Abstract

The cadres failure in the implementation of health center activities to monitor the growth of children under five will result in the wrong conclusion which will give incorrect information and precaution. Therefore, an analyze is required to determine the behavior of cadres in monitoring the growth of children under five  in Mandala health center in sub district Medan Tembung. This research is a descriptive cross sectional design research carried out in September 2013 to December 2014. The population in this study were all cadres in 39 integreted health posts in working area of public health center Mandala district of Medan Tembung that is 159 people. The sample in this study were 100 people who is obtained using cluster sampling. Existing data will be analyzed descriptively and presented in form of a frequency distribution table. The result of this research showed that 51,0% cadres aged < 37 years old; 61,0% of cadres education is primary education (Primary Junior High School); 90,0% has becomed cadres for > 2 years; unemployed caders is 83,0%; and the most frequent task is the registration (41,0%). Cadre behaviour in implementation of children under five year growth monitoring, 49,0% of cadre has good knowledge, but only 14,0% cadre has good manner and only 3,0% cadre with good action. It is suggested for the clinic to give education to the cadres in growth monitoring of children under five and to provide training such as plotting training, weighting children under five and calculating ages periodacally to the cadres. Abstract

Breakfast is important activity to start activity every morning and purpose to increase of learning concentration and physical ability of school children. This purpose of study was to know model of breakfast consumption of students in SDN 060921 Kecamatan Medan Sunggal year 2015. This study is a survey research with cross sectional approach. This study population is all grades 5 and 6 of the academic year 2014/2015 SDN 060921 Kecamatan Medan Sunggal. Sampling tecnique used was total sampling with a sample obtained as many as 74 people. Means of collecting data used are questionnaires. The study conducted in April until July 2015. The result of the study showed that students of SDN 060921 Kecamatan Medan Sunggal have frequency of breakfast everyday (41.9%), students eat rice and chicken for breakfast (20.3%) and students drink tea for breakfast (50%).  Most of students have breakfast contribution of adequate nutrition energy (59.5%), protein (59.5%) and vitamin A (55.4) with enough categories. Meanwhile contribution of vitamin C (75.7%), iron (62.2%) and calcium (85.1%) most of students have adequate nutrition with less categories. Breakfast models students based on frequency was good, but adequate nutrition breakfast of most student not quite good. Recommended for principal increase knowledge about breakfast and students parent help breakfast habits everyday with selection menu and nutrition value of breakfast based on needed. Abstract

Food diversification efforts can be done by making use of local food as  diversity food. The programme of food diversification, need to be introduced such as processed yams and soy beans to get extra food  such as new food alternative for pregnant women. Sweet potato and soy beans are potentially as a source of nutrients because it contains a number of macro-nutrients and micro nutrients. One of the preparations that can be made from yams and soy beans are dried noodles, so it can add to the diversity of dry noodles that had existed in the market. The purpose of this research is to know the nutrient content such as protein, iron, calcium and folic acid. This research is experimental research of dry noodle-making flour with the addition of a white Sweet Potato tubers and leaves with a combination of soy beans and wheat flour with a comparison of 60 gr + 20 gr + 25 gr + 15 gr. The results showed that the dry noodles flour white Sweet Potato tubers and leaves with a combination of soy beans have protein 1.00%, and iron 65,33 ppm, calcium 20.1 ppm and folic acid for pregnant women. It is advisable to society in order to make the addition of sweet potato tuber starch and leaves with a combination of soybeans as food supplement for pregnant women. Abstract

Diversification of food consumption is effort to stabilize consumption patterns to fit of Dietary Pattern Expectations. The purpose of this research is to determine behavior of farmers family in diversification of food consumption based on the characteristics of families in Baru Ladang Bambu District, Medan Tuntungan Subdistrict in 2015. This was a descriptive research with cross sectional study design. Population were a whole family of farmers in Baru Ladang Bambu District, Medan Tuntungan Subdistrict, sampling was done with the proportional random sampling were 63 farmers. Primary data were collected through interviews using a form of inventory method. The result showed that the diversification of food consumption majority of farm families with high category (≥6 food group), knowledge of the majority of the good category and the attitude of the majority of good category, while diversityfood consumption based on the characteristics of family farmers, land ownership is in the category of landless, education level housewife in junior high school category, income <Rp.2.037.000 and the number of family members ≤4 people. Based on the result of this research, expected to the subdistrict officer to make a cooperation with the Department of Agriculture and Food Security to further improve guidance to farm families with focus outreach efforts about diversification of food consumption. Abstract

Infants whose entering the age of 6-24 months need a complementary foods to fulfill their daily nutritional needs. Recommended complementary foods are coming from local food that was highly nutritious, easily obtainable, and cereal-based, such as corn, tempeh, and carrot. The purpose of this study was to determine the characteristics and acceptance of powdered instant from flour corn sprouts, tempeh flour, carrot flour as complementary foods. This study was experimental study, using a completely randomized design, with three factors and two treatment, instant powder of flour corn sprouts, tempeh flour, carrot flour with ratio 50%: 40%: 10% and 55%: 40%: 5%. The mixture was made base on the adequacy of infant required nutrients 6-12 months. Panelists in this study were 7-12 months infants whose accompanied by his mother as many as 30 people. Test by organoleptic test and acceptence test data was analyzed by independent t test. The results showed that the organoleptic test of the color, flavor, and texture of the most preferred was powdered instant of flour corn sprouts 55%, tempeh flour 40%, and flour carrot 10%. While both instant powder aroma less preffered. Based on the analysis, there are differences in color and texture on both the instant powder. It was suggested to consumers to pay attention to the portion size of instant powder and advised to consume a wide variety of foodstuffs. Abstract

Dadih Buffalo milk  can be utilized in making of gelatin/jelly . This study aims to determine the acceptability of student in elementary school  towards Dadih buffalo milk’s gelatin. This study was an experimental research conducted using two treatment. Gelatin with addition of 700 gr dadih buffalo milk  and gelatin with addition of 900 gr dadih buffalo milk . Panellists in this research was 24 students in elementary school . Acceptance data test were analyzed by Friedman’s test. This research was conducted at DesaPangkat Kec.Lembah Sorik Marapi Kab.Mandailing Natal in March and April 2016. The results showed that the acceptance of students in elementary school  against the gelatin with addition of  700 gr dadih buffalo milk and addition of 900 gr dadih buffalo milk classified as they like it. However, based on assessment total scores, gelatin with addition of  700 gr  dadih buffalo milk has a high level of scores. In the case of selecting  a snack  foods, the consumers should recomend the gelatin with buffalo milks as an alternative healthy snack foods to fulfill/supply the good energy sufficiency for student in elementary school.  Still required the diversification of another food with addition of buffalo milk as a meal that have a rich nutrients. Abstract

Food consumption behaviour is the factor which affect nutritional status. Bad food consumption behaviour and less physical activity causes disturbed body metabolism so that can cause nutritional status becomes unfavorable. Food consumption in working adults should be adjusted with bodi’s to determine requirement and employment. The purpose of this research was the correlation between food consumption behaviour with nutritional status of civil servants in the BAPPEDA Langkat District. Types of this research was analytic by cross sectional design. Population of this research was 46 people The samples taken as many as 46 people by total sampling methods. Knowledge and balanced nutrition attitude of civil servants indicated by using questionnaires, while food arrangements, food frequency and quantity of carbohydrate, protein and fat intake indicated by using 24 hour recall and food frequency’s form. While, to see the correlation between food consumption behaviour with nutritional status of civil servants in the BAPPEDA Langkat District was used Pearson correlation test with confidence level as many as 95%. The result of research showed that civil servants in the BAPPEDA Langkat District have knowledge and balanced nutrition attitude was in moderate category, each of whices was 58,7% and 50,0%. Food consumption based on food arrangements was incomplete category as many as 76,1%. Frequency of vegetables and fruits average consumption was rarely, each of whices was 59,6% and 69,0%. The quantity of carbohydrate, protein and fat intake that consumed by civil servants in the BAPPEDA Langkat District was over, each of whices was 58,7%, 56,5% and 50,0%. The result of pearson correlation test indicates that there was correlation between knowledge balanced nutrition with attitude (p=0,047), food consumption (food arrangements, quantity of carbohydrate, protein and fat ) with nutritional status, each of whices was (p=0,043, p=0,045, p=0,004  and p=0,001). Based on the result of research suggested to civil servants in order to increase consumption of fruits and vegetable for stay fitness and healthy. Abstract

One of family’s characteristic is the mother's job. Working mothers can lead to a decrease in nutrition.  Mainly to toddler. This is due to the time spent  for the toddler is lessen. The purpose of this research is to understand the diet pattern and nutrition status of the toddler based on the characteristics in Kelurahan Sondi Raya Kecamatan Raya Kabupaten Simalungun  in 2016.  This research was descriptive study. Population total are 303 toddlers, and  sample are 75 toddlers. Sampling techniques is proportional random sampling technique. Data which taken from the research are toddler’s characteristics, family’s characteristics ( mother’s age, mother’s education, total of family members, family gross income, and mother’s knowledge about nutrition), diet pattern, toddlers nutrition status. The collected data was analyzed descriptively. The result of the research showed that a good diet patterns for toddlers based by level energy consumption there was a tendency  found by small family members (≤4 people), high family income , working mother, high education of  mother  and mother’s knowledge of good nutrition compare by big family ( ≥ 7 persons) , mother have a job, low education of mother, low family income,  the lack of maternal nutrition knowledge. As same as toddler , which lack of nutrition, stunting, and skinny there was tendency found in big family( ≥ 7 persons), working mother, low gross family’s income, low mother’s education, and the lack of maternal nutrition knowledge compare to small family members (≤4 people), high family income , working mother, high education of  mother  and mother’s knowledge of good nutrition. Toddler who have normal nutritional status was found in families which consume good energy and protein compare to toddler who consume low energy. Health officer are expected to more focus in socialization particularly mother who has toddler in effort to increase the awareness of mother about provide food because this is to important to support toddler in increase of nutrition. Abstract

Banana ‘awak’ ripe flour (Musa paradisiaca var. Awak) and dumbo catfish (Clarias Garapinus) can be processed into biscuit. Biscuit is one of additional food that can full fill the needs of  toddler nutrient. Biscuits had sweet taste and interesting shape. This research purpose to determine the acceptability test and nutritional content of biscuits substitution banana ‘awak’ flour and dumbo catfish. The type of research was an experiment conducted by completely randomized design using two factors and with three treatments, the treatmens are the addition of banana ‘awak’ flour and dumbo catfish with treatments 25%:35%,35%:25%,and 30%:30%. The acceptability biscuit substitution banana ‘awak’  and dumbo catfish by 30 mothers and toddler in Posyandu Perumnas Simalingkar district of Medan Tuntungan, nutrient analysis was tested in laboratory of industrial research and standarization Agency Medan. The results organoleptic test based on color, aroma, flavor, and texture biscuit by thirty mothers panelist showed the most preferred are biscuit mixture of banana ‘awak’ flour 30% and dumbo catfish 30%. Acceptability of toddler showed that three treatments have been preferred by toddlers. The result of  nutrional content analysis showed that three treatments has content of carbohydrates 67,74%, 71,77%, 69,69%, content of protein  12,00%, 9,01%, 10,25%  and fat 14,15%, 13,00%, 13,70%. It is recommended for people to take subtitution of banana ‘awak’ ripe flour and african catfish biscuit as alternative additional food for todder. Abstract

Fish is a source of good protein for the growth. The lower of fish consumption of the student of elementary school is a problem caused by any factors. The objective of this research is to study factors related to the fish comsumption pattern of the student of elementary school of SD Negeri 060919 in subdistrict of Medan Sunggal 2015. The method of research is an analytic survey with cross sectional design. The sample is 44 students by purposive sampling method. The species of fish, the number of fish and frequency of fish consumption is indicated by using recall and food frequency questionnaire form. The factors related to the fish comsumption such as knowledge, social culture, economic and support of mother is indicated by using questionnaire form. The result indicated that as many as 15 persons (34,1%) student of elementary school consumed fish that lives in middle water, as many as 23 persons (52,3%) student  the number of consumed fish is in good category and as many as 13 persons (29,5%) student frequency of fish consumption in medium category. The result of Chi Square test indicated that there is a correlation of the knowledge and the number of consumed fish (p=0,0001), social culture and the number of consumed fish (p=0,005), economic and the number of consumed fish (p=0,0001), and support of mother and the number of consumed fish (p=0,001). The school also suggested to build a matual cooperation with puskesmas at nutrition extension and Education office to build a matual cooperation with the Agricultural and Marine office of Medan to support the program of Fish Consumption.
