Abstract

One of the problems that occurs in teenagers is obesity. One way to overcome the problem of obesity in teenagers is to consume healthy and nutritious food. The aim of this research was to determine the sensory evaluation and nutritional content (carbohydrates) of pudding with the addition of purple sweet potato. This research used a Completely Randomized Design (CRD) with three formulations and four repetitions. The three formulations used in making pudding with the addition of purple sweet potato have the formulations (85 grams), (80 grams) and (75 grams). Laboratory tests are carried out to determine nutritional content (carbohydrates). The results of this research show that the best purple sweet potato pudding with palm sugar is the addition of 85 grams of purple sweet potato which has a nutritional content (carbohydrate) of 12.94%.

Abstract

One of the eating behaviors in teenagers is the habit of snacking in the form of snacks. Snacks have a negative impact if consumed excessively, namely they can cause excess energy intake. The aim of this research was to determine the sensory evaluation and nutritional content of tilapia fish meatballs with the addition of gotu kola leaf flour. This research used a Completely Randomized Design (CRD) with four treatments and three repetitions. Four treatments were used in making fish meatballs with the addition of gotu kola leaf flour, namely 10 gr; 15 gr; 20 gr; 25 gr. The results of the research showed that the best fish meatballs were the treatment concentration of 5% gotu kola leaf flour which had an energy content of 223.37 kcal, protein 45.2 grams, fat 0.29 grams, carbohydrates 10.08 grams, water content 62.8%, ash content 1.33% and fiber 2.36%.

Abstract

Anemia is a condition where the number of red blood cells or hemoglobin levels in red blood cells is below the level that is considered normal. Knowledge can be increased through nutrition education and can be assisted by the media. The aim of this research is to determine the effect of nutrition education on knowledge about anemia prevention using flipchart media among junior high school students at the Istiqomah Islamic boarding school in Samarinda. Pre-experimental research design with One Group Pretest-Posttest design with 55 respondents using purposive sampling technique. Data analysis used the Wilcoxon test with a p-value of 0.001 which shows that there is a difference in the level of female students' knowledge before and after being given education using flipchart media on female students' knowledge at the Istiqomah Samarinda Islamic Boarding School, so that there is an influence of nutrition education using flipchart media on female students' knowledge about preventing anemia.

Abstract

Indonesia is one of the countries that uses white bread as a substitute for rice or as a snack. White bread is a food product made from wheat flour which is then given yeast and baked. This research used experimental research with a completely randomized design (CRD) with 5 treatments and 3 repetitions. Proximate test testing for water content, ash content, protein content, fat and carbohydrate content and acceptability test. The results of the nutrient content test for white bread, banana flour with fragrant pandan leaf extract, are the most preferred and good in white bread products, namely in the R3 treatment with high levels of results. air 25.79%, ash content 1.378%, protein content 7.88%, fat content 4.218% and carbohydrate content 60.72%. And the most favorable hedonic test results and hedonic quality were the R3 white bread treatment with the substitution of banana horn flour with the addition of fragrant pandan leaf extract, which stated that there was no real difference and no further tests were carried out. White bread with the substitution of horn banana flour with the addition of fragrant pandan leaf extract was declared to have no real difference and no further testing was carried out

Abstract

Stunting is still a global health emergency, and this is a burden for developing countries including Indonesia. Based on the report, Indonesia is the country with the 5th largest contributor to stunting worldwide. The empowerment of cadres is considered very helpful in monitoring children's growth and development. This study aims to determine the training of cadres on knowledge and skills in monitoring the growth of toddlers in the working area of the Samarinda City Health Centre. The research is a quasi-experimental design conducted in July – August 2023 in the working area of the Samarinda City Health Center, East Kalimantan, Indonesia. A total of 66 cadres were involved as respondents by setting inclusion and exclusion criteria. The data was then collected and analyzed with the Wilcoxon and Mann-Whitney tests. Results show that there is an effect of training using modules on cadre knowledge (p = 0.000), there is an effect of training using videos on cadre knowledge (p = 0.000), there is an effect of training using modules on cadre skills (p = 0.000), and there is an effect of training using videos on cadre skills (p = 0.000). There is a difference. These results show that module media is more effectively used in training than video. Both forms of training exert the same effect. However, module-based training is more effective than video, this is because module media builds interaction among cadres

Abstract

Pregnant women are a group that is very vulnerable to nutritional problems including anemia. around 41.8% of pregnant women are anemic worldwide. Lack of knowledge and attitudes are the main causes of anemia. This study aims to determine the effect of PENEMIA (Prevention of Anemia) video-based education for anemic pregnant women on changes in knowledge and attitudes at the Harapan Baru Community Health Center, Samarinda City. The research is a quasi-experimental design with one group pre-test post-test design carried out in May - June 2023 in the working area of the Harapan Baru Health Center, Samarinda City, East Kalimantan, Indonesia. A total of 36 anemic pregnant women were involved as respondents by determining inclusion and exclusion criteria. The data was then collected and analyzed using the Wilcoxon test. Our findings show that the difference in the level of knowledge of pregnant women before and after being given PENEMIA education obtained a p-value of 0.000. This means that there is an influence of PENEMIA education on pregnant women's knowledge. The attitudes show differences in the attitudes of pregnant women before and after being given education with a p-value of 0.000, which means there is an influence of nutritional education on the attitudes of pregnant women. PENEMIA educational videos are very effective in increasing the knowledge and attitudes of pregnant women. It is hoped that this education will continue in society

Abstract

Indonesia is still in a nutritional emergency. Undernutrition or overnutrition is a health problem that is often found in adolescence. Nutritional problems that occur are influenced by an imbalance between physical activity and macronutrient intake in adolescents. This study aims to determine the relationship between physical activity, energy intake, and protein intake with nutritional status in adolescent girls.  Observational study with a cross-sectional approach conducted in July – August 2023 at Junior High School 2 Long Bagun, Mahakam Ulu Regency, East Kalimantan. A total of 42 adolescents were included as samples based on purposive sampling by setting inclusion and exclusion criteria. Physical activity variables were measured in the International Physical Activity Questioner (IPAQ) while energy and protein intake were obtained through a 24-hour food recall form. The BMI / U formula measures nutritional status-data analysis using the Spearman Rank correlation test. Our findings show the majority of adolescents with moderate physical activity (76.2%), adequate energy intake (66.7%), and adequate protein intake (66.6%). The results of the relationship analysis showed physical activity (p = 0.001, r = 0.512), energy intake (p = 0.001, r = 0.503), protein intake (p = 0.002, r = 0.459) with the nutritional status of adolescents at Junior High School 2 Long Bagun. There is a significant relationship between physical activity, energy intake, and protein intake with the nutritional status of adolescents at Junior High School 2 Long Bagun. These findings are empirical evidence for the formation of better adolescent health programs

Abstract

Stunting adalah gizi kurang dalam waktu cukup lama yang menghambat pertumbuhan anak, maka stunting perlu ditangani secara serius. Ikan patin dan daun kelor mempunyai kandungan protein tinggi mampu menangani malnutrisi anak, sehingga dapat dimanfaatkan sebagai MP-ASI. Tujuan penelitian untuk daya terima dan nilai gizi nugget subtitusi ikan patin dan tepung daun kelor sebagai alternatif MP-ASI. Jenis penelitian quasi ekpesimen dengan desain RAL. Prosedur pengumpulan data daya terima dari panelis tidak terlatih 25 orang dilanjut uji nilai gizi. Analisis kuantitatif uji Anova taraf 5% dilanjut uji-tukey. Hasil daya terima nugget terdapat perbedaan signifikan warna, aroma, tekstur, dan rasa menghasilkan nugget paling disukai F1. Hasil uji nilai gizi nugget terdapat perbedaan signifikan nugget yang nilai gizi kadar air dan karbohidrat tinggi F1, sedangkan nugget yang nilai gizi kadar abu, protein dan lemak tinggi F3. F3 nugget yang dijadikan alternatif mengatasi stunting karena kandungan protein tinggi dan memiliki kriteria kedua paling disukai.

Abstract

This study aims to know the effectiveness of leaflets and video educational media in the knowledge of type 2 diabetes mellitus patients in the inpatient room of RSUD Beriman Balikpapan. The methodology used is a quasi-experimental study with a pretest and posttest research design with control group. The intervention group used video media and the control group used leaflet media. The results obtained were that the average patient knowledge increased in the experimental group, which was 50.90, ± 8,228 SD before the intervention, increasing to 81.37, ± 9,615 SD after the intervention. In the control group, the mean knowledge of patients before the intervention was 55.75, ± 7,036 SD, increasing after the intervention to 84.18, ± 9,895 SD. The P-Value value is 0.000 < 0.05 from the results of the analysis of the difference in knowledge between the experimental group and the control group after the intervention shows that there is a significant difference between the two; so that H0 is rejected and Ha is accepted. This means that nutritional counseling using video and leaflet media can increase knowledge about Diabetes Mellitus and video media is more effective than leaflet media. The providing nutritional counseling using video media was more effective than using leaflet media in increasing the knowledge of Diabetes Mellitus patients in the inpatient ward of the Beriman Balikpapan Regional Hospital.

Abstract

Community-based interventions are necessary to reduce the number of children under five who experience weight faltering, underweight, and wasting in the Mesjid subdistrict of Samarinda City to prevent them from developing stunting. This activity aimed to train health cadres in Infant and Young Child Feeding (IYCF) and provide supplementary food based on local foods to children under five with nutritional problems. The activity was conducted in two stages: the first was IYCF training for cadres with a total of 63 participants, and the second was providing supplementary food to 28 target children. The activities were evaluated using knowledge questionnaires for the cadres and weight measurements after one week of supplementary feeding interventions and IYCF education for the children. The results of the community service showed an increase in cadre knowledge related to IYCF, with the majority previously in the poor category (60.3%) improving to a majority in the adequate category (65.1%) after the training. There was also an increase in the weight of children who received local food-based supplementary feeding, with the average weight increasing from 10.15 kg in the pretest to 10.54 kg in the posttest. This activity proved beneficial in improving the knowledge of cadres and the weight of children, and it is hoped that the subdistrict, health centers, and cadres will commit to being responsible for monitoring and evaluating the sustainability of the activities.
