Abstract

Under-five-years-old children weighing in Posyandu useful for monitoring the health and growth of under-five-years-old children. This study aimed to describe the socio demographic, knowledge, and attitudes of mothers in under-five-years-old children weighing in Posyandu Jambur Pulau Perbaungan Subdistrict in 2016. The type of this research is decriptive research with cross sectional design. The population are mothers who have children aged 12-36 months. The sampling technique is sistematic random sampling, sample size is 63 people. The research instrument are questionnaire on maternal characteristics, growth chart (KMS), and weighing notes of posyandu. The data was collected then analyzed descriptively. The results showed that most of mothers didn’t regularly weigh their children to Posyandu was equal to 60.3%, results of cross tabulation showed that women with > 2 under-five-years-old children  didn’t regularly weigh their children to posyandu (79.4%), mothers with low education (100%) didn’t regularly weigh their children to Posyandu, working mothers didn’t regularly weigh their children to posyandu (85.7 %), mothers who live near from posyandu didn’t regularly weigh their children to posyandu (94.4%). Mothers with less knowledge didn’t regularly weigh their children to Posyandu (90.6%) and mother has bad attitude on posyandu didn’t regularly weigh their children to posyandu (96.4%). People of Jambur Pulau especially mothers should get education/counseling about function of posyandu and the importance of under-five-years-old children's weight to increase awareness of mothers in monitoring the growth status of children and expected  have an impact on the regularity of a under-five-years-old children's weight  at least eight times a year. Abstract

One effort to reduce infant morbidity and mortality is to give exclusive breastfeeding. WHO and UNICEF suggest giving breastfeeding exclusively to the baby until was six months. The success of breastfeeding is influenced by the mother's knowledge about breastfeeding. Alongside mother's knowledge, early initiation of breastfeeding also can determine the success of exclusive breastfeeding. This study aimed to determine the relationship of the level of mother's knowledge about exclusive breastfeeding and early initiation of breastfeeding action against the status of exclusive breastfeeding in Desa Bandar Klippa, Kecamatan Percut Sei Tuan, Kabupaten Deli Serdang. Type of this research was a analytic survey with crossectional design. Analysis data used chi-square test and the sample of research were 73 mothers that have baby with aged 7-12 months. The results showed that there was relationship between mother's knowledge with exclusive breastfeeding status (p = 0.014) and there was correlation between early initiation of breastfeeding action with exclusive breastfeeding status (p = 0.034). The results of research are expected to health workers to improve the promotion of exclusive breastfeeding and support to do early initiation of breastfeeding after maternal and do not encourage mothers to give milk formula instead of breast milk. Abstract

Nutrition is a very important need in the process of growth and development of children, especially in the first two years of life. Breast milk feeding patterns and complementary foodsof not exactly can open the gates for various types of diseases and cause nutritional problems in children. The purpose of this study was to know the breast feeding patterns and complementary foods, infectious diseases and nutritional status of children ages 6-24 months in the Working Area of Community Health Center Lawe Perbunga, South East Aceh.This researchwas descriptive research with cross sectional approach. A sample of 77 children ages 6-24 months were measured in simple random sampling. Method of data collection by passing interview used questionnaire and measured child nutritional status based on index of weight for age (W/A), length for age (L/A) and weight for length (W/L). The results of the study showed that thebreast milkfeedingpatternof 29,9% good categories and 70,1%categories was not good. Complementary foods of 29,9% good categories and 70,1%categories was not good. The children ages 6-24 months with an infectioun diseases of 50,6% and no pain of 49,4%.Nutritional status based on the index W/A of 81,8%good nutrition categories, 16,9% of malnutrition categories and 1,3% of more nutrition categories. Nutritional status based on the index L/A of 49,4%of normal categories, 26.0% very short categories, 23,4% of short categories and 1,3% of high categories. While the nutritional status based on the W/L of 67,5% normal categories, 1,3% of very thin categories, 3,9% of thin categories and 27,3% of fat categories.Thus the need for counseling of the mother about the breast milk feeding patterns and complementary foods in children. Especially on exclusive breastfeeding, when children can be given complementary foods, and how the correct complementary foods includes types and forms complementary foods tailored to the development of the childs age. Abstract

Watermelon rind was an organic waste that can be made as a jam ingredients because it was easy to process and has nutrient content. Jam was a thick textured food product made by fruits mixed with sugar. Pumpkin was added in the making of jam to improve the characteristics of jam and increase the nutrient content in jam. Pumpkin contained high betacarotene which can be a source of provitamin A. This study aimed to determine the acceptability and nutrient content of jam made by watermelon rind and pumpkin. This study was an experimental design using completely randomized design with three treatment combinations of watermelon rind and pumpkin with ratio of 30%:70%, 50%:50% and 70%:30%. The acceptability test was conducted by 30 students of Public Health Faculty of University of Sumatera Utara and the analysis of betacarotene, phosphorus and calcium has done in laboratory of Palm Oil Research Center and Research and Industry Standardization Center Medan. The results showed that based on organoleptic test of color and taste the most preferred jam was jam with ratio of 30%:70%, based on flavor, the most preferred jam was jam with ratio of 70%:30% and based on texture, the most preferred jam was jam with ratio of 50%:50%. Based on the result of Anova One Way test from three treatments of watermelon rind and pumpkin jam showed that there was no significant difference on the acceptability of jam. The highest nutrient content was found in watermelon rind and pumpkin jam with ratio of 30%:70%, that contained betacarotene 71,2 ppm, phosphorus 57,7 mg and calcium 13,6 mg. Watermelon rind and pumpkin jam that contained betacarotene can be made as a topping or filling various types of food, so it can be made as food alternative for children as one of prevention of vitamin A deficiency. Abstract

Health problems are still common in Indonesia, including nutritional problems in toddlers. One of the problems that often found in children under five of them malnutrition. Malnutrition in children can lead to disruption of growth and development and susceptible to infectious diseases. Malnutrition in children can be caused by inadequate feeding and economic factors. The purpose of the study was to analyze the relationship between feeding and family income levels with nutritional status of children under five in Muarasipongi Sub-district, Mandailing Natal Regency in 2017.               The type of research used quantitative research with cross sectional design. Sampling using multistage random sampling technique with a sample of 88 children. Data collection was done by direct interviews on mothers with children under five using structured questionnaires. Feeding of children was seen using 24-hour recall form and food frequency. The nutritional status of children is seen by measuring body weight and height of the child. To see the relationship between feeding and family income level with nutritional status of children under five using Chi Square test with 95% confidence level.               The results showed that based on nutritional status with index weight for age (W/A) related to the completeness of food type, energy sufficiency level, carbohydrate, protein and family income. Based on the height for age (H/A) index associated with the completeness of food type, the level of energy adequacy, protein, vitamin A, and zinc. Based on the index weight for height (W/H) associated with the level of carbohydrate adequacy, protein and family income. The p value obtained for the relationship between feeding and family income levels with nutritional status was (p <0.05). The frequency of feeding is seen from the consumption of rice each day. The most frequent frequency of side dishes is eggs. Vegetables are often consumed by children is cassava leaves, children also consume crackers every day. Suggestions in this study to the Health Office and public health center to socialize balanced nutrition through a balanced nutrition handbook for health workers for cadres to keep voicing about balanced nutrition in the community.  Keywords: family income, nutritional status, under five children feeding

Abstract

Dragon fruit peel (Hylocereus polyrhizus) has been considered only a leftover by the community as it is well-thought-out useless while the dragon fruit peel still contains nutrients that are beneficial to the health such as vitamine C, vitamine E, vitamine A, terpenoid, and flavonoid. It also has greater antioxidant activity than fruit flesh itself. Dragon fruit peel can be untilized into food products, one of which is jam. The purpose of this study is to know the acceptance as well as the nutrition of vitamine C and fiber in dragon fruit peel jam. This study was an experimental study with completely randomized designusing two treatments: Dragon fruit peel 60%: 40% fine sugar and dragon fruit peel 50%: 50% fine sugar. The acceptability of dragon fruit peeljam was conducted on 30 students of the Faculty of Public Health University of Sumatera Utara and nutritional content analysis conducted in the Biochemistry Laboratory FMIPA University of Sumatera Utara. Organoleptic test data were analyzed by T Test - Independent Test.   The result analysis of nutrient content of dragon fruit peeljam with A1 treatment(60%:40%) had vitamin C content of 48.4% and fiber 5.4%. The result analysis of nutritious content of dragon fruit peel with A2 treatment (50%: 50%) has vitamin C content of 36.66% and fiber of 4.53%. Based on organoleptic tests on color, aroma, taste and texture, it is known that panelists prefer jam with a ratio of 50% dragon fruit peel and 50% fine sugar. Test T - Independent Test shows the difference of acceptability test from both dragon fruit peeljam crusts in terms of color, smell, taste, and texture indicator. It is suggested that the public be able to utilize the dragon fruit peel to bejam as an additional food alternative as bread stuffing.  Further research is needed on the content of other micro substances confined in dragon fruit peel. Abstract

Attention to the nutrition and health of childrens in the orphanage isstill relatively minimal,thus allowing high malnutrition rates for foster childrens.Similarly, the comparison of the number of childrensare greater than the number of carers, so the attention to nutritional status will be lower. Another possibility of low funding problems so that the nutritional needs was not comparable with the intake received by orphanage childrens. This study aims to find out the description of Food Planning and Food Consumption Pattern Presented and Nutritional Status of Childrens in Aceh Sepakat Orphanage Darul Aitam Foundation Sukaramai Urban Village Medan Area Year 2017.                The type of this research was observational with cross sectional research design. This research have done by looking at master menu, menu cycle and fund allocation. The data of energy and protein consumption was obtained by using food weighing method, foster child food type using food frequency form and eat frequency seen from how many times of daily meal. The sample in this study amounts to 80 people who are foster childrens in Aceh Sepakat Orphanage. The sampling technique was total sampling. Weight of foster childrens was measured using the scales and height of foster childrens used microtoise. Data were analyzed descriptively.  The results showed that the composition of 100% foster childs food was incomplete, energy consumption 57,5% under category AKG, and consumption of protein 58,8% category under AKG. Nutritional status of foster childrens based on BMI/U there are thin 6,3%, normal 81,3%, grease 7,5% and obesity 5,0%. Based on TB/U there are very short 22,5%, short 38,8% and  normal 38,8%. Orphanages are expected to pay more attention to the arrangement of foods that will be consumed by foster childrens so that foster childrens get the nutrients according to the needs of the body, create a master menu and a fixed menu cycle in order to control the funds available properly and perform weighing periodically 1/6 months. Abstract

  Orange juice is a beverage sold in the University of North Sumatra commonly. The existence of orange juice vendor is considered as one of thirst loose that can fulfill vitamins and water needs. On the other hand there are concerns related to the use of inappropriate food additives, including sweetener (cyclamate) and dye (tartrazine). The impacts of short-term use of cyclamate are migraine, memory loss, insomnia, irritation, etc. Intolerant reactions in some body will be produced when tartrazine are consumed. In the long term use, cyclamate   and tartrazine can induce cancer. This research used descriptive observational method. The research was conducted in University of Sumatera Utara area. The data were obtained from cyclamate qualitative analysis using precipitation method and cyclamate quantitatively using thermogravimetric method, while tartrazine was qualitatively tested by chromatographypaper method and quantitatively using thermogravimetric method. The test of both samples will be conducted in the Laboratory of Biochemistry and Food Chemistry, FMIPA USU. The result of the analysis is compared with the quality standard based on regulation from the head of BPOM RI number 4 year 2014 about sweetener as food additives and number 37 year 2013 about dye as food additives. Based on examination results of 8 samples of orange juice, it showed that the orange juice contained cyclamate and tartrazine. The content of cyclamate was above maximum permitted level of 200 mg / kg which was not safe to be consumed. Tartrazine was still below maximum permitted level 70 mg / kg that safe to be consumed. In accordance with these statements, the public is suggested to consume orange juice sold in the University of North Sumatra unregularly. In addition, Vendors are not expected to use inappropriate artificial sweetener above maximum permitted levels as it not only endanger consumers’ health but also break the law. Abstract

Crackers made from cassava are very easy to find, contained in various shapes, sizes, colors of interest, and a distinctive taste so popular for people, especially children. Industry competition forces manufactures to innovate on their products. However, still many snacks are suspected to use rhodamine B as food coloring. Based on the observations there are cassava crackers with striking red color that often found in the market and school area. The purpose of this research is to find out the description of knowledge and the attitude of crakers maker with the use of rhodamine B dye on the typical red cassava crackers Banjar Kobun. This research is descriptive with cross sectional design. Samples was red cassava crackers maker and sample unit was crackers. The results showed that the knowledge and attitude of craftsmen in the good category about the use of rhodamine B on cracker amounted to 73.3% and 66.7%. However, based on the results of cracker analysis conducted on rhodamin B is known all samples using dye indicated containing rhodamin B. Regional Health Office division of health promotion and National Agency of Drug and Food Control in North Sumatra are expected to make a building and color inspections regularly to red cassava crackers makers typical Banjar Kobun. Abstract

The problem of Protein Energi Malnutrition in children under five is a very difficult problem to overcome, the cause of malnutrition is basically a simple deficiency in food consumption. Tackling Protein Energi Malnutrition can be done by increasing protein intake. Withgiving of food, like crackers. But most crackers have carbohydrates while the protein content is relatively low. So make crackers by utilizing moringaleaves flourand catfish flour to improve the nutritional composition. Type of research was experiment. The study used a complete randomized design with a organoleptic test to see the panelist's preference level on the test food. Organoleptic test subjects amounted to 30 people students of FKM USU. The object of this study were crackers with moringaleaves flourand catfish flour treatment A1 (15gr and 50gr), A2 (20gr and 45gr) and A3 (25gr and 40gr) from the weight of the main ingredient. The nutrition content seen include fat, protein, iron, and calcium. Crackers with moringaleaves flourand catfish flour have the highest protein content of 16.0% found crackers with 25gr moringaleaves flour and 40gr catfish flour. The highest fats were found in crackers with 15gr moringaleaves flourand 50gr catfish flour which was 22.3%. The highest iron are crackers with 25gr moringaleaves flourand 40gr catfish flour which is big 10.4% while the highest calcium is 5.42% found in crackers with 25gr moringaleaves flourand 40gr catfish flour. The results of the organoleptic test, the panelists most liked crackers with moringaleaves flour15gr and 50gr catfish flour in color, aroma and taste indicator which each have a score of 88.8%, 79.9%, 85.5% with likes criteria, whereas for panelist textures most liked crackers with 25gr moringaleaves flourand 40gr catfish flour which has a score of 78.8% with the likes criteria. Crackers produced can be used as additional food. Moringa leaves and catfish can be recommended for ingredients in the manufacture of crackers that have protein content.
