Abstract

Buah naga super merah memiliki kandungan betasianin yang bermanfaat sebagai antioksidan. Penelitian ini bertujuan untuk mengetahui hasil uji hedonik sediaan instan buah naga super merah (Hylocereus costaricensis) dengan pemanis alami daun stevia (Stevia rebaudiana Bertoni M). Jenis penelitian ini adalah kuantitatif deskriptif. Responden yaitu mahasiswa semester 2 Jurusan Jamu Poltekkes Surakarta sebanyak 30 orang. Teknik sampel yang digunakan purposive sampling dengan kategori tidak terlatih. Instrumen yang digunakan adalah menggunakan angket uji hedonik. Hasil uji hedonik dari indikator warna sebanyak 63,4% responden sangat suka, indikator aroma sebanyak 46,7% responden tidak suka, indikator rasa sebanyak 46,7% menyatakan suka sedangkan dari indikator tekstur 50% responden suka. Penambahan maltodekstrin dengan pemanasan 1400C dalam pembuatan sediaan instan menyebabkan warna instan menjadi merah muda, membuat rasa instan sedikit hambar, dan membuat tekstur instan menjadi serbuk halus sedangkan dengan penambahan ekstrak buah naga super merah terlalu banyak menyebabkan aroma langu pada instan.

Abstract

ABSTRAK Biji dan kulit petai mengandung flavonoid yang berfungsi sebagai antioksidan. Tujuan penelitian yaitu mengetahui potensi antioksidan ekstrak etil asetat pada biji dan kulit petai yang dinyatakan dengan Inhibitor Consentration 50 (IC50). Pengujian aktivitas antioksidan menggunakan metode DPPH (1,1-Difenil-2-Pikrilhidrazil) secara spektrofotometri UV-Vis pada panjang gelombang 518 nm. Hasil penelitian menunjukkan ekstrak etil asetat biji petai mempunyai potensi aktivitas antioksidan lemah dengan nilai IC50 sebesar 274,702 ppm sedangkan ekstrak etil asetat kulit petai aktivitas antioksidannya tidak aktif dengan nilai IC50 sebesar 685, 857 ppm. Aktivitas antioksidan pada biji petai disebabkan adanya antioksidan enzimatis sehingga tidak dapat terdeteksi dengan metode DPPH dan kandungan utamanya protein, karbohidrat, mineral,asam amino yang cukup tinggi. Aktivitas antioksidan ekstrak etil asetat kulit petai menunjukkan tidak aktif, karena senyawa aktif yang berfungsi sebagai antioksidan tidak larut dalam pelarut etil asetat. Aktivitas antioksidan yang tidak terdapat pada kulit petai disebabkan kandungan utamanya yaitu pati dan serat. Kesimpulan penelitian adalah ekstrak etil asetat biji petai memiliki aktivitas antioksidan, sedangkan ekstrak etil asetat kulit petai tidak memiliki aktivitas antioksidan. Kata kunci: biji petai, kulit petai, antioksidan, DPPH, IC50 ABSTRACT Petai seeds and petai shell are contain flavonoids that act as antioxidants. The purpose of research is to know the potential of the ethyl acetate extract antioxidant in seeds and petaishell expressed by Inhibitor consentration 50 (IC50). Testing of antioxidant activity using DPPH (1,1-Diphenyl-2-picrylhydrazyl) UV-Vis spectrophotometry at a wavelength of 518 nm. The results showed the ethyl acetate extract petai seeds have potential antioxidant activity weak with IC50 value of 274.702 ppm while the ethyl acetate extract of petai shell antioxidant activity is not active with IC50 values of 685, 857 ppm. Antioxidant activity in seeds due to their antioxidant enzymatic petai so it can not be detected by DPPH and the main content of protein, carbohydrates, minerals, amino acids are quite high. The antioxidant activity of ethyl acetate extracts of petai shell showed inactive , because the active compounds that function as antioxidants are not soluble in ethyl acetate solvent. The antioxidant activity which is not present in petai shell due to the content of its main substance are starch and fiber. Conclusion of the study is the ethyl acetate extract petai beans have antioxidant activity, while the ethyl acetate extract of petai shell does not have antioxidant activity. Abstract

Background: Indonesia ranks 14th with COVID-19 cases in the world. The immune system could be a bulwark against COVID-19. Exercise, balanced nutrition, and herbal deformity is way to maintain and improve the work of the immune system. The immune system could be increase with a potential of ginger, turmeric, lime, and galangal. This training aims to train mothers of family empowerment and welfare in RT 02/RW 09 Danguran Village about traditional ingredients to increase endurance. Methods: Training on immune-enhancing ingredients to mothers of family empowerment and welfare by Pharmacy students from the Health Polytechnic of the Ministry of Health of Surakarta on Friday 11 February 2022 at RT 02/RW 09, Danguran Village, South Klaten, and a T-test was carried out with the result of pretest and post test. Results: The pre-test result was 84.23% and the post-test was 95.38% with the t-test result was 0.02. These results indicate a significant change in knowledge between before and after being given training because t-count <0.05. Conclusion: There is an increase in the knowledge of mothers of family empowerment and welfare RT 02/ RW 09 Danguran Village about traditional ingredients to increase endurance.

Abstract

Food production must meet needs that continue to increase along with population growth. One of the noodle processing food production places in Jember Regency is Mie Ujang. This industrial product was successfully marketed as many as 524 bags (13,350 kilograms) in 2018. This research aims to determine effective plans and implementation to increase creativity and innovation in business feasibility to compete with competitors. This research uses qualitative methods with data collection techniques, namely interviews and documentation. Data sources include primary data and secondary data. This research shows that Mie Ujang is very suitable for continuing to carry out its business processes because it has an average production volume of 24 bags or around 600 kg per day. Mie Ujang should improve its marketing so that its market reach is wider.

Abstract

The climate in Indonesia, which tends to be hot due to sunburn, can cause various skin problems. Although sunlight can be beneficial in the synthesis of vitamin D for the body, its adverse effects can also cause atrophy, pigment changes, wrinkles, sunburn, and malignancy (cancer), so the use of sunscreen is essential. The development of cosmetics now leads to natural ingredients, one of which is corn cobs. Corn cobs contain phenolic compounds that have been proven to have the ability as antioxidants that play a role in preventing the adverse effects of sunlight. This study aimed to determine the extract and water fraction SPF value and corncob chloroform originating from the Klaten area. This research was conducted in-vitro using UV-Vis spectrophotometry to assess the SPF of the test material. The results showed that the average SPF of the extracted gel, chloroform fraction gel, and corncob water fraction gel were 9.92; 9.56; 9.08, which means that corn cobs have sunscreen with a maximum SPF value category (SPF between 8-15).
