Abstract

This qualitative study aims to analyze the strategies and effectiveness of food waste management in the kitchen operations of Pandora Lounge Restaurant, highlighting the issue of food waste as a critical concern in Indonesia's tourism sector. Data was collected through interviews with the Owner and Head Chef, observations, and documentation, and then analyzed using the Miles and Huberman model and SWOT evaluation. The research findings reveal that the food waste management strategies at the restaurant are not yet optimal, with strengths in the reuse of leftover ingredients and the separation of halal or non-halal waste, but limited by major weaknesses such as the absence of written standard operating procedures (SOPs), limited processing equipment, and insufficient staff awareness of the 3R methods (Reduce, Reuse, Recycle). While opportunities for collaboration with third parties and government incentives remain untapped, threats such as stricter regulations and competition from more environmentally friendly restaurants need to be addressed. The study concludes that a more systematic and integrated approach is essential, through the development of SOPs, technological investments, and staff training, to enhance the effectiveness of food waste management in support of sustainable tourism.

Abstract

Purpose : This study aims to analyze the potential, opportunities, and challenges in developing Kampung Bekelir as a tourist attraction in Tangerang City. Research methods : This research used a qualitative approach with purposive sampling. Data were collected through in-depth interviews, field observations, and documentation studies involving key informants such as community leaders, Kampung Bekelir managers, MSME actors, and tourists. The data were analyzed using the 4A framework (Attraction, Accessibility, Amenities, Ancillary Services) combined with SWOT analysis. Results and discussion : The results show that Kampung Bekelir has strengths such as a unique visual identity, strategic location, and strong community support. However, it also faces weaknesses such as faded murals, an inactive tourism awareness group, and limited tourist facilities. Opportunities include collaboration with artists, government and CSR support, and the development of cultural and creative attractions, while threats consist of declining community participation, loss of sponsorship, and competition with other destinations. Implication : The research provides insights for local governments, community groups, and tourism stakeholders to optimize the development of Kampung Bekelir as a leading tourist attraction in Tangerang City and to strengthen community-based tourism initiatives in urban areas. Abstract

This study arose from the gap between the enormous potential of Satupam Tourism Village and the weak system of collaboration between actors that should support its sustainable management. Satupam Tourism Village in South Tangerang City has enormous potential for the development of community-based educational and culinary tourism, but still faces various coordination challenges and limited support from stakeholders. This study aims to analyze the role of pentahelix collaboration involving the government, academics, business actors, communities, and the media, as well as to identify the factors that hinder the formation of effective collaborative governance in Satupam. The research method uses a descriptive qualitative approach with in-depth interviews, field observations, and documentation techniques. The results show that pentahelix collaboration in Satupam has begun to take shape but is still informal and not yet institutionally structured. The community and academia play the most active roles, while the government, business actors, and media still contribute only to a limited extent. The main obstacles include weak coordination, lack of policy and funding support, and low mutual commitment. The study concludes that the application of collaborative governance principles in Satupam is still in its early stages (initiating stage) and requires institutional strengthening and cross-sector communication to realize synergistic and sustainable collaboration.
