Abstract

Lokio (Allium chinense G Don) is widely used as seasoning in cooking because it contains amino acids that contribute to taste. Lokio is easily damaged during physical and chemical storage, affecting its quality. The study aims to determine the chemical changes of lokio leaves during storage. This study used a randomized design group with 3 temperature treatments, namely room temperature (30 ⁰C), air conditioning (20 ⁰C), and refrigerator (10 ⁰C). Weight loss was tested using a digital scale, color was tested using a chromameter, water content was tested using thermogravimetry, fat using Soxhlet, protein using Kjeldal, and ash using a muffle furnace. Reducing sugars were tested using the DNS method, amino acids using HPLC, and volatile compounds using GC MS Headspace. The data was analyzed using ANOVA then continued with Duncan test if the treatment has a significant difference (p < 0.05). In the room temperature treatment, the best treatment was obtained for 2 days of storage, AC storage for 4 days, and refrigerator temperature for 14 days of storage. Of all the best treatments for each storage temperature, the best treatment was obtained in the storage treatment using AC temperature (20 ⁰C) for 4 days. The treatment found that Lokio has a water content of 92.247%, fat of 2.47%, protein of 19.05%, ash of 14.20%, carbohydrates of 64.28%, and reducing sugar of 11.24 mg/ml. The major volatile compound content of the total storage is trimethyl sulfide and glutamic acid is the most amino acid in lokio leaves.

Abstract

Anemia and stunting remain a major challenge in public health issues, especially in pregnant women and toddlers. Cucurbita moscatta ‘Butternut’ (Labu susu), which is rich in essential micronutrients uch as Beta Carotene (provitamin A), folic acid, iron, and zinc, can be processed into highly potent functional foods. Aside from being an excellent source of alternative carbohydrates, it can also meet the micronutrient needs to support the prevention of Anemia and stunting. This activity was carried out at the Community-Friendly Green Open Space (RTH - Ruang Terbuka Hijau) in the Bener sub-district, Tegalrejo district, Yogyakarta City, with the aim of analyzing the taste acceptability of processed bottle gourd products among the target groups. The implementation methods included socialization, taste testing, and acceptability analysis of three processed products based on Bottle Gourd: Nutrient-Rich Baby Porridge, High-Protein Mud Cake (Kue Lumpur), and Compote for Pregnant Women (Kolak Ibu Hamil). The activity involved 50 panelists who assessed the color, aroma, taste, texture, and overall acceptance of the three processed products using a six-level hedonic scale. The results showed that all three products were well-received. For all indicators ( Color, Aroma, Taste, and Texture), all products received scores above 4.6, and the overall acceptance was above 5. The overall acceptance score for the High-Protein Mud Cake (5.22 ± 0.6), the Kolak for Pregnant Women (5.18 ± 0.7), and Nutrient-Rich Baby Porridge (5.00 ± 0.8). The conclusion of this research is that panellists “like” and “accept / receive” all three products. This activity had a positive impact on increasing public knowledge regarding the diversification of local food and served as a strategic rocessed products; step in the effort to prevent anemia and stunting at the family level through the fulfillment of essential micronutrients.

Abstract

This paper examined the effect of obedience pressure on real earnings management. It also also investigated whether the relationship between obedience pressure and real earnings management is moderated by individual’s religiosity level. Religiosity is an individual believed as sources of ethical value that would normatively affect the management ethical decision. Prior studies have documented that management decision could be influenced by obedience pressure, however, there is limited study that specifically tested the effects of obedience pressure and religiosity on real earnings management. This study utilized a laboratory experiment with a 2 x 2 (obedience pressure x level of religiosity) factorial design involving 89 participants. This study found that individuals under obedience pressure were more likely to perform real earnings management than control group. However, religiosity did not significantly mitigate the association between obedience pressure and real earnings management. There is no significant effect of individual’s religiosity level on real earnings management decision.
