Abstract

This study aims to determine the presence of borax and formalin in snacks for junior high school children in Sukoharjo Regency, namely cilok and meatballs. The method used in this study uses a qualitative purposive method. This research consists of 2 stages. First, sampling and determination of the sample was carried out using a stratified survey method with 3 levels, the first level was to determine the sub-district, the second level was to determine the number of junior high schools and the third level was to determine the sample of cilok and meatballs. Sampling was determined in 6 selected sub-districts from the 12 sub-districts, 4 junior high schools were selected. There were 24 samples of snacks, consisting of 13 samples of cilok and 11 samples of meatballs. The results showed that there was no borax in the meatball or cilok samples. There were 9 out of 13 samples of cilok indicated containing formalin, while in meatballs there were 7 out of 11 samples indicated containing formalin. The second stage is testing samples with laboratory tests using turmeric extract for the borax test and KMnO4 for the formalin test. The conclusion of this study, there are still some meatball and cilok traders using hazardous materials such as formalin to preserve their wares.

Abstract

The purpose of this study was to determine the quality of essential oils from wet clove handles and dry clove handles. The experimental design in this study was a completely randomized design (CRD) with 2 treatments, namely wet handle and dry handle with 3 replications in each treatment. The results of this study showed that there was a significantly different interaction (p<0.05) including, water content, yield, refractive index, eugenol content between wet and dry clove handle treatments and the interaction did not have a significantly different interaction (p>0.05) including weight types between wet and dry clove handle treatment with moisture content value of wet clove handle 63.67% and dry clove handle moisture content 12.96%, essential oil yield value of wet clove handle 0.16% and essential oil yield of dry clove handle 0, 39%, the value of the specific gravity of wet clove handle essential oil 1044.22 g/ml and the dry clove handle essential oil value of 1042.22 g/ml, the value of the refractive index of the wet clove handle essential oil 1.471 and the refractive index of the dry clove handle essential oil 1.473, the value of eugenol content of wet clove handle essential oil 95.56% and dry clove handle essential oil 94.73%. The best essential oil treatment was found in the wet clove handle treatment with a value of 95.56% eugenol content.Keywords: clove handle, chemical characteristics, essential oil

Abstract

Banyaknya buah mangga yang dijumpai di Indonesia menjadikan komoditas hasil pertanian ini layak untuk dipelajari potensinya dalam berwirausaha. Daging buah mangga mengandung berbagai zat gizi dan rasa yang manis sehingga dapat diolah menjadi banyak produk, seperti es krim. Pembuatan es krim mangga menjadi upaya yang tepat dalam menghasilkan produk potensial yang menguntungkan. Potensi ini sebaiknya dipahami oleh siswa SMK sebagai penerus generasi bangsa yang dapat menciptakan lapangan pekerjaan. Salah satu cara dalam memberi pemahaman kepada siswa SMK adalah berupa kegiatan sosialisasi tentang potensi wirausaha es krim mangga. Pada kegiatan ini tim pengabdian bermitra dengan SMKN 1 Kedawung Sragen yang memiliki visi dan misi serupa dengan tujuan kegiatan. Kegiatan ini merupakan pemicu semangat siswa untuk menghasilkan sesuatu yang bermanfaat dari segi ekonomi. Metode yang digunakan dalam kegiatan ini antara lain menyelenggarakan sosialisasi dan demonstrasi cara pembuatan es krim mangga serta menyampaikan potensi keuntungan dari berwirausaha es krim mangga. Dari pelaksanaan kegiatan pengabdian masyarakat, dapat dikatakan bahwa mayoritas para siswi SMKN 1 Kedawung Sragen mengalami peningkatan pemahaman terkait karakter buah mangga, olahan es krim mangga dan potensi wirausahanya, yang ditunjukkan dengan jawaban post-test yang diadakan oleh tim pengabdian masyarakat. Kata kunci: olahan buah mangga, es krim mangga, wirausaha ABSTRACT The large number of mangoes found in Indonesia makes this agricultural commodity worth studying for its potential for entrepreneurship. Mango fruit flesh contains various nutrients and tastes sweet so it can be processed into many products, such as ice cream. Making mango ice cream is the right way to produce profitable potential products. This potential should be understood by SMK students as the next generation of the nation who can create jobs. One way to provide understanding to vocational students is in the form of outreach activities about the entrepreneurial potential of mango ice cream. In this activity, the community service team partnered with SMKN 1 Kedawung Sragen, which has a vision and mission similar to the objectives of the activity. This activity is trigger the enthusiasm of students to produce something that is useful from an economic point of view. The methods used in this activity include organizing socialization and demonstrations on how to make mango ice cream and conveying the potential benefits of mango ice cream entrepreneurship. From the implementation of community service activities, it can be said that the majority of female students at SMKN 1 Kedawung Sragen experienced an increased understanding of processed mango ice cream and its entrepreneurial potential, as indicated by the answers to the post-test conducted by the community service team. Abstract

Budidaya jamur tiram yang berlimpah menginisiasi pemilik mengolah hasil panen menjadi produknugget (siap masak/ ready to cook). Nugget jamur tiram diproduksi setiap hari dengan jumlah ±100packs. Distribusi produk dikirimkan ke pedagang pasar dan warung penjual bahan mentah.Peminatan terhadap nugget jamur tiram cukup baik dilihat dari peningkatan jumlah produksi setiapharinya dan adanya tambahan pemesanan khusus (pre-order). Nugget memiliki sifat mudah rusakkarena mengandung zat gizi yang dapat dimanfaatkan mikrobia patogen sebagai tempat tumbuh.Nugget dikemas menggunakan plastik mika yang memiliki potensi tercemarnya produk akibatkurang kedapnya kemasan. Hal ini dikarenakan mitra belum memiliki pengetahuan cara mengemasproduk dengan tepat. Perlu adanya perbaikan teknik mengemas untuk melindungi produk sertapelabelan untuk meningkatkan daya tarik konsumen serta perluasan distribusi. Kegiatan pengabdiandimulai dengan sosialisasi cara pengolahan nugget dengan benar sesuai dengan prinsip caraproduksi pangan olahan yang baik (CPPOB), pendampingan pengemasan vakum dan pembuatandesign label kemasan yang menarik. Hasil kegiatan sosialisasi telah dilakukan, antusiasme pesertacukup baik dengan adanya tambahan pengetahuan cara penanganan bahan baku dan bahantambahan pada produk dengan tepat. Peserta menyadari untuk menjaga kualitas produk perludilakukan takaran yang sesuai untuk menjaga rasa nugget, selain itu kebersihan pekerja dan sanitasilingkungan juga perlu dijaga. Selanjutnya setelah produk jadi harus dikemas secara tepat, pesertamelakukan pengemasan vakum untuk meminimalisir kontaminasi udara. Produk juga diberi labelsebagai informasi ke konsumen dan bertujuan memperluas pemasaran. Kegiatan diakhiri dengansosialisasi mengenai pentingnya strategi pemasaran sebagai upaya perluasan pasar. Abstract

Nasi beras masih menjadi makanan pokok favorit untuk masyarakat Indonesia.  Jika belum mengkonsumsi nasi serasa belum makan.  Salah satu program yang dicetuskan oleh pemerintah untuk mengubah pola pikir tersebut adalah dengan adanya program diversifikasi pangan yaitu pola penganekaragaman konsumsi pangan.  SMK Negeri 2 Sukoharjo merupakan salah satu sekolah kejuruan yang memiliki jurusan Teknologi Pengolahan Hasil Pertanian (TPHP).  Jurusan ini sangat berkaitan dengan program diversifikasi pangan sebagai salah satu cara meningkatkan ketahanan pangan.  Oleh karena itu, siswa di jurusan ini perlu dibekali dengan pemahaman dan keterampilan tentang diversifikasi pangan pemanfaatan pangan lokal, terutama Kabupaten Sukoharjo.  Metode kegiatan yang dilakukan melalui beberapa tahap yaitu :  pertama, penyuluhan dan pemberian materi terkait diversifikasi pangan dan pengolahan pangan lokal; kedua, pelatihan dan praktek pembuatan tepung mocaf; ketiga, evaluasi kegiatan penyuluhan dan pelatihan yang telah dilakukan melalui pembandingan hasil pretest dan postest. Apabila terjadi peningkatan pemahaman peserta, yaitu peningkatan nilai menjadi ? 70  maka kegiatan ini dikatakan berhasil. Hasil menunjukkan nilai rata-rata pretest 60 dan nilai akhir postest 85,5.  Hal ini menunjukkan program ini berhasil karena mengalami peningkatan nilai > 70.

Abstract

Pengabdian kepada masyarakat (PkM) ini bertujuan untuk meningkatkan gizi makanan anak yang dijajakan pada 2 lingkungan sekolahan (SD dan SMP) yang ada di wilayah RW 07 Kelurahan Kartasura. Tim PkM terdiri dari 3 orang dosen dan dibantu oleh 2 orang mahasiswa. Mitra adalah ibu-ibu anggota Kelompok Bersama (Kube) “Wardiyan” yang berada di RW 07 Kelurahan Kartasura yang sebagian besar berwirausaha sebagai pembuat jajanan anak. Kegiatan yang dilakukan oleh tim PkM terdiri dari 2 tahapan. Tahap pertama berupa penyuluhan dan demontrasi pembuatan permen jeli tomat kemudian dilanjutkan dengan tahap ke 2 berupa praktek mendiri dengan pendampingan. Kegiatan pengabdian mampu meningkatkan pengetahuan (67,02%) dan keterampilan (100%) dari peserta. Luaran produk berupa permen jeli tomat dalam kemasan sachet dan toples yang siap jual.

Abstract

ABSTRACTThe edible film is a thin layer that can be produced from edible macromolecules. One of the ingredients for the edible film is gelatin from chicken bone waste which can be obtained from slaughterhouses. The edible film can be combined with other components such as antimicrobial substances found in tea plants. This study aims to determine the effect of variations in heating temperature and the addition of tea extract as an antimicrobial edible film. Research parameters include water content, total phenol, and zone of inhibition. The experimental design used was a factorial completely randomized design with 2 treatment factors, namely X = additional concentration of tea leaf extract 0%, 20%, 25%, 30%, and 35% and Y = variations in heating temperature of 70⸰C and 80⸰C, each treatment was repeated 2 times. The data obtained were analyzed by ANOVA and if there was a significant difference between treatments, it was continued with the DMRT test (Duncan Multiple Range Test). The results of this study indicate that variations in heating temperature have no significant effect on water content, total phenol, and antimicrobial edible film inhibition zone. The highest water content value was 21.12% at a heating temperature of 70⸰C and the tea extract was 30%, the highest total phenol value was 13.01 g GAE/g obtained at 30% tea extract concentration and the highest inhibition zone was at 30% tea extract concentration. with a value of 1.97 cm.Keywords: Antimicrobial edible film, tea extract, gelatin, heating temperature

Abstract

Breadfruit is a fruit that grows widely in Indonesia. The use of breadfruit is still very limited, namely fried or boiled as a snack. Breadfruit has a high carbohydrate content, resulting in quite a lot of starch extraction. One way to increase the use of breadfruit is to process it into breadfruit starch. Breadfruit starch has a high amylose and amylopectin content so it can be used as a chewing agent in cendol production. The aim of this research is to obtain the ratio of breadfruit starch in making cendol, by testing water content and total dissolved solids. The data obtained were analyzed using One Way Anova and to determine whether there were differences in treatment, it was continued with the Duncan Multiple Range Test (DMRT) with a significance level of 5%. The results of the research show that the correct ratio in making cendol to substitute breadfruit starch would be 25% rice flour and 75% breadfruit starch. The addition of breadfruit starch to making cendol has a significant effect on the water content of 81.37% -84.45%. The addition of breadfruit starch did not significantly differ from the total amount of dissolved solids with a value of 6.33-6.67 brix.

Abstract

Durian fruit produces waste in the form of skin and seeds that are often not utilized. Durian seeds contain carbohydrates, fats, proteins, and various other nutrients, making them suitable for use as flour in various food products. Treatment of durian seeds with thermal methods affects the browning of durian seed flour. The use of sodium metabisulfite plays a role in improving the quality of flour by deactivating enzymes that cause color changes and inhibiting microbial growth. This study used a Completely Randomized Design (CRD) with variations in sodium metabisulfite soaking time (Control, 2 hours, 2.5 hours, 3 hours, 3.5 hours) Repetition 2 times and data collection in duplicate. The stages of the study include, preparation of durian seeds, soaking, drying, grinding, and analysis of physical and chemical characteristics. The chemical characteristics of the research results showed that the water content of durian seed flour ranged from 9.53% - 13.95%. The physical characteristics of the research results showed that the Whiteness Index (WI) value ranged from 68.60 - 82.97%, there was a significant increase in WI with increasing soaking time. Water Binding Capacity (WC) ranged from 152.1 - 228.8 g/g. Oil Binding Capacity (IH) ranged from 86.17 - 109.7 g/g. Bulk density ranged from 0.77 - 0.59 g/ml. Soaking durian seeds in sodium metabisulfite solution significantly affected the physical and chemical characteristics of the resulting flour. Soaking for a longer time increased the whiteness index, water binding capacity, oil binding capacity, and decreased the bulk density of durian seed flour.
