reduce stunting through evidence-based in-depth interviews. Results: The best practices that have been implemented are : the number of PAUD-age children who receive PMT directly; the ease of delivery of health promotion to the community, especially parents or child caretakers; higher community compliance; and a significant increase in children's weight and height. The impact and output of the dual role of PAUD teachers as health cadres in reducing stunting is more effective. Conclusion: This dual role of early childhood teachers as health cadres needs to be appreciated, defined, and rewarded by national authorities, based on local needs, and programmed according to policy-based evidence, such as in the formation of the Team for the Acceleration of Stunting Reduction (TPPS).

Abstract

Background: Catering is way to fulfill the need for food. Catering is an institutional food management because it produce large amounts of food. Large quantities of food handlers also required and increasing the potential of food contamination. Prevention can be done by applying personal hygiene according to Permenkes RI No. 1096/Menkes/PER/VI/2011. Enhancement of knowledge and practice are needed to improve the application of personal hygiene with poster installation. Senjani Kitchen Catering is a catering service located in Malang. The preliminary study indicate that the food handlers have not implemented personal hygiene properly. Objectives: This study aims to analyze poster’s effect on Senjani Kitchen Malang food handlers’ personal hygiene knowledge and practices. Methods: This research is a descriptive study with quantitative approach used pre-experimental research with one group pretest posttest design. Posters were installed in the work area with sample of 5 food handlers. Results: The average scores of food handlers’ personal hygiene knowledge before the intervention was 70.7 (enough). After the intervention, it increased to 82.7 (good). The average scores of food handlers’ personal hygiene practice before the intervention was 55.7 (less). After the intervention, it increased to 73.0 (enough). Conclusions: There is an increased value of food handlers’ personal hygiene knowledge and practices after placing posters in the work area.

Abstract

Pendahuluan: Stunting merupakan masalah gizi pada anak terutama dibawah usia lima tahun (balita). Salah satu pilar Strategi Nasional Percepatan Pencegahan Stunting adalah Kampanye nasional dan komunikasi perubahan perilaku (Pilar 2). Komunikasi perubahan perilaku di level desa melibatkan Tim Pendamping Keluarga yang merupakan ujung tombak untuk meningkatkan pengetahuan dan kesadaran masyarakat sehingga memicu adopsi perilaku positif untuk mencegah stunting terutama di periode 1000 HPK. Partisipasi aktif dalam Pelatihan Gizi Berbasis Komunikasi Perubahan Perilaku dapat meningkatkan kapasitas Tim Pendamping Keluarga (TPK) sebagai konselor Stunting. Tujuan : Mengevaluasi perubahan pengetahuan gizi pada tim pendamping keluarga setelah melakukan pelatihan gizi berbasis komunikasi perubahan perilaku (Behaviour Change Communication). Metode Penelitian : Penelitian dilakukan pada bulan September – Desember 2022 pada 10 lokus stunting di Kota Malang, Provinsi Jawa Timur. Jenis penelitian ini adalah penelitian kuantitatif menggunakan desain quasi experiment. Sampel adalah semua tim pendamping keluarga yang terdiri dari kader KB dan kader posyandu pada 10 lokus stunting kota malang sejumlah 118 orang. Model pelatihan gizi ini menggunakan pembelajaran dalam bentuk focus grup discussion. Analisis statistik menggunakan uji t-test untuk data tingkat pengetahuan dan uji Mc Necmar untuk analisis jawaban benar tiap pertanyaan. Hasil Penelitian : Proporsi jawaban benar dari 8 pertanyaan meningkat signifikan setelah pelatihan (p<0.05) dan ada 2 pertanyaan terkait penyimpanan ASI dan kelancaran ASI yang belum meningkat secara signifikan (p>0.05). Rata-rata skor pengetahuan gizi sebelum pelatihan sebesar 50.42 ± 15.1 66.6 ± 17.79. Pada akhir pelatihan skor pengetahuan gizi meningkat secara signifikan p = 0,0001 dengan peningkatan 16.6. Proporsi peserta dengan pengetahuan gizi kategori tinggi meningkat dari 5.1% menjadi 33.9% dan kategori rendah menurun dari 32.2% menjadi 11%. Kesimpulan : Model edukasi berbasis komunikasi perubahan perilaku dapat meningkatkan pengetahuan gizi secara signifikan, sehingga dapat diaplikasikan untuk pendekatan penanganan stunting secara individu.

Abstract

Latar Belakang: Berdasarkan studi pendahuluan didapatkan hasil bahwa keamanan pangan penjamah makanan pada penyelenggaraan makanan dikantin SMKN 1 Grati masih kurang diantaranya tidak penyimpanan bahan makanan yang tidak tepat, tidak menggunakan alat pelindung diri (APD) seperti masker dan celemek pada proses pengolahan, ada penjamah makanan yang berbicara saat mengolah makanan, dan penjamah makanan menyatakan belum pernah mengikuti penyuluhan keamanan pangan. Tujuan: Untuk mengetahui pengaruh edukasi menggunakan media poster keamanan pangan terhadap pengetahuan, sikap, dan penerapan higiene penjamah makanan di kantin SMKN 1 Grati. Metode: Kuantitatif deskriptif dengan desain penelitian one group pretest-posttest. Penelitian ini dilaksanakan pada bulan Mei 2023. Data yang diambil berupa karakteristik penjamah makanan, pengetahuan, sikap, dan Penerapan higiene yang diperoleh dengan pengisian kuesioner pretest dan posttest. Hasil: Terdapat peningkatan pengetahuan dari 5 orang mennjadi 7 orang penjamah makanan. Sikap penjamah makanan mengalami peningkatan dari 5 orang mennjadi 7 orang penjamah makanan. Penerapan higiene penjamah makanan mengalami peningkatan dari 2 orang menjadi 7 orang penjamah makanan setelah dilakukannya edukasi keamanan pangan menggunakan media poster. Simpulan: Penelitian ini menunjukkan bahwa pemberian edukasi keamanan pangan menggunakan poster dapat meningkatkan pengetahuan, sikap, dan penerapan higiene penjamah makanan. Kata Kunci: Edukasi Keamanan pangan, pengetahuan, sikap, penerapan higiene.

Abstract

Research on enhancing students’ descriptive writing skills has consistently highlighted challenges, particularly the persistent gaps in performance and the limited effectiveness of conventional teaching methods. In this context, the present study addresses these issues by implementing the Picture Word Inductive Model (PWIM) at SMP Negeri 48 Surabaya during the 2020/2021 academic year. Initial data revealed a significant problem: the pre-test scores of the 42 students in class 7-B showed a mean of 62.88, with only 4.76% meeting the success criteria, underscoring the ineffectiveness of traditional approaches. Despite modest gains in the post-test scores of Cycle I, where the mean increased to 72.76 and 16.67% of students passed, the results remained inadequate. By employing Classroom Action Research (CAR) and focusing on PWIM, this study aimed to bridge the identified gaps. Observational data and testing across two cycles demonstrated significant advancements by Cycle II, with a mean post-test score of 85 and 80.95% of students meeting the success criteria, indicating a substantial improvement in descriptive text writing skills. The t-test analysis further confirmed the effectiveness of PWIM in significantly enhancing students’ writing performance. These findings suggest that PWIM not only addresses the deficiencies in students’ writing but also offers a viable strategy for broader application in similar educational contexts. The study underscores the need for future research to explore the long-term effects and applicability of PWIM across different subject areas to further validate and refine its effectiveness.

Abstract

The background : of this study is that the nutritional needs of adolescents are relatively large, because they are still experiencing growth. In addition, adolescents generally carry out higher levels of physical activity compared to other ages. In addition, female adolescents are an age group that is vulnerable to nutritional problems, especially anemia, so that more nutrients are needed. A balanced menu pattern and portion standards will greatly affect the nutritional value of each dish. The aim of the study : was to analyze portion standards, menu patterns, and food acceptability on the level of availability and consumption levels of energy and nutrients in Ma'had Tahfizhul Qur'an Al-Firqoh An-Najiyah Food Service in Malang Regency. This research method : is a type of research that is descriptive qualitative with a cross-sectional study design, meaning that the observations are made at the same time. The results : of the analysis show that most of the menus served by the organization of Ma'had food are not included in the balanced category. The breakfast as a whole falls into the unbalanced category by (100%), this is because the food organizers only provide a menu of animal side dishes once a day at dinner, and twice a day for vegetable side dishes at breakfast and lunch. The presentation of staple foods, vegetables and fruit is in the category of less than the standard portion, but the types of animal side dishes and vegetable side dishes exceed and almost meet the set portion standards. Acceptability of food shows that respondents do not like the color and texture of the food served by the food organizer, this is due to the repetition of the menu which results in a lack of interest of the respondents in food. inadequate portion standards and budgets. the adequacy of nutrients such as energy, fat, carbohydrates, vitamins C and Fe (iron), is still classified as a severe deficit, this is due to the lack of compliance with the proportions of female students, interest in the food menu, lack of awareness of fulfillment of nutrients, and unhealthy eating patterns Wrong
