Abstract

Local food can be used as an alternative to additional food for toddlers, namely food bars. The study was conducted in June-November 2017. The design of this research was experimental using a completely randomized design (CRD). The food bar formulation was mixed with 20g and 25g tuna, while 20g and 25g mackerel fish. Organoleptic test data were analyzed using ANOVA. Proximate analysis of food bars using the AOAC method. Food bars' essential amino acid content was carried out using LCMS and total microbial analysis using the ALT method. Food bar analysis selected from the test results by semi-trained panelists and consumer panelists is f4 with 25g tuna mixing with indicators of color (p= 0,000), aroma (p= 0,003), taste (p= 0,040), and texture (p= 0,167). Food bar in 100 grams contains: energy 470,77 kcal, 15,65% protein, 24,13% fat, 47,74% carbohydrates, 2.14% ash, and 10.33% water. The results of the total microbial test on the food bar showed a value of 4,5 x 102 cfu/g and an Aw value of 0,86. Food bar formula F4 is a formula selected by panellists that contain ten high essential amino acids

Abstract

Adaptation to new habits (new normal) is a policy issued by the government and allows people to be able to carry out activities in general by implementing health protocols. The purpose of this study was to analyze the application of distancing Indonesian students during the new normal Covid-19 period. This study used a cross-sectional study design and data collection through the distribution of online questionnaires. The data analysis used the univariate test with 5924 respondents. The results showed that there were a total of 3982 respondents who were health majors with undergraduate degrees as many as 2529 and lived in family homes as many as 2715 (p = 0.000). And there was a real relationship between the variable online taxi with distance maintenance and online motorcycle taxi using a helmet (p = 0.007). The same was true for the variable hand-sanitizer online taxis (p = 0.000), non-cash online ojek (p = 0.001), online non-cash taxis (p = 0.002). This also has a significant relationship in the online taxi variables touching the handle, money transactions, touching equipment, keeping your distance, the crowd, masks, handshakes, still wearing masks, touching family members, and sneezing with p = 0.000. Based on these results, it shows that overall the level of Indonesian students can adjust to the adaptation of new habits during the Covid-19 period by still paying attention to the applicable health protocols and according to the direction of the government.

Abstract

ABSTRACTThe aim of the study was to analyze the effects of torbangun flour-based functional supplementary food for breastfeeding mothers who received breastfeeding counseling on infant’s growth and exclusive breastfeeding practice The subjects were 20 pregnant women in their third trimester and were monitored until delivery and were given supplementary food for 30 days. Single blind randomized controlled trial was used to group subjects into intervention group (n=10) that was given supplementary food containing torbangun flour, and control group (n=10) with no torbangun flour. All subjects were given breastfeeding counseling two times before delivery and three times during supplementary food was given. The study showed that breastfeeding counseling significantly increased the knowledge and attitude of respondents on exclusive breastfeeding. In the intervention group, the average score of knowledge increased from 59.1±22.4 to 94.1±6.9 (p<0.05), while the attitude increased from 65.8±11.4 to 94.1±8.8 (p<0.05). In control group, the average score of knowledge increased from 75.0±11.8 to 94.4±7.2 (p<0.05), while the attitude increased from 75.0±14.4 to 94.4±11.0 (p<0.05). Supplementary food containing torbangun flour significantly caused shorter time in regaining infant’s birth weight. The average time was 5.1±1.4 days for intervention group, while the control group was 7.0±2.4 days (p<0.05). The success rate of exclusive breastfeeding practice in the intervention group was 90%, while in the control group was 80%.Keywords: exclusive breastfeeding, supplementary food, torbangunABSTRAKTujuan penelitian adalah menganalisis pengaruh pemberian makanan tambahan fungsional berbasis tepung torbangun pada ibu yang mendapat konseling menyusui terhadap pertumbuhan bayi dan pemberian ASI eksklusif. Subjek penelitian adalah 20 orang ibu hamil pada trimester ketiga yang diikuti hingga melahirkan dan diberikan makanan tambahan selama 30 hari. Desain single blind randomized controlled trial digunakan untuk menentukan produk makanan tambahan yang diberikan kepada ibu yaitu kelompok intervensi (n=10) mendapat produk yang mengandung tepung torbangun dan kelompok kontrol (n=10) mendapat produk tanpa tepung torbangun. Seluruh subjek diberikan konseling menyusui dengan frekuensi dua kali sebelum ibu melahirkan dan tiga kali selama pemberian makanan tambahan. Hasil penelitian menunjukkan bahwa konseling menyusui signifikan meningkatkan skor pengetahuan dan sikap responden tentang ASI eksklusif. Kelompok intervensi, rata-rata skor pengetahuan dari 59,1±22,4 menjadi 94,1±6,9, skor sikap dari 65,8±11,4 menjadi 94,1±8,8 (p<0,05). Kelompok kontrol, rata-rata skor pengetahuan dari 75,0±11,8 menjadi 94,4±7,2, skor sikap dari 75,0±14,4 menjadi 94,4±11,0 (p<0,05). Pemberian makanan tambahan yang mengandung tepung torbangun berpengaruh signifikan terhadap waktu yang lebih singkat untuk mencapai kembali berat badan lahir bayi yaitu 5,1±1,4 hari untuk kelompok intervensi sedangkan kelompok kontrol 7,0±2,4 hari (p<0,05). Selama waktu pemberian makanan tambahan, keberhasilan praktek pemberian ASI eksklusif pada kelompok intervensi adalah 90% sedangkan kelompok kontrol adalah 80%.Kata kunci: ASI eksklusif, makanan tambahan, torbangun

Abstract

Bangun-bangun leaves (Coleus amboinicus Lour) is one of plants that has a function as laktagogue which can increase secretion and production of breast milk. Therefore, the bangun-bangun leaves are potential to be used as an ingredient in the product development of supplement and functional foods for lactating mothers. The objective of this research is to develop supplement and functional foods for lactating mothers from the bangun-bangun leaves.Two types of products were made with same type and amount of basic material, but different in the amount of bangun-bangun leaves, i.e.120 or 150 g. Results of organoleptic test using 40 lactating mothers as panelists show that the average panelist favorite for both products were not significantly different and altogether all panelists can accept the two products.

Abstract

Penyakit kardiovaskular merupakan penyebab kematian nomor satu secara global. Profil lipid darah yang tidak normal berkaitan erat dengan kejadian penyakit kardiovaskular. Pangan fermentasi merupakan salah satu jenis pangan yang diketahui mengandung zat gizi yang dapat membantu memperbaiki kadar profil lipid darah. Tujuan penelitian ini adalah untuk mengetahui pengaruh konsumsi pangan fermentasi terhadap profil lipid darah berdasarkan studi literatur. Penelitian ini merupakan penelitian studi literatur. Pencarian literatur dilakukan menggunakan empat database, yaitu Google scholar, Portal GARUDA, DOAJ, dan PubMed menggunakan kata kunci dan boolean operator : 'pangan fermentasi' AND 'profil lipid darah'. Artikel yang ditemukan sebanyak 1.278 artikel yang dipublikasi dari tahun 2016-2021. Artikel diseleksi berdasarkan judul, abstrak, full text, bahasa, serta PICOS yang akhirnya diperoleh 10 artikel yang layak untuk dikaji. Hasil penelitian menunjukkan bahwa dari 10 artikel, terdapat 6 jenis pangan fermentasi. Delapan dari sepuluh artikel menunjukkan bahwa konsumsi pangan fermentasi memiliki pengaruh yang signifikan terhadap perbaikan profil lipid darah. Konsumsi pangan fermentasi memiliki pengaruh yang signifikan pada perbaikan profil lipid darah. Pangan fermentasi yang menunjukkan hasil signifikan pada perbaikan profil lipid darah adalah tempe, yogurt sinbiotik pisang batu, kefir, keju feta dan tape ketan hitam. Chungkukjang dan yogurt sinbiotik kayu manis tidak menunjukkan adanya perbaikan profil lipid darah secara signifikan.

Abstract

Abstract: Pregnancy and toddlerhood are crucial periods that determine a child’s future growth and development. In Wonosari Village, the nutritional intake of pregnant women and toddlers is below the recommended dietary allowance. One of the specific nutritional interventions that can be implemented is the provision of supplementary food (PMT) based on local food. This community service activity aimed to improve the knowledge and skills of posyandu cadres regarding the PMT based on local food for toddlers and pregnant women. The program involved training 40 cadres in the working area of Dalu Sepuluh Health Center, Tanjung Morawa District, Deli Serdang Regency, on May 28, 2025. The training consisted of delivering material on the concept of local food-based PMT and hands-on practice in processing supplementary food. Knowledge was evaluated through pre- and post-tests. Skills were evaluated through observation during processing practices. The results indicated an increase in cadres’ knowledge, with the average score rising from 95.4 to 99.4. Skills also improved, particularly in the accuracy of ingredient measurement and appropriate portion determination. These findings imply that local food-based PMT training can enhance the capacity of posyandu cadres and contribute to strengthening community-based efforts in improving maternal and child nutrition. Keywords: cadres; PMT; pregnant women; toddlers Abstrak: Masa kehamilan dan balita merupakan fase penting yang menentukan kualitas tumbuh kembang anak. Di Desa Wonosari, asupan gizi ibu hamil dan balita di bawah angka kecukupan gizi yang dianjurkan, sehingga diperlukan intervensi gizi spesifik melalui PMT berbasis pangan lokal. Kegiatan pengabdian ini bertujuan untuk meningkatkan pengetahuan dan keterampilan kader posyandu mengenai pengolahan makanan tambahan berbasis pangan lokal untuk balita dan ibu hamil. Metode yang digunakan adalah pelatihan dengan sasaran 40 orang kader posyandu di wilayah kerja Puskesmas Dalu Sepuluh, Kecamatan Tanjung Morawa Kabupaten Deli Serdang. Pelatihan dilaksanakan pada 28 Mei 2025, terdiri dari penyampaian materi tentang PMT berbasis pangan lokal dan praktik pengolahan makanan tambahan untuk balita dan ibu hamil. Evaluasi pengetahuan melalui pre-test dan post-test menggunakan kuesioner. Keterampilan dievaluasi dengan observasi pada saat praktik pengolahan. Pelatihan menghasilkan peningkatan skor pengetahuan kader posyandu dari 95,4 menjadi 99,4, dan peningkatan keterampilan tentang ketepatan penggunaan jumlah bahan pangan dan porsi PMT untuk ibu hamil dan balita. Abstract

Preschool age is a golden age because at this time the growth and development of children is very rapid. Posyandu Prima as a community empowerment center that provides basic health services according to the life cycle with one of the main targets being preschool-age children.This study uses a quasi experiment design with a One-Group Pre-test Pos-test design involving 15 cadres as a sample. The interventions provided were in the form of balanced nutrition education and anthropometric measurement practices through 3 meetings which included question-and-answer lectures, measurement practices, and material repetition. The data collected included knowledge, attitudes, and practices of anthropometric measurements conducted by cadres and analyzed using the Wilcoxon marked rating test to assess changes before and after the intervention.The results showed that the knowledge of cadres about balanced nutrition increased by 80% from 7.6 to 13.7, and the attitude of cadres about balanced nutrition increased by 30% from 6.6 to 8.6. The ability of cadres to practice anthropometric measurements also improved, with the weight measurement score increasing by 80% from 7.6 to 13.7.

Abstract

The effect of fertility nutrition counseling on knowledge, attitude, macronutrient intake, and body weight couple in IVF programBackground: Based on PERFITRI (2017) shows 1,712 men and 2,055 women experiencing infertility. One of the factors that influences infertility is nutritional status. Overweight and underweight will affect conception delays. Body weight is influenced by nutritional knowledge, attitudes and food intake. Efforts to increase knowledge and attitudes can be done through nutritional counseling. Objective: This study aimed to analyze the effect of nutritional counseling on knowledge, attitudes, macronutrient intake, and weight of In Vitro Fertilization (IVF) couples at Halim Fertility Center. Methods: This research was a quasi-experiment with a one group pre-post test design. The study population was all married couples who were registered for nutritional counseling for the IVF program in January-February 2023 with a sample of 43 married couples. Data analysis used the T-dependent test and the Wilcoxon test. Results: The average value of knowledge and attitudes increased with an increase in the husband’s knowledge score of 37,70 and the wife’s score 29,95 and an increase in the husband’s attitude score of 19,30 and the wife’s score of 12,79. There was a decrease in the energy intake of the husband 10,23% and the wife 7,49%, the husband's fat intake was 35,69% and the wife was 28,62%, husband's carbohydrate intake was 9,45% and the wife was 12,90%. Protein intake increased 54,31% for husbands and 55,84% for wives. The average value of body weight decreased by 2,51 kg for husbands and 1,85 kg for wives. Conclusions: There is an effect of nutritional counseling on knowledge, attitudes, macronutrient intake and weight of IVF couples (p-value=0.000).

Abstract

Kader posyandu merupakan ujung tombak penggerak masyarakat dalam pemantauan pertumbuhan dan perkembangan balita sehingga dituntut memiliki pengetahuan dan kompetensi yang cukup untuk mensukseskan transformasi layanan primer. Penelitian bertujuan untuk mengetahui gambaran pengetahuan dan sikap kader posyandu tentang gizi pada periode 1000 HPK dan stunting. Penelitian observasional rancangan potong lintang ini dilakukan di Kecamatan Sibolga Utara, Kota Sibolga. Sampel yang memenuhi kriteria inklusi sebanyak 127 orang kader posyandu balita. Data diolah secara deskriptif dan analitik menggunakan uji Chi-square. Hasil penelitian menunjukkan bahwa hanya sebanyak 18,89% kader posyandu memiliki kategori tingkat pengetahuan yang baik terkait gizi pada 1000 HPK, sisanya kurang (19,69%) dan  cukup (61,42%). Hanya 11,81% dari kader posyandu memiliki sikap yang baik terkait gizi pada 1000 HPK, sisanya cukup (88,19%). Jumlah kader dengan tingkat pengetahuan tentang masalah gizi stunting pada kategori kurang hampir sama jumlahnya dengan kategori cukup, berurut-urut sebesar 44,09% dan 55,91%. Tidak ada kader yang memiliki sikap kategori kurang tentang gizi pada 1000 HPK dan tingkat pengetahuan kategori baik tentang stunting. Sebanyak 66,93% kader sudah pernah memperoleh informasi terkait gizi pada 1000 HPK dan 93,70% kader sudah pernah memperoleh informasi tentang masalah gizi stunting. Sebagian besar sumber informasi berasal dari petugas kesehatan. Pengetahuan tentang gizi pada 1000 HPK secara signifikan berhubungan dengan sikap terkait gizi pada 1000 HPK dan pengetahuan terkait masalah gizi stunting. Kader yang memiliki tingkat pengetahuan baik terkait gizi pada 1000 HPK cenderung memiliki sikap yang baik juga terkait hal tersebut dan memiliki pengetahuan yang cukup terhadap stunting.
