Abstract

This study is the first step in developing coconut (Cocos nucifera) tombong which has not been utilized by society. The purpose of this study is to obtain a proper drying time in producing a nutrient-grade coconut tombong flour. This study used an experimental design with a complete randomized design where the coconut tombong was dried at 50°C for 6,7 and 8 hours. Furthermore in the analysis of content carbohydrate, protein, fat, ash content, crude fiber and water content. The results of the analysis showed that coconut tombong flour with 8 hours drying produced the best of coconut tombong flour compared with 6 and 7 hours drying, with lower moisture content 11, 7353%, fat 8,1666%, protein 11,7158%, ash content 7,4917% and crude fiber 11,8421%. The results of statistical test show that the drying treatment of 6, 7 and 8 hours gives a very significant difference to the average chemical properties (carbohydrate, moisture content, protein, fat, ash content, crude fiber) coconut tombong flour with Fvalue > Ftable 5% or significance value of all treatments is smaller than alpha value 0.05. Based on these results, it can be concluded that coconut tombong  flour which through the drying process at 50°C for 8 hours (L3) is the best treatment among two other treatments (L1 and L2) which has the potential to be further developed as various substitution materials food products.

Abstract

Dusun Wainuru dan Dusun Ujung Batu merupakan wilayah kerja Puskesmas Perawatan Waai, Kecamatan Salahutu, Kabupaten Maluku Tengah dengan permasalahan stunting yang tinggi. Stunting dapat disebabkan oleh multi faktor seperti angka kecukupan gizi anak, faktor lingkungan dan ekonomi/ pendapatan keluarga. Kesadaran orang tua untuk membawa anak ke Posyandu masih kurang. Akses air bersih, bergantung pada air hujan dan membeli air ketika musim kemarau. Terbatasnya pendapatan masyarakat karena sebagian besar masyarakat berprofesi sebagai nelayan yang bekerja musiman sesuai keadaan cuaca. Jenis tanaman perkebunan hanya berupa tanaman ubi jalar, singkong, pisang yang harganya murah di pasaran. Solusi yang telah dilaksanakan bersama mitra adalah 1). Pemeriksaan air bersih dan hasilnya masih memenuhi persyaratan fisik dan kimia air, namun ada 2 sampel yang belum memenuhi persyaratan mikrobiologi yaitu ditemukan keberadaan E.coli melebihi ambang batas; 2). Pemeriksaan kecacingan menunjukan bahwa dari 26 sampel feses, ada 7 sampel yang positif telur cacing Ascaris lumbricoides. 3). Kegiatan Penyuluhan bagi kader dan ibu rumah tangga tentang stunting dan pengelolaan keuangan keluarga dengan menggunakan metode ceramah dan dialog interaktif. Hasil penyuluhan menunjukan bertambahnya pengetahuan ibu tentang stunting dan pengelolaan keuangan keluarga.

Abstract

Sosialisasi manfaat garam beriodium, dampaknya bagi kesehatan dan cara penggunaannya serta uji kadar iodium pada garam di Desa Allang Kecamatan Leihitu Barat dilakukan berdasarkan permasalahan dari kelompok mitra yaitu pengetahuan Ibu-ibu rumah tangga yang masih rendah tentang manfaat garam beriodium bagi kesehatan dan cara penggunaan garam beriodium oleh ibu-ibu rumah tangga masyarakat di Desa Allang Kecamatan Leihitu Barat sehingga berdampak pada perilaku hidup sehat masyarakat Desa Allang Kecamatan Leihitu Barat. Juga kurangnya partisipasi ibu-ibu Desa Allang Kecamatan Leihitu Barat untuk mengikuti kegiatan sosialisasi dari petugas kesehatan sehingga mereka tidak tahu jenis-jenis garam apa saja yang mengandung iodium dan penggunaanya dalam bahan makanan. Tujuan PKM adalah untuk meningkatkan pengetahuan Ibu-ibu tentang manfaat garam beriodium dan dampaknya bila tubuh mengalami kekurangan iodium, cara menggunakannya, dan praktek uji kandungan iodium menggunakan test kit iodium. Metode yang digunakan adalah penyuluhan/sosialisasi dan praktek uji kadar iodium. Metode yang digunakan dapat dijabarkan sebagai berikut: 1) Memberikan penyuluhan tentang manfaat garam beriodim, cara penggunaanya, dan pengaruhnya terhadap kesehatan, 2) praktek uji kadar iodium pada beberapa jenis garam oleh oleh Ibu-ibu rumah tangga agar Ibu-ibu rumah tangga dapat membedakan garam yang mengandung iodium dan yang tidak mengandung iodium. Rencana kegiatan ini dilakukan selama enam bulan. Luaran wajib yang ditargetkan adalah publikasi pada e-journal LPM UKIM, pada media massa cetak lokal online koran Maluku News, Vidio kegiatan telah diupload pada YouTube Sasendi Rehena dan ada peningkatan pengetahuan Ibu-ibu rumah tangga tentang manfaat garam beriodium bagi kesehatan dan cara penggunaannya.

Abstract

Kegiatan KKN-PPM di desa Kamal Kabupaten Seram Bagian Barat dilakukan berdasarkan permasalahan dari kelompok mitra yaitu kasus gizi buruk dan stunting meningkat bahkan pada tahun 2019 terjadi kematian pada salah satu balita dengan status gizi buruk. Hasil wawancara diperoleh informasi bahwa sebagian besar ibu-ibu kurang memahami tentang gizi buruk dan stunting. Cara pemberian MP-ASI juga belum sesuai dengan yang direkomendasikan, dan cakupan ASI  eksklusif masih rendah. Tujuan kegiatan KKN-PPM adalah untuk meningkatkan pengetahuan ibu tentang gizi buruk dan stunting, cara pemberian MP-ASI yang sesuai, manfaat ASI eksklusif melalui kegiatan penyuluhan, praktek, dan pengukuran status gizi. Metode yang digunakan adalah Pengukuran status gizi anak balita dengan indeks Antropometri, Penyuluhan, dan Praktek mengolah MP-ASI pangan lokal. Hasil yang diperoleh adalah: 1) Status gizi anak balita dengan indeks Antropometri BB/U kategori gizi baik berjumlah 56 orang (70%), gizi kurang 20 orang (25%), dan gizi  buruk  4 orang (5%). Status gizi anak balita dengan indeks Antropometri TB/U kategori stunting (Pendek dan sangat pendek) berjumlah 18 orang (22,5%), dan kategori tidak stunting berjumlah 62 orang (77,5%), 2) Rata- rata pengetahuan ibu pada pre-test 78,494 dan post-test 94,40. Hasil uji T-Test menunjukkan bahwa ada perbedaan pengetahuan ibu pada pre-test dengan post-test. 3) Praktek mengolah pangan lokal noneras dapat meningkatkan kreativitas ibu-ibu untuk menciptakan menu baru dan mengolah MP-ASI yang bergizi, dan bervariasi, yang sesuai dengan umur balita.

Abstract

Acceptance of food is less, can be caused by various factors both internal that the patient's health condition, or external that is the taste of food, food appearance and food service. The purpose of this research is to know factors - factors related to Acceptance of Food by Patients in RSUD dr .H. Isaac Umarella. The research method used is analytical method with Cross Sectional approach. Sampling using Total Sampling with sample size is 52 samples. Data collection using questionnaires and observation sheets. Data analysis included univariate and bivariate analyzes using computerized. The result of bivariate analysis showed that there was correlation between food taste and food acceptance by patient (P = 0,007), there was relationship between food appearance with food acceptance by patient (P = 0,004), there was no relation between food service and food acceptance by patient = 0.323). The conclusion in this research there is relationship between food taste and food appearance with food acceptance by patient and there is no relation of food service with acceptance of food by patient in RSUD dr. H. Ishak Umarella Year 2017. Patients are expected to consume food provided by the hospital until the nutritional value is fulfilled and accelerate healing.

Abstract

The degree of public health can be seen from various factors which include indicators of life expectancy, mortality rate, number of visits and nutritional status of the community, especially in toddlers. Toddlers are the age group that most often suffers from malnutrition. Malnutrition or underweight is a toddler's failure to achieve the ideal weight, which can then affect the growth of height. This study aims to determine the factors associated with the incidence of malnutrition in children under five in the working area of the East Waru Seram Health Center. The type of research used is Cross Sectional with a sample of 157 toddlers in the working area of the Waru Health Center. Statistical test using chi-square test using univariate and bivariate analysis. The results of bivariate analysis showed that there was a relationship between exclusive breastfeeding (p = 0.044), consumption patterns (p = 0.44), and environmental sanitation (p = 0.035) with the incidence of malnutrition. The conclusion of this study is that there is a relationship between exclusive breastfeeding, food consumption patterns and environmental sanitation with the incidence of malnutrition in children under five in the working area of the East Waru Seram Health Center. Suggestions for mothers to offer exclusive breastfeeding and always follow posyandu activities.

Abstract

Stunting (short body) in toddlers is a manifestation of chronic nutritional deficiency. Stunting in toddlers needs special attention because it can hamper the physical and mental development of children. Stunting is associated with an increased risk of illness and death as well as stunted growth of motor and mental abilities. There are many factors that cause stunting, including giving MP-ASI which is too early for babies, namely 6 months. Children who are given complementary feeding too early are at risk of stunting. The purpose of this study was to determine the relationship between early complementary feeding and the incidence of stunting in under-five children in Kamal Village, West Seram Regency. Methods This research uses descriptive research using a cross sectional design. The study was conducted in December 2020. Sampling was done by purposive sampling method and the number of samples was 80 children under five. The data were analyzed by using the chi square test. The results showed that there was a relationship between early complementary feeding and the incidence of stunting in children under five in Kamal Village with a value of 0,025 0,05. Suggestions to health workers to increase mother's knowledge about giving the right MP-ASI for babies through counseling and training. Keywords: Stunting, Complementary Foods for Early Breastfeeding, Toddlers

Abstract

Dental caries in school children can cause children to experience loss of chewing power and digestion disruption, which results in disruption of children's health. This condition will certainly reduce the frequency of children's attendance to school, disrupt the concentration of learning, affect the child's appetite. One of the causes of dental caries in school children is the pattern of consumption of cariogenic foods because at this age children usually like snacks and drinks as they wish. The purpose of this study was to determine the relationship between the type and frequency of consuming cariogenic food with the incidence of dental caries in SD Negeri 5 Waai District, Central Maluku. Method This study uses a descriptive study using a cross sectional design. Sampling with a purposive sampling method. Data were analyzed using the chi square test. The results showed there was a relationship between the type and frequency of consuming cariogenic food with the incidence of dental caries in students of SD Negeri 5 Waai, Central Maluku, with avalue of ρ = 0.027 and p = 0.028 α 0.05. The conclusion that the type and frequency of consuming cariogenic food is related to the incidence of dental caries in students of SD Negeri 5 Waai, Central Maluku Regency. It is recommended to the school to be able to seek a healthy canteen at school and counseling oral health. Also for parents to pay attention to the habit of consuming cariogenic food by elementary school children while at school or at home.Keywords: Consumption pattern; cariogenic food; dental caries

Abstract

Malnutrition is a condition where a person is declared malnourished or his nutritional status is below the average standard. Based on data from the Tawiri-Laha Ambon Health Center, there are still many children under five who are malnourished. This study aims to determine the factors associated with the incidence of malnutrition in children under five at the Tawiri-Laha Health Center Ambon. This research uses descriptive analytic research design with cross sectional approach. The number of samples is 40 children aged 3-5 years. The sampling technique was using purposive sampling technique. The data were analyzed using the Chi-Square Test statistical test. The results showed that 1) there was a relationship between family income and malnutrition, p value = 0.000, 2) there was a relationship between diet and malnutrition, p value = 0.001. It was concluded that there was a relationship between family income and diet with the incidence of malnutrition in children under five at the Tawiri-Laha Health Center Ambon. It is hoped that the puskesmas will further improve health programs for the community.Keywords: Malnutrition, Income, Diet

Abstract

Breast milk is the only food that is best for babies, because it has the most complete nutritional composition, exclusive breastfeeding is highly recommended. Exclusive breastfeeding is breastfeeding for 6 months without other additional food from birth until the baby is 6 months old. Many factors affect exclusive breastfeeding, one of which is the mother's characteristics, such as age, education, occupation and knowledge of the mother. The purpose of this study was to determine the relationship between maternal characteristics and exclusive breastfeeding for infants aged 0-6 months in Kamal Village, West Seram Regency. Methods This research uses descriptive research using a cross sectional design. Sampling with total sampling method. The data were analyzed by using the chi square test. The results showed that the mother's characteristics consisting of age, education and mother's knowledge were not related to exclusive breastfeeding for infants aged 0-6 months in Kamal Village with a value of 0.05. Occupational variables related to exclusive breastfeeding with p value = 0.020 0.05. The conclusion is that the mother's age, education and knowledge are not related, while work is related to exclusive breastfeeding for infants aged 0-6 months in Kamal Village. Suggestions to health workers to increase mother's knowledge about the benefits of exclusive breastfeeding through counseling.Keywords: age, education, occupation, knowledge, exclusive breastfeeding
